The last week was a really stress week, you know, the kids, my daughter sick, my Mom, and ..we have to prepare some special party (for my sister in law) at home, anyway last Thursday I think I wanna make some nice and easy (I love bake) and made these muffins filled with plum and almonds slices, were absolutely nice... Plums add an special taste to these muffins and moist the dough
Nice with a cup of tea or a coffe or others..I adapted this recipe from Revista Paula Enero 2011.
Ingredients
60 grs. butter
3/4 cup of sugar
(I use light sugar like splenda, remember use the middle of the normal sugar)
2 eggs
300 grs. flour
grated peel of 1 lemonpinch of salt
1 full tablespoon of baking powder
125 ml milk
4 purple plums (remove pits )chopped
3/4 cup of almonds in slices
Method
Also can be used paper caps that are placed inside the molds, it is easier to unmold.
In a bowl mix the butter and sugar, beat until mixture is foamy, add eggs one by one. Beating well after each addition to incorporate.
Beat in flour, lemon zest, salt and milk until mixture is smooth and homogeneous.
Incorporate the chopped prunes and half the almonds.
Stir to blend.
In the empty muffin mix and decorate with the remaining mufins almonds.
Bake for 20 minutes or until golden and dry.
Remove and let cool.

Muffins de ciruelas con almendras
La semana pasada fue dificil y estresante, ya saben esas semanas, los niños volviendo al colegio (no es fácil a veces) mi hija enferma (estuvo varios días en cama) y mi mamá con algunos problemas, y además teníamos que preparar un evento en nuestra casa para mi cuñada que estaba de cumpleaños.
Es como que se junta todo.
En fin el Jueves dije quiero cocinar algo, más bien hornear. Y tenía esta receta de mufffins con ciruelas y almendras, debo decir que quedaron buenísimos, además las ciruelas le dan un sabor y humedad especial a la masa.
Esta receta la adapté de Paula Cocina de Enero 2011.
Absolutamente aprobada.
Salen 12 muffins. Ideales para una taza de té o café o para que los niños lleven al colegio (son mejores que los que venden ya saben) y les encantan.
Ingredientes
60 grs. de mantequilla
3/4 taza de azúcar
(yo usé azúcar light ya saben si es light se debe usar la mitad que indica la receta)
2 huevos
300 grs de harina
1 limón su ralladura
Una pizca de sal
1 cucharada colmada de polvos de hornear
125 ml de leche
4 ciruelas moradas medianas en trozos y sin la semilla
3/4 taza de almendras en láminas
Preparación
Enmantequillar un molde para 12 muffins o usar cápsulas de papel así son más fáciles de desmoldar.
Precalentar el horno a temperatura media 180°c.
En un bol colocar la mantequilla con el azúcar, batir hasta que la mezcla esté espumosa y agregar los huevos de a uno incorporando bien.
Batiendo despues de cada adición para integrar bien.
Añadir batiendo la harina, la ralladura de limón, la sal y polvos de hornear y leche hasta que la mezcla esté lisa y homgénea.
Incorporar la ciruelas.Agregar la mitad de las almendras en láminas e incorporar bien.
Repartir la mezcla en los moldes de muffins hasta que estén dorados y secos por dentro.
Retirar del horno dejar enfria y desmoldar.
