tapioca and cinnamon pudding







My Mom love tapioca because she remember when was a child and always ate in Punta Arenas (Chile south) where she born so when I can I make some  tapioca desserts and sharing with her normally Sundays  and really she enjoy.
She cooks and bakes amazing but to her age (82) she is a little tired and understand she enjoy someone cook for her :)

Recipe from my personal notebook récipes  and adapted  from  Saveur.

INGREDIENTS

4 cups milk
3/4 large Pearl tapioca
1/4 teaspoon salt
1 teaspoon of vanilla extract
1 cup heavy cream
1 cup sugar
4 eggs separated
ground cinnamon to garnish

METHOD

Bring milk, tapioca and vanilla to a boil in a saucepan over médium high heat.
Reduce heat to médium low and cook stirring until tapioca is tender 20 to 25 minutes.
Whisk together cream, 3/4 cup sugar and egg yolks in a médium bowl. Whisking constantly, add egg yolk mixture to tapioca, cook stirring, until mixture thickens and just begins to boil for 8 to 10 minutes.
Remove from heat and transfer to a large bowl, let cool to room temperatura.
Meanwhile whisk egg whites until frothy. While whisking, sprinkle in remaining sugar, whip to stiff peaks.
Fold whites into pudding and divide between 6 /7 bowls, chill.
Sprinkle with cinnamon.

Budín de tapioca con canela











Mi mamá adora la tapioca o perlas de sagú, ella dice que estos  postres le recuerdan cuando era chica y vivía en Punta Arenas .
Así que cuando puedo le hago postres con tapiocas y le llevo los fines de semana.
Mi mamá cocina fantástico, hace años hacía clases de cocina (cuando aún no salían en la televisión) así que aprendí muchísimo con ella, comenzé  a cocinar como a los 12 años (mi hija igual) así que hemos cocinado juntas e intercambiamos receta.
Pero ahora se cansa mucho estando de pie, así que cuando puedo yo le cocino lo que le gusta, es un placer cocinar para ella.
Esta receta la adapté de Saveur y es de mi cuaderno de recetas.
La tapioca se encuentra en Supermercados(productos naturales o aliños) (en el Jumbo seguro).

Ingredientes
4 tazas de leche
3/4 taza de tapioca
1/4 cucharadita de sal
1 cucharadita extracto de vainilla
1 taza de crema
1 taza de azúcar
4 huevos (claras y yemas separados)
canela en polvo para adornar

  19. we don't have tapioca here, but I do love cinnamon, Gloria Dear, it is so good for the health and for the heart especially, I like to put it in my cappuccino every day :) with some brown sugar

  20. I'm like your mother...tapioca was a staple in my family too. I still make it, but my kids are totally not interested. Isn't that interesting? (We used to call it fish eye pudding at boarding school!)

      I think In Punta Arenas they ate many meals typical from Europe in these years, and also my mom's dad was english and her mom from spanish.
      My mom loves dates too! They received these things from ships that arrived there!
