Turron de vino (red wine meringue/a vintage dessert)











When I was a child this was one of my favorites dessert .
Usually my chilean grand mom (abuelita Chela) made for Sundays or some special dates like Independence day (18 de Septiembre)
Is nice cook or bake recipes you remember people we love.
So this month I will try some chilean recipes.

 Anyway if you want look in my labels you cand find many chilean recipes.

This post is dedicate to Lory a new friend of mine who came from USA and cook amazing and  living with her family in Puerto Octay a beautiful place in the south of Chile.
Her blog is Our chilean adventure and yo can visit her and Jim (her hubby) she has amazing pictures.

Ingredients
5 glasses

1 cup of red wine
Sirah or Carmenere (or other red wine)
1 1/2 cup of sugar
4 white eggs
60 g chopped waltnuts

Method


In a bowl beat the egg whites with a pinch of salt. 
While the whites are whipping on medium speed to soft peaks boil the sugar syrup with the red wine.
Add slowly the hot syrup . Continue whipping until the mixture cools .
The meringue is ready when the bowl is no longer hot.

For syrup
Put a pan to medium heat with wine and sugar and boil for a while. 
The wine sauce is ready when you try  a bit with a spoon it looks like syrup. (threads) 
Gradually incorporate this  syrup  to meringue

Divide into glasses and sprinkle the chopped nuts. 
Leave in the refrigerator for about 15 minutes and serve.

El turron de vino es uno de mis postres favoritos. Era muy comun que mi abuelita Chela lo hiciera para fechas especiales o los Domingos en que normalmente ibamos a almorzar.
Hace mucho que no lo hacía.

Lo hice para empezar a poner recetas para este tiempo del 18 por lo menos algunas. En todos estos años he hecho tantas que 
me cuesta encontrar recetas distintas.

He hecho empanadas-sopaipillas- alfajores- empolvados- chupes de mariscos-pastel de choclo cazuela- caldillos de pescado tortas mil hojas- chilenitos-lanchitas en fin.
Pero siempre se encuentra algo distinto.

Esta receta es de Platos y Copas de un número especial de cocina chilena.

Blueberry kuchen (chile) a Guest post






It is with great pleasure to have a a guest post from Gloria from one of my favorite blogs Canela Kitchen especially for wonderful cakes served with tea.


Gloria is a sweet Mum to twins and lives in Chile a country on my bucket list. I asked for a traditional recipe from there and so interesting to learn that German cakes are famous in Chile. I hope one day to visit Chile and have tea and cake with my friend Gloria ;-)



Rebecca from the lovely blog Chow & Chatter invited me to make a guest post, I accepted with
pleasure I love Rebecca blog, love her recipes, her travels and pics... and her kids LOL

She said I would make any recipe from Chile, I choose this Kuchen recipe with blueberries, especially all of you are in summer and can use blueberries or others berries.

In Chile we have a large tradition of german cakes or kuchen because in the south of Chile arrived many german people with their recipes and we love especially for Tea Time and if you want to look other kuchen see here, Normally is a cake with cream and fruits (berries or others)

Anyway Im from the South of Chile a place where rain a lot of time in the year and we love take tea or coffe with some goodies, so this was a natural choose for me.

This recipe is from a friend of mine, Moon a chilean that live in Atlanta, Ga. you can see others recipes of her here

Ingredients

80 grs. soft butter
1/2 cup of sugar
1 egg
1 1/2 cup all purpose flour
1 teaspoon of baking powder
3 tablespoon of milk
1 tin condensed milk
3 natural yogurt (whole) about 227 grs. c/u
250 grs, blueberries or blackberries

Method

Dough


In a bowl beat butter with sugar and egg.
Add flour and baking powder, alternating with milk. mix well.

Preheat oven to 180 ° c
Grease a round pan about 23 or 24 cm
Put the dough with your hands into the mold leaving a border along the edge of the mold.
Bake crust for 10 minutes. Remove and fill with the blueberries and then filling with the yogurt and condensed milk cream.
Bring back to oven for 20 to 25 minutes until the cream is firm and does not stick to fingers
Remove and let cool before cut.

Filling

In a bowl mix a can of condensed milk and 3 natural yogurts . mix well and refrigerate for 30 minutes.
Then pour the cream over the blueberries and kuchen crust, and place in the oven.

Kuchen de arándanos








Rebecca del blog Chow & Chatter me ha pedido que le haga un post acerca de Chile con alguna receta, y el kuchen fue mi elección porque yo soy del sur y es caracteristico tomar té o café con un trozo de kuchen, y en verdad, me trae muchos recuerdos de mi infancia y mi mamá o mi abuelita cocinando
para la hora del té.

La receta es de Moon, una amiga blogera chilena que vive en Atlanta Ga. y es absolutamente deliciosa.
Pueden ver otras recetas de Moon aqui.

Ingredientes

80 grs, mantequilla suavizada
1/2 cup of sugar
1 huevo
1 1/2 taza de harina sin polvos de hornear
1 cucharadita de polvos de hornear
3 cucharadas de leche
1 tarro de leche condensada
3 yogurts naturales
250 grs. de arándanos o moras
(naturales o congeladas)

Preparación

Masa

En un bol batir la mantequilla, azúcar y huevo luego agregar la harina y los polvos de hornear alternando con la leche.
Colocar esta masa en un molde redondo enmantequillado de unos 24 cm.
Extender la masa con los dedos dejando una pestaña.
Precalen tar el horno a 180° y cocer durante unos 10 a 15 minutos.
Agregar los arándanos o moras directo a la masa,
Sobre estos vaciar la mezcla de yogurt con leche condensada.

Relleno
Para el relleno mezclar el tarro de leche condensada con los yogurts naturales.
Dejar reposar en el refrigerador por unos 30 minutos y luego vaciar sobre la fruta en el molde,
Llevar nuevamente a horno para que cuaje la crema por unos  25 minutos hasta que se ve firme y no se pegue en los dedos.
Dejar reposar hasta que se enfrie completamente antes de cortar, despues guardar en el refrigerador.

Chilean Küchen with berries (Küchen chileno de mi amiga Kako)




This Küchen recipe (that means cake or tart in german) come from the Blog of my friend Kako, she is chilean but live now in Zwitzerland, in her blog have delicious recipes http://kako-enguete.blogspot.com/  is in spanish but she has translator.

I posted before about Küchen and this Kako's recipe come from the South of the Chile too.
The German arrived Chile around 1850 and make their lifes in this country so the german treats and   breads.started to be part of our cuisine and our life.

The küchen  is the pie that everyone wants to try, when they go to the south..


It is a cake of dough to which they  adds a sweet sauce of fruit such as raspberries, strawberries, raspberries, elder or cherry, among others, and then cream. This is just the basic recipe for kuchen, as there are many ingredients that can be used, such as ricotta, apple and walnuts.

The story goes that over time, the grandmother (oma in German) were able to reap a vast knowledge of each recipe for küchen. They jealously guarded recipes and secretly transmitted them their daughters and granddaughters, representing a family treasure.


Each family had its own way of preparing and kuchen at parties was a challenge to choose who had the most delicious dessert.

The Recipe

Ingredients küchen dough

100 grs. butter or margarine
3/4 cup of sugar
2 eggs
1 1/2 cups of flour
2 teaspoon of baking powder
milk the necessary to the a soft dough
I used a spring pan about 20 cm. diameter

Filling
300grs. of differents berries (I make with strawberries and frozen raspberries)
2 cups of whole milk
1/2 cup of sugar
liquid vanilla
2 yolks
1 tablespoon of flour
1 tablespoon of cornstarch
cold milk




Method

Beat the butter or margarine until is creamy add the sugar and mix well.
Add the eggs and join well.
Add the flour with the baking powder and a little milk, the batter will be creamy and thick.
Preheat the oven at 180 °.
Place the batter in the spring pan greased and bake by 15  minutes.
Let chill and reserve.

The filling

Heat the milk with the sugar, dont be boiled, only heat, until the sugar is dissolved. Take out the fire. and set aside.

Dissolve the flour and the cornstarch with 1/2 cup of cold milk.
In a bowl  spoon the milk with sugar to the cornstarch and flour mix, slowly.
And then place all the batter in a pot and heat to medium fire,and stirring constantly, when boiled  cut the fire inmediately.
Beat in  liquid vanilla.
The batter will be more thick later.

Place the berries over the kuchen dough (still with the spring pan)
If you like add some sugar over the berries.
And then empty the vanilla cream o ver the berries fruits.
Preheat teh oven at 180° again and place the kuchen inside.
Let by 20 minutes or until the cream look firm.
Let chill by 1 hour and dont desmold until is cold.
You may keep ta the fridge by 1 hour more.

Kuchen de crema con frutas silvestres

Esta receta es de mi querida amiga Kako, que algunos de Uds, conocen por su maravilloso blog  http:/kako-/enguete,blogspot.com/  la Kako hace fantasticas recetas y sus kuchen viene del sur porque ella es del sur de Chile aunque vive en Suiza.
Hace tiempo quería hacer este kuchen y por fin!!!!
Yo he publicado otros Küchen pero para mi este espectacular, es como estar comiendo unn trozo de Küchen en el sur, delicioso!
Los alemanes del sur llegaron a Chile alrededor de 1850 y venian derechamente a colonizar e shicieron maravillas.
Compartieron su cultura, trabajo ...y gustos gastronómicos, especialmente en recetas de este tipo.
En el sur es la maravilla ir a tomar "onces" (tomar té) a algún salón de Té o a una casa con estos küchenes y otras maravillas.
Lo sé porque ahí he estado, la Kako es de la zona de Puerto Montt pero esto es especialmente fuerte entre Valdivia y Puerto Montt.
Incluso yo que vivía en Concepción la primera receta que aprendí a hacer fue un Küchen de manzanas que me enseñó mi mamá. despues uno va conociendo y agregando recetas que vienenen de "Omas" muy antiguas como es el caso de la Kako, en fin recetas que se pasan de generación en generación, una maravilla.

El küchen puede tener berries, manzanas, ricotta o nueces picadas pero siempre es una maravilla.

Finalmente cada familia tiene su propia receta de küchen que se va compartiendo, así que , gracias Kako.





Ingredientes para la masa

100 grs. de margarina o mantequilla
3/4 taza de azúcar
2 huevos
1 y 1/2 tazas de harina
2 cucharaditas polvos de hornear
o polvos químicos
un poco de leche para la masa

Ingredientes para el relleno

300 grs. de frutos rojos (pueden ser fresas, frambuesas o arándanos frescos o congelados) (Yo usé frambuesas y fresas congeladas)
2 tazas de leche entera
1/2 taza de azúcar
vainilla líquida
2 yemas
1 cucharada colmada de harina
1 cucharada colmada de maicena
leche fría





Preparación  masa Küchen
(para un molde de 20 cm. diámetro) con fondo removible

Batir la mantequilla con el azúcar hasta que esté cremoso, agregar los huevos de a uno y unir bien, agregar un poco de leche, y la harina mezclada con los polvos de hornear. Unir bien.
Debe ser como la mezcla para un bizcocho, cremoso y firme, si se necesita se puede agregar un poco de leche o de harina.
Cuando la consistencia esté espesa vaciar al molde ya enmantequillado.
Precalentar el horno a 180° y cocinar por unos 15 minutos.
Retirar y dejar enfriar a temperatura ambiente.

Preparaciòn Crema y frutas

En una olla poner a calentar la leche  con el azùcar, la leche no debe hervir, sòlo se calienta para disolver completamente . Retirar del fuego y dejar entibiar un poco.
Disolver la harina y la maicena en 1/2 taza de leche frìa. Revolver bien y agregar las yemas.
Una vez que està todo diluìdo agregar por cucharadas la leche a la mezcla de maicena y harina. Unir bien y volcar  todo a una olla .
Colocar la olla a fuego medio y revolver constantemente, calentar solo un poco, agregar la vainilla y apagar el fuego.
Dejar enfriar a temperatura ambiente.
Sobre el bizcocho vaciar las frutas rojas, y encima vaciar la crema tibia (despues se pondrà màs espesa)
Llevar a horno (unos 180ºC)  `por unos 25 minutos o hasta que la crema se va firme.
Dejar enfriar un rato a temperatura ambiente. Despues llevar a la nevera por lo menos una hora para que estè firme al cortarlo y no se desmorone, estarà muy fresco. Mantener en la nevera.

Ricotta Pie with raisins (Küchen de Ricotta)


Here we have Pies and küchen really I dont know the difference but all are yummy, Pies normally come from recipes from USA and UK (lemon Pie,apple pie raspeberries pie etc.) and Küchen come from the south of Chile where many years ago arrive alot of german people and made the South their home and life.
Really the best Küchen I tasted are from the South Valdivia, Puerto Montt, Puerto Varas etc.
So I have a Label called : Küchen if you want to see more.
To my friends Kako in Suiza and Daziano in Canada this Küchen for you.



Ingredients
Dough:

1 egg
5 tablespoons of sugar
1 cup of flour
60 grs. butter
1 teaspoon of baking powder

In a bowl mix the butter and sugar, stir and add the baking powder, the flour and finally the egg.Join weel making a smooth dough.
Place the dough with a plastic wrap by 10 minutes in the fridge.
Later place the dough in a Tart or Pie mold (24 or 26 cm. diameter)
Preheat the oven to medium heat.


Ingredients
Ricotta Stuffed

300 grs. Ricotta cream cheese
1 tin condensed milk (sweetened)
2 eggs
1 teaspoon liquid vanilla
1 teaspoon grated lemon peel
1/3 cup of flour
2 tablespoon of corinto raisins

Mix the Ricotta cheese with the yolks eggs and add the condensed milk, vanilla and grated lemon peel.
Add the flour slowly and mix well. Beat the whites and add to the batter, finally add the corinto raisins.

Empty the batter over the dough in the mold.

Place in the oven to medium heat by 40 minutes until the ricotta mix is firm and little golden. Let cool by a while and you may place in fridge until you will serve.

Küchen o Pie de Ricotta

Realmente como decía arriba no sé bien la diferencia entre Pies, o Küchen pero aquí tenemos los dos y son más bien típicos del Sur de nuestro país, aunque ahora se ven en todas partes.
Pienso que los Pies (de limón, de manzanas, de frambuesas etc.) viene más de Inglaterra y USA, y los Küchen son más típicos del Sur de Chile, de hecho los más ricos Küchen los he comido en el Sur de Chile, Puerto Montt,Puerto Varas,Valdivia etc.
Esto sucede porque muchos años atrás llegaron muchos alemanes vivir en el Sur y de ahí que nos encante la repostería y pastelería del sur.
Si tu vas al sur en el Verano, en muchas casas (por lo demás preciosas) tienen un letrerito que dice "Se vende Küchen" y es tipico el alojamiento con desayuno y ...con küchen.

Esta recetas va con mucho cariño para la Kako (chilena en Suiza) y Daziano (chileno/Italiano) en Canadá.Para que recuerden los típicos Küchen.

Ingredientes masa

1 huevo

5 cucharadas de azúcar

1 taza de harina normal

60 grs. de mantequilla

1 cucharadita de polvos de hornear

En un bowl unir la mantequilla y el azúcar y batir uniendo bien, agregar los polvos de hornear, despues agregar la harina y el huevo. Hacer una masa suave.

Colocar esta masa envuelta en un film plásticos por 10 minutos en el refrigerador.

Despues sacarla y colocar en un molde de tarta,pie o Kuchen (24 o 26 cm diámetro yo uso los dos tamaños, la unica diferencia que uno será más pequeño.

Pre calentar el horno a temperatura media.

Relleno de Ricotta

Ingredientes

300 grs. de ricotta (o 200 grs. y un yogurt natural)

1 lata o bote de leche condensada

2 huevos

1 cucharadita de vainilla líquida

1 cucharadita de ralladura de limón

1/3 taza de harina normal

2 cucharadas de pasas corinto

En un bowl mezcle la ricotta con la leche condensada (si se va a ocupar la ricotta de 200 agregar el yogurt natural también)y las 2 yemas, agregar la vainilla y la ralladura de limón.

Agregar la harina uniendo bien a la mezcla, batir las dos claras y agregarlas a la mezcla en forma suave y luego las pasas corinto, cuando esté lista vaciar sobre el molde con la masa de pie o küchen y llevar a horno medio por aproximadamente 40 minutos hasta que la mezcla se vea firme y dorada, dejar reposar afuera del horno y luego dejar un rato en el refrigerador y servir frío.

English Scones from Punta Arenas













 

I have to recognize I'm  was in love from scones always!!
Mom made them all the time and my grandmotherwho was married with Maurice Baker (A lovely english gentleman who comes from England) always  love to make in Punta Arenas (the South of Chile) where they lived  and take scones and Thea with Britain Ladies.

 I dont know Punta Arenas still but Mom that born there and live until 12 th always talked  about there, so I know is a little cold around all the year Anyway is interesting you know more from Chile and their meals  like Punta Arenas I added a map and you can see how far is, to the final of the world..

My Grand father was a English engineering from Southampton, England and live  first in
 Argentina and there knew my Grand mother who come from SPAIN and they married and go to   Punta Arenas and he worked there by many years.
Of course Mom have a nice recipe, but the other day I find other recipe (similar) and I love it, so I made and here is the recipe for the people don't know how made them (I know the English people have yours!) This is from England too.


Ingredients

3 cups of plain flour
3 teaspoon of baking powder
1/2 teaspoon of salt
4 tablespoon ofbutter
1/3 cup of sugar
1/2 cup of warm milk

Preheat the oven to medium heat and line a baking sheet with a parchment paper.
In a bowl place the flour,baking powder, and salt, mix.
Add the butter until the mixture resembles breadcrumbs, stir the sugar and enough milk to mix a soft dough (but not wet or overly sticky).
Turn the dough in a floured surface knead light and roll out to 1 to 1 1/2 inch of thckness. Cut the scones round and place in the baking sheet.
Go to the oven by 15 minutes aprox. (ready when are a little golden) then cool on a wire rack.

So you may eat with, butter, differents jams, cheese or others you like with a delicious cup of Tea or Coffe, not problem.

Tengo que reconocer que amo los scones,mi mamà los ha hecho durante muchos años (reuniones,fiestas, cumpleaños etc.) y ella me cuenta que mi Abuela (casada con el inglès de la familia Maurice Baker y mi abuelo) siempre los hacìa (en Punta Arenas al sur deChile) y tomaba  el tè con las Ladies de la Comunidad Britànica ya que eran muy cercanas y se visitaban unas con otras a menudo
.
No conozco Punta Arenas pero mi mamà que naciò allà me dice que es una ciudad muy hermosa y que en el invierno hay mucha nieve (Le dicen la ciudad màs austral del mundo) . Cuando empezè este post pensè en sòlo colocar la receta de  los scones pero despues pensè que es una buena manera de que ustedes conozcan otros sitios de Chile, asì que he puesto un mapa (para que vean lo lejos que està, al final de Chile) y una foto de la ciudad.


Mi abuelo Maurice Baker fue un ingeniero inglès que vino de Southampton (un puerto inglès)Inglaterra,la verdad es que llegò a Argentina, allì conociò a mi abuela que venìa con toda su familia de Asturias, España (y por supuesto que ella no sabìa nada de inglès) y se casaron, luego por trabajo se vino a Punta Arenas donde tuvieron sus hijos, (mi mamà es la màs pequeña).


Bueno, por supuesto que Mami tiene su propia receta de scones (y me mira raro cuando yo hago otras pero confìa en mì) . Yo encontrè otra receta( muy similar) y muy buena y esa la pongo porque es la que hice hace unos dos dìas. Especialmente para los que no saben hacerlos, saca de apuro y son exquisitos para cualquier momento.





Ingredientes

3 tazas de harina normal
3 cucharaditas de polvos de hornear
1/2 cucharadita de sal
4 cucharadas de mantequilla
1/3 taza de azucar
1/2 taza de leche tibia


Precalentar el horno a fuego medio no muy fuerte, se hacen ràpido, colocar en la bandeja del horno un papel enmantequillado o engrasado.

Colocar en un bowl la harina, el polvo de hornear y la sal, mezclar. Agregar la mantequila mezclando haciendo pedacitos como migajas, agregar el azùcar con la leche para hacer una masa suave (pero no hùmeda o muy espesa, que sea manejable)
Colòquela en una superficie con harina y pasele el rodillo suavemente dejandoi la masa de una pulgada y media màs o menos, luego cortarlos redondos con un molde y colocarlos en la bandeja con el papel engrasado, si quiere màs altos no le pase el rodillo solo aplane con la mano.

Llevar al horno por unos 15 minutos aprox. y deje enfriar en una cesta con un paño.
Se pueden comer, solos, con mantequilla, mermeladas, queso con lo que uno quiera con una rica taza de tè o de cafè no importa, como les guste.

Hello from Los Angeles, Chile (south of the Country)





A big hug and greetings from Los Angeles, Chile with a very hots days, here lives my father in Law (hubby is born here) so we come all the years to see him , he lives alone now in a big house near the town.


I add two maps and you may see here we are, to the left the all map of Chile, you can see Region Metropolitana (Santiago) and above VIII Region, LosAngeles.
At the other Map you may see Los Angeles and other cities, the other days we went to Temuco and is not far, is a beauty city too.
I love the South because I m from of Concepciòn near Los Angeles (Two hours aprox).











I place the raspberries because Los Angeles is a big export of strawberries and blueberries to USA and Europe, Sometimes in this time I find strawberries to good prize and I take to Santiago freezen. Are really nice. I hope to find them and make Jam.

























Is curious Los Angeles, look this picture, a carreta with horses in town, you may see this things all the time, here is town and countryside, a lot of people live from the countryside, Animals, milks, so nice cheese, veggies, fruits, and woods (so sad) because are many trees.
Well I hope to return to Santiago next Friday and post again dears, The childs return to school and I have to buy some things.... xxxxxxxxxGloria
