Leche nevada con caramelo y almendras tostadas (Floating Island with caramel and toasted almonds)








An special dessert for a special date.
Happy Independence day !


Was a messy week but finally here Im.
Happy 18 th September to all in Chile and all these celebrate in other countries.

Ingredients

2 cups whole milk
1/2 cup heavy cream
3/4 cup sugar
4 beaten yolks
1 teaspoon vanilla extract
4 whites eggs
1/2 cup toasted sliced almonds


Caramel

1/3 cup sugar
3 teaspoon water


Method

I a medium saucepan bring the milk, cream, 1/3 cup sugar and yolks, stir well with a hand whisk until integrate all.
Cook over low heat without boiling, until the mixture thickens slightly about 12 minutes.
Remove from heat and add vanilla. Let cool.

Divide the custard into individual cups/glasses bowls.
Refrigerate back while the remaining ingredients is prepared.

Beat the egg whites until stiff with a pinch of salt. Meanwhile preheat the oven to 140°c.
When they are firm, gradually stir in the sugar and continue to beat.
Transfer the meringue onto a sheet tray linen with parchment in 5 equal piles. Cook the egg whites in the oven about 10 minutes or until golden brown slightly.
Remove the meringues and carefully scoop meringue into the cups or glasses.

Caramel

To make the caramel place the sugar in a saucepan with the water and heat gently until dissolved. Bring to a boil and simmer until deep golden in colour.
Drizzle caramel and sprinkle some toasted almonds.

Little chilean treats with dulce de leche (tapitas con dulce de leche y merengue)








September 18 is our Independence day so I made other chilean recipes.
These treats have dulce de leche and meringue over a little crust.
For other chilean recipes see in Typical chilean foods and Typical chilean treats.

Ingredients

6 egg yolks
2 eggs
30 ml sunflower oil or other
15 ml pisco or rum
1 pinch of baking powder
370 grams of all purpose flour

250 g. dulce de leche

Meringue
2 white eggs
1 1/2 cups of sugar
1/3 cup water
1/4 teaspoon cream of tartar
pinch of salt
Some  candy sprinkles


method


In a bowl mix the egg yolks and eggs first, beat oil and add rum or pisco,. 
Add the flour and pinch of baking. 
Mix well and place on floured surface kitchen. 
Join to have a mass for cutting pastries. If necessary add a little flour. 
Cut with cookie cutter masitas about 5cm 
Prick with a fork on one side only. 
Place on a baking tray with parchment paper and place in the oven at 180 ° C and bake about 10 minutes until they are lightly browned. 
Cool and fill with a little dulce de leche in each one and then the meringue. 
Sprinkle candy colored balls. 

For the meringue 

It is done in a double boiler. 
Put all ingredients in a bowl over a pot with water and beat with electric mixer for about 8 to 10 minutes until you have a good meringue for spreading. 

Cover the pastries  with meringue  will  be  already  with dulce de leche .
Allow to dry at room temperature for a while. 
You can let dry until next day (24 hrs.) or put in oven to low heat (160°c)  a few minutes and remove from oven.

Tapitas con manjar y merengue










Ya ad portas del 18 he hecho esta receta para complementar otras que he hecho de dulces chilenos.
Estas son unas tapitas que llevan manjar o dulce de leche y se cubren con merengue.
Feliz 18 para todos!

Ingredientes

6 yemas
2 huevos
30 ml de aceite
15 ml de pisco o ron
1 pizca de polvos de hornear
370 gramos de harina sin polvos de hornear

manjar o dulce de leche
mostacillas para espolvorear

Preparación

En un bol mezclar las yemas, huevos, aceite y pisco o ron, luego agregar la harina y la pisca de polvos de hornear,unir todo bien y colocar sobre la mesa enharina.
Si la masa aun esta pegajosa agregar un poco más de harina, hacer una masa como una bola.
Estirar la masa con el rodillo y cortar los discos con un cortapastas y pinchar los discos con un tenedor.
Llevar a horno y hornear durante unos 10 minutos en una bandeja de horno hasta que esten ligeramente dorados.
Se dejan enfriar y despues se rellena con manjar y se cubre con merengue.

merengue

Ingredientes
2 claras
1 pizca de sal 
 1 y 1/2 taza de azúcar
1/3 taza de agua
1/4 cucharadita cremor tártaro



Se prepara a baño maría.
En un bol colocar todos los ingredientes y colocarlo sobre una olla con agua.
batir con batidora eléctrica de unos 8 a 9 minutos hasta que tenga una consistencia de merengue,
Cubrir y dejar secar. 
Se pueden dejar secar hasta el otro dia temperatura ambiente o llevar a  horno a temperatura muy suave  unos minutos hasta que esten secos pero aun blancos.
retirar y dejar enfriar.

Turron de vino (red wine meringue/a vintage dessert)











When I was a child this was one of my favorites dessert .
Usually my chilean grand mom (abuelita Chela) made for Sundays or some special dates like Independence day (18 de Septiembre)
Is nice cook or bake recipes you remember people we love.
So this month I will try some chilean recipes.

 Anyway if you want look in my labels you cand find many chilean recipes.

This post is dedicate to Lory a new friend of mine who came from USA and cook amazing and  living with her family in Puerto Octay a beautiful place in the south of Chile.

Ingredients
5 glasses

1 cup of red wine
Sirah or Carmenere (or other red wine)
1 1/2 cup of sugar
4 white eggs
60 g chopped waltnuts

Method


In a bowl beat the egg whites with a pinch of salt. 
While the whites are whipping on medium speed to soft peaks boil the sugar syrup with the red wine.
Add slowly the hot syrup . Continue whipping until the mixture cools .
The meringue is ready when the bowl is no longer hot.

For syrup
Put a pan to medium heat with wine and sugar and boil for a while. 
The wine sauce is ready when you try  a bit with a spoon it looks like syrup. (threads) 
Gradually incorporate this  syrup  to meringue

Divide into glasses and sprinkle the chopped nuts. 
Leave in the refrigerator for about 15 minutes and serve.

El turron de vino es uno de mis postres favoritos. Era muy comun que mi abuelita Chela lo hiciera para fechas especiales o los Domingos en que normalmente ibamos a almorzar.
Hace mucho que no lo hacía.

Lo hice para empezar a poner recetas para este tiempo del 18 por lo menos algunas. En todos estos años he hecho tantas que 
me cuesta encontrar recetas distintas.

He hecho empanadas-sopaipillas- alfajores- empolvados- chupes de mariscos-pastel de choclo cazuela- caldillos de pescado tortas mil hojas- chilenitos-lanchitas en fin.
Pero siempre se encuentra algo distinto.

Esta receta es de Platos y Copas de un número especial de cocina chilena.

Pastelera Calameña (corn pudding of Calama)







I have made others corn recipes ,pastel de choclo (corn pudding) they  have different ways throughout the country  and now I find and old recipe from the north of Chile, Calama.
This is more sweet than others but really delicious.
I adapted this recipe from an old cook magazine, "Saber comer y vivir mejor" year 1969.
´

We love eat corn pudding with tomatos salad




Ingredients
 (5- 6 servings)

5 larges corns grated
or 2 bags  frozen corn about 
500 grs each one (grinded)
or corn tins.
2 tablespoon of butter or vegetal oil
4 tablespoons onion finely chopped
4 tablespoons of heavy cream
4 eggs
salt tasted
1/2 cup of  sugar
glass sugar to sprinkle
basil leaves (optative)

Method

In a large pan fry the onion in the butter or oil and add the corn mix  already ground in a blender.
Stir constantly for about 15 minutes over low heat.
add eggs one by one.

Seasoning to mix with salt and pepper, add the granulated sugar and finely chopped basil (optional)

Butter some ceramic dishes and preheat oven at 180°c
and filled with the corn cream sprinkle with sugar and bake at oven by 15 to 20 minutes or until they have a golden crust.

Serve with chopped tomatos.

Pastelera calameña











Esta pastelera de choclo (aprovechando los últimos choclos aunque siempre puede hacer con choclo congelado y queda muy bueno)fue un hallazgo para mi, buscando algo que hacer algo para el día de la cocina chilena (mañana 15 de abril) muchas de las recetas ya las he hecho hace tiempo y quería algo rico, encontré esta receta en unas revistas antiguas de mi mamá
"Saber comer y vivir mejor" en ese tiempo que era directora Laurita Amenábar , en ese tiempo no habían programas de cocina ni muchos libros de receta pero estas revistas son muy buenas, mi mamá me las regaló hace tiempo y las leo de vez en cuando y tienen estupendas recetas.

Me encantó encontrar esta pastelera del norte porque sé poco de la cocina del norte, y quedó absolutamente delicioso.

Es curioso como las mismas recetas típicas a veces son diferentes a lo largo de Chile pero igualmente deliciosas.
La receta original no lleva albahaca pero yo le puse un poquito porque no puedo no ponerle albahaca al choclo, pero le puse optativo. :)
Con esta receta me uno a los Blogegrs chilenos en el dia de la cocina chilena mañana 15 de Abril.

Ingredientes 
(5 a 6 porciones)

5 choclos grandes 
rallados o pasados por la licuadora
o 2 bolsas de choclo congelado de 
500 gramos cada una molido 
2 cucharadas de mantequilla 
o aceite
4 cucharadas de cebolla picada fina
4 cucharadas de crema
4 huevos
sal al gusto
1/2 taza de azucar granulada
azúcar para espolvorear
hojas de albahaca picada (optativo)

Preparación
En una olla grande freir la cebolla picada en la mantequilla o aceite (you usé aceite ) y agregar el choclo rallado o molido en la licuadora.
Revolver constantemente hasta cocer el maiz, más o menos unos 15 minutos.
Retirar del fuego un poco e ir agregando los huevos de a uno . Mezclar bien y sazonar con sal y pimienta  y agregar el azúcar granulada.
Cocer unos minutos más siempre revolviendo y agregar si se quiere un poco de albahaca picada.
Enmantequillar las fuentes de greda o de cerámica y rellenar con la mezcla de choclo, espolvorear encima con azúcar y llevar a horno unos 15 minutos, o hasta que la costra de la superficie esté dorada.
Servir con tomates picados.

mussels with garlic and parsley




 
 
 For these days of Independence day more than eat meat I prefer seafood or fish also my daugther doenst eat meat like you knoe so I find these lovely mussels and I made the day before we go to the beach.
I love this recipe is simple (like I love) and delicious.
I served with white rice.
 
Ingredients
 
1 k and half of mussels
3 garlic cloves
1 cup of chopped parsley
200 ml white wine
100 ml fish soup
salt and pepper
1 teaspoon of cornstarch
 
Method
 
 
 
Clean and wash the mussels and place in a pot  and cover with water. Cover the pot and bring to high heat for a few minutes.
Remove from the heat must be open if any closed discarded.

Place the mussels in a pot along with the garlic cloves and 1/3 of the chopped parsley.

 Add the white wine and cook over gentle heat.
Allow the alcohol to evaporate and add the broth fish (this may be fish bouillon cube)
Add salt and pepper and cornstarch dissolved in cold water.
Cook, stirring constantly using a wooden spoon until thick.
Stir well with the mussels and let stand with the lid on for about 20 minutes to settle the flavors.
Serve accompanied with slices of toasted bread or white rice or boiled potatos.

Choritos con salsa y arroz blanco













Para estos dias de fiestas patrias no hago tanta carne como veo que es lo normal. Me gusta comer empanadas por supuesto pero me encanta hacer cosas con pescados y porductos del mar.
Estos choritos los hice el día antes de que nos fueramos a la playa y encontré una receta fácil y deliciosa.
Lo servi con arroz blanco pero tambien pueden ser papas hervidas.

Ingredientes

1 kilo y medio de choritos
3 dientes de ajo
1 taza de perejil picado
200 ml de vino blanco
100 ml de caldo de pescado preparado
sal y pimienta
 a gusto
1 cucharadita de maicena

Seafood empanadas (from Chile)










First at all I have other empanadas recipes here, you can find different types of empanadas, also and Spanish empanada made for my Mom (a recipe of my  spanish grand mom) and meat empanadas, or other seafood empanadas.
Coco Pacheco is a chilean Chef famous for his Restaurant and seafood  dishes.

Ingredients

Dough

500 grs. all purpose flour
1 cup of warm water
2 tablespoon of butter
or margarine
1 teaspoon of salt
1 tablespoon of oil

Filling
2 tablespoon of oil
1 onion chopped
1 tablespoon of parsley chopped
1 teaspoon of flour
1 teaspoon of salt
200 grs. prawns or shrimp
1 mussels tin or 200 grs. mussels
(you can use others like clams or surimi chopped)

Method

In a bowl mix the all purpose flour with warm water the oil (warm by seconds in microwave) butter  and salt
Stir and knead until all ingredients mix well.
Make the dough into a ball and wrap in plastic wrap.
Let stand in refrigerator for 1 hour.

Transfer dough to floured flat surface and stretch it with the roller. to have a mass of 5 mm thick.
(If necessary stretch the dough before adding more flour) Cutting the dough into circles of 10 cm. diameter (usually use a plate of tea)

In a skillet heat oil over medium heat and fry the onion for a few minutes.
 Add shrimp, mussels or clams or other fillers. Add salt, parsley and stir well and finally the flour.
Stir and set aside  a few minutes.
To make empanadas  when the filling has cooled fill in the circles of dough with one or two tablespoons of filling. Brush edge of dough with beaten egg and close giving way pressing with your fingers.
 Must be properly closed. Fry empanadas  in hot oil until golden . Put them over   paper towel to dry the oil. Serve hot.

Chupe zapallarino (Seafood pudding)







I made this Chupe zapallarino (the name come from a place called Zapallar) to Good Friday Because I know I will make fish to   Easter Eve. Anyway this is a nice seafood pudding that you can make for every time or weather, always is nice.

The recipe is adapted from an  antique cook book "La buena mesa" from Olga B. de Edwards one of the best cook book from here.
I made this recipe to "El día de la cocina chilena " (chilean food day) you can see other recipes HERE-

We usually use these clay plates to this type of food (corn pudding, seafood pudding etc.)
You can use ramekins or ceramic plates.

Note : Sorry by the pics but Good friday was a cloudy day here and Im still with my cell:(


Ingredients (6 servings)

120 cc corn  or sunflower oil
1 garlic clove
2 tablespoon of paprika powder

1 1/2 cups of fresh  white breadcrums
soaked in a 1 cup of milk
1 onion chopped
3 cups of seafood (prawns or shrimp, mussels, crab meat etc.)
and save the cook water
(you can use 3 tins of different seafood)
or feeze seafood
1 tablespoon of butter
1 cup of grated  parmesan cheese
1 cup of heavy cream
2 yolks
salt and pepper

method
First prepare the sauce paprika powder in a pan heat oil and add the garlic, when  in heavy gold  removed . Turn off heat.
 Add the paprika powder, stirring with wooden spoon until blended.


 Pass through a strainer, you can save in a glass bottle for a month.

 To make the pudding in a pan put 2 tablespoon of the paprika sauce   and fry the onion chopped  add the crumbs that you soaked in milk,  add 1 cup of the juice  of seafood or 1 cup water, butter, grated cheese,  cream and yolks. stir well.
Add salt and pepper to taste.
 Cook over medium heat until it forms a smooth sauce, add the seafood liquid  if you need or add a little water but should be thick.
Pour the mixture into  clay bowls  or ceramic and sprinkle each with grated cheese cook on medium heat (190° c ) cook in oven  for about 30 minutes or until golden brown, serve still warm but without burnt especially in the case of clay retain heat.
Sprinkle with cilantro before serving

CHUPE ZAPALLARINO













Hice este Chupe Zapallarino para el pasado Viernes Santo, porque el pescado lo tenía para el Sábado en la noche.
Se  me ocurrió porque tenía todo para hacerlo y estaban mis papas o sea que eramos más.
Es una receta que  está en el libro "La Buena Mesa" de Olga B. de Edwards y como se sabe es un  referente de la cocina chilena, con esta receta adhiero al dia de la cocina chilena que se celebra mañana 15 de Abril y además los invito a ver otras recetas aquí.

Ingredientes

Para preparar la color

120 cc de aceite
1 diente de ajo
2 cucharadas de pimentón molido
o paprika

Para el guiso
1 1/2 taza de migas de pan blanco fresco
remojadas en una taza de leche
1 cebolla picada fina
3 tazas de mariscos cocidos o
3 tarros de diferente tipo (camarones, choritos o machas)
tambien se pueden usar congelados
si se cocinan reservar el jugo de la cocción
1 cucharada de mantequilla
1 taza de queso parmesano rallado
1 taza de crema espesa
2 yemas de huevo
sal y pimienta

Preparación

Primero preparar la color.
En una sartén calentar el aceite, con el ajo freir hasta que está casi quemado entonces retirar.
Retirar la sartén del fuego y agregar el polvo de pimentón o paprika revolviendo con una cuchara de madera hasta que esté bien mezclado.
Colar en un colado fino.
Esta mezcla como es en aceite dura hasta un mes.

Para el guiso
Se terminan de moler las migas de pan que se han dejado remojando, no cuesta nada con un tenedor.
En un sartén freir la cebolla ya picada fina con dos cucharadas de la mezcla de color chilena.
Agregar las migas reservadas que se remojaron en leche.
agregar una taza del líquido en que se cocieron los mariscos o agregar agua, agregar la mantequilla, queso rallado, crema, yemas, sal y pimienta.
Cocinar a fuego medio revolviendo hasta tener una consistencia homogénea, incorporar los mariscos, la salsa debe quedar más bien espesa.
Verter la mezcla en los platos de greda o de cerámica.Espolvorear con queso rallado.
Precalentar el hono a 190°c. Cocinar por unos 30 minutos.
O hasta que esté dorado.
Al servir tener cuidado porque la greda guarda el calor.

Arándanos sour (Blueberry Drink)









I mad this Blueberry drink especially for our group of  Blogger chilenos cuyo tema era appetizers and drink, in my blog I have some appetizers but only  other drink so I made this drink thinking in a special drink for us Pisco Sour.
If you find Pisco would be nice to make this but if not you can use Brandy.

And here in this blog  called  Eating chilean that is so nice and  I find a good review about Pisco drink.


Ingredients (4 servings)

  • 1 cup Pisco or brandy
  • 1 lemon,the juice
  • 3 tablespoon sugar or splenda
  • 3/4 cup of freeze or fresh blueberry
  • 1/2 cup of water
  • 1/2 cup of  chopped ice

Method

Place the pisco or brandy, lime juice, sugar, and blueberry in a blender. Blend until the mix is OK:
Add the chopped ice and mix again

Serve in glasses

Arándanos Sour
(Picoteos y tragos)







He hecho esta receta especialmente para nuestro grupo de Bloggers chilenos que este mes la idea
era hacer algo chileno de picoteo o tragos, asi que hice este Arándanos sour, que es muy bueno y que está inspirado por supuesto en el Pisco sour.
Aprovechen de hacer el trago en su casa y disfrutarlo en familia ya que no se puede salir a tomar mucho ja!

Ingredientes (4 copas)

1 taza de pisco
1 limón (su jugo)
3 cucharadas de azúcar o splenda
3/4 taza de arándanos frescos o congelados
1/2 taza de agua
1/2 taza de hielo picado


Preparación

En una licuadora mezclar los arándanos, el azúcar,el pisco y limón y agua, batir bien.
Despues agregar hielo y volver a batir.
Servir en copas.

Chilenitos (dulce de leche chilean treats) and Happy Independence day!

This is a very especial post, in remember the 21 persons died last  September 2th when a plain crash in Juan Fernandez island , all special persons, all loved human beings, travel to help and die.

We want to remember these lovely persons that always help people in Juan Fernandez Island specially after the Earthquake and  Sunami in the Island  in February 2010.
In this especial day when we will celebrate our Independence day we remember you, and  dedicated specially
to all of you...



These chilean treats chilenitos really are alfajores with dulce de leche and cover with a nice merengue in the top.
These have three layers and filling with dulce de leche.









CHILENITOS(alfajores with dulce de leche and merengue)
(12 servings)

Dough
1  1/2 cups all purpose flour
3 yolks
15 cc Pisco or rum

Filling
1 1/2cup of dulce de leche

Merengue

3 whites
pinch of salt
1 cup of glass sugar
1 teaspoon of cornstarch
1 teaspoon of vinegar

Method

In a bowl mix the flour, and add the yolks.Mix well with your fingers.Add the rum or pisco. You have to be a dough ball.
If is needed add some flour.
With a roll pin extend de dough in a floured surface.
With a round cookie cutter cut alfajores pinch  with a fork and place at  the oven.
Preheat oven to 190 ° c.
Cook by 10 minutes until are lightly brown.Let cool.
To fill with dulce de leche, first put on one side, spread with dulce de leche cover with another layer of alfajor and put back the dulce de leche, making three towers.


Make merengue
Whipp the whites and pinch of salt with an electric mixer until will be firm, add the icing sugar and beat well and then add the cornstarch and vinegar.
 With this merengue cover alfajores  and place on oven tray, decorate with colored beads or leave white.

Carry oven for 15 minutes over very low heat (170°c)until the meringue is dry and puffed a bit, they should not brown.

Transfer alfajores to a rack a nd let cool completely.

Chilenitos (alfajores con dulce de leche y merengue)
y Feliz dia de la Independencia


Este post es muy especial, pensaba mucho como hacerlo, porque por un lado estan las fiestas patrias y por otro nos han pasado tantas cosas. Es difícil.

Pero dentro del grupo de blogs chilenos hemos pensado hacer un homenaje a esos chilenos caídos
en un accidente de avion el pasado 2 de Septiembre en la Isla Juan Fernández, accidente que la mayoría de ustedes conoce porque ha salido en diarios y televisión.

Conocía a algunos de ellos no en forma especial pero simpatizaba con sus logros y esfuerzos, de hecho este grupo viajaba a la isla para inaugurar locales que habían sido destruidos para el terremoto (febrero 2010) y el posterior Sunami.

En la Isla la vida es difícil  y toda ayuda que les llega  es muy bie n recibida. parte de este grupo que murió justamente habían estado ayudando en forma continua.
De hecho la escuela había sido restaurada por las mismas personas.
Bueno este post va dedicado a esas maravillosas 21 personas (incluida la tripulación) que fueron tan especiales, por eso no nombro a nadie en especial porque no quiero hacer diferencias. Leyendo acerca de ellos me he dado cuenta que todos eran  especiales y solidarios, para ustedes este post..

Receta Chilenitos

Para los que no conocen los Chilenitos (así se llaman) son alfajores (que he hecho anteriormente)
rellenos con dulce de leche o manjar y cubiertos de merengue que va un rato al horno para que quede más firme. Desde chica me han fascinado y es la primera vez que los hago, acá fueron un éxito tendré que hacer de nuevo porque mi mamá quiere que le lleve.
Pero no son difíciles e incluso uno puede hacer primero las masitas y rellenar y cubrir al otro día.

Ingredientes

1 1/2 taza de harina sin polvos de hornear
3 yemas
15 cc de pisco o ron

Para rellenar
1 1/2 taza de manjar o dulce de leche

Merengue

3 claras
1 taza de azúcar flor o azúcar glass
1 cucharadita de maicena
1 cucharadita de vinagre

Preparación

En un bol mezclar la harina con las yemas primero, uniendo bien, agregar el pisco o ron y unir bien.
Se debe formar una bola de masa.
Si se siente muy húmeda agregar un poco de harina.
Con un rodillo extender la masa en una superficie enharinada. la masa debe ser más bien delgada.
Precalentar el horno a 190°c.
Con un cortador de galletas redondo cortar los alfajores y pinchar con un tenedor sólo por un lado las masitas.
Colocar en una bandeja de horno. Hornear por unos 10 minutos.
No deben quedar muy dorados sólo un poco.
Dejar enfriar.
Para rellenar poner un poco de manjar sobre un alfajor colocar encima otro y volver a poner otro poco de manjar, asi quedaran de 3 capas.
Reservar mientras se prepara el merengue.

Merengue

Batir con una batidora eléctrica las claras con la pizca de sal, hasta que esten firmes, agregar el azucar flor y mezclar bien, finalmente agregar la cucharadita de vinagre y la de maicena.
Con este merengue cubrir los alfajores por todos lados y poner en una bandeja de horno, decoraer si se quiere con mostacillas de colores o dejar blancos.
Llevar a horno a 170°c (horno muy suave) por unos 15 minutos.
La idea es que el merengue se seque un poco y se infle, quedan más grandes y bonitos.
No deben dorarse solo secarse por eso el horno debe ser muy suave.
