And another Christmas has passed so fast, right?, I hope all of you. have had a beautiful holiday season, Anyway I did this recipe the last day before Christmas, I wanted made an special last Christmas recipe with all the flavors of Christmas and these cupcakes have ginger, cinnamon, orange peel ,clementine jam and brown sugar and they had a very good texture.
And I love this recipe because relaxed me of Christmas stress, you know.
Is decorated with redcurrants and mint leaves, the original recipe had marzipan figures, so you can do are you wish.
This recipe is adapted from the Australian site, Taste au.com
Ingredients
125g butter
200 grs brown sugar
1 tsp finely grated orange rind
60g (1/2 cup) grinded walnuts
80ml (1/3 cup) fresh orange juice
75g (1/2 cup) plain flour, sifted
1 cup self-raising flour, sifted
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon grated ginger
150 grs. clementine jam (or orange jam)
Icing
1 orange (the juice)
1 cup of ice sugar
Garnish with some berries and mint leaves
or marzipan
Method
Preheat oven to 170°C. Line twelve 80ml capacity muffin pans with cases. Use an electric beater to beat the butter, sugar and orange rind and clementine jam in a bowl until pale and creamy. Add the eggs, 1 at a time, beating well after each addition.
Add grind walnuts, flours, baking powder and orange juice. Add the spices.. Spoon into the lined pans and smooth the surfaces.
Bake for 30 minutes or until cupcakes are firm to touch. Set aside in the pans for 5 minutes to cool before transferring to a wire rack to cool completely.
Orange glace
Mix the glass sugar with orange juice and mix well. Set aside by a minutes.
Brush the glace over the cupcakes. and garnish with berries or marzipan.
Set aside for dry cupcakes.

Cupcakes de Navidad
Ya pasó otra Navidad. Bueno queda el Año Nuevo y Los Reyes en España, aquí en Chile igual que en muchos países se intercambian los regalos para Navidad. Igual se hace una cena especial.
Para el Año Nuevo es una cena(nosotros lo hacemos en familia) pero en otras familias para el Año Nuevo cenan fuera o van a otros lugares.
Bueno, ese día mismo de Navidad (o el anterior ya no sé) había visto esta receta de Muffins Navideños y me encantaron, especialmente por los ingredientes, yo queria una receta en que al comerlos uno dijera : esto es pura Navidad! y así fue. La mezcla de canela, nuez moscada y jengibre y la mermelada de mandarinas (puede ser de naranjas) le dio un toque especial delicioso.
Esta receta está adaptada del sitio Australiano (excelentes recetas) Taste. au.com (arriba está el link) Es una receta que si no la alcanzan a hacer dejenla para el proximo año les encantará.
Les quiero desear un muy Feliz Año Nuevo, y de todas maneras que sea mejor que el que pasó, un abrazo a todos.
Ingredientes
125 grs. de mantequilla
200 grs. de azúcar rubia
1 cucharada de cáscara de naranja rallada
60 grs de nueces molidas o picadas
1/3 taza de jugo de naranja
1/2 taza de harina normal
1 taza de harina con polvos de hornear
1 cucharadita de polvos de hornear
1 cucharadita de canela molida
1 cucharadita de nuez moscada
1 cucharadita de jengibre rallado o molido
150 grs. de mermelada de mandarina o naranjas
Glacé
1 naranja (el jugo)
1 taza de azúcar glass o azúcar flor
Para adornar algunas grosellas o berries y hojas de menta
Preparación
Precalentar a 170° C, Preparar una bandeja para muffins con cápsulas de papel. Rellenar 3/4 partes de las cápsulas.
Batir la mezcla con una batidora (velocidad baja) uniendo la mantequilla, azúcar rubia, naranja rallada y mermelada de mandarinas (o de naranjas), unir bien, agregar los huevos de a uno, mezclar bien.
Unir esta mezcla con las harinas, polvos de hornear, nueces molidas y jugo de naranja.
Agregar, la canela molida, nuez moscada, jengibre rallado o molido.
Con esta mezcla rellenas las cápsulas de papel .
Hornear por 30 minutos hasta que estén dorados y firmes al tocarlos.
Dejar por 5 minutos reposar y esperar que se enfrien antes de retirar de los moldes.
Glacé de naranja
mezclar el azúcar glass con el jugo de naranja, dejar reposar un rato antes de pintar los cupcakes, adornar con grosellas o berries y hojas de menta o hacer unos adornos con mazapán.
Se pueden guardar en un tarro se conservan bien 5 a 6 días.
