Long time since I made a chocolate dessert , and in the beach some day I made this chocolate souflée. I love the soufflé moist and fluffy and this was..
I know not all love chocolate but others (like me) really love it, specially en desserts o cakes!
I adapted this recipe from one of Martita Serani a cookteacher and chef from here.
Ingredients
300 grs. bitter sweet chocolate (chopped)
1/2 cup of whipping cream
3 yolks
6 white eggs
1/2 cup of sugar
pinch of salt
Method
1. Brush 6 ramekins with melted butter and then sprinkle with granulated sugar.
Melt chocolate with the cream in a metal bowl set over a saucepan of barely simmering water, stirring occasionally until smooth. Remove bowl from heat and stir in yolks (mixture will stiffen).
Beat whites with a pinch of salt in a large bowl with an electric mixer at medium speed until they just hold soft peaks. Add 1/2 cup sugar, a little at a time, continuing to beat at medium speed, then beat at high speed until whites just hold stiff peaks. Stir about 1 cup whites into chocolate mixture to lighten, then add mixture to remaining whites, folding gently but thoroughly.
Spoon into soufflé dish and run the end of your thumb around inside edge of soufflé dish (this will help soufflé rise evenly). Bake in middle of oven(180°c) until puffed and crusted on top but still jiggly in center,about 18 to 20 minutes. Serve immediately.
If you like serve with whipped cream.
Note: A lot of people is afraid about soufflé but dont worry only take care with the oven time and will be OK. I made many types of soufflé and really delicious.

Soufflé de chocolate
Hace mucho que no hacía algun postre con chocolate, de verdad, pero a los niños ý gerardo les encanta...y a mí tambien, asi que en la playa hicie un día el soufflé de chocolate que hace mucho no lo hacía y aproveché a tomar unas fotos para ponerlo en el blog.
Curiosamente no a todo el mundo le gusta el chocolate pero la verdad es que la mayoría lo ama. Por eso de vez en cuando me gusta hacer algo con chocolate.
Me gusta especialmente en postres y cakes.
Esta receta la adapté de una de Martita Serani, una porfesora de cocina y chef que muchos de uds. conocen.Siempre comparte sus recetas en la Revista Ya del Mercurio.
Ingredientes
300 gramos de chocolate bitter semi dulce
(en trozos)
1/2 taza de crema para batir
1/2 taza de azúcar granulada
3 yemas
6 claras
pizca de sal
Preparación
Enmantequillar 6 moldes para souflé no muy grandes.Y luego espolvorear con azúcar granulada.
Derretir el chocolate con la crema en un bowl a baño maría a fuego suave revolviendo de vez en cuando para unir y que se suavize.
Retirar del fuego y agregar suavemente las yemas. Unir bien.
Batir las claras con una pizca de sal con una batidora eléctrica a mediana velocidad hasta quye las claras estén firmes y suaves. Agregar de a poco el azúcar y batir a valocidad alta hasta que esten firmes y brillantes.
Agregar de a poco el batido de las claras a la crema de chocolate. Unir bien pero en forma suave.
Repartir la crema de soufflé en los bols dejando un borde (acordarse que suben).
Calentar el horno a 180°c y cocinar los soufflés por unos 18 a 20 minutos.Hasta que esté altos y crujientes en el tope.
Servir inmediatamente si se quiere con crema batida.
Tip: Se pueden dejar en el refrigerador sólo se bajan un poco pero quedan deliciosos igual!
No tengan miedo con el soufflé hay que fijarse en los tiempos, cuando esté listo lo ideal es servirlo de inmediato pero o sino igual estará super recio.
