Ají de Gallina (from Perú) Jalapeño chicken

This nice dish from peru is one of my favorites, many times I want post in the blog but always happens something, now I give you my recipe that I learned many years from a teacher of mine that lived in Perù.



And I dedicate this lovely dish to a friend of mine Soleil that live in Miami but is from Perù, she has a lovely blog http://dondestaspaz-soleil.blogspot.com/


I think probably she is in Peru with her hubby and family to these holidays.


If you have a Latinoamerican store where sell these typical food products, look by Peruvian Jalapeño is so tasty, but is you haven't use other lovely Jalapeño.






Ingredients (6 to 8 servings)







1 chicken (or two breast chicken)



1/3 cup of vegetal oil (corn or other)



1/2 cup of chopped onion



1/2 tablespoon of chopped garlic



2 tablespoon of grinded jalapeño



1 tablespoon of jalapeño chile seeded and finely chopped



8 slices of loaf bread (white) without the crust



200 grs. chopped waltnuts



3/4 cup of grated parmesan cheese



1 tin of evaporated milk + 1 cup of normal milk



salt and pepper



1 cup of chicken broth







Cook the chicken in a pot with some veggies how green onions, 1 garlic clove, salt and pepper.



When the chicken is boiled, let chill in the broth. Reserve the broth



Cut the chicken in pieces, without peel and bones.



Dip the bread slices in a cup of broth chicken by 10 minutes.



process until is a smooth paste.



In a pot heat the oil and fry the chopped onion, garlic and jalapeños chile without seeds.



Add the bread paste, stir well and cokk by a while, add the chopped waltnuts, the chicken in pieces and cook by 6 minutes more to slow heat and always stir.



Add the evaporated milk + the normal milk, incorporated well and stir, add the parmesan cheese, taste the seasoning.







Serve with boiled eggs, boiled potatoes or white rice and olives



Note to veggies: To daughter I serve all the same but without the chicken and serve with boiled potatoes and slices of boiled eggs.

Ajì de gallina o pollo







Este delicioso plato es de perù, muchas veces me lo habìan pedido y querìa hacerlo pero no se habìan dado las circunstancias, a los niños les encanta, no le echo demasiado ajì jalapeño pero la verdad es que se lo comen super bien, lo único que a mi hija se lo sirvo sin pollo (es vegetariana) con las papas o patatas y rodajas de huevo duro.



Me encanta la cocina peruana voy a tratar de hacer otros platos a parte de este tengo el Suspiro Limeño que es un postre delicioso.



Este plato se lo dedico Soleil una amiga encantadora de Perù que vive en Miami con su esposo y creo que ahora anda en Perù para las fiestas.



Soleil te deseo lo mejor junto a tu esposo y que el 2009 sea espectacular. Muchos cariños







Ingredientes (6 a 8 personas)







1 pollo o 2 pechugas de pollo



1/3 taza de aceite normal (de maiz o girasol)



1/2 taza de cebolla picada



1/2 cucharada de ajos molidos



2 cucharadas de ajì molido



1 cucharada de ajì jalapeño picado sin las semillas





8 tajadas pan molde blanco





200 grs. nueces picadas





3/4 taza queso parmesano rallado





1 bote o tarro de Leche evaporada


+ 1 taza de leche normal





sal y pimienta





1 taza de caldo de pollo





Cocer el pollo o las pechugas en una olla con agua, verduras y aliños (cebollines,pimentòn un diente de ajo, sal y pimienta)


Cuando està practicamente cocido apagar el fuego y dejar enfriar en el mismo caldo.


Reservar el caldo de pollo. Limpiar el pollo de cueros y huesos y cortarlo en trozos pequeños.


Remojar las tajada de pan en una taza de caldo por 10 minutos (si es necesario agregar un poco màs de caldo) licuar o procesar esta mezcla.


En otra olla calentar el aceite y agrgar las cebollas picadas, el ajo y los ajies, sazonar con sal y pimienta.


Añadir la mezcla de pan que se proceso y mezclar bien, incorporar a fuego lento por unos minutois siempre revolviendo.


Añadir el pollo, las nueces picadas y cocinar unos 5 minutos màs.


Agregar las leches y el queso parmesano, revolver bien.


Verificar la sazòn, ver si es neceario agregarle algo de sal.


Debe quedar una mezcla consistente como se ve en la foto.


Se sirve con arroz graneado, o papas o patatas cocidas, huevos cocidos cortados en láminas y si se quiere algunas aceitunas.


Reiterar que para los vegetarianos omitir el pollo y servir con las papas o arroz blanco.Es una mezcla muy rica.

This is our Christmas dessert that we made.
NOTE: Dears I know the pictures are not perfect (sorry) but really I made this dessert at 10:PM at Christmas night to eat by 11:30.
But really is a lovely dessert and so smooth. The best is keep at the fridge by two hours before serving! But all enjoy this!!!

Egg's whites Flan with strawberries sauce

Ingredients
1 cup of sugar
5 egg' whites
1 pinch of salt
To make the flan, in a pot place the sugar, cover with cold water,heat to medium fire to make a thickness syrup.
Meanwhile in a bowl whipp the egg whites to soft peaks (with the pinch of salt) and then slowly add the hot sugar syrup and continuing the process on high cool and stiff speed until is ready.
Empty the mix in a Flan mold ( better if is silicone)
Preheat the oven to medium heat.
Place the Flan to Bain Marie to medium oven and cok by 20 minutes.
Let chill and desmold in a large dish.
Serve with the strawberry sauce.
Strawberry sauce
250 grs. strawberries freeze or natural
200 grs. caster sugar
In a little pot place the strawberries with the caster sugar and heat to medium fire, until the sugar is dissolved, cut the fire and reserve.
Keep the dessert at fridge.

Abajo unas galletas que hizo la Espe con la misma receta de mi mamá que yo puse aquí. Le quedaron muy lindas.

Y este es el postre que hicimos para la Cena de Navidad, es un postre liviano y muy rico, el azúcar se puede reemplazar con Splenda o similar.
Flan de claras con salsa de fresas
Ingredientes
1 taza de azúcar granulada
5 claras de huevo
1 pizca de sal
Para hacer el flan, en una olla colocar el azúcar granulada y cubrir con agua fría y cocinar a fuego medio hasta formar un almíbar espeso.
Mientras se cocina el almíbar en un bowl batir las claras a nieve con la pizca de sal bien firmes, y luego agregar de a poco el almíbar caliente,seguir batiendo hasta que se enfríe. Verter el merengue en un molde de flan.
Colocar este molde a horno medio a baño maría y cocinar durante 20 minutos, retirar y dejar entibiar, desmoldar en un plato o fuente grande y verter la salsa de fresas o frutillas.
Salsa de fresas o frutillas
250 grs. de fresas naturales o congeladas
200 grs. azúcar glass
En una olla pequeña, colocar las fresas y el azúcar glass, cocinar a fuego medio, bajo hasta que se disuelva el azúcar, retirar y dejar enfriar.
Desmoldar y servir con la salsa de fresas.
Mantener refrigerado hasta que se sirva.>

Little berry puddings and Happy Christmas to all of you!!



























First, really I whish a lovely and nice Christmas to all of you and a lovely next year.


Here my Pesebre, is so simple and maybe the pictures are not the best, (you know how is Christmas !) Poor Jesus , he didn't has the guilt, but we live the Christmas so.


Sometimes I really want to scape to a neverland to live more quiet.


I have this pesebre many years, Mom give us I think was to our first Christmas married, now the childs make all, put the sheeps, the people, al the things, Jesus is not yet because we place to Christmas Eve when He born.


I love to see the Pesebre and think in all is so simple, God born in a so humble place, and show us how type of the man, will be.


Mother Mar, wait, with Joseph, they wait in God because when they arrive to Belen dont have nothing and where stay to have the Child.


For this I love the Pesebre, because is so simple and beauty, is nice.


The childs put too the Tree and others things but the principal is the Pesebre, at Christmas Eve, we pray and have a dinner with Mom, dad and the Kids, Gerardo and me. And after we give the presents to the childs, Mom and Dad and to Gerardo.The 25th maybe come my sister with her family and have presents to the kids and Mom and Dad and we eat a simple lunch and laugh a lot.


Dont ask me what Im going to make to Christmas Eve?? Maybe salmon, prawns (love it) or other thing but the nice is stay all together and thanksful to God for all He give us.








But how a Christmas present I want to give you this recipe of Berry Little Puddings, so nice!


(Dont worry I made with freeze berries!)


Ingredients
(6 servings)




1 cup of sugar


2 cups of water


500 grs. of some freeze berries (strawberries or blueberries)


18 slices of loaf bread without the crust.





Berry sauce


100 grs freeze berries


2 tablespoon of glass sugar


1 tablespoon of lemon juice


2 tablespoon of water





In a pot place the water and sugar and heat,stirring until is dissolved.


Add the berries and cook to slow heat


by 4 or 5 minutes or until are tender.





Cut the bread slices with a round mold to make the bottom of rameking, cut others to put in the sides of the little molds.


Fill with the berry mixture and add other round bread and pushing a little, and moist again with the sauce, cover with aluminium paper each remarkin, place in the fridge all night.








Berry sauce: Process the berries and add the water and sugar and lemon and join well, heat by a minute and let chill for a while.Keep at fridge until serve.


To the following day, turn up in a dessert dish, add the berry sauce and place whipped cream if you like.

Feliz Navidad a todos y una receta de pequeños budines de...berries

Arriba está mi Pesebre, me encanta, Mami nos lo regaló creo que para nuestra Primera Navidad de casados (fue el regalo más lindo) es un pesebre italiano no es de madera, pero las figuras son muy lindas y cuando años despues llegaron los niños no hubo problemas con que tomaran las piezas, es el único pesebre que he tenido.
Puede que las fotos no estén perfectas pero quise compartir con ustedes algunas imágenes de lo que hago para Navidad como familia.
El Pesebre es lo más importante de hecho, este lo armaron casi completamente los niños, Gerardo le ayudó en forrar donde lo colocamos.
Tambien armaron el árbol, a ellos les encanta la Navidad.
El día 24 de Diciembre hacemos una cena en la noche, tarde y vienen mis papás y estamos nosotros y los niños, rezamos antes y compartimos unas lecturas acerca de la Navidad, despues los niños ven los regalos que está en el árbol y le doy regalos a mi papá y mamá y Gerardo, al otro día (25) nos juntamos con los hermanos y sus familias, este año vendrá sólo mi hermana con su familia porque mi hermano se acaba de operar, pero otros años también hemos ido a la playa a la casa de mi hermano (vive cerca de Viña del Mar, Con Con).
Aún no sé que haré para la cena lo que debe ser terrible para algunos pero no me preocupa, hoy día pensaré en eso, he estado muy ocupada con cosas finales del año, la Espe quiso hacer galletas para regalar, quiere comprar algunas cosas (me sacrificaré), Gerardo anda agotado y gracias a Dios los niños terminaron el colegio, Is nice to have a break!!
Pero realmente lo que más me importa es que ese día estemos juntos y felices, nada más.
He hecho este postre sencillo pero riquísimo, para los que les interese no tiene muchas calorías, no lleva huevos ni crema y de verdad queda muy rico. y está hecho con berries congeladas así que no hay problema.

Pequeños pudines de berries

Ingredientes ( 6 porciones)

1 taza de azúcar
2 tazas de agua
500 grs. de berries de cualquier tipo congeladas
18 tajadas de pan blanco de molde o en barra(sin las orillas)

Salsa de berries
150 grs. de berries
2 cucharadas de azúcar glass
1 cucharada de jugo de limón
2 cucharadas de agua

Preparación
Colocar el azúcar y el agua en una olla y calentar, revolviendo hasta disolver,llevar a hervor y bajar la llama, agregar los berries y cocinar a fuego lento hasta que estén tiernas.
Recortar las rebanadas de pan con un molde redondo, y tapizar las bases de los moldecitos (los que yo usé son de aproximadamente 180 cc de capacidad)
Cortar las otras rebanadas de pan y forrar los lados de los moldes también.
Llenar con la mezcla de berries y cubrir con otra rebanada de pan cortado y finalmente bañar con el líquido que quede. Tapar los moldecitos o bowls con papel aluminio y llevar al refrigerador toda la noche.
Al otro día desmoldar y bañar con la salsa de frutas y adornar con un poquito de nata o crema batida y menta.

Salsa de berries


procesar las berries, agregar el agua y limón hasta homogeneizar. Calentar un poco y dejar enfriar, refrigerar hasta usar, cuando se desmolden los pudines, bañar con esta salsa al servir.
Adornar como se dijo con menta y un poquito de nata o crema.

Caesar Salad (healthy and tasty!)

Sometimes Christmas food is nice but so sweet I think, so some savoy dish is nice how this Caesar salad that I find in Good Housekeeping in healthy version, the croutons are toasted in oven and dont have many things, is tasty and yummy to every season and time.






Las night I made this salad to daugther and me and was really nice, she loves it.(and me too)
Ingredients
4 oz. italian bread or other (I use loaf bread)
1 clove garlic,cut in half
nontick oil cooking spray
1/4 cup of ligt mayonnaise
1/2 cup freshly grated Parmesan cheese
3 tablespoon fresh lemon juice
1 tablespoon olive oil
1 tablespoon anchovy paste (optative)
Coarsely ground black pepper
1 romaine lettuce torn into bite-size pieces
some salt to taste
Method
Preheat the oven about 200º C.
Cut bread into 1/2 inch thick slices.Rub bread slices, on both sides, with cut sides of garlic.
Cut bread into 1/2 inch cubes, place in a Pie mold or other.
Spray bread liberally with coking spray.
Bake 10 minutes or until or until golde brown and crisp.
Cool croutons in pan.
Meanwhile, in large salad bowl, wite wire whisk , mix together mayonnaise,Parmesan,lemon juice and olive oil, anchovy paste (optative), and 1/4 teaspoon pepperand some salt is needed.
Add letuce and croutons to dressing in bowl ,toss to coat.
And Voilà! is ready.(4 servings)
Note: the pictures are little darkness because was at night, sorry but was our dinner with daughter.

ENSALADA CESAR (saludable y deliciosa)
A veces en Navidad se come o se prepara muchas cosas dulces, es cosa de ver las recetas que estàn en todas partes, cosas deliciosas pero me gusta poner cosas saladas tambièn. muchas veces no las pongo porque pienso que son muy simples,pero esta versión de la Ensalada César que encontré en una revista GoodHousekeeping que ya otras veces he adaptado recetas me encantò, reemplaza algunas cosas asì que es deliciosa y saludable.
Disculpas porque las fotos estàn un poco oscuritas pero fue nuestra cena de anoche con mi hija y le saquè fotos tarde.
Ingredientes
4 oz. de pan italiano u otro (yo usè pan de molde,en tajadas)
1 o 2 dientes de ajo cortado por la mitad
Aceite en spray (o gotas de aceite)
1/4 taza de mayonesa light
1/2 taza de queso parmesano rallado
3 cucharadas de jugo de limòn
1 cucharada de aceite de oliva
1 cucharada de pasta de anchoas (optativo)
1 lechuga cortada en trozos
pimienta negra molida
sal al gusto
Mètodo
Precalentar el horno a 200º C.
Cortar los panes en tajadas delgadas (si se usa pan de molde en rebanadas solo cortarlo en cuadritos) pasarle ajo a las rebanadas o pedazos de pan.
Cortar el pan en cuadritos, ponerlos en una molde tipo tarta para que queden esparcidos y rociarlos con aceite spray o en gotas.
Hornear durante 10 minutos o hasta que los croutons se vean dorados y crujientes.Dejarlos enfriar.
Mientras tanto en una ensaladera con un batidor de alambre unir la mayonesa, el queso parmesano, el jugo de limòn,aceite de oliva, pasta de anchoas y la pimienta negra.
Agregar la lechuga cortada en trozos y los croutons y mezclar en el bowl o ensaladera, agregar un poco de sal o versi se necesita.(Casi no le agregué sal)
Salen 4 porciones.

Cherry Pie (Kirschenplotzer) Pastel de cerezas

This recipe is from Germany and I have a lot of time and normally I make to summer when I have cherries but you can make too with cherries tin.


Ingredients
700 grs. sweet black cherries
fresh or a tin of cherries (without the juice if use a tin)
1 cup of milk (250 cc)
200 grs. crumbled bread
200 grs. grinded waltnuts
125 grs. of butter
220 grs. of sugar
6 yolks
1 tablespoon of powder chocolate
1/2 teaspoon of cinnamon
breadscrumbs to the mold bottom





Method
Wash the cherries and remove their seeds.
Mix the milk with with the bread crumbles and add the grinded waltnuts, stir.
Separated the yolks of the whites. Reserve the whites to other dessert.
Beat the butter until is creamy, incorporate the sugar slowly, add the yolks and stir.
Add the chocolate powder and the cinnamon.
Finally add the cherries and stir again.
Greased a mold of pie with butter the bottom and sides.
Spread some breadcrumbs.
Preheat the oven to 180º C. (medium heat).
Empty the paste over the mold and bake to the oven by 50 to 60 minutes. When is ready is golden and little dry.
You may serve if you like with whipped cream.

Pastel de cerezas

Esta es una receta alemana que tengo hace mucho tiempo, generalmente la hago màs en el verano pero queda muy bueno tambièn con un bote o tarro de cerezas dulces.

Ingredientes

700 grs de cerezas negras dulces o un bote de cerezas
200 grs. de miga de pan centeno o blanco
1 taza de leche (250cc)
200 grs. de nueces molidas
220 grs. de azùcar
125 grs. de mantequilla
6 yemas de huevo
1 cucharada de chocolate en polvo
1 cucharadita de canela en polvo
Pan rallado para espolvorear el molde






Método
Lavar las cerezas y retirar las semillas si son frescas, si son de tarro sólo retirar las semillas.
Mezclar la leche con las migas de pan y las nueces molidas, mezclar bien.
Separar las claras de las yemas. Reservar las claras para otro postre (se pueden congelar) .
Batir la mantequilla en forma manual y agregar el azúcar, unir bien.
Agregar las yemas de a poco mezclando bien.
Agregar el chocolate en polvo y la canela.
Finalmente mezclar con las cerezas.
Precalentar el horno a 180º (temperatura media)
Enmantequillar un molde de pie (24/26 cm diámetro)y espolvorear con pan rallado.
Vaciar la mezcla sobre el molde y llevar a horno de 50 a 60 minutos, hasta que estè dorado y firme al centro del Pie.
Se puede servir con un poco de crema o nata batida.

Poems, Pablo Neruda house, beach and lovely family times........

Some of you know I was visited by lovely cousins of England who come to vist us. Was really nice.

Is Jean (cousin) and her lovely husband, Eric.

I new them by first time about 12 years ago when the childs have only 1 and half years I think. they are from Southampton and with Jean we always talk by mail sometines, she is so nice and warm.

But this week I really enjoy with them a lot because they were in my house.






And I wanted to post about it and our visit to Pablo Neruda House in Isla Negra in Chile. If you dont know about Pablo Neruda I can tell you was a nice poet and man and he born in 1908 and pass a way in September 1973.But he let a lovely legacy about poems and many things.


He received the Nobel prize in 1971 and many of his poems are translated to many lenguajes and english of course if you want to look some poems.(look Geoogle by Pablo Neruda poems)




This lovely poet noy only, write poems, was a man to collect many things and made homes, had three homes one in Valparaíso, other in Isla Negra (this) and other in Santiago, In all this house he places the things he buy in differents parts of the world. We was an Ambassador too in France in the year 1971.


The pictures that I post are in Isla negra in the beach where he live until died.

Here is the Bar, so nice he loves to make some drinks to their friends he always received friends to lunch or dinner in Isla negra. He loved to eat and drink specially with friends!

He like to collect too figureheads of females that found at the Prow of ships to about 16th and 18 th century.






Finally, the family/friends!! not always the family are your friends and you know this.
But really I feel Jean and Eric how lovely friends that I had known many years, so closed and warm
We really enjoy when they were here and we miss them a lot but I really appreciate to know them more.
Was nice and lovely days.So fast! Dear Eric and Jean I want to tell you I miss you a lot and have lovely times with you and really hope you come back soon!!

Poemas, Casa de Pablo Neruda en Isla Negra y familia

Algunos de ustedes saben que he estado con visitas de Inglaterra, toda esta semana, mi prima Jean y su esposo Eric, encantadoras personas.
Es curioso como en poco tiempo, te puedes encantar y unir tan fuerte a personas que quieres pero no conocìas tanto, y sentirlos tan cerca màs que familia tambièn como amigos.
Ellos habìan venido a Chile hace màs o menos 12 años cuando los niños eran pequeños, pero estuvimos poco juntos. Ahora estuvieron en mi casa una semana y fueron preciosos dìas lo pasamos super bien.

Una de estas partes que fuimos fue a la Casa de Pablo Neruda en Isla Negra donde estaba una de sus casas, otra en Santiago y otra en Valparaíso.
Todas las casas son hermosas, yo conozco Valparaìso y ahora Isla negra.
Son casas muy especiales porque a èl le encantaba coleccionar cosas como botellas, mascarones de proa. etc.
Las casas de Pablo estàn en la orilla del mar, de ahi las fotos y en todas las piezas puedes ver el mar (el dormitorio es fantàstico)

Christmas Cookies ( Galletas de Navidad)

These Christmas Cookies that walways made my Mom, and really are so easy and yummy, and think are soo cute, because is my MOM!!! Ingredients

4 cups of plain flour

250 grs. butter or margarine

4 yolks

2 teaspoon of baking powder

1 cup of glass sugar or caster sugar

1/2 cup of grinded waltnuts

1/2 cup of grinded almonds

1/2 cup of coconut grated

1 spoonful of vanilla liquid

A little milk if the dough is dry.

Method

In a bowl mix the flour,the sugar, baking powder, join the butter with a fork and the yolks, mix well, is the dough is dry add a little milk, only a little.

Divide the dough in 4 portions , one portion mix with coconut,other with almonds, others with waltnuts and other with vanilla.

Rolling each portion dough with a rolling pin and with differents molds to cut cookies make the christmas cookies.

Preheat the oven to medium heat.(180º)

Place in the oven tray greased with butter to medium heat by 15 minutos until are little golden.

Take out with an spatula, and place in a basket or box.

Note: You may make until 2 weeks before Christmas and place in metalic boxes or tupper.

Cookies Glaze

2 whites eggs

1 cup and half of caster sugar

1 teaspoon of vainilla

1 spoonful of lemon juice

Beat the whites with a wooden spoon , add the caster sugar always stir, the lemon juice and vanilla. Beat all the time, to make a smooth paste to garnish the cookies.Divide the paste in three or four bowls and add diferents colours (special colours at the store or supermarket) and garnish the cookies, and finally place some little balls or other to garnish. Let dry well before place the cookies in boxes

Galletas de Navidad ( de Mamà)

Ingredientes

4 tazas de harina

250 grs. de mantequilla o margarina

1 taza de azùcar glass

4 yemas

2 cucharaditas de polvos de hornear

1/2 taza de nueces picadas

1/2 taza de almendras picadas

1/2 taza de coco rallado

2 cucharaditas de vainilla lìquida

Un poco de leche por si la masa està seca

En un bowl se cierne la harina con el azùcar glass y polvos de hornear, se une la mantequilla con un tenedor y se agregan las yemas de huevo, juntar bien los ingredientes.

Dividir la masa en cuatro pociones, a una agregar coco rallado, a la otra las nueces molidas, a otra las almendras molidas y por ùltimo la vainilla.

  1. Estirar cada masa con un rodillo y cortar las galletas con diferentes formas y colocar en una bandeja engrasada con mantequilla, precalentar el horno 5 minutos antes y cocinar por 15 minutos en horno mediano hasta que estèn ligeramente doradas.
  2. Sacar y colocar en canasto o en un plato tapar con un paño mientras se enfrìan.

Glacè para galletas

2 claras de huevo

1 taza y 1/2 de azùcar glass o impalpable

1 cucharadita de vainilla

1cucharada de jugo de limòn

colorantes vegetales

mostacillas u otros adornos para galletas

Batir las claras con una cuchara de madera a mano (no a màquina) agregar el azùcar, unir bien, agregar la vainilla y el jugo de limón hasta que se forme una pasta para decorar las galletas, dividir en cuatro porciones pequeñas, añadir color y decorar las galletas adornar con mostacillas o chispas de chocolate. Dejar secar bien antes de guardar en cajas metálicas o tuppers.

Strawberry Parfait (parfait de fresas o frutillas)

A lovely dessert with strawberries and is not an Ice Cream but is similar, is nice to eat all the year in every season... I think




Ingredients

3/4 cup of granulated sugar
4 yolks
1 and half whipped cream
400 grs. strawberries (frozen or fresh) I use frozen
Some strawberries and leaves mint to garnish

Method

Line up with aluminium paper the bottom and sides of a 8x26 cm. rectangle mold. Reserve

In a little pot place the sugar and 1/2 cup of water, to medium heat until sugar is dissolved. Boil by 5 minutes. Cut the fire and reserve.

In a bowl beat the yolks until are foamy, add the sugar syrup slowly and beat until is chill. Empty in other bowl and reserve.

In the processor or similar make the strawberries puree.
Whipp the cream and add the yolks mix, add the strawberries puree and mix well.

Empty the strawberries mix to the rectangle mold line up with aluminium paper, and cover with aluminum paper. Freeze by 4 hours.

To serve: Desmold the parfait and clean the aluminium paper and cut in slices, garnish with some strawberries and mint leaves.

After serve the parfait keep it ate the freeze until you are going to serve again.

PARFAIT DE FRESAS

Un delicioso postre de fresas o frutillas que se puede hacer durante cualquier època del año.

Con fresas frescas o congeladas (yo ocupè congeladas que aùn me quedaban) no es un helado pero es de una consistencia similar pero es màs suave y liviano.

Ingredientes

3/4 taza de azúcar granulada

4 yemas de huevo

1 y 1/2 taza de crema o nata para batir

400 grs. de fresas o frutillas congeladas o naturales

Fresas y hojas de menta para adornar el parfait

1. Forrar un molde forma rectangular de 8 x 26 cm. con papel aluminio en el fondo y a los lados.

2.En una olla pequeña colocar el azùcar y 1/2 taza de agua, calentar a fuego medio hasta disolver el azùcar. Aumentar el calor y hervir durante 5 minutos, sin revolver. Retirar y reservar.

3. En un Bowl batir las yemas hasta que estèn espumosas, de a poco agregar el almìbar reservado y batir hasta que la mezclka estè frìa. Verter en un bowl y reservar.

4.En otro bowl batir la crema o nata hasta que estè firme y agregar la mezcla de yemas con azucar.

5.En la procesadora o licuadora hacer un purè con las frutillas e incorporar a la mezcla anterior.

6.Verter la mezcla ya lista al molde preparado con papel aluminio cubrir con el mismo papel aluminio y congelar al menos 5 horas para desmoldar.

Sacar del freezer y desmoldar en una fuente o plato, cortar en tajadas y servir con fresas y horjas de menta.

Lo que quede despues de servir volver a congelar nuevamente.

Spinach & Cheese Bread Pudding (Budín de espinacas con pan y queso)

This savoy recipe I reallly enjoyed when I made last Sunday, and is adapted from a Good Housekeeping recipe, but really I dont find the year, is so nice and is in a section they called "Rush hour".

Ingredients

6 large eggs
2 cups half and half milk
1/4 teaspoon dried thyme
1/2 teaspoon of salt
1/4 teaspoon coarseley ground pepper
1 package frozen chopped spinach
thawed and squeezed dry
or fresh spinach (boiled) 500 grs.
1 cup parmesan cheese grated
10 slices firm white bread cut into pieces
(I cut in 4 pieces each slice)

Preheat the Oven at 190º C. (375 F)

1. In a large bowl, with wire whisk or fork beat eggs, milk, thyme,salt,pepper until blended.
With rubber spatula, stir in spinach, grated parmesan cheese and bread.

2.Pour mixture into ceramic or glass baking dish. Place some grated cheese over the mixture before baking.

3.Bake bread pudding 20 to 25 minutes or until browned and puffed and knife inserted in center comes our clean.

4. Remove bread pudding from the oven; let stand 5 minutes before serving.

Note:You may serve alone or with tomatoes in slices.

Budín de pan con espinacas y queso rallado.

Esta receta la hice el Domingo pasado y realmente la disfrutamos, es sabrosa y liviana y es adecuada para los amigos vegetarianos tambièn.

Está adaptada de una receta de la revista Good Housekeeping pero como la tenía hace un tiempo para hacerla no sé de que año es la revista, pero es una buena receta y nada de difìcil.

Ingredientes

6 huevos grandes

2 tazas de leche semidescremada

1/4 cucharadita de comino

1/2 cucharadita de sal

1/4 cucharadita de pimienta negra molida

1 paquete de espinacas congeladas,descongeladas y secas

tambien se puede usar 500 grs. de espinacas frescas, cocidas y picadas

10 torrejas de pan de molde blanco cortadas en pedazos, yo las corté en cuatro.

1 taza de queso parmesano rallado

Método

Precalentar el horno a 190ª C.

1.Prepar una fuente cuadrada grande de cerámica o de vidrio y enmantequillarla.

2. En un bowl grande colocar los huevos, leche,comino, sal, pimienta y batir bien con un batidor de alambre o un tenedor, batir hasta que esté bien unida la mezcla.

3.Con una espátula de goma, revolver y agregar las espinacas picas y la taza de queso parmesano rallado.

4. Colocarla mezcla en la fuente de vidrio o ceràmica.Esparcir un poco de queso encima de la mezcla.

Cocinar el budín de 20 a 25 minutos o hasta que esté la cubierta dorada.Insertar un cuchillo al centro y debe estar seco y el budín estará listo.

Retirarlo del horno y dejarlo descansar unos 5 minutos antes de servir.

Nota: se puede acompañar con tomates cortados en torrejas si se desea.

Dulce de Leche Brownies





This delicious recipe is adapted from other of David Lebovitz and I love his recipes. Are really wonderful.Well chocolate and Dulce de leche , what more??????


Dulce de Leche Brownies


(12 brownies)


8 tablespoons salted or unsalted butter,cut into pieces


170 grs. bittersweet chocolate finely chopped


125 grs. unsweetned cocoa powder


3 large eggs


1 cup (250 grs.) sugar


1 teaspoon vanilla extract


1 cup (250 grs.) plain flour


1 cup (250 grs.) Dulce de Leche (See labels in Dulce de Leche)



Preheat the oven to 175º C. (350 degrees)


Line a square pan (20 cm) with a long sheet pf aluminium foil that covers the bottom and reaches up the sides. Grease the bottom and sides of the foil with a bit of butter of non stick butter.


Mel the butter in a saucepan .Add the chocolate pieces and stir constantly over very low heat until the chocolate is melted.Remove from heat and whisk in the cocoa powder until smooth. Add in the eggs one at time,then stir in sugar,vanilla,then the flour.


Scrape half of the brownies batter into the prepared pan..


Drop one third of the Dulce de Leche, evenly spaced over the brownies batter,then drag a knife through to swirl it sligthly.


Spread the remaining brownie batter over , then drop spoonfuls of the remaining dulce de leche in dollops over the top of the brownies batter.


Bake for 35 to 45 minutes.The brownies are done when the center feel just slightly firm. Remove from the oven and cool completely.

Brownies de Dulce de Leche (12 porciones)

Esta deliciosa receta de brownies està adaptada de una de David Lebovitz gran Chef y que tiene recetas que me encantan y ya he hecho, es un maestro. Tiene un libro fantàstico sobre diferentes tipos de helados.

Ingredientes

8 cucharadas de mantequilla con o sin sal, cortada en pedazos
170 grs. de chocolate bitter semi dulce, finamente picado
1/2 taza (125 g) de cocoa en polvo sin endulzar
3 huevos
1 taza de azùcar (250 g)
1 cucharadita de vainilla líquida
1 taza (250 g. ) de harina normal
1 taza (250g) de dulce de leche (para el dulce ver Labels :Dulce de Leche)

Método

Precalentar el horno a 175 º C. (350 degrees)


Prepare un molde cuadrado de unos 20 cm. para los brownies y coloquele un papel foil al fondo y en los lados.


Engrasar con mantequilla o aceite en spray.


Derrita la mantequilla en un sartén a fuego lento, agregue los pedazos de chocolate y revuelva constantemente a fuego lento hasta que el chocolate se derrita. Retire del fuego y agregue la cocoa en polvo hasta que sea una mezcla suave, agregar los huevos uno a uno, agregar el azùcar, la vainilla y la harina.Mezcle bien.

Coloque la mitad del batido de brownies en el molde con aluza foil y esparza un tercio del Dulce de leche sobre el batido. Luego el resto de batido de brownies entonces sobre èste esparza con una cuchara el dulce de leche que queda. Si estuviera muy espeso (el de tarro o bote es màs espeso) calentar un poquito en microondas en un bowl plàstico o de ceràmica y esparcir sobre la mezcla.

Cocinar en el horno de 35 a 45 minutos, los brownies estàn listos cuando el centro está firme.

Retirar del horno y dejar enfriar completamente antes de cortar los cuadrados de brownies.
