Here a new recipe of Christmas's cookies! Always remember this type of cookies from Christmas from my childhood:)
Where we lived (in the south) we had many sites with german pastry stores especially in Christmas!
But I was seeing a lot of recipes (old recipes)and finally I mix two of them, and was amazing!
Hope you really enjoy and begin to make your own cookies:)
Ingredients
3 cups all purpose flour
1 1/2 tsp ground nutmeg
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 tsp allspices
1 tablespoon cocoa powder
100 grams grated orange peel
1 tablespoon bicarbonate de soda
3/4 cup brown sugar
3/4 cup honey
3/4 molasses or corn syrup
200 ml sour cream (or greek yogurt)
1 tablespoon butter
Glaze
1 1/2 cups icing sugar
1 teaspoon lemon juice
1 egg white lightly whisked
Method
Preheat oven to 180°c (350 F)
Grease two baking sheets or line them with parchment paper.
Warm the honey, molasses, butter and brown sugar .
Let cool.
Mix the sour cream (or greek yogurt )with bicarbonate and allow to stand, then add the cooled sugar and molasses mix.
In a large bowl put the flour, nutmeg,cinnamon, cloves, cocoa , orange peel and allspices.
Mix the cooled sugar and molasses with the dry ingredients until just combined .
Turn the dough out from the bowl onto a well floured surface. Knead the dough and add more flour if is necessary unyil dough is formed.
Wrap the dough in plastic wrap and chill until firm about 3 hours or overnight. (I let overnight)
On a well floured surface roll out the dough and cut out with cookie cutters, lifting from the work surface with a thin knife to transfer to a baking sheet.
Bake for 10 to 12 minutes.
Transfer the cookies to a wire rack and let cool.
Glaze
Mix Icing sugar and white egg in a bowlk and add gradually fresh lemon juice until it form a smooth and spreadable paste for application with a spatula or a knife.
Allow the glaze to firm and then store the cookies in am airtight container at room temperature.

galletas alemanas de Navidad
Estas galletas las hice como una semana atras pero no había podido subir el post.
Por suerte hoy me resultó.
A veces tengo problemas de acceso al computador (mi hijo estudia Computación)
Y esto se junta con idas al dentista, psicólogo y otros menesteres.
Estas galletas me recuerdan unas que comiamos cuando chicos en Concepción, en la zona había varias Pastelerías alemanas y que hacian estas galletas especialmente para Navidad.
Trabajé montones buscando recetas antiguas alemanas del sur de Chile y finalmente encontre las mejores y usé dos. El resultado muy bueno y casi iguales a las que yo comía.
En el café Colonia aqui en Santiago tambien venden unas como estas.
Aconsejo hacer la masa y refrigerar y al otro día cortar las galletas y hornearlas. Es más facil cortarlas.
Si alquien quiere otras galletas tengo más recetas de Navidad en Christmas recipes.
Ingredientes
3 tazas de harina sin polvos de hornear
1 1/2 cucharadita nuez moscada en polvo
1 1/2 cucharadita canela en polvo
1/2 cucharadita clavos de olor molido
1 cucharada de cocoa en polvo sin azúcar
1 cucharadita especias de Navidad (es una mezcla) ver link aquí
100 gramos cáscara de naranja rallada (o limón)
1 cucharada bicarbonato de sodio
3/4 taza de azúcar rubia
3/4 taza de miel
3/4 taza miel de melaza o corn syrup
200 ml sour cream o yogurt griego
1 cucharada de mantequilla
Glacé
1 1/2 taza de azúcar glass
1 clara de huevo batida
1 cucharadita jugo de limon
Preparación
Precalentar el horno a 180°c
Preparar bandejas para hornear galletas y colocar papel mantequilla.
En una ollita calentar la miel, mantequilla, el azucar de rubia y la melaza o el corn syrup (en Lider o Jumbo).
Solo calentar para unir. Dejar enfriar la mezcla.
