Chocolate orange Madeleines recipe (Magdalenas de naranja y chocolate)

 





And here we go again, winter begin here  and   on the northern hemisphere the summer , just take care, I heard that you will walk without a mask, I do not know, what I have learned that this  virus sometimes comes and goes.

In any case, we are still in quarantine here.

Today's recipe is orange and chocolate madeleines.

What can I say? My mom loved  madeleines

She told me that my Spanish grandmother always had madeleines  and scones there in Punta Arenas (very south of Chile) for tea time.

Finally our recipes and our kitchen is a compendium of our mothers and grandmothers and that is why we enjoy these recipes.

My granny  was married with a lovely English man so she received visits from many English ladies.

Tea time




Chocolate orange madeleines recipe

Ingredients

3/4 cup sugar

2 eggs

3 tablespoons salted butter

(room temperature)

1 cup flour all purpose

2 tablespoon  organic orange zest

1 tablespoon orange juice

1 bar of dark chocolate 


Method


Preheat oven to 180° C  (375°F)

Generously grease each madeline mold with butter.

Whisk eggs, sugar and butter  together until fluffy and creamy.

Add flour and orange zest and orange juice and mix until just  combined 

Divide batter  between pans or molds and bake for 10 to 12 minutes

Invert pan and let the madeleines  cool for 5 minutes

While madeleines are cooling melt chocolate  being very careful not to burn .

Once the madeleines are cold dip them head first into chocolate.

Place the dipped madeleine on a plate  covered in wax paper and let chocolate harden by 10 minutes in fridge.

Magdalenas de naranja y chocolate






Nota

Si bien hay moldes especiales para magdalenas en E bay  se puede usar moldes de muffins.

Los mejores y no tan caros son los de Ebay. Mercado Libre muy caro. Por ejemplo este de silicona es muy bueno y salia como 12.000 lo digo porque si alguien quiere comprar.

Y a veces el envio es barato o gratis.

Los moldes duran casi para siempre.



Ingredientes

3/4 taza de azucar

2 huevos

3 cucharadas de mantequilla temperatura ambiente

1 taza de harina sin polvos de hornear

2 cucharadas ralladura de naranja

1 cucharada de jugo de naranja natural

1 barra de chocolate amargo 60% cacao



Preparacion

Precalentar el hono a 180° c  (375° F)

Enmantequillar los moldes de magdalena o de muffins   y enharinar un poco para  cuando se agregue la masa el molde este listo.

En un bol batir los huevos,azucar y mantequilla hasta que la mezcla este liviana y cremosa, lo hago con una cuchara de palo.

Suavemente agregar la harina, la ralladura de naranja y el jugo de naranja, hasta que este bien mezclado.

Repartir con una cuchara la mezcla entre los moldes de magdalena que estan enmantequillados.

Llevar a horno y  hornear por unos 10 a 12 minutos, ver si estan dorados y secas estan listas. Se cocinan rápido.

Dejar enfriar las magdalenas unos 5 minutos y retirar suavemente con la punta de un cuchillo.

Mientras las magadalenas se enfrian derretir a fuego muy suave o en microondas, si es en microondas debe ser cada 15 segundo e ir probando debe estar cremoso y no recalentar.

Despues ir pasando las magdalenas por el chocolate, solo la punta y dejar en un plato para que se sequen.

Despues llevar al refrigerador por unos 10 minutos para que se enfrie el chocolate y estaran listas.

Triple chocolate donuts (Donuts de chocolate al horno)

 




 Finally  we are so close to Christmas, I love it is my favorite time to cook or bake. It was my mom's favorite time so that's why I'm always nostalgic!

Today I was finally able to make this  recipe, baked chocolate donuts (not fried) and they were very good I hope you like them.

These easy homemade chocolate donuts are filled with a fudgy chocolate filling and chocolate  glaze. 

 

And here two weeks from Christmas again in Quarantine, isn't it a crazy world? 

But I remember the lovely  Anna Frank in a more difficult time than us, locked up and still celebrate their Pesaj (Passover seder)

We cannot be less. Merry Christmas to all!

Triple chocolate donuts recipe

(9  baked donuts)

Ingredients


2  1/2 cups all purpose flour 

1/2 cup brown sugar

1/2 cup granulated sugar

2 teaspoon baking powder

1/2 tsp baking soda

pinch of salt

1/2 cup cocoa powder

2 tablespoon special dark 100% cacao powder (optional)

1/2 cup whole milk

3 ggs

1/4 cup plain yogurt

2 tablespons butter melted and cooled

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)


Chocolate glaze

1/2 cup semi sweet chocolate or chocolate chips

2 tablespoons heavy cream

2 tablespoons butter


Method

Preheat the oven to 180°c (350°F) Grease donut pan  with oil or butter.

Ina large bowl combined sifted flour, sugars, cocoa and cacao powder, baking powder, baking soda and salt.

Whisk until fully combined.

 In a separate bowl combine the milk , eggs, melted and cooled   melted butter, vanilla extract and yogurt. Stir to combine.

Add the wet ingredients to the flour mixture and stir until fully combined. If you want add the chocolate chips and stir once more.

Add batter in a piping bag (or plastic sandwich bag)  and pipe it into the donut pan. 

Baker for 10 to 12 minutes. Allow to cool be fore adding the glaze.

For chocolate glaze

in a microwave safe bowl melt the chocolate, heavy cream and butter gently in the microwave (in 30 seconds intervals and stirring in between)

Dip the tops of the donuts into the chocolate glaze and place on a cooling rack to set.

You can garnish with some Christmas sprinkles.


NOTE : If you dont have a donut pan  you can use a muffins pan like this.

To transform a muffin pan into a doughnut pan you will need :

Muffin pan

Aluminium foil

Cooking spray or oil

Take a square piece of foil and place ir over of your fingers.

It needs to be large enough to cover the bottom of each cup in the muffin tin.

5" x 5" square works ok.

Fold the foil around your finger gently folding the sides up, to create a mold.

Place into the cup of your muffin tin and press into place. Repeat for remaining cups

Chocolate Glazed Banana bundt cake ( Bundt cake de platanos y crema de chocolate)

 



My stories about recipes are always similar  how I do  choose one or  how I search in books or magazines with something in my mind..

I read tons too and especially about recipes.

I had VERY ripe bananas because here it is already hot, I saw many recipes and I loved this and everyone else.

This cake is marbled on the inside and drizzled with chocolate  glaze!

And BTW I love cakes baked in bundt pans.

I did it yesterday and there is nothing today!

I do not like to throw fruit or food.

Ingredients

3 ripe bananas mashed (about  1 and  1/2 cups)
2  large eggs
1 cup sugar
1/2 cup vegetable oil
1/2 cup plain greek yogurt
1 teaspoon vanilla extract
2  1/2 cups all purpose  flour
1/2 teaspoon cinnamon
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cocoa powder


For the chocolate glaze

1/2 cup heavy cream 
4 ounces (120 grams) dark chocolate

Method

Butter the bundt cake pan and dust throughly with 1/2 tablespoon flour and put aside.

Preheat the oven to 350 °F (180° C)
In a large mixing bowl whisk together the mashed bananas and eggs.
Add in sugar and mix with an electric mixer until creamy. Add oil, greek yogurt and vanilla extract.
In another bowl whisk together  the dry ingredients except cocoa powder.

Add the dry ingredients to the wet mixture.
Take 1 cup of the batter and mix with with cocoa powder.
 Pour half of the light colored batter (without cocoa) into the pan, then put the batter cocoa with the cocoa powder and finally the light colored batter.
Make swirls with a fork.
Bake for 45 minutes or until a toothpick inserted in center comes out clean.
Meanwhile prepare the chocolate glaze.
Heat heavy cream until it boils. Remove from heat and add in chopped chocolate, whis well until smooth. Let cool.
Invert  the cake carefully onto a serving platter and drizzle over cooled  cake.

Bundt cake the platanos y crema de chocolate









Ingredientes

3 platanos bien maduros
(como 1 taza y media)
2 huevos grandes
1 taza de azucar
1/2 taza de aceite vegetal
1/2 taza de yogurt griego sin sabor
1 cucharadita de extracto de vainilla
2 taza y 1/2 de harina sin polvos
1/2 cucharadita canela en polvo
1 1/2 cucharadita polvos de hornear
1 cucharadita bicarbonato de soda
1/2 cucharadita de sal

Glace de chocolate

1/2 taza de crema espesa
120 gramos de chocolate oscuro en barra

Mini chocolate Bundt cake recipe ( Mini Bundt cakes de chocolate)



 



This post is about bundt cakes and chocolate, I haven't made something with chocolate in a long time.

Although I love chocolate, what I like the most is making recipes with fruits, especially berries.

As I always took time choosing the recipe, nothing is accidental, I see something and say I have to do it and that is where everything begins, in this time I have read a lot of recipes and books.

Then I prepare everything and make some changes and finally see what dishes I would like for the photos. Oh, it is a long process until I take the photos.

I see it as a process that takes time, dedication and a lot of love.
I like the mini bundt cakes because I like the small portions, I had seen several recipes and finally I stayed with this one.

Ingredients

(5 mini bundt cakes)

2 onzas (57 gramos) semiswet chocolate chips 

1/2 cup strong coffe

1 cup sugar

1  1/2 cups all purpose flour

1/2 cup unsweetened dutch process cocoa powder sifted

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

2 eggs

1/4 cup butter melted or waltnut oil

1/2 cup plain whole milk yogurt

1 teaspoon vanilla


Glaze

2 tablespoons butter melted

2 tablespoon unsweetened cocoa

2 tablespons strong coffe 

1 cup confectioners sugar


Method

Heat oven to 300°F (150 °c)

Coat 5 mini bundt cake tins nonstick  and butter them, set aside.

Place chocolate chips and coffe in a bowl and heat in microwave for 30 seconds on 50 percent power, stir until smooth. Heat at 15 seconds interval until chocolate is completely melted.

In medium bowl whisk together sugar, flour cocoa powder, baking soda, baking powder and salt.

In large bowl beat  eggs  on medium speed until pale yellow, about 1 minute. Add melted butter or oil slowly, beating well with each addition, Add yogurt and vanilla, beating well.

Gradually pour in melted chocolate mixture and beat to throughly combine. Add dry ingredients all at once, and beat on low speed until batter is just combined. Stir by hand to get everything mixed well.

Divide batter evenly between Bundt tins. Bake for 25 to 30 minutes  until toothpick comes out clean.

Cool on wire rack for 20 minutes before removing from tin and cool completely before glazing. 

For glaze

Combine butter, cocoa and coffe in large bowl. Whisk in confectioner's sugar until smooth, adding more coffe if needed to reach  drizzling consistency. Drizzle over bundt cakes and leave to set for at least 1 hour before disturbing.

For garnish  I used blueberries and mint leaves.

Mini bundt cakes de chocolate 




Ingredientes

57 gramos (aproximado) de chocolate chips o

pedazos de chocolate en barra

1/2 taza de café cargado

1 taza de azúcar 

1 taza y 1/2 de harina sin polvos de hornear

1/2 taza cocoa en polvo sin azucar o chocolate amargo

1/2 cucharadita bicarbonato de soda

1/2 cucharadita polvos de hornear

1/4 cucharadita de sal

2 huevos

1/4 de taza de mantequilla derretida o aceite vegetal

1/2 taza de yogurt sin sabor

1 cucharadita de exctracto de vainilla


Glace

2 cucharadas de mantequilla derretida (en microondas)

2 cucharadas de cocoa en polvo  sin azucar

2 a 3 cucharadas de cafe preparado

1 taza de azucar flor o impalpable

Frozen Tiramisu cheescakes (Tiramisu cheescakes)











Sometimes I think that time passes too fast, the weeks fly by, and I really couldn't make the post for this recipe that I made for Father's Day.

I only comment this because there are people who get bored at home, I have worked more than ever and I have cooked more than ever with everyone here.

Suddenly I get lost and I think we are in May? not in June !! that's been crazy sometimes. .

Turning to the recipe, I loved these tiramisu and are very easy  you can use a cup (or a mould) to make them.

And you arrange sponge fingers around the side of each prepared cup or mould.
I hope to see you later in a new recipe.

Frozen tiramisu cheescakes

Ingredients

3/4 cup fresh espresso coffe
1/4 cup rum or cognac
1/3 cup caster sugar
10  sponge finger biscuits halved
2 egg yolks
250 grams  cream cheese or mascarpone (room temperature)
cocoa podwer, to dust



Method

Line the base and side of 4 or 5    1cup (250 ml)
capacity metal moulds or tea cups with plastic wrap
allowing sides to overhang.

Combine the coffe, rum and 1 tablespoon of sugar in a shallow bowl and stir well until sugar dissolves.
Reserve 2 tablespoonfuls of the coffe mixture.
Dip sponge fingers one at a time into remaining mixture and arrange around the side of each prepared mould or tea  cup.

Use an electric mixer to whisk the egg yolks and remaining sugar in a medium bowl until thick and pale.
Fold through the  cream cheese and reserved coffe mixture
until combined.
Pour the cream cheese mixture evenly among the prepared moulds or cups. Cover with plastic wrapand place in the freezer for 4 hours or until almost frozen.

Finally yurn each cheesecake out onto serving plates, using the plastic wrap as a guide. Dust with cocoaand serve inmediately

Tiramisu cheescakes



Este postre es super facil y delicioso es como el Tiramisu modificado, porciones individuales, y que da super rico, lo hice para el dia del padre. Se puede hacer en molde o en tazas y queda bien igual.

Ingredientes

3/4 taza de café espresso 
1/4 cup ron o coñac
1/3 taza de azucar
10 galletas de champaña cortadas a la mitad
2 yemas de huevo
250 gramos de queso crema (un paquete con un poco mas)
a temperatura ambiente
cocoa en polvo para espolvorear 

Preparacion

Cubrir la base y los lados de 4 o 5 moldes o tazas de té con film plástico dejar que caiga un poco por los lados (mas facil de desmoldar)

Chocolate brownie muffins ( brownies /muffins de chocolate)









I had several recipes ready but it took me some time  start the posts, honestly it's hard  think what to talk about, maybe from here? of the current situation, of sorrows and distress, or  about Christmas that is so close and I love Christmas?

Although I am not normally depressed, it is hard to keep the spirit when you watch the news, when there are fires, looting and other things, how did this come about? I dont know.

Apart from praying, reading and baking (catharsis) I try to think about Christmas. Even in the most difficult times people celebrate Christmas, and I believe in God and the birth of Jesus, so I will try to take care of the Christmas spirit.

Well, apart from continuing to make jams (apricots are maturing) and I don't like to bury the fruit so that's what I'm in.
This recipe for "Brownie muffins" has the best of everything, it is a muffin with the taste of a brownie.

Chocolate brownie muffins

Ingredients

4 oz /115 grams bittersweet chocolate (coarsely chopped)
1/2 cup (113 grams) unsalted butter cut into small pieces
1/2 cup plus 1 tablespoon all purpose flour
1/3 cup unsweetened cocoa powder
pinch of salt
3 large eggs
1/2 cup granulated sugar

Method



Preheat oven to 350 °/180°c . Line 12 muffins cups with liners, Set aside.
To make the brownies 
In a medium heatproof bowl, place chocolate and butter. Heat mixture in the microwave in 20 seconds intervals, stirring between each interval until melted. Alternatively, you can set the bowl over a saucepan of simmering water, stirring occasionally.
In a small bowl sift flour, cocoa powder and salt. Set aside.

Using a mixer fitted with the whisk attachment, whisk eggs and sugar on high speed until thick and pale, about 4 minutes.Reduce speed to low and slowly add in chocolate mixture. Stop the mixer. Add flour mixture and fold using a rubber spatula just until combined.Do not overmix.

Divide batter between liners, filling them about 3/4 full.
Bake for 13 to 16 minutes or until a toothpick inserted into the center of the muffins comes out with moist crumbs and not dry. Be careful not to overbake as this will make the brownies dry. Let cool for 10 minutes before removing from pan. Allow muffins to cool completely on a wire rack.

Chocolate cherry bundt cake (Cake de chocolate y cerezas)











A few days ago it was my birthday and I wanted to do something small but delicious because it is always good to celebrate life.
 And also for the twins and hubby  who love chocolate.

So I made one of my favorites a bundt cake of chocolate and cherries and was really good.
The best thing was fine  to me  do it (although I'm better off on my arm)
You can use fresh or frozen cherries . I know in many sites you are lucky to have fresh cherries!
We are in winter, but always try to freeze some cherries !

Mine were frozen and it was delicious.

Chocolate cherry bundt cake

Ingredients

150 grams butter (2/3 cups)
3/4 cup milk
1 1/2 cup sugar
1 tablespoon vanilla
3  1/4 cups all purpose flour
3/4 cups( 75 grams) dutch process cocoa powder
pinch of salt
2 teaspoons  baking powder
1 teaspoon baking soda
3 eggs
200 grams  canned or fresh pitted cherries. (or frozen)


For the glaze

1 cup    semisweet or bittersweet chocolate chips 
2/3  cup heavy cream
1/2 teaspoon vanilla extract


Method

To make the cake preheat oven to 180°c (375°F) and grease a bundt pan  (24 or 25 cm aprox) and set aside.


In a medium saucepan combine the butter, cocoa powder, salt and milk. Heat until the butter is melted and whisk to combine well. Set aside to cool to room temperature.

In a large bowl whisk together the flour, sugar, baking soda and baking powder. Pour in the chocolate mixture and stir to combine.
Add the eggs and whisk to combine and add the vanilla extract until the batter is smooth .Scoop half of the batter into the pan and sprinkle half of the cherries on top.
Add the remaining batter  and then press the remaining cherries into the batter.

Bake for 40-45 minutes until the top lightly springs back and the cake is baked through.
Let the cake cool for 10 minutes in the pan before turning it out carefully onto a cooling rack to cool completely.

Glaze

For the glaze place the chocolate in a medium bowl. Heat the cream to a simmer  (microwave or in a saucepan) and pour over the chocolate. Let the mixture sit for a few minutes without stirring.
Add the vanilla and stir the mixture until it is glossy and smooth. The glaze will set up as it cools, for a thicker frosting let it cool slightly and pour it over the cake .
Once the cake is cooled place it on a serving plate or cake stand.
Garnish with some cherries and mint leaves. or chocolatepieces.

Matcha moss chocolate Easter cakes (Cupcakes de chocolate con té matcha )








I  prepared this recipe especially to celebrate Easter,  and adapt this recipe from Thirsty for Tea (a beautiful blog)because her recipe to make the moss is wonderful (matcha).

 I wanted to use chocolate bunnies but there were only big ones. Finally I made cookies with a bunny shape but you can use whatever you want.
 I saw many moss recipes but this one was the best, with green tea, ground flax seeds and coconut. Delicious and healthy
And finally for garnish I used Rose buds petals (dried)
Usually are for tea but are beauty and edible.

The recipe for chocolate cakes is for 6 (for me Ok) but you can double the amount if you want more.

Chocolate  Easter cakes  (6 servings)

3/4 cup granulate sugar
1 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
pinch salt 
2 medium eggs
2 tablespoons milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
1/4 cup hot coffe
 (the coffe flavor will help intensify the chocolate flavor) 

Method

Preheat oven to 180°c (350° F)
Place 6 liners  in a muffin pan. Set aside
With a stand mixer or hand mixer combine sugar, flour, cocoa powder,baking powder,baking soda and salt.
Add eggs, milk, oil and vanilla extract and beat for 2 minutes. Add hot coffe and beat until just combined.

Divide evenly between 6 prepared muffins cups. Bake for approximately 15 minutes, until the tops spring back when you touch them and a toothpick inserted into the center comes out clean.
Transfer the pan to a wire rack to cool completely

Matcha moss cupcakes

Ingredients

3/4 cup of panko or cake crumbs
1/3 cup unsweetened dried coconut
2 tablespoon culinary matcha powder
1 tablespoon ground flax seeds
frosting for cupcakes

Method

In a bowl  mix all the moss ingredients together (I mixed  with a for to mix better)
Frost the cupcakes with a thin layer of frosting. (any frosting)
Dip the top of the cupcakes in the matcha moss.
Let the cupcake  sit for a few minutes, then dip it in the moss mix a second time.
Repeat for all the cupcakes. If you d like add some flowers or candies.
I used Rose buds petals (dried)
