I know many of you make sweet potatoes recipes only for some holydays (specially thanksgiving), but I enjoy make desserts or cakes when I find sweet potatoes, I love the taste and are amazing for desserts, I made this little sweet potatoes pudding yesterday and the kids loved them (me too of course) is with grinded waltnuts and cinnamon powder.
I adapted this recipe from a Nestlé site (I think is latinoamerican branch) but I dont remember what country, maybe Mexico or peru. but is nice, well go to the recipe...
Ingredients (5 ramekins)
3 cups of cooked sweet potatoes
1/2 tin of sweet condensed milk
2 eggs
1/2 cup of grinded waltnuts
1/2 teaspoon of powder cinnamon
2 tablespoon of brown sugar
Method
In a sauce pan boiled the sweet potatoes until are tender. Set aside
Preheat oven to 190°c. Grease ramekins with butter.
Mashed the sweet potatoes, and add sweetened condensed milk, eggs and cinnamon in a medium bowl and mix well. Add the grinded waltnuts and mix well.
Pour batter into greased ramekins and sprinkle with some chopped waltnuts, add some brown sugar over them.Bake for 20 minutes orn until they are boiling hot.
Let chill. Serve with whipped cream and some berries.

Postre de camotes o boniatos
Este postre lo hice ayer y a los niños simplemente les encantó. Lleva nueces molidas y un poco de canela. Me encanta la canela!
Adapté esta receta de un sitio de Nestlé recetas, pero no recuerdo si era de México o Perú pero es una estupenda receta.
La receta original era para 10 porciones, pero era mucho así que reduje la receta a 5 porciones.
En general aquí en Chile se encuentran más camotes (en la vega, Líder,Jumbo etc.)antiguamente se hacían muchos dulces con camotes, pero como ahora todo se hace rápido (una cajita y ya) supongo que hay gente que no conoce mucho los camotes.
Aquí mismo en mis labels (recetas) hay un suspiro limeño con camote que es un sueño.
Pueden verlo aquí. Tambien he hecho pies y cakes.
Ingredientes (5 ramekins o pocillos)
3 tazas de camote o boniato cocido como para puré
1/2 tarro de leche condensada
2 eggs
1/2 taza de nueces molidas
1/2 cucharadita de canela molida
2 cucharadas de azúcar rubia
Preparación
Hervir los camotes en una olla mediana (con piel) pelarlos y molerlos como para puré.
Precalentar el horno a unos 190° c. Enmantequillar los bowl para el postre.Reservar.
Una vez que los camotes están molidos, unirlos con el medio tarro de leche condensada, agregar los huevos, la canela y las nueces molidas, unir bien.
Distribuir la mezcla de camotes en los pocillos.
Repartir sobre estos unas nueces picadas y un poco de azúcar rubia.
Llevar a horno por unos 20 minutos o hasta que esten burbujeantes.
Dejar enfriar.Servir con un pco de crema batida y algunas frambuesas si se quiere.
