My dear friend Louise from Month of Edible Celebrations is hostes a pasta event because is the pasta month.
I made the other day this pasta gratin and was so delicious and absolutely veggie:)
My daugther love this!
I adapted from Platos y Copas - Chileand Im sharing with Joyce from Kitchen Flavours to Eating yours books
Pasta gratin
Ingredients
400 grams of pasta (fusilli-bowties)
1 finely chopped Green onion
1/2 red pepper diced
1 garlic finely chopped
1 cup diced tomatos
2 cups heavy cream
3 eggs
chopped basil
Grated parmesan cheese
olive oil
salt and pepper
Method
In a pot of boiling water cook pasta for
8 to 10 minutes until they are ready.
Remove water and reserve.
In a pan pour olive oil and saute the green onions and pepper until they are soft.
Add the garlic and tomatoes and heat until the skin is detached, you can leave the peel.
In a bowl pour the cream with the eggs and a pinch of salt and pepper.Incorporate this mix to cook pasta and mix with Green onions mix.
Mix well. Season with salt and pepper to taste.
Put the pasta mix in a large dish or a oven skillet .Cover with parmesan cheese and put the oven to 180°c for gratin.
Once the cheese is melted and golden remove from oven and serve.

Pasta al gratin
Una forma de hacer pasta absolutamente deliciosa y apta para vegetarianos.
Adaptada de una receta de Platos y Copas (Chile)
Ingredientes
400 gramos de pasta
(pueden ser corbatitas o espirales o mezclados)
1 cebollin picado
1/2 pimentón rojo cortado en trozos finos.
2 tazas de crema o nata espesa
3 huevos
albahaca picada (o perejil)
1 ajo picado
1 taza de tomate picado en trozos
queso parmesano rallado
aceite de oliva
sal y pimienta
Preparación
En una olla mediana hervir la pasta con una pizca de sal de 8 a 10 minutos.
Pasar por un colador y reservar.
En un sartén colocar un poco de aceite de oliva, y saltear el cebollin picado con el pimiento hasta que estén suaves y tiernos.
Agregar el ajo picado y los tomates en trozos, mezclar bien.
Si se quiere se pueden dejar los trozos de cáscara de tomates.
En un bol batir los huevos con la crema con un poco de sal y pimienta, incorporar esta mezcla a la pasta ya cocida y con la mezcla de pimentón y cebollin verde.
Mezclar bien y sazonar a gusto si necesita más sal.
Colococar la mezcla de pasta en una fuente o molde de horno cubrir con queso parmesano y llevar a horno a unos 180° c, hasta gratinar bien, retirar dejar enfriar un poco y servir.
Se puede servir con ensaladas.
Se calienta muy bien en el microondas, se retira la porción necesaria y se pone al microondas en un plato.
