Sacher Torte






This delicious Austriac torte is one of my favorite, the recipe that I place here is that I make always.






Many years ago I translate from a German issue and now I translate again in English for all of you.


Maybe all of you know that's lovely recipe comes from Austria and is so antique and is typical of Viena, has aprox. 175 years.







I remember I made this Torte for a friend's weddings, were differents types of tortes, The only with chocolate was the mine, and all people like, I make this torte to birthday and others if you want more bigger you may make two tins of cakes.
















Ingredients





Dough





4 eggs


100 grs. of butter


100 grs. chocolate powder (semisweet)

1 cup of granulated sugar


3/4 cup of ground waltnuts (from Nogal)


1 cup of plain flour

1 1/2 teaspoon of baking powder







Filling


apricots jam





Chocolate cover





200 grs. solid chocolate to melted (the best)


2 spoonful of butter


1/2 cup of double cream


1/2 cup of caster sugar



Method

Grind the nuts and reserve. Separate the yellows from the whites. In a bowl beat the yellows eggs until is creamy. Add the buter, beat slowly and add the sugar,the flour,baking powder and grinded waltnuts,and last add the whites whipped firm.

Mix all well and place in a tarte mold engrased. Place in the oven to medium heat by 20 to 25 minutes.

When is ready let the tarte cool. Desmold and cut in two parts. Filling with the apricots's jam (if you want you may make a syrup with water and sugar to moist a little before filling)

Now melt the chocolate to bain marie and add slowly the double cream, the butter and sugar.

Let chill by a while and cover (when is little hot) the tarte with the chocolate mix.

You may garnish with chocolate or fruits or franzipan.

SACHE TORTE

Seguramente muchos de ustedes conocen la Sache Torte, una receta austriaca muy antigua, que se inventó en Viena y tiene como 175 años, yo amo esta torta siempre la hago.

Hace muchos años la traducí de una revista alemana y ahora la quise colocar porque siempre pongo las recetas que más me gustan.

Hace mucho tiempo la hice para la Boda de una amiga muy querida (otro día contaré esa historia) y era la única torta con chocolate, las demás eran blancas como se acostumbra, pero habían distintos tipos de tortas, pero supe que después a todos les encantó quizas por lo diferente no sé, siempre he encontrado entretenido cuando en las Bodas hay tortas diferentes para degustar.

Ingredientes

4 huevos

1 taza de azúcar

100 grs. mantequilla o manteca

100 grs. de chocolate en polvo( semidulce)

3/4 taza de nueces molidas o picadas

1 taza de harina normal

1 y 1/2 cucharadita de polvos de hornear

Para rellenar

Mermelada de damasco (albaricoques)

Para cubrir

200 grs de chocolate sólido para derretir

1/2 taza de crema espesa

2 cucharadas de mantequilla

1/2 taza de azúcar impalpable

Preparación: Moler o picar las nueces. Reservar. Separar las yemas de las claras.En un bol batir las yemas hasta que estén espumosas y agregar el azúcar, la mantequilla, harina y bicarbonato, por último las claras batidas a nieve bien firmes. Mezclar todo bien para una masa consistente.

Verter en un molde para tarta ya engrasado y llevar a horno a fuego medio por unos 20 a 25 minutos, es más o menos rápido.

Cuando esté lista dejarla enfriar. Despues desmoldar sobre un plato grande, rellenar con mermelada de albaricoques y tapar. Derretir a baño maría el chocolate con la mantequilla y la crema, dejar enfriar un poco y luego cubrir la tarte para que que quede bien la cubierta es necesario que la mezcla esté un poco caliente, queda mejor.

Se puede decorar con frutas o mazapan o con el mismo chocolate.

"La Vega" in Los Angeles(Chile) (The Veggi)


Before to following with recipes I wanted sharing with all of you these pictures of our trip to Los Angeles, La Vega is a wonderful Store where you found all the summer beauties, veggis,flowers,fruits, some clothes, grains, and typical things of here.
Some picture was taken by Gerardo Dad and others from me. The dificult was choose what's pictures show.

Here you may see, hats (that many people use at the countryside) and others things to the kitchen.


Remember these lovely dishes? I use when I made Pastel de Choclo (Corn's pie) these are from Quinchamalí and the grey is black. are lovely. You may use at oven, and microwaves without problem.

















These pictures are one of my favorites, lovely strawberries and blackberries, Los Angeles export a lot of berries, at this store we found too bluberries.
Gerardo take this lovely picture of this couple that sell grains, cereals beans and spices, many years in their store.

En español : Una breve nota para comentarles que estas fotos son de mi estadía en Los Angeles Chile, y este lugar donde venden, flores,frutas,granos y otras cosas es típico de acá por eso quise compartir estas fotos, algunas las tomó Gerardo y otras la que escribe.
Espero que las disfruten tambien un cariñoso saludo para muchos chilenos que leen mi blog en otros paises, aquí tienen un pedazo de Chile, Los Angeles para los que no lo conocen es muy
campestre.
No alcancé a sacarle fotos a las sandía pero estaban preciosas, también vendían harina tostada y humitas una señoras en canastos pero estaban a fuera yo principalmente saqué fotos del interior.

Hello from Los Angeles, Chile (south of the Country)





A big hug and greetings from Los Angeles, Chile with a very hots days, here lives my father in Law (hubby is born here) so we come all the years to see him , he lives alone now in a big house near the town.


I add two maps and you may see here we are, to the left the all map of Chile, you can see Region Metropolitana (Santiago) and above VIII Region, LosAngeles.
At the other Map you may see Los Angeles and other cities, the other days we went to Temuco and is not far, is a beauty city too.
I love the South because I m from of Concepciòn near Los Angeles (Two hours aprox).











I place the raspberries because Los Angeles is a big export of strawberries and blueberries to USA and Europe, Sometimes in this time I find strawberries to good prize and I take to Santiago freezen. Are really nice. I hope to find them and make Jam.

























Is curious Los Angeles, look this picture, a carreta with horses in town, you may see this things all the time, here is town and countryside, a lot of people live from the countryside, Animals, milks, so nice cheese, veggies, fruits, and woods (so sad) because are many trees.
Well I hope to return to Santiago next Friday and post again dears, The childs return to school and I have to buy some things.... xxxxxxxxxGloria

Cheese's chicken on crepes to the oven (Panqueques con pollo al horno)

How a lot of dish I make I prepare this all time but how most of you (except Australia and S.A.) are in a cold winter I think this is a delicious dish that you will like so, the childs really love.


And Gerardo Jr. spread Ketpchup on them!!! but I find a horror the kepchup but eat how you like!Not problem.


Is really nice and you may warm at the microwaves later.


This is for 4 of 5 persons but for the people live alone may freeze and is soo good.





Ingredients




To made de panquekes



4 eggs



1 cupand half of milk



2 cups of flour



1/ 2 teaspoon of baking podwer



pinch of salt



pinch of sugar



oil



Beat de eggs, add the sal,the sugar and the baking podwer, add the milk mixing with the flour, until a homogeneus mix.



Heat a frying pan with a little oil(you may make the pancakes in a teflon frying pan)an measure with a little cup or an dipper the mix of panquekes and make one by one first by one side and turn up to the other side, is so quick, and place them in a dish meanwhile make the filling.


Filling


1 chicken breast boiled and chopped


1 cup of white sauce (recipe above)


3 spoonfuls of grated cheese (parmesan)


salt


pepper


1/2 cup of duble cream




Method


Mix the chopped chicken with the white sauce(reserve a little to spread over the panquekes) and double cream,add salt and pepper and mix well.


Add one spoonful of grated cheese.Reserve.Extend one panqueke and filling with the mix,roll on and place in a large pyrex and make the same with all panquekes, pour how is in the picture.When is ready spread a few of white sauce over the panquekes and add the greated cheese and take to the oven by 15 minutes to medium heat, when are little golden are ready. Serve with salads or alone.


Note. If you make more panquekes you may filling later with Dulce de Leche and roll on (are delicious) or freeze them. to heat later use the microwaves.


WHITE SAUCE OR BECHAMEL SAUCE IN MICROWAVES


1 and half cup of whole milk


1 spoonful of butter


1 and half spoonful of flour


salt and pepper


nutmeg podwer


METHOD : In a Pyrex place the butter by 3o seg. en High (100%)


Add the flour and mix well how a cream.


Incorporate the milk stirring, add the salt,pepper and nutmeg.


Cook by 3 minutes to medium (50%) until be thicken, stir well. If is neccesary (depends of the oven) add 1 minute more to thicken.


This sauce is so quick and easy and you may use to differents foods.


Well my dear friends I going to travel to the south to see my Father in Law (Has 90 years) so I will can´t post because the dear Dad don't have WI FI but if I find some Ciber Café or other I will post. Panquekes rellenos con pollo al horno


Ingredientes


4 eggs


1 taza y media de leche


2 tazas de harina sin polvos


1/2 cucharadita de polvos de hornear


1 pizca de sal


1 pizca de azúcar


aceite


Batir bien los huevos, agregar la sal y la pizca de azúcar, alternar con la leche y la harina haciendo una mezcla homogénea.


Calentar un sartén con un poquito de aceite /mejor si es de teflón) y con una tacita pequeña o con un cucharón hacer la medida para ir haciendo el panqueke en la sartén., hacerlos por un lado y despues por el otro, es muy rápido, sólo tienen que dorarse un poco, reservar en un plato mientras se prepara el relleno.


Relleno de los panqueques


1 pechuga de pollo cocida y cortada en trocitos


1 taza de salsa blanca (receta más abajo)


3 cucharadas de queso parmesano rallado


sal y pimienta


1/2 taza de crema espesa


Método: Mezcla el pollo trozado, la taza de salsa blanca (reservar un poco para poner sobre los panqueques) agregar la crema, sal y pimienta mezclar bien y agregar una cucharada de que rallado.


Extienda un panqueque y rellénelo con la mezcla de pollo, enrollandolos así con todos los panqueques y vaya colocándolos en una fuente Pyrex para horno.


Cuando esten todos listos cubra con un poco de salsa blanca y el resto de queso rallado, lleve a horno por unos 15 minutos o hasta que estén dorados.Se pueden servir con ensaladas o solos.


Generalmente sirvo dos por persona pero depende de cada uno.


Si sobran algunos panqueques se pueden rellenar con dulce de leche o congelar hasta que se usen.


La verdad es que quedan deliciosos no se parecen para nada a los que vienen en caja y uno no se demora nada.


Salsa blanca para microondas


1 taza y media de leche


1cucharada de mantequilla


1 cucharada y media de harina sin polvos


sal, pimienta y nuez moscada


Método; Calenta en un pyrex la mantequilla durante 30 segundos en potencia alta (100%).


Agregar la harina y revolver hasta que quede cremosa.


Incorporar la leche gradualmente sin dejar de revolver y luego a agregar la sal, pimienta y nuez moscada a gusto.


Cocer durante 3 minutos en potencia media (50%) hasta que espese, revolviendo de vez en cuando. Si le falta un poco de espeso se le puede agregar un minuto más.


Esta salsa blanca o salsa bechamel se puede usar para diferentes platos es rápida y muy fácil, yo la aprendí en unos cursos especiales de microondas. (tiene la gracia que no se pone grumosa).


Bueno esto es todo por ahora, mis queridos, me voy por unos dias al Sur a ver a mi suegro, estaré aproximadamente unos 8 días fuera y mi querido suegro no tiene Wi Fi, Gerardo lleva los Notebooks, si encuentro donde postear lo haré. Chesnut's rolls ! (rollo de Castañas)

I don't want bore you with my histories, but this begin so, I had a freeze cream chesnuts at Fridge and I was thinking, tthis are to make because soon come Autumn and the lovely season of chestnut, so I find this recipe that with my mother make with chesnut's puree and Hubby is so happy because he really loves chestnuts and Im happy too because I can show you other recipe. Enjoy!

The chesnuts are from the countryside of my father in law!



Ingredients
3/4 K chesnuts puree
or 3/4 K boiled chesnut, peel and mashed)
1 cup of caster sugar
1 spoonful of melted butter
2 spoonfuls of rhum
1 teaspoonful of vanilla
Place the chesnut puree in a bowl (pyrex)
and add the melted butter, the rhum and the caster sugar, mix well to make a chesnut's cream.
Reseve.
Filling's cream to roll
150 grs. of butter
100 grs. caster sugar
100 grs. sweet chocolate podwer
3 yolk's eggs
Beat slow the butter and add the caster sugar, add the yolks one to one. And finally the chocolate podwer, mix well and reserve.
Wet with ice water two towels kitchen and squeeze well, extend one first over a table and empty over the towel and spread slowly, so put the other towell kitchen over the mix and rolling with a roll pin making a rectangle about 2 cm of thickness.
Take out the kitchen towel over the mix and spread carefully the filling of chocolate you have.
Roll on how roulade, helping you with the wet towel and let at the fridge in a large dish.Let a the fridge by 1 hour.
Later you may granish with chocolate, fruits or whipped cream
EN ESPAÑOL
Rollo de Castañas relleno con chocolate
No quiero aburrirlos con mis historias, pero la cosa es así: el otro día mirando el freezer vi que tenía esta crema de castañas que me regaló mi cuñada, y pensé que ya el Otoño está cerca y vendran las castañas nuevas, así que había que ocupar esta crema y me acordé de esta receta de muchos años que hacemos con mi mamá.
Las castañas son del campo en el sur de mi suegro que justo en unos días más lo vamos a ir a visitar .
Ingredientes
3/4 puré de castañas o
3/4 castañas cocidas, peladas y hechas puré
1 taza de azúcar impalpable
1 cucharada de mantequilla derretida
2 cucharadas de ron
1 cucharadita de vainilla líquida
Al puré de castañas agregue el azúcar, el ron, la mantequilla y la vainilla. Mezcle bien todo y reserve.
Relleno de chocolate para el rollo de castañas
150 grs. de mantequilla
100 grs de azúcar impalpable
100 grs. chocolate en polvo
3 yemas de huevo
Batir la mantequilla con el azúcar suavemente e ir agregando las yemas de a una y revolviendo, finalmente agregar el chocolate en polvo y mezclar bien-.Reservar.
Moje dos manteles de cocina con agua fría y estrújelos bien.
Un paño coloquelo sobre la mesa de cocina y extienda la mezcla de castañas, coloque el otro paño húmedo y usleree con el uslero de amasar.Haga un rectángulo de un alto de 2 cm. retire el paño de arriba y coloque el relleno de chocolate sobre la mezcla de castañas.
Enrolle con cuidado ayudandose del paño húmedo y coloque el rollo en un plato o pyrex extendido y lleve al refrigerador por una hora al menos para que esté consistente al cortarlo.
SE PUEDE ADORNAR CON FRUTAS, CHOCOLATE O CREMA BATIDA.
