Classic Linzer tart











This Austrian specialty, associated with the city of Linz, is a tart filled with raspberry jam. Linzertorte is nonetheless a beloved tradition. Criss-crossed with strips of rich nut pastry, the diamonds of ruby-red jam peek through like jewels.
The crust of a Linzertorte may vary in color depending on whether the almonds are whole or blanched, and if the almonds are toasted. My personal preference is to use almonds grinded with peel..

This torte looks so pretty with a dusting of confectioners' sugar and maybe a dollop of whipped cream.







Ingredients

200 grs. all puropose flour
125 grs. grinded almonds
125 grs. of butter or margarine slightly softened
125 grs. sugar
1 egg
1 lemon zest
1 teaspoon of cinnamon powder
1 teaspoon of cacao powder
1 pinch of salt
250 grs. of raspberry jam
some milk

Method

You will need a tart pan about 24 or 26 cm.

Over a floured table mix the flour, salt, butter and sugar, knead with hands and then add the ground almonds lemon zest, cinnamon powder and cacao.Mix well with your figers. Knead  and   make a ball .Preheat the oven at 180°c.
Place in the fridge by 1 hour.

 Remove the dough from the fridge to extend it with a roller. Spread 2 / 3 of dough and save the rest for the lattices.
If you think is needed add some flour to extend

With floured hands, press two-thirds of dough into bottom and up side  tart pan with removable bottom.
Spread raspberry jam over bottom of tart shell to 1/4 inch from edge. Divide remaining dough into  equal pieces. On lightly floured surface, with floured hands, roll each piece into an 8 1/2-inch-long rope. Place 5 ropes, about 1 1/2 inches apart, over filling; do not seal ends. Make lattice top --  with remaining 5 ropes.
Brush with some milk.
Bake the tart for 30 minutes at oven.or until the pastry is golden brown and set. Let the torte cool on a wire rack before unmolding. Although you can serve this torte the same day as it is baked I like to cover and store it overnight before serving. This torte is lovely served warm with a dollop of whipped cream. Dust the top of the torte with confectioners' sugar.

Como muchos sabran esta deliciosa tarta viene de Austria (como muchas recetas deliciosas) obviamente hay pequeñas diferencias entre una y otra receta.Pero revisando varias no hay tanta diversidad, algunos en vez de almendras utilizan avellanas molidas que tambien son muy buenas para estas tartas.
Esta tarta con masa de almendras lleva un relleno de mermelada de frambuesas y es absolutamente deliciosa.


Ingredientes

200 grs. de harina sin poolvos de hornear
125 grs. de almendras molidas
125 grs de mantequilla o margarina  a temperatura ambiente
125 grs. de azúcar
1 huevo
ralladura de un limón (la cáscara)
1 cucharadita de canela en polvo
1 cucharadita de cacao en polvo
1 pizca de sal
250 grs. de mermelada de frambuesa
un poco de leche

Preparación

Se necesita un molde de tarta con fondo removible de unos 24 o 26 cm.
Verter la harina sobre la mesa de trabajo, hacer un hueco en el centro, agregar la pizca de sal, el azúcar, la mantequilla y el huevo, unir bien amasando con las manos y luego agregar las almendras molidas, la cascara de limón rallada, canela y cacao.
Unir todo bien con la yema de los dedos.
Amasar hasta que adquiera una consistencia arenosa.
Precalentar el horno a 180° c.
Hacer una bola con la masa y envolverla en film plástico, llevarla al refrigerador y dejarla por una
hora.
Extender 2/3 de la masa (el resto es para hacer el enrejado)
Extender con el rodillo y colocarla sobre el molde de tarta presionandola contra el fondo y las paredes.
Esparcir la mermelada de frambuesa sobre la masa de la tarta.
Extender el resto de la masa  y cortar tiras de 1 cm. más o menos, y colocarlas sobre la tarta para hacer el enrejado.Pincelarlas con un poco de leche.
Llevarla a horno por unos 30 minutos.
O hasta que esté dorada y firme.
Dejarla enfriar antes de cortarla o servir, si se hace el día antes es mejor.
Servir con un poco de crema batida (si se quiere) o con azúcar impalpable encima.

Plum and yogurt Ice Cream














As Fall comes to us for the northern hemisphere spring arrives and summer, even prepare ice cream (well I all year) and you can start seeing ice cream recipes.



I really love  natural ice creams   like this, in fact this mix has yogurt and plums  and was delicious!


Also I dont have ice cream machine (I'd love to have in the future) really  I make ice cream almost every time of the year.

The recipe

Ingredients(5-6 servings)


3 greek or plain yogurt
3 cups of plums chopped without seeds (dont peel)
1 cup of sugar


Method


Process the plums in a blender or similar machine,cut into pieces but without the bone, adding a little yogurt and sugar until a creamy consistency and homogeneous.



Then with a strainer to separate the cream of some pieces of skin
(dont worry if have some little peace of skin)
The skin give the colour.

Place the cream in a metal dish. and frozen in the freezer for 1 hour or  two  take out and  beat with a fork and refreeze.
Freeze by 1 hour more
Serve with fruit or cream.
For the balls Ice cream look nice I use a  good cream scoop .Keep in the freeze.

Ya se acerca el Otoño acá (aunque no se ha notado mucho aún hace calor) pero normalmente hago helados casi todo el año, pero aprovechando que aún hay ciruelas el otro día hice este helado de ciruelas.
Me encantan los helados hechos en casa especialmente con yogurt, jamás te caen mal y son deliciosos.
Este helado le viene bien a los que ya estan en Primavera y luego para el verano para que hagan helados, recuerden que no tengo máquina para helados (aunque me encantaría) así que es hecho en forma manual.
Lo que si para servir tengo varias cucharas o porcionadores de helados así para servirlos es mejor.

Ingredientes (5-6 porciones)

3 yogurt naturales o normales (que sean espesos)
3 tazas de ciruelas picadas, sin la semilla pero con la piel
1 taza de azúcar

1. En la licuadora o procesadora, moler las ciruelas en trozos, agregar de a poco el yogurt y el azúcar, porcesar hasta que la crema tenga una consistencia cremosa y homogénea.

A continuación con un colador pasar por cedazo para sacar los trozos de piel más grandes. (los pequeños ni se notarán despues)
Colocar la mezcla en una fuente metálica extendida y llevar a congelar por una hora o dos, despues retirar, batir con un tenedor y llevar al congelador por una hora más.hasta que esté sólido.
Se puede servir con frutas picadas o crema.
Despues de servir mantener en el freezer.

Breast chicken with panko crumbs and almonds

















This recipe I made almost suddenly , I had a few cuts of chicken breast and had to do something for lunch and had this recipe and was very good as I share with you.




To serve this dish I used cherry tomatoes  and basil , this type of tomatoes   are really  delicious and look  always nice .





Ingredients

1/2 cup of grinded  almonds
3/4 cup of panko  crumbs ( or bread crumbs)
5 or 6 pieces of chicken breast
1/4 teaspoon of black pepper
salt
3/4  of sour cream
1 tablespoon  barbacoa sauce




Method

 Preheat de oven at 200°C, .

 Blend the almonds in a food processor until coursely chopped. Combine with the breadcrumbs in a shallow bowl. Add salt and pepper 
 In a bowl mix the sour cream with barbacue sauce.

Pass the chicken breast pieces in the sour cream mixture .
Roll the chicken in the almonds and panko crumbs.
Put them in a oven tray.

Bake for 20 to 25 minutes or until crisp and cooked through. Let the chicken rest for 5 minutes so that the internal juices distribute evenly.
Top with some almonds slices and serve with salads.

Pollo empanizado con panko y almendras












Estas son de esas recetas que salen de repente y no requieren mucha preparación. Y a veces el resultado es superior a lo que esperabamos.
El Panko (un tipo de pan ralladopero más suave) es de origen japonés (y se encuentra en algunos supermercados)  pero se puede reemplazar por pan rallado común y corriente .

Ingredientes

1/2 taza de almendras picadas o molidas
3/4 taza de panko o pan rallado
5 o 6 trozos medianos de pechuga de pollo
1/4 cucharadita de pimienta negra  molida
sal a gusto
3/4 taza de crema ácida
1 cucharada  salsa barbacoa

Preparación



Precalentar el horno a 200°c.

Moler o picar las almendras en un procesador.
Unir  en un bol las almendras, el panko sal y pimienta. Reservar.
Aparte en un plato hondo mezclar la crema ácida con la salsa de barbacoa.
Pasar las pechugas de pollo por la mezcla de crema ácida y luego empanizarlas pasándolas por la mezcla de panko y almendras, presionandolas firmemente para que estas se adhieran bien.
Colocarlas en una bandeja o fuente para horno.
Hornearlas durante 20 a 25 minutos hasta que se ven crujientes y doradas y el pollo esté cocido.

Servirlas con algunas almendras en láminas   y ensaladas.

Sweet potatoes little puddings









I know many of you make sweet potatoes recipes only for some holydays (specially thanksgiving), but I enjoy make desserts or cakes when I find sweet potatoes, I love the taste and are amazing for desserts, I made this little sweet potatoes pudding yesterday and the kids loved them (me too of course) is with grinded waltnuts and cinnamon powder.

I adapted this recipe from a Nestlé site (I think is latinoamerican branch) but I dont remember what country, maybe Mexico or peru. but is nice, well go to the recipe...



Ingredients (5 ramekins)

3 cups of cooked sweet potatoes
1/2 tin of sweet condensed milk
2 eggs
1/2 cup of grinded waltnuts
1/2 teaspoon of powder cinnamon
2 tablespoon of brown sugar


Method


In a sauce pan boiled the sweet potatoes until are tender. Set aside

Preheat oven to 190°c. Grease ramekins with butter.

Mashed the sweet potatoes, and add sweetened condensed milk, eggs and cinnamon in a medium bowl and mix well. Add  the grinded waltnuts and mix well.
Pour batter into greased ramekins and sprinkle with some chopped waltnuts, add some brown sugar over them.

Bake for 20 minutes orn until they are boiling hot.
Let chill. Serve with whipped cream and some berries.

Postre de camotes o boniatos








Muchas personas hacen postres de camotes o pies para algunas fechas especiales, en mi caso lo hago cuando encuentro porque me encanta el sabor del camote, se adapta tan bien con distintos sabores y es realmente bueno y delicioso.

Este postre lo hice ayer y a los niños simplemente les encantó. Lleva nueces molidas y un poco de canela. Me encanta la canela!

Adapté esta receta de un sitio de Nestlé recetas, pero no recuerdo si era de México o Perú pero es una estupenda receta.
La receta original era para 10 porciones, pero era mucho así que reduje la receta a 5 porciones.
En general aquí en Chile se encuentran más camotes (en la vega, Líder,Jumbo etc.)antiguamente se hacían muchos dulces con camotes, pero como  ahora todo se hace rápido (una cajita y ya) supongo que hay gente que no conoce mucho los camotes.
Aquí mismo en mis labels (recetas) hay un suspiro limeño con camote que es un sueño.

Ingredientes (5 ramekins o pocillos)

3 tazas de camote o boniato cocido como para puré
1/2 tarro de leche condensada
2 eggs
1/2 taza de nueces molidas
1/2 cucharadita de canela molida
2 cucharadas de azúcar rubia


Preparación

Hervir los camotes en una olla mediana (con piel) pelarlos y molerlos como para puré.
Precalentar el horno a unos 190° c. Enmantequillar los bowl para el postre.Reservar.
Una vez que los camotes están molidos, unirlos con el medio tarro de leche condensada, agregar los huevos, la canela y las nueces molidas, unir bien.
Distribuir la mezcla de camotes en los pocillos.
Repartir sobre estos unas nueces picadas y un poco de azúcar rubia.
Llevar a horno por unos 20 minutos o hasta que esten burbujeantes.
Dejar enfriar.Servir con un pco de crema batida y algunas frambuesas si se quiere.

Plums and almonds muffins








The last week was a really stress week, you know, the kids, my daughter sick, my Mom, and ..we have to prepare some special party (for my sister in law) at home, anyway last Thursday I think I wanna make some nice and easy (I love bake) and made these muffins filled with plum and almonds slices, were absolutely nice...  Plums add an special taste to these muffins and moist the dough
Nice with a cup of tea or a coffe or others..
I adapted this recipe from Revista Paula Enero 2011.




Ingredients

60 grs. butter
3/4 cup of sugar
(I use light sugar like splenda, remember use the middle of the normal sugar)
2 eggs
300 grs. flour
grated peel of 1 lemon
pinch of salt
1  full tablespoon of  baking powder
125 ml milk
4 purple plums (remove pits )chopped
3/4 cup of almonds in slices

Method

Preheat oven to medium heat (180 ° c) and greased the muffin cups (12) book.
Also can be used paper caps that are placed inside the molds, it is easier to unmold.

In a bowl mix the butter and sugar, beat until mixture is foamy, add eggs one by one. Beating well after each addition to incorporate.

Beat in flour, lemon zest, salt and milk until mixture is smooth and homogeneous.


Incorporate the chopped prunes and half the almonds.


Stir to blend.

In the empty muffin mix and decorate with the remaining mufins almonds.


Bake for 20 minutes or until golden and dry.


Remove and let cool.

Muffins de ciruelas con almendras














La semana pasada fue dificil y estresante, ya saben esas semanas, los niños volviendo al colegio (no es fácil a veces) mi hija enferma (estuvo varios días en cama) y mi mamá con algunos problemas, y además teníamos que preparar un evento en nuestra casa para mi cuñada que estaba de cumpleaños.

Es como que se junta todo.
En fin el Jueves dije quiero cocinar algo, más bien hornear. Y tenía esta receta de mufffins con ciruelas y almendras, debo decir que quedaron buenísimos, además las ciruelas le dan un sabor y humedad especial a la masa.
Esta receta la adapté de Paula Cocina de Enero 2011.
Absolutamente aprobada.
Salen 12 muffins. Ideales para una taza de té o café o para que los niños lleven al colegio (son mejores que los que venden ya saben) y les encantan.











Ingredientes

60 grs. de mantequilla
3/4 taza de azúcar
(yo usé azúcar light ya saben  si es light  se debe usar la mitad que indica la receta)
2 huevos
300 grs de harina
1 limón su ralladura
Una pizca de sal
1 cucharada colmada de polvos de hornear
125 ml de leche
4 ciruelas moradas medianas en trozos y sin la semilla
3/4 taza de almendras en láminas

Preparación

Enmantequillar un molde para 12 muffins o usar cápsulas de papel así son más fáciles de desmoldar.
Precalentar el horno a temperatura media 180°c.

En un bol colocar la mantequilla con el azúcar, batir hasta que la mezcla esté espumosa y agregar los huevos de a uno incorporando bien.
Batiendo despues de cada adición para integrar bien.
Añadir batiendo la harina, la ralladura de limón, la sal y polvos de hornear y leche hasta que la mezcla esté lisa y homgénea.
Incorporar la ciruelas.Agregar la mitad de las almendras en láminas e incorporar bien.
Repartir la mezcla en los moldes de muffins hasta que estén dorados y secos por dentro.
Retirar del horno dejar enfria y desmoldar.

Chocolate soufflé











Long time since I made a chocolate dessert , and in the beach some day I made this chocolate souflée. I love the soufflé moist and fluffy and this was..

I know not all love chocolate but others (like me) really love it, specially en desserts o cakes!


I adapted this recipe from one of Martita Serani a cookteacher and chef from here.




Ingredients

300 grs.  bitter sweet chocolate (chopped)
1/2 cup of whipping cream
3 yolks
6 white eggs
1/2 cup of sugar
pinch of salt



Method



1. Brush 6 ramekins with melted butter and then sprinkle with granulated sugar.

Melt chocolate with the cream in a metal bowl set over a saucepan of barely simmering water, stirring occasionally until smooth. Remove bowl from heat and stir in yolks (mixture will stiffen).

Beat whites with a pinch of salt in a large bowl with an electric mixer at medium speed until they just hold soft peaks. Add 1/2 cup sugar, a little at a time, continuing to beat at medium speed, then beat at high speed until whites just hold stiff peaks. Stir about 1 cup whites into chocolate mixture to lighten, then add mixture to remaining whites, folding gently but thoroughly.

Spoon into soufflé dish and run the end of your thumb around inside edge of soufflé dish (this will help soufflé rise evenly). Bake in middle of oven(180°c) until puffed and crusted on top but still jiggly in center,about 18 to 20 minutes. Serve immediately.
If you like serve with whipped cream.



Note: A lot of people is afraid about soufflé but dont worry only take care with the oven time  and will be OK. I made many types of soufflé and really delicious.

Soufflé de chocolate








Hace mucho que no hacía algun postre con chocolate, de verdad, pero a los niños ý gerardo les encanta...y a mí tambien, asi que en la playa hicie un día el soufflé de chocolate que hace mucho no lo hacía y aproveché a tomar unas fotos para ponerlo en el blog.
Curiosamente no a todo el mundo le gusta el chocolate pero la verdad es que la mayoría lo ama. Por eso de vez en cuando me gusta hacer algo con chocolate.
Me gusta especialmente en postres y cakes.

Esta receta la adapté de una de Martita Serani, una porfesora de cocina y chef que muchos de uds. conocen.Siempre comparte sus recetas en la Revista Ya del Mercurio.

Ingredientes

300 gramos de chocolate bitter semi dulce
(en trozos)
1/2 taza de crema para batir
1/2 taza de azúcar granulada
3 yemas
6 claras
pizca de sal

Preparación

Enmantequillar 6 moldes para souflé no muy grandes.Y luego espolvorear con azúcar granulada.

Derretir el chocolate con la crema en un bowl a baño maría a fuego suave revolviendo de vez en cuando para unir y que se suavize.
Retirar del fuego y agregar suavemente las yemas. Unir bien.

Batir las claras con una pizca de sal con una batidora eléctrica a mediana velocidad hasta quye las claras estén firmes y suaves. Agregar de a poco el azúcar y batir a valocidad alta hasta que esten firmes y brillantes.
Agregar de a poco el batido de las claras a la crema de chocolate. Unir bien pero en forma suave.
Repartir la crema de soufflé en los bols dejando un borde (acordarse que suben).
Calentar el horno a 180°c y cocinar los soufflés por unos 18 a 20 minutos.Hasta que esté altos y crujientes en el tope.
Servir inmediatamente si se quiere con crema batida.

Tip: Se pueden dejar en el refrigerador sólo se bajan un poco pero quedan deliciosos igual!
 No tengan miedo con el soufflé hay que fijarse en los tiempos, cuando esté listo lo ideal es servirlo de inmediato pero o sino igual estará  super recio.

Pear Upside-Down Cake

Finally a post with pears, we had enough pears (not as apricots) but you have to select carefully as we do not use pesticides, some have some small worms or things. But the pears are very good and we ate many as a natural dessert. Here the men loves pears.



In any case, the pear dessert I wanted to do for some time and was very good, moist and delicious.


Is adapted from a recipe of Time Life books. an antique book I have.




















Ingredients

4 to 5 ripe pears peel and in slices
1 teaspoon of lemon juice
200 grs. whole wheat flour
2 teaspoon of baking powder
3 eggs
100 grs. sugar
3 tablespoon of  corn oil
1 teaspoon of vanilla
2 tablespoon of honey
2 tablespoon of orange juice

Method


Preheat oven to 180 ° C. In the bottom of a springform pan (removable) lined with greased parchment paper. Use a pan  about 26 cm.



Sprinkle the pears  with  the lemon juice.


Place pears in bottom of pan making the shape like an esfera.Place all the pears around.
Place in a bowl  and mix  the whole wheat flour, baking powder, sugar and  eggs . Stir well. 

Add oil and vanilla.

Stir with a wooden spoon should be well blended and smooth appearance.


Pour this mixture over the pears that are in the mold. Bake for 40 to 45 minutes.


 Bake until golden and firm.


Let stand in pan about 8 minutes.

Then carefully desmold and remove parchment paper.


Wait to cool slightly.


In a small saucepan heat the honey and orange juice.

Heat over low heat until make a syrup.


 With a brush spread the pears with the orange and honey glaze.


Let stand before serving.

Tip: If you like sprinkle the pears with some brown sugar.

Por fin hice un post de peras (aprovechando que aún quedan) los que viven o conocen Chile saben que este mes es de miedo, en Marzo todo se junta el regreso, las clases de los niños, tomar las horas que quedaron pendientes y las recetas que aún no hacía.

Tuvimos hartas peras (no tanto como damascos) pero hay que preparar las recetas con cuidado porque como no usamos pesticidas a veces tienen un gusanito u otra cosa, entonces hay que picar las peras con cuidado.En fin hace tiempo que tenía esta receta y no la había hecho.Esta tarta invertida de peras es muy rica y queda con una textura húmeda .

Esta receta está adaptada de un libro que tengo : Time Life Books Inc.


Ingredientes

4 a 5 peras maduras peladas y cortadas en rodajas.
1 cucharadita limón
200 grs. harina integral
2 cucharaditas de polvos de hornear
100 grs. azúcar rubia
3 huevos
3 cucharadas de aceite sin sabor
1 cucharadita esencia de vainilla
2 cucharadas miel líquida
2 cucharadas de jugo de naranja

Preparación:

Precalentar el horno a 180°c . Colocar en un molde de fondo removible un papel mantequilla cortado en circulo y enmantequillado (de unos 26cm)  en el fondo colocar los gajos de peras en círculo cubriendo toda la superficie. Rociar las peras con jugo de limón.
En un bol  unir la harina, polvos de hornear, azúcar, mezclar bien y agregar el aceite con la esencia de vainilla, agregar los huevos de a uno batiendo bien.
Hasta obtener una masa suave y uniforme.
Verter esta mezcla sobre las peras que estan en el molde..
Hornear en el horno por unos 45 minutos hasata que esté dorado y firme.
Retirar y dejarla enfriar durante unos 8 minutos.
Separar los bordes con una espátula
Desmoldar dejando las peras hacia arriba. Retirar el papel y dejar enfriar.
En una olla pequeña calentar la miel y el jugo de naranja hasta que sea como un jarabe.
Revolver bienn.
Con esta mezcla pintar con una brocha las peras y dejar enfriar.
Tip: si se quiere espolvorear con un poco de azúcar rubia.

Plum jam (mermelada de ciruelas)













I made this plum jam 2 or 3 weeks ago and was summer and know (still is hot) but if you see the trees the autumn is round in the corner, But almost all of you are near Spring and summer so bookmarked this recipe if you love make marmalades...

Pectin is a soluble fiber and is known to be created naturally in certain fruits like apples,apricots,cherries, berries etc. In fact when making Berry Jams, adding pectin is not necessary since they have abundant pectin but others dont have.For this I enjoy this recipe because have apples, so the texture is amazing (like jelly) and delicious...




Ingredients

1 kilo plums
2 green apples without seeds and
chopped thin
3/4 kilo sugar (or 1 kilo sugar if you like more sweet)
2 tablespoon of lemon juice
1 cup of water

Method


In a large saucepan place the diced apples and plums (prunes only parties to both of them and the seed coat) add a cup of cold water and lemon juice.



Add sugar.Stir well with a wooden spoon. 


Bring to a boil (for 10 minutes aprox) and then reduce heat to low, stirring occasionally with wooden spoon and cook for about 40 minutes or until jam is thick (you can try on a plate)


Set aside in the pan.
When will pack a warm sterilized jars. Allow to cool without lids. (I put a cloth over it) and leave for a day to dry well. Then store in refrigerator.


With this recipe I filled 4 medium jars.Depend the size.

Tip: I use this mermelade not only for bread, is nice to desserts,tarts, mixed with yogurth.etc.

Mermelada de ciruelas










Hice esta mermelada de ciruelas hace unas 2 o tres semanas, y la he hecho nuevamente ayer poque tenía unas ciruelas que estaban un poco pasée en el refrigerador pero aún buenas (muy maduras) y sinceramente a veces en esta época por más que comamos frutas a toda hora y haga algunos postres igual es mucha, yo regalo peras y manzanas cuando se acabaron los damascos. Pero nada más rico que decirle a alguien llévate unas frutas o regalar una mermelada.
A mí la de ciruelas me encanta y de veras mi abuelita la tiene que haber hecho bastante porque tengo vivo el recuerdo de la mermelada de ciruelas. Me acuerdo que en Yumbel (que yo pasaba algunos veranos) habían muchos tipos de ciruelos, las amarillas (deliciosas), las púpura, las casi negras unas medias verdes etc.
Esta mermeladas son una mezcla de las púpuras y negras porque simplemente ocupo las que tengo a mano.
La mezcla lleva manzanas picadas (unas pocas) porque la pectina que tiene la manzana hace la mermelada más espesa y la conserva bien, por eso me ha gustado esta receta, la textura es de una mermelada espesa tipo jalea muy buena.





Ingredientes

1 kilo ciruelas maduras
2 manzanas verdes peladas y picadas (sin semillas)
picadas finas
3/4 kilo azúcar (puede ser un kilo pero yo no le pongo mucha azúcar)
2 cucharadas jugo de limón
1 taza de agua fría



Preparación

En una olla grande despues de pelar y partir las ciruelas (sacarle las semillas aunque yo dejo algunas) agregar las manzanas picadas, el azúcar y el jugo de limón.Agregar la taza de agua fría.
Revolver bien y colocar a fuego medio alto primero, cuando empieza a hervir (por unos 10 minutos) bajar el fuego a suave.
Revolver siempre con una cuchara de madera, de vez en cuando, cocinar por unos 40 minutos revolviendo siempre (así se va uniendo la manzana con la ciruela, despues no se nota la diferencia.
Cocinar hasta que la mermelada se vea espesa o probar un poco en un plato si no se corre está lista.
Cuando esté lista apagar el fuego y dejar enfriar en la olla.
Tener preparados los frascos limpíos y secos.
Cuando la mermelada esté tibia envasarlas sin tapar. Tapar con un paño. Normalmente los dejo un día enteros sin tapa para que se sequen un poco.
Guardar en el refrigerador
Con esta receta salen tres o cuatro frascos (ver fotos) pero yo no uso frascos grandes. Prefiero este tamaño.

Coffe merengue Dessert












This recipe is other dessert I made on the beach, I find a little store where bought these little merengues you know, were fresh and amazing and I think make this recipe of a britain and lovely  lady Jennifer Peterson who is part of the gastronomy history in Britain and had with other lady a BBC show food for years. I love and enjoyed this recipe.



Ingredients (4 servings)

3/4 cups peel almonds in slices or chopped
2 teaspoon of sugar
300 grs.  little meringues or a large meringue
1 3/4 cups of whipping cream
2-3 tablespoons espresso coffe
some beans coffe grated




Method


                                      In a skillet, place the almonds and sugar to caramelize, do it over low heat, stirring always to keep burning.Pour into a greased tin and let cool.
Break the meringues into chunks. 


In a bowl beat the cream until it thickens, add coffee and mix gently.
Mix the cream with coffe and meringues.,


Place the cream with coffee spoons on merengue.Mix meringue with cream.


Sprinkle almonds over the cream caramel and then the ground coffee beans.


Refrigerate until ready to serve ..

Esta es otra receta que hice en la playa en los primeros días que fuimos a la playa, despues volvimos y fuimos a Algarrobo cinco días.
Allá en Las Cruces (nuestra primera parte) había un pequeño negocio en que vendían unos merengues absolutamente deliciosos, de esos doraditos y llegaban todos los días así que eran frescos.
Ahí me recordé de esta receta de la Chef Jennifer Peterson que creo quefue una de los primeros programas de recetas que vi en la tele. tenía un programa con otra chef en el canal de la BBC, ella era de Gran Bretaña y era una dama absolutamente encantadora. Me encantó esta receta.


Ingredientes

3/4 taza de almendras peladas y en láminas
o en pedazos
2 cucharaditas de azúcar
300 grs, de merenguitos o 1 disco de merengue grande
1 1/4 de crema para batir
2 a 3 cucharadas de café expreso o preparado
granos de café molidos

Preparación

En un sartén caramelizar las almendras con el azúcar, revolver constantamente pues se pueden quemar muy rápido.
Verter en una lata enmantequillada y dejar reposar.
Quebrar los merengues o el disco de merengue y repartir en copas o en vasos.
En un bol batir la crema hasta que espese, agregar el café expreso y mezclar suavemente.

Mezclar suavemente los merengues con la crema y colocar en vasos o copas de postre.
Repartir las almendras acarameladas y despues los granos de café molidos.
Refrigerar hasta el momento de servir.
