Apricots Pie

Welk, well you know about my apricots trees so we have here other recipe with apricots, you can save for your summer season and of course you can use canned apricots too, because is a Pie to every time.
I adapted this recipe from the book "La buena mesa" (the good cook) from Olga Edwards and antique and wonderful book  here in Chile.

Ingredients

60 grs. soft butter
2 tablespoon of caster sugar
1 cup of flour (240 grs.)
1 huevo

Cream

2 cups of whole milk (480 cc)
3 ablespoon of sugar
2 1/2 tablespoon of corn flour
3 yolks beaten
vanilla extract
fresh apricots
or canned apricots
glass sugar to powder

Method

Place the butter in your mixer (or in a bowl) and beat until softened. Add sugar and beat until light and fluffy. Gradually add the beaten egg, beating just until incorporated. Add the flour mixture all at once and mix just until it forms a ball.
.When the pastry is rolled to the desired size, lightly roll pastry around your rolling pin, dusting off any excess flour as you roll. Unroll onto top of tart pan.
Gently lay in pan and with a small floured piece of pastry, lightly press pastry into bottom and up sides of pan. Roll your rolling pin over top of pan to get rid of excess pastry. Prick bottom of dough (this will prevent the dough from puffing up as it bakes).
Preheat the oven at 180°c. Bake until the dough is little golden.

Set aside.

Pastry Cream:
In a medium-sized stainless steel bowl, mix the sugar and egg yolks together with a wooden spoon. (Never let the mixture sit too long or you will get pieces of egg forming.) Sift the cornstarch (corn flour)  and then add to the egg mixture, mixing until you get a smooth paste.
Meanwhile, in a saucepan combine the milk and  vanilla  on medium heat until boiling. (The milk will foam up to the top of pan when done, so watch carefully.) Remove from heat and add slowly to egg mixture, whisking constantly to prevent curdling. (If you get a few pieces of egg (curdling) in the mixture, pour through a strainer.)

Spread the cream on the bottom of the pastry crust.

Powder with sugar glass.
Place the apricots evenly over the cream. Bake for about  15 minutes, or until the the tart  is puffed and light brown in color. Remove from oven and place on a wire rack to cool.
If you want brush with apricot jam over the tart.

sal y pimienta
2 huevos
1 taza de crema
1 cucharadita de polvos curry

Para el relleno

3 cucharadas de aceite

2 tazas de champiñones picados o en láminas
1 cebolla mediana picada fina

Apricots an orange jam

This post is  about apricots  (he,he) As you can see it has been a year (we are in summer) we had a lot of apricots, and so will understand that in some posts back to apricots is short term but abundant, and if one does not jam or other things ripe very fast, last year almost did not have apricots. So you can store o bookmarked these recipes for summer. I have other jam recipes in my labels.

This recipe is a little different because apricots go with a little orange juice, is great and wonderful color.
This recipe is adapted of one of Gloria Frugone a nice chef and cook from here.

Ingredients

1 kilo fresh and ripe apricots
500 grs. sugar
grated peel of one orange(only the orange peel)
the juice of two oranges

1. Wash the apricots, cut in quarters or medium without the seeds.
Place  with the sugar in a large pot medium heat, add the peel and orange juice.
Stir well.Wait until boil.

2. Low the heat and let cook always stirring time on time with a woodspoon.
Cook about an hour always stirring.Always slow heat.
As the mixture thickens and reduces, stir frequently to make sure the jam isn’t burning on the bottom.
5. When the jam looks thick and is looks slightly-jelled, turn off the heat and put a small amount of jam on the chilled plate. Put back in the freezer for a few minutes, then do the nudge test: If the jam mounds and wrinkles it’s done. If not, continue to cook, then re-test the jam until it reaches that consistency..
Let in the pot until is warm.
Put the jam into clean jars. Cover tightly and let cool to room temperature. Once cool, refrigerate until ready to use.

This jam will keep up to one year if refrigerated.
I place label to know what of these is with orange. Always is a nice idea place labels with the date you made the jam.

Tip: To make 2 kilos only double the sugar.
