Jack O' Lantern Chocolate cupcakes




When I though I was ok with my Halloween recipes my Mom said:
I have something for you! and show me these Little Jack O'Lantern decorations  so, I have to make and other Halloween recipe, I think in chocolate because  I love how look the lantern with  dark chocolate!
(An Espe was agree with me :)
I adapted the chocolate cakes from a little book Cupcakes and Muffins from Parragon Ltd.
Im sharing with Cook your books of Joyce of Flavours Kitchen!







Ingredients
(10 cupcakes)
4 tablespoons butter
room temperature
120 grams of sugar
2 eggs
200 grams self raising flour
1/2 teaspoon baking powder
3 tablespoons chocolate powder
2 tablespoons milk

garnish
200 grams of dark chocolate melted
150 ml heavy cream
1 tablespoon sugar

Method


Preheat oven to 180°c degrees . Line 10 cup muffin tins with paper liners; set aside.

 In a bowl beat butter and sugar until light and fluffy cream, Stir in the eggs one at a time.
In another bowl sift the flour, 1/2 teaspoon baking powder and chocolate and incorporate it into the cream with a metal spoon.
Pour the milk and stir. Spread this mixture into the paper liners.
Bake the cakes for 10-15 minutes, or until they rise and gain consistency
Cool on wire rack.


For garnish

Chop the chocolate and put  in a medium saucepan, add the heavy cream and heat in a double boiler until chocolate melt beat a little to thicken and let it cool until it has the right consistency to  decorate, if too thick back to warm up a bit.

Enter the ganache into a piping bag and decorate cakes. You can garnish with whatever you like, beads, small pumpkin etc. ..

Cupcakes de chocolate para Halloween








Pensaba estar lista con las recetas de Halloween pero mi mamá me tenía de regalo estas calabacitas para cupcakes así que tuve que pensar en otra receta.
Pensé en cupcakes de chocolate porqueme gusta el contraste del chocolate con las calabacitas.
Quedaron muy buenos y la crema de chocolate super!

pumpkin cupcakes (garnish by my daughter Esperanza)



For Halloween always make  some recipes   and this year I find this pumpkin cupcakes in  Joy of Baking, a really good recipe, and I think  make something like little pumpkin and  bought marzipan because I love works with it.
Anyway when daugther saw I was making these cupcakes she asks if she can decorate and I say yes of course (I had a really hard week... and still) and you can look what she made, she is really an artist, love paint, draw and love play doh :)
I notice she work  marzipan like play doh ha! and she say yes!
I know Im her Mom but  really I think look perfect!!

really pretty!



Ingredients
 1 1/2 cups all pupose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon of salt
1/2 cup (113 grams )butter room temperature
1 cup (200 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup (200 grams) pumpkin puree

Cream cheese frosting
1 package cream cheese room temperature
3 tablespoons unsalted butter room temperature
1/2 teaspoon pure vanilla extract
1 3/4 cups icing sugar sifted

Marzipan decoration
 
Marzipan (about 200 grams)
orange food coloring (gel type) * found at cake supply stores
toothpicks
whole cloves (or chocolate jimmies

Method

Preheat oven to 180°c.
Line 12 muffins cups with paper liners.
In a large bowl, sift together the fllour, baking poder,baking soda, ground spices and salt.
In the bowl of a electric mixer or with a hand mixer, beat the butter and sugar until light and fluffye.
Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract. Scrape down the sides of the bowl. With the  mixer on low speed, alternately add the flour mixure and pumpkin puree in three additions, begining and ending with the flour mixture.

 Fill the muffin cups evenly with the batter using and ice cream scoop. Place in the oven and bake for about 18 to 20 minutes or until firm to the touch and a toothpick inserted in the center of one of the cupcakes come out clean, Place on a wire rack to cool.

Cream cheese frosting

In the bowl of your electric mixer or with a hand mixer beat the cream cheese until smooth. Add the butter and beat until incorporated and smooth. Add the vanilla extract and confectioners sugar and beat until fluffy (2-3 minutes) Pipe or spread the frosting on the cupcakes.

Chestnut and chocolate Cake (Torta al cioccolato con le castagne)







I love chestnuts récipes, many times ago we had only chestnuts in Winter and when I lived  in the south of Chile always my uncle Miguel send us chestnuts, and my mom made the chestnuts puree (I have someones of her récipes in my label chestnuts)  Now we have frozen chestnuts puree so I make when I find a lovely recipe like this I adapted from a lovely Italian blog  Al Cibo Comestible, Genny has delicious récipes.



Ingredients
 
 1 mold 18 cm. diameter
100 g. dark chocolate
300 g chestnuts puree
200 g. all purpose flour
100 g sugar
3 eggs
150 g greek yogurt
50 ml oil
50 ml water
2 teaspoon of dry yeast
2 tablespoons of rhum

powdered sugar
whipped cream (optative)



Method
 
 Melt the chocolate and let cool (I prefer make to bain Marie)
Beat the egg whites with a pinch of salt  until just firm.
Also fits the eggs yolks with the sugar until they are foamy.
Combine the oil with yogurt and chocolate.
Mix the flour with the yeast, and join it to the mixture along with chestnuts puree,alternating with water.
Add the rhum if you want.
Finally mix well with the whipped whites.
Preheat oven at 170°c
Pour the mixture into the mold (if it the first time you can lightly buttered, otherwise not needed) and bake for 50 minutes. Make the toothpick test, but  the cake will have to remain slightly moist inside.
(All chestnuts cake have to be a little moist)
Leave to cool,sprinkle with icing sugar and serve.
You can serve with whipped cream if you desire:)

Cake con puré de castañas







 
 
 
Adoro el puré de castañas, me trae miles de recuerdos y ya lo he comentado aquí hace muchos años mio tio Miguel que vivía en Yumbel (hermano de mi abuelita Chela) tenían un campo en que nos mandaba sacos de castañas, mi abuelita le repartía a mi mamá y las dos hacían cosas maravillosas con castañas, igual las comíamos tibias recién cocidas, o sea que cuando veo recetas de castañas tengo que hacerla!
Más de alguno dirá pero ahora no tenemos castañas (estamos en Primavera en Chile) déjenme decirles que hace mucho tiempo que no he comprado castañas , aquí en Santiago son carísimas y no siempre hay. pero hay puré congelado de castañas todo el tiempo, y con un pote o bote demás se hace una receta. Asi que si quieren hacer este cake les será muy fácil.
(El puré de castañas se vende igual que el de lúcuma, Jumbo, Lider,etc. me gusta la marca Guallarauco)
 
Ingredientes
 
1 molde de cake de 18 cm
100 gramos de chocolate en barra
300 gramos puré de castañas (un pote)
200 gramos harina sin polvos de hornear
100 gramos de azúcar
3 huevos
150 gramos yogurt griego o natural
50 ml de aceite vegetal
50 ml de agua
2 cucharaditas de levadura en polvo
2 cucharadas de ron (optativo)
 
azúcar en polvo
crema o nata batida
 
Preparación
Derretir el chocolate a baño maría y dejar enfriar.
Batir las claras con una pizca de sal hasta que estén firmes.
Reservar.
Aparte batir las yemas con el azúcar hasta que estén espumosas.
 Mezclar el aceite, el chocolate (derretido) y el yogurt.
 Mezclar el harina con la levadura,y finalmente unir todo con el puré de castañas, alternando con el agua, agregar el ron si se le va a colocar y añadir las
claras batidas a punto de nieve. 
Precalentar el horno a 170°c.
Vaciar la mezcla en el molde levemente enmantequillado, y hornear durante unos 50 minutos.
Probar con una brocheta de bambú si ya está listo, pero recordar que el cake de castañas DEBE tener algo de humedad (esa es la idea).
Retirar y dejar enfriar después espolvorear con azúcar en polvo antes de servir.
Se puede servir con crema batida si se quiere.

tapioca and cinnamon pudding







My Mom love tapioca because she remember when was a child and always ate in Punta Arenas (Chile south) where she born so when I can I make some  tapioca desserts and sharing with her normally Sundays  and really she enjoy.
She cooks and bakes amazing but to her age (82) she is a little tired and understand she enjoy someone cook for her :)

Recipe from my personal notebook récipes  and adapted  from  Saveur.

INGREDIENTS

4 cups milk
3/4 large Pearl tapioca
1/4 teaspoon salt
1 teaspoon of vanilla extract
1 cup heavy cream
1 cup sugar
4 eggs separated
ground cinnamon to garnish

METHOD

Bring milk, tapioca and vanilla to a boil in a saucepan over médium high heat.
Reduce heat to médium low and cook stirring until tapioca is tender 20 to 25 minutes.
Whisk together cream, 3/4 cup sugar and egg yolks in a médium bowl. Whisking constantly, add egg yolk mixture to tapioca, cook stirring, until mixture thickens and just begins to boil for 8 to 10 minutes.
Remove from heat and transfer to a large bowl, let cool to room temperatura.
Meanwhile whisk egg whites until frothy. While whisking, sprinkle in remaining sugar, whip to stiff peaks.
Fold whites into pudding and divide between 6 /7 bowls, chill.
Sprinkle with cinnamon.

Budín de tapioca con canela











Mi mamá adora la tapioca o perlas de sagú, ella dice que estos  postres le recuerdan cuando era chica y vivía en Punta Arenas .
Así que cuando puedo le hago postres con tapiocas y le llevo los fines de semana.
Mi mamá cocina fantástico, hace años hacía clases de cocina (cuando aún no salían en la televisión) así que aprendí muchísimo con ella, comenzé  a cocinar como a los 12 años (mi hija igual) así que hemos cocinado juntas e intercambiamos receta.
Pero ahora se cansa mucho estando de pie, así que cuando puedo yo le cocino lo que le gusta, es un placer cocinar para ella.
Esta receta la adapté de Saveur y es de mi cuaderno de recetas.
La tapioca se encuentra en Supermercados(productos naturales o aliños) (en el Jumbo seguro).

Ingredientes
4 tazas de leche
3/4 taza de tapioca
1/4 cucharadita de sal
1 cucharadita extracto de vainilla
1 taza de crema
1 taza de azúcar
4 huevos (claras y yemas separados)
canela en polvo para adornar

Apple galette (Secret Recipe Club)



This month my assignement in SRC was Karen from Lavender and Lovage a  blog that I love and know,  and is difficult choose a recipe, she has many and so good but finally I made this Apple galette  because I love apples!

Ingredients

 
 185 g ready made rolled organic pastry
I made my own  pastry from here
3 to 4 crisp eating apples
2 tablespoons caster sugar
1/2 teaspoon ground cinnamon
1 tablespoon apricot jam, sieved and heat up with little a water
demarara sugar to sprinkle.

Method
Preheat oven at 200°c (400 F) and line and or or grease a large baking sheet or pizza tray.
If you used  ready rolled pastry put on the lined baking sheet.
of use that I made, is so good from Good Food and I only make and reserve  and fill with the apples.
Cut the apples in quarters and then core them no need to peel them (I think was more beautiful with peel)
 Cut them into thin slices and then arrangue in concentric circle inside the edge of the pastry.
Sprinkle over a little ground cinnamon.
Bring the edges of the pastry up and in an pleat the pastry like a big crust all the way around the apples, so you have  a large, round open faced pie.
Sprinkle the caster sugar over the top and bake in the pre heated oven for 20 to 25 minutes or until the pastry  is Brown and crispy and the apples look soft.
Brush the warmed apricot over the apples to glaze them.
Sprinkle the demarara sugar over the top and allow to cool
 slightly before serving cut into wedges and if you like with some Ice cream or whipped cream.

Galette de manzanas












Esta tarta de manzanas (galette) es absolutamente deliciosa ,me gusto la receta que usé para la masa super delgada y buena. (la pondré más abajo.
Esta receta es parte de nuestro intercambio de recetas del Secret Recipe Club, en que por sorteo nos toca hacer una receta de otro blog, la que queramos y yo elegí esta receta.
El Blog de Karen, Lavender and Lovage tiene muy buenas recetas.

Ingredientes masa( Receta de Good  Food)

225 gramos harina sin polvos de hornear
100 gramos mantequilla helada en trozos
agua fría (la necesaria)
 
 
Ingredientes relleno
3 a 4 manzanas (fuji o verdes)
2 cucharadas de azúcar
1/2 cucharadita de canela en polvo
1 cucharada de mermelada de damascos para glasear.
azúcar en polvo para el final.
1 pizca de sal

Preparación masa

 En un bol mediano o grande mezclar la harina y agregar la mantequilla con los dedos haciendo como migas de pan (crumble) agregar la pizca de sal y agregar de a poco 2 a 3 cucharadas de agua fría hasta hacer una masa en forma de bola.Debe quedar una masa firme, si está muy húmeda agregar algo de harina.
Envolver en un film plástico y reservar mientras se prepara el relleno.
Precalentar el horno a 180°c y estirar la masa  en una bandeja de horno o en un mol de para pizza dando una forma redonda.
 
  Relleno

Cortar las manzanas en cuartos (no hay necesidad de pelarlas) y sacarle las semillas.
Cortarlas a lo largo en gajos y acomodarlas en la masa en forma circular.
Espolvorear la canela sobre las manzanas y el azúcar.
Doblar los bordes hacia dentro en forma circular cubriendo la mitad del relleno.
Llevar a horno de 20 a 25 minutos o hasta que esté crujiente y dorado.
Retirar y con una broncha pintar la mermelada de damasco mezclada con un poco de agua.
Espolvorear con un poco de azúcar en polvo y servir tibia o temperatura ambiente.
Se puede servir con helado de vainilla o crema batida.

pasta gratin







My dear friend Louise from Month of Edible Celebrations   is hostes a pasta event because is the pasta month.
I made the other day this pasta gratin and was so delicious and absolutely veggie:)
My daugther love this!
I adapted from Platos y Copas - Chileand Im sharing with Joyce from Kitchen Flavours to Eating yours books











Pasta gratin

Ingredients
400 grams of pasta (fusilli-bowties)
1 finely chopped Green onion
1/2 red pepper diced
1  garlic finely chopped
1 cup  diced tomatos
2 cups heavy cream
3 eggs
chopped basil
Grated parmesan cheese
olive oil
salt and pepper

Method
In a pot of boiling water cook pasta for
8 to 10 minutes until they are ready.
Remove water and reserve.
In a pan pour olive oil and saute the  green onions and pepper  until they are soft.
Add the garlic and tomatoes and heat until the skin is detached, you can leave the peel.
In a bowl pour the cream with the eggs and  a pinch of salt and pepper.Incorporate this mix to cook pasta and mix with Green onions mix.
Mix well. Season with salt and pepper to taste.
Put the pasta mix in a large dish or a oven skillet .Cover with parmesan cheese and put the oven to 180°c for gratin.
Once the cheese is melted and golden remove from oven and serve.

Pasta al gratin











Una forma de hacer  pasta absolutamente deliciosa y apta para vegetarianos.
Adaptada de una receta de Platos y Copas (Chile)


Ingredientes
400 gramos de pasta
(pueden ser corbatitas o espirales o mezclados)
1 cebollin picado
1/2 pimentón rojo cortado en trozos finos.
2 tazas de crema o nata espesa
3 huevos
albahaca picada (o perejil)
1 ajo picado
1 taza de tomate picado en trozos
queso parmesano rallado
aceite de oliva
sal y pimienta

Preparación
En una olla mediana hervir la pasta con una pizca de sal de 8 a 10 minutos.
Pasar por un colador y reservar.
En un sartén colocar un poco de aceite de oliva, y saltear el cebollin picado con el pimiento hasta que estén suaves y tiernos.
Agregar el ajo picado y los tomates en trozos, mezclar bien.
Si se quiere se pueden dejar los trozos de cáscara de tomates.
En un bol batir los huevos con la crema con un poco de sal y pimienta, incorporar esta mezcla a la pasta ya cocida y con la mezcla de pimentón y cebollin verde.
Mezclar bien y sazonar a gusto si necesita más sal.
Colococar la mezcla de pasta en una fuente o molde de horno cubrir con queso parmesano  y llevar a horno a unos 180° c, hasta gratinar bien, retirar dejar enfriar un poco y servir.
Se puede servir con ensaladas.
Se calienta muy bien en el microondas, se retira la porción necesaria y se pone al microondas en un plato.

Sesame banana bread



 
Maybe all  people say  when make a banana bread  is wonderful! but I think this is really awesome, you know: I'm the queen of banana's pudding but I saved someone to make this sesame banana bread that I find in 101 Cookbooks and  indeed is an amazing recipes blog.
Is moist, tasty, and delicious! (love the color too)
Ah! and love the sesame inside and outside!




Ingredients

1 cup all purpose flour
1 cup whole wheat flour
3/4 cup dark brown sugar
3/4 teaspoon baking soda
1/2 teaspoon fine grain salt
1 1/3 cups toasted sesame seeds
1/3 cup  canola oil (or sunflower)
2 eggs lightly beaten
1 1/2 cups (340 g) mashed very ripe bananas
1/4 cup greek yogurt
1 teaspoon freshly grated lemon zest



For the glaze

1 cup confectioners'sugar
4- 6 teaspoons freshly squeezed lemon juice
sesame seeds to garnish
(black and white)


Method
Preheat the oven to 180 ° (350 F) and place a rack in the center.
Butter and flour a 23 x 13 cm loaf pan or equivalent.

In a large bowl, whisk together the flours, sugar,baking soda and salt. Add 1 cup of sesame seeds and combine well.
In a separate bowl, mix togeher the oil,eggs,mashed banana,yogurt and  lemon  zest.
 Pour the banana mixture into the flour mixture and fold with a spatula until just combined. Scrape the batter into the prepared pan until golden brown about 45 minutes.
You want to achieve beautiful color on the cake, but you don't want to bake all the moisture of it.
 So the minute you're in that zone, pull it. Erring on the side of under-baking versus over.
Transfer the pan to a wire rack to cool in the pan for 10 minutes.
While the cake is cooling, prepare the glaze. In a bowl, whisk together the sugar and lemon juice until smooth. When the cake is cool, drizzle the glaze on topo of the cake,spreading with a spatula to cover, and finish with the sesame seeds.
I use black and white but you can use only white too.

Pan de plátanos con semillas de sésamo










Este pan de plátanos con semillas de sésamo lo recomiendo de todas maneras, rico, especial cuando tienes esos platanos muy maduros, y el sésamo le da un toque especial.
La receta está adaptada de 101 Cookbooks.

Ingredientes
1 taza de harina blanca sin polvos de hornear
1 taza de harina integral
3/4 taza de azúcar rubia
3/4 cucharadita de bicarbonato de soda
1/2 cucharadita de sal
1 1/3 taza de semillas de sésamo (natural o tostado)
1/3 taza de aceite de maravilla o de canola
2 huevos ligeramente batidos
1 1/2 taza de plátano molido
1/4 taza de yogurt griego o natural
1 cucharadita de ralladura de cáscara de limón

Para el glaseado
1 taza de azúcar glass o impalpable
4 a 6 cucharaditas de jugo de limón
semillas de sésamo para adornar (puede ser blanco y negro o sólo natural)

Preparación

Precalentar el horno a 180°c
y poner el calor al centro .
Engrasar y enharinar un molde alargado para pan de unos 23x
13 cm.
En un bol grande mezclar las harinas, azúcar, bicarbonato de soda y sal.

Agregar 1 taza de semillas de sésamo y mezclar bien.
En otro bol mezclar el aceite, los huevos, los plátanos molidos y la ralladura de limón.
Unir las dos mezclas la  de plátano y las harinas, unir todo bien. Colocarla masa en el molde alargado preparado. Llevar a horno por unos 45 minutos.
Hay que estarlo viendo, que quede dorado pero no pierda la humedad.
Lo que quiero decir es que no debe pasarse de horno.
Retirar el cake de plátano y dejar reposar unos 10 minutos.
Mientras el cake se está enfriando se puede preparar el glace,
En un bol mezclar el azúcar con el jugo de limón, Cuando esté listo esparcir sobre el cake y adornar con semillas de sésamo.

Lemon blueberry bread pudding in jars


I love desserts in  jars and have made someones. This is from Tiddy mom and love because is a bread pudding !
Have blueberries but you can use fresh or frozen (I always try you can make the récipes anywhere you live)




Ingredients

450 grams (or 1 pound) of bread
4 large eggs
1 cup sugar
1/2 cup cream cheese
3 cups  whole milk
2 teaspoons vanilla extract
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
2 tablespoon of butter  melted
1 1/2 blueberries fresh or frozen
8 jars
greek yogurt to garnish
    Method
Heat oven at 180° (350 F°)
grease 8 jars.
Cut the bread into 1 1/2 inch cubes place in a large bowl and set aside.
In a large bowl, beat the eggs and mix in the sugar and cheese.
Add the milk, vanilla,lemon zest and lemon juice and beat until evenly combined. Stir in the melted butter.
Pour the milk and egg mixture over the bread cubes and stir until all the pieces of bread are completely soaked. Allow the bread to sit for 20 minutes.

Stir the blueberries into the pudding mixture and inmediately spoon into the jars, filling each only half full. Place the jars on a into the baking sheet.
Bake about 30 to 35 minutes, until the tops of the pudding are evenly browned.
Remove  from the oven, and let rest 15 minutes.
Just before serving, pour some greek yougurt and some berries and serve.

EN ESPAÑOL 
Budin de pan con arandanos





 
 


Este budín de pan se puede hacer con cualquier tipo de pan lo que pasa es que por ejemplo el pan de molde se deshace más rápido, pero también se puede usar algún pan que haya sobrado.
Siempre les digo si no tienen arándanos pueden usar cualquier tipo de Berry o frutos rojos..(moras, frambuesas, berries surtidos etc.)

 



Ingredientes

450 gramos de pan (molde, marraqueta u otro blando)
4 huevos grandes
1 taza de azúcar
1/2 taza de queso crema
3 tazas de leche
2 cucharadita extracto de vainilla
1 cucharadita ralladura de limón
1 cucharadita jugo de limón
2 cucharadas de mantequilla derretida
1 1/2 taza ya se de arándanos, frambuesas u otros berries
congelados o frescos
8 frascos  de mermelada (tipo grueso)
yogurt griego para adornar

Preparación

Precalentar el horno a 180° c
Enmantequillar 8 frascos de mermelada.
Cortar el pan en trozos pequeños y colocar en un bol grande. Reservar.
En otro bol batir los huevos, mezclar con el queso crema y el azúcar.
Agregar la leche, vainilla, cáscara de limón rallada y jugo de limón.
Mezclar bien y finalmente agregar la mantequilla derretida. Unir bien, se puede batir un poco con batidor de alambre se une mejor.
Vaciar la leche con la mezcla de huevos sobre el pan reservado, mezclar bien hasta que esté completamente sumergido el pan.
Dejar reposar 20 minutos.
Mezclar los berries o arándanos con la mezcla de pan, uniendo bien.
Rellenar los frascos más o menos hasta la mitad.
Colocar sobre una bandeja de horno. Llevar a horno 30 a 35 minutos. Hasta que estén ligeramente dorados .
Retirar del horno y dejar reposar de 15 a 20 minutos .
Se pueden guardar en el refrigerador pero si se van a servir, poner una cucharada de yogurt griego en cada pote y agregar unos berries.

chicken pot pies (tartitas rellenas con pollo)






These individual chicken pot pies are really so good. And I love the dough too,
 I adapted from a  Parragon Little book from Sarah Lewis  "Tartlets and pot pies"




ingredients
(8  Little tarts)

Filling

25 grams of butter
1 tablespoon  olive oil
450 grams chicken breast
peeled and diced
1 green onion, sliced
2 tablespoons flour
  400 ml broth chicken
2 tablespoons white wine
1 tablespoon chopped parsley
2 tablespoons capers

salt and pepper

Crust tarts

400 g of all purpose flour
150 g cold butter unsalted in cubes
4 - 4 1/2 tablespoons of cold water
1 yolk mixed with water

Method
filling


Preheat oven to 180 ° c
Butter molds to be used
Heat over medium heat butter and oil in a frying pan. Cooking chicken and chopped green onions  stir until chicken is browned.

Add salt and ground pepper.
Sprinkle over the flour, stir well and pour broth chicken and white wine. Add salt and pepper to taste, until sauce thickens and chicken is cooked.
Add the parsley and capers and let cool.


For crust

In a bowl mix  the flour and butter crumbs by hand, add 1/2 teaspoon salt, should have the consistency of breadcrumbs, add in a little cold water, and work with your hands until a homogeneous dough.

Wrap in plastic  and refrigerate about 15 minutes.
Remove from the fridge  and with  hands with a little flour roll the dough with a rolling pin.



Spread in about   2/3 of the dough with the rolling pin, Cut with  with cookie cutters and save what is left over to cover the tarts.
Paint the crust border  with egg glaze and fill the tarts.
Spread the remaining dough and cut Little dough  to cover.
Brush the crust with beaten egg.
Bake in oven about 25 minutes or until well browned.
Let cool before unmolding. Serve warm or hot with some  salads.

Pies de pollo










Estos pies de pollo son absolutamente buenas diría yo, hay que calcular para servir unas dos por personas  se pueden  acompañar de ensaladas o  servir solas.

Se pueden hacer con otros rellenos.

Ingredientes
(8 porciones)

Relleno
1 pechuga de pollo de unos 450 gramos
picada en trozos pequeños y sin piel.
25 gramos de mantequilla
1 cucharada de aceite de oliva
1 cebollin picado
2 cucharadas de harina
400 ml de caldo de pollo
2 cucharadas de vino blanco
1 cucharada de perejil picado
2 cucharadas de alcaparras
sal y pimienta

Para la masa
400 gramos de harina
150 gramos de mantequilla helada
4 a 4 1/2 cucharadas de agua fría.
1 yemas mexclada con agua fría.

Preparación
Precalentar el horno a 180° y enmantequillar los moldes que se usarán.

Relleno
En un sartén grande calentar la mantequilla con el aceite, agregar el cebollín picado, y el pollo, revolver y cocinar hasta que esté el pollo más bien dorado, sazonar con sal y pimienta.
Agregar la harina espolvoreando sobre el pollo, revolver bien y agregar el caldo de pollo y el vino blanco revolver hasta que tenga una consistencia espesa.
Finalmente agregar el perejil picado y las alcaparras.

La masa

En un bol mezclar la harina con la mantequilla haciendo como migas y agregar 1/2 cucharadita de sal y de a poco agua fría hasta poder hacer una bola con la masa.
Envolver en film plástico y refrigerar unos 15 minutos.
Retirar del refrigerador y estirar la masa con el rodillo y  las manos enharinadas.

 Estirar 2/3 de la masa  y estirar con el rodillo cortar con algún molde del tamaño de los pies que se van a usar.
rellenar las tartas con la mezcla de pollo y cubrir con los restos de masa que quedaron, con una broche pintar la masa con una mezcla de yema con agua,
Llevar a horno durante unos 25 minutos o hasta que estén dorados.
Dejar enfriar antes de desmoldar.
Se pueden servir tibios o calientes con ensaladas.
Si quedan se pueden calentar perfectamente en microondas.
