Breast chicken with panko crumbs and almonds

















This recipe I made almost suddenly , I had a few cuts of chicken breast and had to do something for lunch and had this recipe and was very good as I share with you.




To serve this dish I used cherry tomatoes  and basil , this type of tomatoes   are really  delicious and look  always nice .





Ingredients

1/2 cup of grinded  almonds
3/4 cup of panko  crumbs ( or bread crumbs)
5 or 6 pieces of chicken breast
1/4 teaspoon of black pepper
salt
3/4  of sour cream
1 tablespoon  barbacoa sauce




Method

 Preheat de oven at 200°C, .

 Blend the almonds in a food processor until coursely chopped. Combine with the breadcrumbs in a shallow bowl. Add salt and pepper 
 In a bowl mix the sour cream with barbacue sauce.

Pass the chicken breast pieces in the sour cream mixture .
Roll the chicken in the almonds and panko crumbs.
Put them in a oven tray.

Bake for 20 to 25 minutes or until crisp and cooked through. Let the chicken rest for 5 minutes so that the internal juices distribute evenly.
Top with some almonds slices and serve with salads.

Pollo empanizado con panko y almendras












Estas son de esas recetas que salen de repente y no requieren mucha preparación. Y a veces el resultado es superior a lo que esperabamos.
El Panko (un tipo de pan ralladopero más suave) es de origen japonés (y se encuentra en algunos supermercados)  pero se puede reemplazar por pan rallado común y corriente .

Ingredientes

1/2 taza de almendras picadas o molidas
3/4 taza de panko o pan rallado
5 o 6 trozos medianos de pechuga de pollo
1/4 cucharadita de pimienta negra  molida
sal a gusto
3/4 taza de crema ácida
1 cucharada  salsa barbacoa

Preparación



Precalentar el horno a 200°c.

Moler o picar las almendras en un procesador.
Unir  en un bol las almendras, el panko sal y pimienta. Reservar.
Aparte en un plato hondo mezclar la crema ácida con la salsa de barbacoa.
Pasar las pechugas de pollo por la mezcla de crema ácida y luego empanizarlas pasándolas por la mezcla de panko y almendras, presionandolas firmemente para que estas se adhieran bien.
Colocarlas en una bandeja o fuente para horno.
Hornearlas durante 20 a 25 minutos hasta que se ven crujientes y doradas y el pollo esté cocido.

Servirlas con algunas almendras en láminas   y ensaladas.

  17. I adore panko, Gloria. Much better than old ordinary bread crumbs. And mixed with almonds, this breading would be delicious! Love the idea of dipping in sour cream and BBQ sauce rather than eggs!
