Fresh peach and Raspberry Clafoutis (Clafoutis de duraznos y frambuesas)



 


Here is an extremely simple dessert that is delicious.

And it can be made with various fruits not just peaches and raspberries.

Peach and raspberry clafoutis.

Clafoutis comes from the Limousin  a region of France, and usually black cherries are traditional there are numerous variations using other fruits ( plums, prunes, peaches, pears, strawberries or blackberries).

Basically some fruits arranged in a buttered dish and covered with a thick flan like batter, then baked.

Fresh peach and raspberry clafoutis

Ingredients

1 tablespoon butter

granulated sugar for dusting the baking dish

3 of 4 medium fresh peaches cleaned and sliced thin (or tin peaches)

1 cup of fresh or frozen raspberries (or blackberries)

1 tablespoon granulated sugar

1 lemon zested  and juiced

1/2 cup granulated sugar

1teaspoon almond extract

4 large eggs

1 cup whole milk

1/2 cup heavy cream

3/4 cup all purpose flour

1/4 teaspoon salt

powdered sugar for serving


Method

Preheat oven to 180°c (350° F)

Butter 6 or 7 cup flat shallow pan, or smaller baking dishes for individual servings. Lightly sprinkle granulated sugar the buttered dishes lightly coat.

Set aside.

In the carafe of a blender combine 1/2 cup granulated sugar, almond extract, eggs milk, heavy cream, flour and salt. Blend for  one minute until frothy.


Pour the fruit and any juice into the baking pans . Gently pour the custard mixture over the top of the fruit and bake for about  40 minutes.

Cool the clafoutis for 15 minutes then serve warm lightly dusted with podered sugar and you can arrangue some fruits over them.

Tomato & roasted garlic and basil mini galettes (Mini galettes de tomate, ajo, y albahaca)

 

 



French galletes are one of my favorite foods   but  many times I did not do them in a while (there are so many pending recipes) but I had bought heirloom tomatoes of different types (although it can be made with any tomato) and I already had them.  Until today I did them, and they are so easy (tres facile).

But... if you dont know what is a galette??

A galette, more specifically the galette des rois, is one of the most beloved dishes in the french cuisine. This food is one of the most popular types of galettes and is composed of a delicate pastry dough with a small charm, hidden inside.

 More often than not, this pastry takes the form as a sweet, open faced tart piled with with fruit, but many still love the endless savory combinations that can turn a galette into a main course.

They are popularized in american cuisine by vegetarians. While the classic greens of a salad are great or who choose a meat-free life, galettes are a surprisingly great way to bridge the two worlds of food.

Ingredients Crust

3 cups of all purpose flour

1/2 teaspoon sugar

1 teaspoon salt

6 tablespoons butter (cold and cubed)

2 tablespoons olive oil

1/2 cup ice water


Gallete filling


Garlic 1 head

Cherry tomatoes (halved) 3 cups

or regular tomatoes in cubes or slices

1 tablespoons olive oil  more 2 tablespoon  oil divided

 1  onion (medium) peel in slices

Feta cheese or other cheese  (crumbled ) 2/3 cup

 1/2 cup fresh basil leaves

salt and pepper (to taste)


  Note: about garlic you can roasting several extra heads of garlic at a time - it's delicious on everything from salads to sandwiches and keeps well in the fridge.



Method

Crust

In a medium bowl whisk together the flour, sugar, and salt

Cut in the butter using your fingertips or a pastry blender until the largest pieces are the size of tiny pebbles. Add the oil  and ice water.

Then use a rubber spatula to pull the dough together .(If is needed add some flour)

Knead a couple of times with your hands, then divide the dough in  five equal pieces .

Flatten each piece into a disk and wrap them in plastic individually.

Refrigerate for 45 minutes.


Roasted garlic

Preheat the oven to 370 ° F (180°c) and line a large baking sheet with parchment paper. Cut the top of the head of garlic to expose the tops of the bulbs, leave the papery skin itact.

Drizzle  wthe bulbs with 1 tablespoon of olive oil.

Wrap tightly in aluminium foil. Bake in baking sheet for 30 to 35 minutes until the cloves are softened smelling.

Set baking sheet aside to use later..

Once the garlic is cool enough to handle pop the bulbs out of their casings. In a small bowl use a fork to smash into a smooth paste.


Filling and assembly

Peel, halve and thinly slice your onion. Heat two tablespoons of olive oil in a large non stick pan to  medium to low heat.

Once hot add the onions. Once onions have started to turn golden color lower the heat.

Sprinkle a few pinchs of salt over the onions and stir to combine. Cook on low heat by 15 minutes. Remove from heat.

While onions are caramelizing halve the cherry tomatoes..

Place on a cutting board and sprinkle with salt.

Chop the basil into thin strips.


On a lightly floured surface, roll each piece of dough out into a 6 inch circle (16 cm).

This dough is so flaky if is tearing just patch it and put in the fridge by a while.

Transfer the circles to the baking sheet you used earlier to roast the garlic.

Brush each circle with the roasted garlic paste, leaving a 1 inch border around the edges.

Divide the caramelized onions evenly between the galette and add the crumbled  cheese layer. Finish with the tomatoes. Fold the edges of the crust up around the filling in.

Bake at 180°c (370°F) until tomatoes are starting to burst and crust is golden.

Transfer to a wire rack and cool for a while. When cool sprinkle with basil leaves.

Galette keep in the fridge for up to 5 days, but really I dont think they'll make  it that long.

Mini galettes de tomate, ajo y albahaca





Ingredientes masa

3 tazas de harina sin polvos de hornear

1/2 cucharadita de azucar

1 cucharadita de sal

6 cucharadas de mantequilla (bien fría y en cubos)

1 cucharadas de aceite de oliva

1/2 taza de agua fría



Relleno de la galette o tartas

Una cabeza de ajo

3 tazas de tomates pequeños cherry  u otros

3 cucharadas de aceite de oliva o aceite de maiz u otro

1 cebolla mediana pelada y cortada a lo largo

 2/3 taza queso feta u otro granulado o en trozos chicos

1/2 taza de hojas de albahaca

sal y pimienta a gusto


Preparacion masa

En un bowl mezclar la harina, sal y cucharadita de azucar.

Cortar la mantequilla en trozos e ir agregando de a poco mezclando con el aceite de oliva y el agua fría.

Unir todo bien hasta formar una bola de masa.

Si es necesario agregar un poco de harina.

Amasar un poco la masa  entonces dividir la masa en 5 o 6 partes.

envolver cada trozo de masa en papel film plastico y refrigerar por unos 45 minutos.

Asi la masa quedara con mejor consistencia.


Precalentar el hrno

 180 °c y en una bandeja de horno o de esas para galletas colocarle papel mantequilla.

Cortar y pelar el ajo (pueden ser dos ajos) y colocar en la bandeja.

Agregarle el aceite de oliva u otro aceite de canola o maiz.

Cubrir con papel aluminio y dejar hornear unos 30 minutos.

Dejarlos enfriar.

Molerlos un poco mezclandolos con el aceite como haciendo una pasta.


Relleno y armado de las galettes o tartas

Pelar y cortar la cebolla a lo largo tipo pluma.

Colocar en un sarten y agregar unas dos cucharadas de aceite a fuego medio. Dorar un poco.

Agregar un poco de sal y revolver .Dejar que se doren o caramelizen un poco. Apagaqr y dejar enfrair un poco.

Mientras picar los tomates o cherry o sino en cuadrados si son tomates grandes, dejar en una tabla de madera mientras y cortar finita la albahaca tambien.

Para hacer las tartas

En una superficie o tabla enharinada estirar cada trozo de masa para cortarla igual uso un plato de unos 16 cm. 

Ir acomodando las masa en una bandeja con papel mantequilla(puede usarse la misma del ajo)

Con la pasta  y aceite de ajo pintar la base de las tartas .

Despues repartir la cebolla  entre todas las galettes poner bien al centro porqeu despues hay que doblar los bordes.

Colocar sobre la cebolla trozitos del queso repartiendo en todas.Siempre en el centro de la masa. Finalmente agregar los tomatos trozados o cortados,repartir trocitos de albahaca picada. Reservar un poco para servir.

doblar los bordes por la orilla hacia dentro como se ve en la foto.agregar un poco de sal y pimienta.

Cocinara 180°  hasta que los tomates empiezan como a reventarse un poco y los bordes de la tartaletas se ponen dorados, si ya estan los bordes dorados estasn listas.

Deberia ser unos 15 a 18 minutos. Depende de cada horno.

Dejar enfriar un poco antes de servir y agregar mas albahaca picada

Se pueden calentar si quedaron en microondas pero aqui se las comen hasta frias. la masa es muy rica.

Mini Apple galettes (mini galette de manzanas)

 






Love apples and galettes, however not all galettes are identical, the word galette come from France.

By definition a galette is simply a flat round cake made of pastry dough or bread, And looks like a rustic pie, so the opennes to creative interpretation  make galettes a culinary masterpiece for all to enjoy.

And that can be either sweet or savory and they can also be made from yeast risen dough like brioche or with a sweet pastry crust.

The fruits used in some types of galettes are typical seasonable and can include apples, or berries such strawberries or blueberries or stone fruits such as peches or plums.

For savory galettes, you can use tomatoes, basil, cheese or zuchinni, spinachs or broccoli.

"They are rustic and inviting: come as you are" (say Bonn Appetit magazine) and lovely to make .

Ingredients (5-6 mini galettes)


For  crust

1 1/2 cup all purpose flour
3 tablespoons granulated sugar
pinch of salt
1/2 cup (115 grams) cold butter diced
1/4 cup (60 ml) ice water plus more as needed
1 egg beaten for brushing

Filling

2 or 3 apples medium sized diced
1 teaspoon cinnamon
2 tablespoon sugar
1 teaspoon lemon juice


Method

For de crust whisk flour, sugar and salt together in a medium bowl. Cut in the cold butter until the mixture resembles coarse, pea sized crumbs. Pour in ice cold water little at time and gently it comes together.
Shape the dough into a ball and flatten into a disck. Wrap in plastic bag and refrigerate by 40 minutos.
On a lightly floured surface, cut the dough into 5 or 6 equal piece, and roll each portion into a round circle of about 1/8 inch (3 mm) thick. Trim the edges to make them round, and stack them on a plate dustin with flour ,
Preheat the oven to 180°c (375° F) and line a baking tray with parchment paper . Set aside.

In a bowl mix the apples, cinnamon, sugar and lemon juice,
Make the galettes. Place the apples mix in the centre leaving at least 1 inch edges to fold.
Fold the sides inwards  toward the filling.
Sprinkle some sugar and cinnamon on top too.

Brush the edges of the folded dough over the fruits
Bake the galettes in the baking tray about 20 or 25  minutes or until bubbly and golden brown. 
Let cool by  10 minutes  before eating.

Galletes de manzanas (fácil y deliciosas)




El galette es un tipo de masa que se usa para distintos propósitos, es muy facil y delicioso , se pueden acer galettes dulces o saladas y viene de  la cocina francesa.

Muchas de las galettes dulces se rellenan con manzanas o cualquier fruta (frutillas, frambuesas o arándanos) depende de la estacion del año. Yo siempre tengo manzanas.

Pero se pueden hacer con muchos rellenos.


Ingredientes masa


  • 1 1/2 taza harina sin polvos de hornear
  • 3 cucharadas de azucar granulada
  • 1 pizca de sal
  • 1/2 mantequilla fria en cubos (115 gramos)
  • 1/4 taza agua helada para la masa y puede ser un poco mas
  • 1 huevo batido para los bordes de la galette

 

Ingredientes relleno

  • 2 o 3 manzanas peladas y cortadas en cubos
  • 1 cucharadita canela molida
  • 2 cucharadas de azucar
  • 1 cucharadita jugo de limon

Chocolate orange Marmalade Brownies (recipe by Jamie Schler) Brownies de chocolate y mermelada de naranja










For a long time I wanted to make a recipe for Jamie Schler from Orange Appeal's book (Savory and sweet) and I was finally able to make these brownies because Christmas is coming and it does not stop by.
I knew first Jamie by her blog if you can look, amazing recipes and lovely writing in her blog : Life's a feast

Jamie's book is wonderful, I also adore the orange, it is also said that the combination chocolate / oranges is one of my favorites so they were warmly welcomed here at home.

They were so fresh in the morning that it cost me to cut them for the photo but it is a recipe that I recommend anyway.

Ingredients



60 grams  (2 ounces) unsweetened or bitter baking chocolate
30 grams (1 ounce) orange infused 70 percent dark chocolate  such as Lindt Excellence orange intense
3//4 cup ( 3 1/2 ounces)  all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (4 ounce/115 grams) unsalted butter at room temperature
1 cup (170 grams) light or golden brown sugar
1/4 cup (50 grams ) granulated white sugar
2 large eggs
1/2 teaspoon vanilla extract
1 tablespoons grand Marnier or Cointreau or 1/2 teaspoon orange extract
3 heaping tablespoons bitter orange marmalade



Method

Preheat the oven to 180° C (350 °F).

Lightly butter  a square pan (23 cm /9 inch)
or line with parchment  paper leaving several inches overhaging  for lifting the brownie out of the pan, lightly butter the foil or parchment.

Slowly melt both chocolates together in a doble boiler over simmering hot water . Remove from the heat when all but 1/4 of the chocolate  has melted then stir vigorously until all the chocolate is melted and smooth. 
Set aside to cool slightly.

Combine the flour, baking powder and salt in a bowl whisking to blend.

In a large mixing bowl, beat the butter and sugars together until light, smooth and creamy. Beat in the eggs, 1 at a time, just until combined.
Add the vanilla,grand marnier and melted chocolate and beat until smooth and blended, scraping down the bowl as necessary.

Fold in the dry ingredients by hand until well blended and smooth, not over mix.
 Gently swirl the orange marmalade, completely combining for an overall orange flavor, scrape the batter imto the prepared pan and smooth.
 Alternately, pour the batter into the pan and spoon the marmalade onto the brownies and swirl  in with a knife.
Bake about 30 minutes, until the center is set but still moist.


Remove from the oven and allow to cool on a rack before slicing. If the pan was lined with foil or parchmente, allow the brownies to cool for 10  minutes before lifting them out to a cooling rack.

Lemon curd cream brulee Cream brulee de limón)





 Always I say that : I love all with lemon, and if is cream brulee with lemon curd is amazing!

The citrus flavour adds freshness on this classic and delicious dessert.

Lemon curd Creme brulee

(6 servings)

Ingredients

600 ml double cream
zest and juice of 1 lemon
6 egg yolks
150 grams lemon curd (I used this recipe)
(Is the same  for Ice cream lemon curd)
60 grams caster sugar plus extra to sprinkle


Method

Preheat oven to 150°c .
Put the creamand zest in a pan and bring just to the boil. Beat the egg yolks in a bowl with lemon juice, lemon curd and caster sugar. Pour in the cream and whisk well.
Strain the custard trough a sieve in a large jug..
Pour into the ramekins. Put the dishes in a roasting tin and pour hot water into the tin about 2 cm.
Bake for around 25 minutes, until still wobbly in the centre. Remove from the roasting tin and leave to cool then refrigerate until cold.
Sprinkle a thin, even layer of caster sugar over the surface of each creme brulee. Caramelise under the grill or with a blow torch until golden brown. Allow the caramel to cool and harden before dusting with a little icing sugar.

Creme brulee de limon










Me encanta el creme brulee y más si es con lemon curd. 
Es absolutamente delicioso.

Ingredientes

600 ml the crema espesa o para batir
jugo y ralladura de 1 limon
6 yemas de huevo
150 gramos de lemon curd (use la misma receta del helado con lemon curd y además es en microondas)  ver aqui
60 gramos de azucar  más un poco más para espolvorear
azucar glass para espolvorear



Preparacion

Precalentar el horno a 150 grados C.
Colocar la crema y ralladura de limon en una ollita y calentar y dar un hervor.
Batir las yemas de huevo en un bowl con el jugo de limon, el lemon curd y el azucar.
Agregar a la crema y batir bien.
Pasar por un colador y dejar en una jarro.

Distribuir en los pocillos o ramekins. Colocar los pocillos sobre una fuente con 2 cm de agua caliente (baño maria)

Hornear por unos 25 minutos, hasta que el centro este un poco burbujeante. Retirar del horno y dejar  enfriar. Luego refrigerar. 
Esparcir una capa de azucar antes de servir y con un soplador o antorcha de cocina o el grill  dorar hasta que este color caramelo. Dejar enfriar y endurecer antes de servir.

cherry clafoutis ( Clafoutis de cerezas)






Cherry clafoutis is one of the easiest French desserts you can ever make. You can use fresh or frozen pitted cherries .
This baked custard can be served warm or at room temperature.
Delicious for every season.
I love this recipe for evry clafoutis is light and flavorful !

Note: Finally, a small note, I would love to publish more often, in fact I always have recipes and photos but sometimes I can't because  I m caring  my mom.

 I do not have time sometimes to do the post, I say this because  some of you  ask me , she is fine until now but sometimes she needs more of my care.

Ingredients

4 eggs separated
2/3 cup sugar
6 tablespoon all purpose flour 
2 teaspoon vanilla extract
1 cup heavy cream
1/2 teaspoon salt
3 cups fresh cherries or frozen pitted cherries
1/2 teaspoon lemon zest
powdered sugar (for dusting)



Method 

Preheat the oven to 180°c (375 F) Butter 6 smaller baking dishes or a large rectangular baking dish.

Combine the egg yolks and 1/3 cup sugar in a large bowl. Whisk until  ribbons form and add the flour, vanilla extract and cream. Beat the mixture until completely blended.
In another bowl  beat the egg whites together with the salt until foamy about one minute .
Then add the beaten egg whites into the batter mix lightly until incorporated .

In a medium bowl stir together the cherries, the remaining sugar and the lemon zest.  Pour the cherries sin the smaller baking dishes or the large baking dish. and top with the batter.
Bake until the clafoutis is set in the middle  (about 20 to 25 minutes)

Vanilla creme brulee (Cream brulée)





Creme brulee is one of my favorite desserts, soft, delicious and I love that sugar burned on the surface. 
I have done it other times but this recipe seemed simply delicious.
It is for any season or after any meal, it is always pleasant to eat.

Ingredients



2 cups heavy or half and half cream 
1 teaspoon vanilla extract (or vanilla bean)
pinch of salt
5 egg yolks
3/4 cups of sugar more for topping

Method

Heat oven to 170°c (325 F)
In a saucepan , combine cream, vanilla extractand salt and cookover low heat justy until hot. Let sit for a few minutes.
If you use vanilla bean discard now.

In a bowl beat yolks and sugar together until light.  Stir about a quarter of the cream into the mixture, then pour sugar -egg mixture  into cream and stir.
Pour into four  ramekins  and place ramekins in a baking dish , fill dish with boiling water halfway up the side of dishes.
Bake for 30 to 40 minutes or until centers are barely set. Cool completely about 2 hours.

When ready to serve , top each custard with about a teaspoon of sugar in a thin layer. If you use a torch melt the sugar carefully and form a crispy top. Allow the cream brulee to sit at least 5 minutes before serving.

Or place ramekins in a brolier 2 to 3 inches from heat source. Turn on broiler. Cook until sugar melts and browns or ever blackens a bit.

lemon glaze madeleines Magdalenas con glaze de limon)








If there is something that we love to bake here are madeleines  so that the other day there were complaints because they were very few !
Sometimes that happens. They assume that there will always be something baked or dessert.
 But  not always  I have the time.
Anyway, I hope to make madeleines again.(maybe tomorrow)
Here is the recipe  I used.
So good and delicious!

Ingredients

3 large eggs
1/2 cup superfine sugar
1 cup all purpose flour
1 teaspoon baking powder
100 grams unsalted butter melted and slightly cooled
plus extra for greasing


Lemon glaze


zest and juice of 1 lemon
1 cup more two tablespoons powdered sugar sifted


Method

Put the eggs and the sugar in a large bowl and using and electric mixer beat untiñ thick and pale, about 6 minutes,. Put tyhe flour and baking powder in a separate bowl and beat togetherto combine. Sift a third of the flour mixture over the egg mixture, carefully folding to combine using a spatula, then add the remaining mixture in two additions in the same way.

Take a large spoonful of the butter and add this to a small bowl along with the butter, mixing them to lighten the butter. Pour the butter mixture into the batter and gently fold together to combine. Press a sheet of plastic wrap onto the surface and then put in the refrigerator to chill for at least 2 hours before baking.

To make the lemon glaze

Put the lemon juice, zest and powdered sugar in a medium bowl and mix together using a wooden spoon until you have  a smooth glaze. Press a plastic wrap onto the surface of the glaze until needed.


An hour before baking grease a 12 hole madeleines pan very well and dust with a little flour. Transfer the pan to the freezer to chill.
Preheat the oven to 190° (410 F) when you are ready to bake spoon the batter into the madeleine molds.
 You don't need spread it out, as this will happens as the madeleines bake. 
Bake for 10 minutes until the edges have started to brown. Remove from the oven and turn out onto a wire rack.
 Let cool for 10 minutes before dipping into the glaze. Allow the excesss to drip back into the bowl before setting onto the wire rack, set over a piece of parchment paper to set.

Raisins brioche (Brioche con pasas)




Love brioche bread and one of my favorite on Tea time.
You can eat alone or with jam or cheese or others.
This is a basic brioche recipe, soft, light and delicious.
This is actually a very easy dough to make.
And if you would like see others recipes look in my label BREADS  I have other brioche recipes.
We ate yesterday with my mom and the kids only with some strawberry jam.

Ingredients


375 grams all purpose flour
180 grams butter
 15 grams fresh yeast  
1 egg
15 cl whole milk
100 grams sugar
 1/2 teaspoon salt
120 grams  dry raisins

For glaze 
1 medium orange (the juice )
and 1 yolk
or yolk and milk


Method

Heat the milk and butter in a saucepan until the butter is completely melted. Drain the fresh yeast in 6 cl of warm water.

Pour the flour into a bowl and add the sugar and salt. Dig a hole in the center and pour the dissolved yeast, the mixture of milk and butter warmed, as well as the egg previously beaten.
Mix until a smooth paste is obtained and kned it by folding it several times on itself.
Cover with a clean cloth and let rinse about 1 hours in a warm place.
Put the raisins in a bowl of warm water.
Work the dough again with the drained raisins.
You can shape the dough in many ways, a classic brioche (big ball with smaller ball in hole on top)or you can make 6 equal sized balls and arrange themn in a bread pan  (mine is 26 cm x 13 cm) 
Just before baking brush the brioche with the egg wash (be careful).
Cover with floured clingfilm and let to rise again for 1 hour.Preheat your oven at 190°c (375° F) for the first 10 minutes, then lower to 160° (320 °F) for another 20 minutes.
Bake until the bread is well risen and golden and glossy.
Let cool to room temperature  before slicing.

Brioche con pasas






Me encanta el brioche unos de los panes que mas me gusta hacer con el baguette.
Mi hija me decia que rico este queque mamá y le dije si pero es brioche!

Una deliciosa receta para el te o el desayuno.

Ingredientes

350 gramos harina sin polvos de hornear
180 gramos de mantequilla
15 gramos levadura fresca
1 huevo
15 cl leche entera
100 gramos de azucar
1/2 cucharadita de sal
120 gramos de pasas

Para  baño de glacé

1 yema de huevo
con el jugo de 1/2 naranja
o una yema con un poco de leche

Preparacion

Calentar la leche con la mentequilla en una olla pequeña hasta que este completamente derretida.
Remojar la levadura fresca en un poco de agua tibia.(6 cl)
En un bol poner la harina y agregar el azucar y la sal.
Hacer un hoyo en el centro de la harina y agregar la levadura diluida en agua tibia.Agregar la mezcla de leche y mantequilla y tambien el huevo batido.
Formar una masa suave y doblar varias veces amasando un poco (si se necesita agregar harina)
Cubrir con un paño de cocina y dejar por una hora en un lugar temperatura ambiente.
Por un rato colocar las pasa en agua tibia.
Retirarlas y agregarlas a la masa, uniendo bien.
El briuoche se puede hacer en varias formas. Haciendo pancitos pequeños o colocar enh un molde alargado se hacen seis peolotas pequeñas (como tenis) y se colocan en el molde se tapa y se deja reposar.
Reposar por 1 hora.
Por mientras prender el horno a 190° c.
Antes de llevar al horno pintar con una mezcla de yema batida con leche o jugo de naranja.
Llevar a horno primero unos diez minutos, despues bajar el calor y hornear por unos 20 minutos mas.
Debe estar dorado y seco.
No cortar hasta que este frio.
