Pastelera Calameña (corn pudding of Calama)







I have made others corn recipes ,pastel de choclo (corn pudding) they  have different ways throughout the country  and now I find and old recipe from the north of Chile, Calama.
This is more sweet than others but really delicious.
I adapted this recipe from an old cook magazine, "Saber comer y vivir mejor" year 1969.

We love eat corn pudding with tomatos salad




Ingredients
 (5- 6 servings)

5 larges corns grated
or 2 bags  frozen corn about 
500 grs each one (grinded)
or corn tins.
2 tablespoon of butter or vegetal oil
4 tablespoons onion finely chopped
4 tablespoons of heavy cream
4 eggs
salt tasted
1/2 cup of  sugar
glass sugar to sprinkle
basil leaves (optative)

Method

In a large pan fry the onion in the butter or oil and add the corn mix  already ground in a blender.
Stir constantly for about 15 minutes over low heat.
add eggs one by one.

Seasoning to mix with salt and pepper, add the granulated sugar and finely chopped basil (optional)

Butter some ceramic dishes and preheat oven at 180°c
and filled with the corn cream sprinkle with sugar and bake at oven by 15 to 20 minutes or until they have a golden crust.

Serve with chopped tomatos.

Pastelera calameña











Esta pastelera de choclo (aprovechando los últimos choclos aunque siempre puede hacer con choclo congelado y queda muy bueno)fue un hallazgo para mi, buscando algo que hacer algo para el día de la cocina chilena (mañana 15 de abril) muchas de las recetas ya las he hecho hace tiempo y quería algo rico, encontré esta receta en unas revistas antiguas de mi mamá
"Saber comer y vivir mejor" en ese tiempo que era directora Laurita Amenábar , en ese tiempo no habían programas de cocina ni muchos libros de receta pero estas revistas son muy buenas, mi mamá me las regaló hace tiempo y las leo de vez en cuando y tienen estupendas recetas.

Me encantó encontrar esta pastelera del norte porque sé poco de la cocina del norte, y quedó absolutamente delicioso.

Es curioso como las mismas recetas típicas a veces son diferentes a lo largo de Chile pero igualmente deliciosas.
La receta original no lleva albahaca pero yo le puse un poquito porque no puedo no ponerle albahaca al choclo, pero le puse optativo. :)
Con esta receta me uno a los Blogegrs chilenos en el dia de la cocina chilena mañana 15 de Abril.

Ingredientes 
(5 a 6 porciones)

5 choclos grandes 
rallados o pasados por la licuadora
o 2 bolsas de choclo congelado de 
500 gramos cada una molido 
2 cucharadas de mantequilla 
o aceite
4 cucharadas de cebolla picada fina
4 cucharadas de crema
4 huevos
sal al gusto
1/2 taza de azucar granulada
azúcar para espolvorear
hojas de albahaca picada (optativo)

Preparación
En una olla grande freir la cebolla picada en la mantequilla o aceite (you usé aceite ) y agregar el choclo rallado o molido en la licuadora.
Revolver constantemente hasta cocer el maiz, más o menos unos 15 minutos.
Retirar del fuego un poco e ir agregando los huevos de a uno . Mezclar bien y sazonar con sal y pimienta  y agregar el azúcar granulada.
Cocer unos minutos más siempre revolviendo y agregar si se quiere un poco de albahaca picada.
Enmantequillar las fuentes de greda o de cerámica y rellenar con la mezcla de choclo, espolvorear encima con azúcar y llevar a horno unos 15 minutos, o hasta que la costra de la superficie esté dorada.
Servir con tomates picados.

Tapioca pudding









The first time I heard about tapioca pearls was in a Jorge Amado book (from Brasil) and alway I wanted make  something with tapioca.

 Anyway , my mom is at home after surgery and need a special diet, time ago  I find  a tapioca recipe that I bookmarked from Saveur.com

It was delicious and she loved it because as a child  she always ate tapioca.
She is from Punta Arenas to the South of Chile.







Tapioca pudding

Ingredients (6 / 7 servings)

4 cups milk

3/4 cup large pearl tapioca


1/4 tsp.  salt

1teaspoon of vanilla extract


1 cup heavy cream


1 cup sugar


4 eggs, separated

Ground cinnamon, to garnish


Method


Bring milk, tapioca, salt, and vanilla  to a boil in a 4-qt. saucepan over medium-high heat; reduce heat to medium-low and cook, stirring, until tapioca is tender, 20 a 25 minutes.
Whisk together cream, 3/4 cup sugar, and egg yolks in a medium bowl.

 Whisking constantly, add egg yolk mixture to tapioca; cook, stirring, until mixture thickens and just begins to boil, 8–10 minutes.

 Remove from heat and transfer to a large bowl; let cool to room temperature.
 Meanwhile, whisk egg whites until frothy. While whisking, sprinkle in remaining sugar; whip to stiff peaks.

 Fold whites into pudding and divide between 6 or 7 bowls; chill. Sprinkle with cinnamon.

Budín de Tapioca










La primera vez que escuché hablar de la tapioca como un ingrediente delicioso para hacer postres y cremas fue en unos libros de Jorge Amado, un escritor brasileño maravilloso.

Desde entonces siempre pensé en hacer algo con tapioca y hace un tiempo encontré esta receta  en Saveur.com y ahora que mi mamá está en mi casa y no puede comer cualquier cosa, le hice este postre que le encantó porque dice que cuando niña  lo comía siempre en Punta Arenas.

Como Chile es tan  extenso a veces lo que se come en un lugar en otro no, mi mamá siempre me ha hablado de tapioca y ruibarbo que es típico de Punta Arenas.

Ingredientes

4 tazas de leche
3/4 taza de tapioca
1/4 cucharadita de sal
1 cucharadita de vainilla
1 taza de crema o nata espesa
1 taza de azúcar
4 huevos (separadas las yemas de las claras)
Canela molida para espolvorear

Preparación

Hervir la leche, con la sal y la vainilla, en una olla mediana a fuego suave.
Revolviendo todo el rato y  cocinar durante  20 a 25 minutos.
Aparte batir la crema, con 3/4 taza azúcar y las yemas de huevo en un bol mediano.
Batir continuamente y agregar este batido de temas a la tapioca.
Revolver y cocinar bien hasta que espese, de 8 a 10 minutos.
Retirar del fuego y poner en un bol grande.
Dejar enfriar a temperatura ambiente.
Aparte batir las claras con el resto del azúcar. batir como un merengue firme.
Repartir en pocillos y espolvorear con canela.
Refrigerar hasta servir.

Cheese and tomato eggplant pudding (budìn de berenjenas con queso)








Exotic in taste and texture, eggplant can be prepared in a variety of different ways. From ovenroasting to grilling eggplant can be a staple in any diet.
 Eggplant is largely made from water, so some care in properly preparing it for the cooking method of choice definitely comes into play.


Eggplant is perfect for simple, creative, delicious dishes. Eggplant is wonderful in salads, soups, main courses, casseroles and side dishes.

This recipe is adapted from "La cocina Popular" book from Mariana Bravo Walker. An antique food book from Chile, I ve' had mine by many years.


The recipe







Ingredients (6 serve)

5 eggplants or aubergines
6 tomatoes in slices
3 eggs
salt and pepper
2 onions minced
oil
3 tablespoon og grated cheese or
150 grs. gouda or mozarella cheese
2 tablespoons of breadcrumbs

Method
Wash the eggsplants and cut into slices unpeeled .
Place  in salted water for 1 hour .
Remove and dry with a clean cloth,

 In a skillet, saute the eggplant with oil and seasoning it well with salt and pepper Reseve.
Sauté the onions.
Prepare a large dish or pyrex place a layer of aubergines, an then a layer of chopped onions.
Then place a layer of tomatoes,  put the  cheese (grated or other)and repeat the layers.
Beat the eggs and empty over the stew,  and cover with the breadcrumbs.
Place in the oven by  30 minutes medium heat (180° c)until is deep golden.

La textura y el color de la berenjena son deliciosas, y hay muchas formas de prepararlas, ya sea al horno, guisadas o al grill son sabrosas.
Esta receta es al horno y está adaptada del libro "La cocina popular"de Mariana Bravo Walker, un libro de recetas muy antiguo aquí en Chile, su primera versión es del año 1961 y de ahí en adelante se han hecho numerosas versiones. De hecho lo tengo desde que me casé porque es como para tenerlo a mano siempre.

La receta (6 porciones)

5 berenjenas medianas
6 tomates en rodajas
3 huevos
sal y pimienta
2 cebollas trozadas a lo largo (pluma)
aceite
3 cucharadas de queso rallado parmesano
o 100 grs. queso gauda o mozarella
2 cucharadas de pan rallado

Preparación

Lavar las berenjenas y cortarla en rodajas sin pelar.
Colocar en agua con sal por una hora.
Destilar y secar con un paño limpio.
Saltear en aceite por un rato.  Sazonar con sal y pimienta.Reservar.
Saltear las cebollas.
Preparar una fuente de arcilla o pyrex (para horno) y colocar por capas, las berenjenas, las cebollas y los tomates y luego el  queso, repetir las capas nuevamente.
Batir los huevos y vaciarlos sobre el guiso de berenjenas.
Finalmente espolvorear con el pan rallado. Llevar a horo medio  a 180° C. por unos 30 minutos o hasta que esté dorado.

Baked beans with basil and cheese (Budín de porotos con queso y albahaca)




Beans, porotos,judías, frijoles ,alubias etc. different names to the same, I made  this dish  with some beans that a friend gave me and is  a type of dark beans, but you can use any beans you have or you like.
Only soaked  in water all night and cook the following day.
With cheese are something special, believe me.

This recipe is adapted from a chlean recipe that I find iin a little book from Lider recipes, year 2009









THE RECIPE

Ingredients(4 to 5 servings)

500 grs. cooked  dry beans
250 grs. puree pumpkin
1 green pepper in slices
3/4 cup of basil chopped
1 chile pepper  chopped without seeds
 2 tablespoon of butter
1 tablespoon of flour
1cup of milk
1 medium onion chopped
salt and pepper
1 cup of  mozarella cheese in cubes
parmesan cheese to powder

Method

(To  prepare the beans)

Overnight Soak:



Place washed beans in a large stock pot. The pot should be no more than 1/4 filled with dry beans. Fill the pot 3/4 of the way with cold water. Allow beans to soak overnight or at least 6-8 hours. Drain soaking water. Rinse beans


Fill pot with soaked beans and fresh water to 3/4 full. Cook over medium heat and allow to boil until tender (About 1 hour)
Add salt.
 
In the blender make a puree with the middle of cooked beans.
In a bowl mix the beans puree and the pumpkin puree, add the green pepper, the chile pepper   and the chopped basil. Reserve.

 In a pot melted the butter to medium heat,  take out the fire and add the flour, and cook by two minutes.
Add the mik  and stir.
Put the pot at heat again, cook until is thick add the the beans mic.
In a frying pan heat 1 tablespoon of butter and cook the chopped onions by 5 to 8 minutes until is clare and cook.Join this mix to the beans .
seasoned with salt and pepper and mix with mozarella cheese in cubes.
Buttered an oven fountain and mepty the beans mix, add some cheese cubes and powder with parmesan cheese.
Bake at medium heat until is golden.
Serve with some salads.


EN ESPAÑOL

Porotos al horno con queso y albahaca

Una receta de porotos,judías, alubias, frijoles etc, todos nombres para lo mismo. Hice  esta receta con unos porotos que me trajo la Lucy (la Lucy es la Sra. que viene una vez a la semana a ayudarme) me trajos estos porotos o judías (tambien vienen del sur) porque mi hijo quería comer porotos y son de la cosecha de este año.
Quedó deilcioso, nunca los había hecho así.
Este tipo de judías o alubias son oscuras pero se puede hacer con cualquier tipo de porotos, solo hay que tener cuidado de dejar remojando en la noche,

Ingredientes (4 a 5 porciones)

500 grs. de alubias,judías o porotos  cocidos
250 grs de zapallo o calabaza hecho  puré
1 pimentón verde  picado fino
1 ají verde sin semillas picado fino
3 cucharadas de mantequilla
1 cucharada de harina
1 taza de leche
1 cebolla picada fina
1/2 taza de albahaca picada
1 taza queso mozarella en cubos
queso parmesano para espolvorear
sal y pimienta

Preparación

Para los porotos dejar remojando con agua fría toda la noche y al otro día cambiar el agua y cocer con un poco de sal durante 1 hora a hora y 1/2 hasta que estén ya cocidos.

En una licuadora o procesadora moler la mitad de los porotos cocidos como para puré. Reservar el resto

En un bol mezclar el puré de porotos  con el puré de zapallo o calabaza,agregar el pimiento, el ají y la albahaca.

En una olla derretir dos cucharadas de mantequilla a fuego medio, cocinar por 2 minuos. Retirar del calor y añadir la leche revolviendo.
Volver la oola al fueo y cocinar revolviendo hasta que espese, agregar a la mezcla de porotos.
En un sartén calentar una cucharada de mantequilla a fuego medio y calentar la cbeolla, unos 5 minutos hasta que esté blanda y transparente.
Verter la cebolla a la mezcla de porotos. Revolver bien y sazonar con sal y pimienta y un poco del queso mozarella picado.
Enmantequillar una fuente para horno y verter la mezcla, espolvorear con queso rallado parmesano.
Cocinar en tenperatura media/alta hasta dorar o gratinar.
Se puede servirn con ensalada de tomates por ejemplo.

I love Spring time because you really feel the changes in the airs, the little birds songs, an all this I live at home, two years I begin my Blog recipes (with shyness) in english and spanish recipes, because many people asked me by recipes from here, so I began to translate and sharing with you my recipes, that coming from my Mom (a lovely teach cook), my grands Mommys (one spanish and other chilean) and my own recipes and all the lovely recipes that I find in friends blogs on magazines cook and books.

2 ° Aniversario de Blog y un regalo para todos los que me visitan y dejan comentarios



Me encanta la primavera ya este mes que viene comienza pero ya está en el aire, en las flores, en las plantas, en los pajaritos recien nacidos, cuando hay sol (como hoy) ya es más cálido.

Justamente en este tiempo hace dos años comenzé este Blog de Recetas más que nada porque me pedían recetas que les tradujera del español al Inglés (Inglaterra,Usa, Canada, Australia, etc.) por eso es que al principio las recetas eran solo en Ingles, y despues pasé a postear en los dos idiomas.

Quiero agradecer a todos los que dejan sus comentarios, ya saben que los leo todos y trato de contestar siempre porque esto es así, interactivo, no podría postear si no estuvieran uds. y siempre me anima (aún en momentos difíciles) que a alguien le servirá la receta (lo sé por los mails que recibo y las preguntas que me hacen), a muchos que he conocido aquí los considero mis amigos más cercanos y eso es un regalo.
Como regalo rifaré o sortearé dos libros de de cocina chilena, uno en inglés y otro en español para los que comentan en español, aquí les pongo fotos de los dos libros que son preciosos (ni yo los tengo) fotos esupendas, estoy feliz de haberlos encontrado.
El libro en español se llama "Recetas Chilenas" y es una recopilación de las mejores recetas de Chile.
" En toda ciudad chilena que se respete hay un Mercado Central, donde se ofrecen los productos naturales de la zona. También los preparados con antiguas recetas de su localidad.".....

A little tour by Providencia Ave. Santiago de Chile

You know sometimes I made some posts about
differents places or cities inside Chile, Isla Negra, Valparaíso,Punta Arenas,Los Angeles etc. and now I made a little tour by Providencia Ave. near Santiago downtown because have lovely places and is a warm and kind part of the City.



Santiago downtown is as all the big cities, with many cars, smock and a lot of people, but Providencia is lovely.



Normally I go one or two times at week because by the childs doctors or others things. We go first in Bus and after in subway that let you exactly in Providencia. From my home to there is about 1 hour (I live at countryside)

Providencia is a so antique place that had many old and beauty houses, but now these house are now, restaurants, little Cafés,Bookstores, and many others stores, of course have buildings too and Banks but they dont like specially to me.




All the year and specially at now is summer, some restaurants or little caffés have tables in the footpath where you can take some Capuccino with some treats or sandwichs, many people work here so to the lunch time the tables are full.



Is a Startbrucks too but I dont take coffe there I will show you where go when we go there.











These pictures were taken early in the morning a nice time here with not many people, later is more full of cars and people of course. And Summer is special time that people enjoy in the little tables of the footpath to talk and take some coffe.

Are many bookstores near of the Coffes stores so you may see a lot of book but are so cost, to us. When I can I buy some books I love them




This flowers store is in the street I know it many years, all the year have lovely roses, sunflowers and many types of flowers.




Here one of the most beautiful things of Providencia, the little stores where sell differents type of fruits and veggis. Here lovely peaches, really nice. (this is the most beautiful time to peaches and others )









In the same place we find lovely cherries and strawberries. We bought to eat at home, some strawberries and cherries, so delicious.

Later I fin a little blueberries boxes and I bought two, so who guess what Iam going to make soon??????





In the Cafetto,german beer machine!





And I have the plasure to show you "The Cafetto" a lovely place where you may take Capuccino or eat some treats or lunch. This day we lunch, have little tables inside and out of the store and the food is absolutely nice.

Here some delicious treats they have to desserts or when you take the Coffe.Lemon Pie, croissants, blueberries muffins and some kücken that I post some recipes.



The bar where they made the drinks and natural juice (only natural) these day I drink a pineapple juice, but my favorite is raspberries, but all the juices are nice.



Mom drink a Pisco Sour, some of you know it is so nice, Pisco, lemon and ice, delicious.

Un pequeño tour en Avda, Providencia, Santiago de Chile.




Ustedes saben que varias veces he posteado acerca de lugares aquí en Chile, me gusta hacerlo porque hay mucha gente afuera que me pregunta por Chile, ni se imaginan como es o se imaginan mal.


He hecho posts acerca de Isla Negra,Valparíso, Punta Arenas, Los Angeles es lo que me acuerdo.


Ahora hago este de Providencia que es muy lina en esta época de verano.


Providencia es una comuna(casi como un pequeño pueblo) en que antes habían casas muy antiguas lindas pero ahora están llenas de restaurants, hoteles, locales comerciales, Café literarios y Cafés normales donde te puedes tomar un Capucchino con algo rico, un croissant, un sandwhich, un pie de limón etc.



No es dificil de llegar, para los que conocen Santiago, está cerca del cnetro de Santiago, uno se puede ir en Metro y llega ahí mismo al corazón de Providencia.



Normalmente voy 1 o 2 veces a la semana popr diferentes cosas o por los niños a veces los llevo al doctor o cuando necesitamos algo, acuerdense que vivo en el campo.


Lo hago así, caminamos hasta una parte en que pasan buses, tomamos uno hasta el Metro, ahí en el Metro atravesamos parte de Santiago hasta Providencia y ahí hay varias estaciones del Metro depende a donde una vaya.


Todo dura como 1 hora y un poco más.





Estas fotos las tomamos el Jueves pasado en una hora temprano en la mañana (es ideal) por lo tanto no se ven autos ni tanto movimiento, pero más tarde si se llenan las calles y todo eso.


Por supuesto que en Providencia hay Bancos y grandes edificios, pero por las fotos verán que no me causan mayor curiosidad.

En la primera foto a la derecha una foto en la calle en pleno Providencia, tienes muchos árboles.




Despues también a la derecha hay muchas mesitas de estas en la vereda, afuera de los cafés donde se puede tomar un Cortado o un Capucchino con un sandwhich o algo dulce.



Tambièn hay muchas librerías aunque debo decirles que aquí los libros son caros, yo cuando puedo me compro libros porque me encantan igual miro todas las vitrinas para ver que libros hay, a veces hay rebajas.(muchos libros vienen de fuera España, México, o USA o Europa y eso lo encarece)



Despues este negocio de flores, hay varios pero este es uno de los más antiguos que conozco y tiene flores todo el año. Rosas, girasoles,claveles, todo precioso.



Ahh La fruta es maravillosa, hay varios pequeños negocios en la calle que venden frutas, estos son melocotones o duraznos y estaban preciosos, también habían fresas y cerezas, nosotros compramos una pocas para comer despues.



Más tarde en un pequeño negocio encontré un pequeño negocio que vendían cajitas de arándanos, así que adivinen que haré pronto



Andabamos con mi mamá y los niños, fuimos a almorzar a un lugar chiquito pero precioso El Cafetto, al que vamos muchos años incluso (tienen un menú) puedes pedir en vez de jugo o bebida,vino blanco o cerveza.



Yo tomo siempre jugos son fantasticos y naturales, ese día tomçe Jugo de Piña o Ananás, pero el que me encanta es el de frambuesa,la verdad que todos son ricos.



Los niños comieron de entrada un plato que tenía aguacate o palta, tomates y queso, dicen que estaba deliciosa, nosotros comimos fondos de alcachofas, despues se podía elegir pollo a la mostaza con calabacines al vapor o ensalada de lechuga con salmón. la Espe comió ensalada de salmón, nosotros pollo a la mostaza.

A veces almorzamos, otras veces pasamos a tomar café pero nos atienden siempre igual de bien.
