Tapioca pudding









The first time I heard about tapioca pearls was in a Jorge Amado book (from Brasil) and alway I wanted make  something with tapioca.

 Anyway , my mom is at home after surgery and need a special diet, time ago  I find  a tapioca recipe that I bookmarked from Saveur.com

It was delicious and she loved it because as a child  she always ate tapioca.
She is from Punta Arenas to the South of Chile.







Tapioca pudding

Ingredients (6 / 7 servings)

4 cups milk

3/4 cup large pearl tapioca


1/4 tsp.  salt

1teaspoon of vanilla extract


1 cup heavy cream


1 cup sugar


4 eggs, separated

Ground cinnamon, to garnish


Method


Bring milk, tapioca, salt, and vanilla  to a boil in a 4-qt. saucepan over medium-high heat; reduce heat to medium-low and cook, stirring, until tapioca is tender, 20 a 25 minutes.
Whisk together cream, 3/4 cup sugar, and egg yolks in a medium bowl.

 Whisking constantly, add egg yolk mixture to tapioca; cook, stirring, until mixture thickens and just begins to boil, 8–10 minutes.

 Remove from heat and transfer to a large bowl; let cool to room temperature.
 Meanwhile, whisk egg whites until frothy. While whisking, sprinkle in remaining sugar; whip to stiff peaks.

 Fold whites into pudding and divide between 6 or 7 bowls; chill. Sprinkle with cinnamon.

Budín de Tapioca










La primera vez que escuché hablar de la tapioca como un ingrediente delicioso para hacer postres y cremas fue en unos libros de Jorge Amado, un escritor brasileño maravilloso.

Desde entonces siempre pensé en hacer algo con tapioca y hace un tiempo encontré esta receta  en Saveur.com y ahora que mi mamá está en mi casa y no puede comer cualquier cosa, le hice este postre que le encantó porque dice que cuando niña  lo comía siempre en Punta Arenas.

Como Chile es tan  extenso a veces lo que se come en un lugar en otro no, mi mamá siempre me ha hablado de tapioca y ruibarbo que es típico de Punta Arenas.

Ingredientes

4 tazas de leche
3/4 taza de tapioca
1/4 cucharadita de sal
1 cucharadita de vainilla
1 taza de crema o nata espesa
1 taza de azúcar
4 huevos (separadas las yemas de las claras)
Canela molida para espolvorear

Preparación

Hervir la leche, con la sal y la vainilla, en una olla mediana a fuego suave.
Revolviendo todo el rato y  cocinar durante  20 a 25 minutos.
Aparte batir la crema, con 3/4 taza azúcar y las yemas de huevo en un bol mediano.
Batir continuamente y agregar este batido de temas a la tapioca.
Revolver y cocinar bien hasta que espese, de 8 a 10 minutos.
Retirar del fuego y poner en un bol grande.
Dejar enfriar a temperatura ambiente.
Aparte batir las claras con el resto del azúcar. batir como un merengue firme.
Repartir en pocillos y espolvorear con canela.
Refrigerar hasta servir.

  5. First time I am seeing tapioca being cooked this way, we usually used it to bake cakes or other desserts, and we use coconut cream to replace cream and milk:)

  30. Super! I'd love to...the problem is always "when?"....
    From august 8th I'll be working even harder in the evenings in these CORFO programmes (where workers or employees study English to improve their CVs)it's going to be everyday from 7 to 9:45!!! I'm going to get home very late =/ so I think that before december, it will only be possible at the weekends.
    I'm so sorry about your parents... it's so common at their age to get sick easily =( I hope they get better soon. Have you got a picture with them?? I'd love to see them.
    My grandmothers are both 84 years old and although they're ok, they frequently have some health problems. I don't like it when people get older, I mean it's so unfair to lose your abilities and your independency ..we should be 40 or so for ever withouth any health problems =D
    I usually think about the future of my parents and I just ask God to give them plenty of health so they don't suffer while getting older.
    Well, such is life...we have to do the best all the time.
    Thanks for your recipes...most of them include very healthy ingredients (a few desserts are dangerous jajajaj)

  55. Gloria, tapioca es quinua? Disculpame si ya lo aclaraste, pero estoy perdida entre tantos comentarios. Encontré un libro de 1918, New York, on line, comidas de entreguerras y justamente hay una receta de budín de tapioca, que yo interpreté usaban la harina. Si no es quinua, no creo que la consiga, gracias :)Por si te interesa:
