I wanted to make some muffins and made the other day and I find this nice recipe that is easy and tasty. Normally I have made Magdalenas (from Spain) because Mom always make them.

But I like this recipe because only have 1 egg and are so fast to make.

The problem how ever they eaten so fast too (I made them thinking in lunch boxes to school is an excellent recipe to kids) I think to make again soon.

I really love the smell when I made scones, magdalenas, muffins or some cakes.
I adapted this recipe from Paula's magazine (from Chile) year 1999.
I have made a lot of recipes from Paula Magazines are excellent and tasty.

Ingredients
(12 servings)

2 cups of flour (280 grs.)
1/2 cup of sugar or your taste
1/2 teaspoon of salt
2 teaspoon of baking powder
1/2 teaspoon of bicarbonate
1 1/2 cup of plain yogurt or sour cream
1 tablespoon of butter

Preheat the oven. (medium)

Butter some muffins mold.
In a bowl mix all the dry ingredientes and reserve.
In other bowl beat the egg, butter and yogurt.
Empty this mix of yogurt into the dry ingredients and join well with an spatula mix well and stop when the dry ingredients are moist.
The mix will be clotty and thick but not dry.

Place the mix in the muffins molds filling each one 2/3 mix.
Cook in the oven by 20 to 30 minutes until are golden.
Let rest in the molds by 5 minutes and desmold.
Serve warm. I serve with raspberry's jam.
Note: I used these teflon molds but the silicon molds are so good too.

Little fry empanadas(from Chile) (with cheese or beef meat)

I post these little empanadas because are so rapid, easy and you will make in any moment and.... may freeze the dough.

The pictures are little dark, sorry, because I made these little empanadas the other night, and I have to take the picture BEFORE the childs and hubby eaten them, you know how is this, you cook and they eat!!! and is all.
I filling someones with cheese (daugther semi veggi) and others with grinded beef meat, but you may filling with spinachs, chicken or sea food how prawns.

Mom has make this dough all our life and I understand why did.

To know the difference how is cheese and how is beef meat we cut different, the beef meat round punts and the cheese how a little square, you may cut how you like.
You may cut with a cut roll (as this to cut some dough how pizza or others) or fold and seal with a fork, but is important you seal well. This at right is similar at mine.

Ingredients

600 grs. plain flour

120 grs. butter or margarine soft

1 teaspoon of salt

water

vegetal oil to fry

Filling
300 grs .grinded beef meat

1 onion chopped
1 spoonful of corn meal

cummin,salt and pepper

2 tablespoon of vegetal oil

or mozarella or gauda cheese in little cubes

To make the filling: In a frying pan place the oil and add the chopped onion, cook for a while and add the beef meat, cook to medium heat, add the salt, pepper and cummin to your taste, stir well and add the tablespoon of corn meal and a little water, stir well and cook. Reserve.

Method

Place the flour in the table and add 100 grs. of butter and the salt, and add cold water making a dough not moist not dry. Roll this dough and spread over with the butter or margarine(20 grs.you reserved) and floured it , fold and spread again with butter and floured and fold the last time. Let rest by 1 hour to normal temperature.

When is ready cut a piece of dough and roll, if you need add flour to roll.

Roll to make a medium thin dough. Extend the dough and filling with the beef meat or cheese. and form a half-moon or rectangle, how you like. Cut with the cut roll or a knife, filling with the beef meat or cheese in little portions and fold the dough and moist the border and press with your fingers to seal well. The empanadas have to be well assemble.(If are not seal the cheese make little sprinkle)
Let in a tray to make all. Heat the oil to medium heat and try first with a little piece of dough, when is hot, fry the empanadas, about 3 or 4 at time and turn up when are little golden, let them in a large dish with a towel paper to dry the oil.

Macarons or mini cakes with Dulce de Leche (empolvados)

This is dedicated to the babie's girl of my Sis/friend Dhanggit , Her daugther is going to celebrated 1 year of life and Dhanghit invited to and event to this party. If you are interested in participate in this Dhanggit's party you may see her blog http://dhanggitskitchen.blogspot.com/

I made this recipes because is lovely to childs and all really. Is antique recipe from Colony times. I used the recipe of my friend Rosario from Chile who has so yummy recipes in her blog http://circulo-rosario.blogspot.com/. I made only little changes to be more easy for you, but is a wondeful recipe .

Rosario and many people don't use molds to make this but is difficults so I have some molds that you may look at the picture (aluminium molds) but atside I place other molds that you may have similar to the muffins molds, anyway if you find little molds you may make too, at wedding I seeing so little empolvados (here is the name) this and alfajores are typical to parties and wedding coktails.

Really I love this Rosario's recipe is so smoothy and tasty because the dough is as a light cake.

Ingredients

6 eggs

6 tablespoon of caster sugar

4 tablespoon of flour

3tablespoon of chuño flour (or corn flour)

(Chuño is typical of South America is flour of dry potatoes)

1/2 tablespoon of baking powder

1 tin of condensed milk (boiled) or see in LABELS in Dulce de Leche other form to make it, have some recipes.

Podwer sugar to finish.

Preheat the oven to medium heat.(170º)

METHOD

I boiled a tin of condensed milk (remember with water over the tin by 2 hours or 1 hour and half and dont open until is CHILL).

Beat the whites separated of the yolks and add 3 spoonfuls of caster sugar until are firm. Beat the yolks with the other 3 spoonfuls of caster sugar. Then join all slowly, add the flour carefully, baking powder, and chuño or corn flour. All the movement must be so slowly, join well.

In the baking oven place a parchment paper and place the molds that you choose, battered and powder with flour, fill the molds with this mix.

Bake at the oven until are little golden (about 8 minutes)

Let chill and desmold after let in a tray.

Take twice and join with dulce de leche as you like, make all and reserve, powder with caster sugar over the macarons or empolvados and serve.

Berries tartalettes with lemon curd...and 6 quirky things about me!

Yes first the recipe and then, the 6 quirky things of me... that tagged from my friend Marie of http://ayearatoakcottage.blogspot.com/ really make so little of these tags maybe by the time I think, but tagged by you Marie I know I have to make.

Is and other and delicious (I think) sweet recipe, is a time you know, I fall in love by a recipe and I die, so I have to do!!! The next will be sweet too because I have to do something to my sis in blogging Dhanggit that I love so and is her girl's birthday!! so a little patience to the savoy guys and then we return to the rithm savoy, sweet, savoy etc.....

I really love all types of berries, and I can't live without them and when I saw firt time this recipe at Better Homes Recipes I want to do soon, I adapted all because their recipe was with blackberries but the idea come from there and the dough recipe I use one so good of Martha Stewarts so here is the results.

Ingredients

To Piecrust:

2 1/2 cups all purpose flour
1/2 teaspoon of salt
2 teaspoon of sugar
1 cup unsalted butter,cut into pcs.very cold
1/4- 1/2 cold water

To lemon curd:
2 tablespoons unsalted butter,softened
3/4 powdered sugar
1 1/2 teaspoon lemon zest finely minced
2 large eggs
1/2 cup of lemon juice
1 spoonful of cornstarch dissolved in 1/3 cup of milk

Berries Topping:
2 cups of sort berries (I used raspberries and blueberries)
freeze or fresh
3 spoonfuls of powdered sugar
1 spoonful od cornstarch

METHOD

Dough: Put the flour, salt and sugar into a food processor and pul once or twice.
Add the butter and process until the mixture looks grainy (you may make in a bowl with your hands)
Then slowly, while pulsing, add the water until you can form the dough by pressing it between your fingers.
Decant the loose dough onto a piece of plastic wrap.
Using the wrap, fold the loose dough towards the middle and press with the bakc of your hands to form dough, least by 2 hours before using.
Dough can be ahead for up to one week.

Preheat the oven to medium heat, buttered some little molds and place in each one a few of dough and press round firmly into bottom and up sides.trim crusts even with top of pans. Prick bottoms of each crust several times with tines of a fork. Place the pans on a baking sheet. Bake for 10 to 12 minutes or until golden.
Cool completely on wire rack.

Lemon curd: In a medium mixing bowl, beat butter and sugar until light, add zest. Next add one egg at a time, beating after each addition, add lemon juice (mixture will be lumpy).
Pour mixture into a medium saucepan, cook over low heat, stirring constantly, add the cornstarch dissolved in the milk, until mixture thickens like a pudding, about 10 minutes. Remove from heat and allow to cool.
Spread the lemon curd over the mini tartalettes and reserve.

The topping: Place in a saucepan the cups of berries and the sugar and heat to slow heat, add the cornstarch dissolved in 1/3 of water, mix well and cook by a while. Cut the fire. Let chill and spread the berries over the tartalettes with lemon curd. Add amint spring if you like, and sift powdered sugar over tops (a little)
Makes 7-8 portions (depends the molds).
Finally....

6 quirky things about me......

1. I really like to pray when I travel in Bus or subway. Is absolutely necessary for me. Sometimes I pray for a while and read later, but always I try to pray.
I think now this begin when the kids were so little and I take away them from school and I have to go in Bus. And now that I live at the countryside is absolutely normal to me. I need to be in connection with God.

2. REALLY LOVE BERRIES, and for this Marie I choose this recipe for this Tag, I need to have Freeze berries or fresh berries in the fridge, not matter what time the year is I love them all year.

3. I talk with my Mom by phone all days and Mommy is my best friend.

4. I dont like Malls maybe as I live at countrytside when I go to some Commercial center or Mall I return with headache, but you know Im a Mom and sometimes I have to go with the childs.

5. I really love JEANS. By many times I have to use at office (before the childs arrived) a formal dress and I really HATE it. So now I LIVE in jeans all year (with T-shirts in Summer and blouses and sweaters in winter) and I have two or three things more formal to weddings, funerals and some ocassions.

6.When I travel to the beach for some weekend or summer I always travel with; sauces pan, molds, woodenspoons, spots, towel kitchen, molds and knifes and some spices that I know are not at the house I go. (This is when we go ALONE to some house if somebody invite me I dont make this) Is OK Marie??

Reservar.

Mètodo Lemon Curd;

Enjoy o disfruten.
