Roast side of Salmon with mustard,tarragon and chive sauce

I was at the Beacg last days and some of you know I love salmon and all seafood, I made this salmon that I adapted from Bon Apettit Magazine (December 2008) as always is a nice and tasty recipe from Bon Apettit, here all love this recipe, is really nice.



Ingredients

500 to 800 grs. pound whole salmon with skin
2/3 cup of mayonnaise

1/2 cup brown or yellow mustard

4 tablespoon chopped fresh tarragon

6 tablespoon chopped fresh chives

2 tablespoon golden brown sugar

2 tablespoons fresh lemon juice

2 teaspoons finely grated lemon peel



Method



Position rack in center of oven and preheat

to medium heat.



Line large rimmed baking sheet with aluminium or parchment paper.

Mix first the ingredients as mayonnaise,tarragon,mustard, golden sugar and lemon juice and lemon peel in medium bowl.Mix well.

Season mustard sauce lighttly with salt and pepepr. Place salmon, skin side down , on diagonal in prepared sheet.

Spoon 1/2 cup mustard sauce atop salmon, then spread over , covering completely.

Sprinkle salmon generously with salt and pepper. Roast just until salmon is opaque in the center, about 15 minutes.

Using foil or parchment as aid, transfer salmon to platter. Cut crosswise into pieces and serve with remaining mustard sauce.

Add lettuce salad.

Salmón al horno con salsa de mostaza
y hierbas

Estuve en la playa hace unos días, los que me conocen saben que me encanta el pescado y toda las comida del mar, hice este salmón que adapté de una receta de la revista Bon Appetit de Diciembre del 2008, como siempre fue una muy buena receta. (esta revista es muy buena).Se puede hacer con salmón fresco o congelado.

Ingredientes

500 a 800 grs. de salmón fresco o congelado con piel

2/3 de taza de mayonesa

1/2 taza de mostaza amarilla o café

4 cucharadas de estragón picado fresco o seco

6 cucharadas de ciboulette o cebollín picado fino

2 cucharadas de azúcar rubia

2 cucharadas de jugo de limón

2 cucharadas de ralladura de cáscara de limón

Método

Prender el horno a fuego medio y colocar sobre una bandeja de horno o una fuente papel aluminio o papel engrasado sobre ésta.

Mezclar los ingredientes como mayonesa,mostaza,azúcar rubia,estragón,cebollín

y limón en un bowl.

Sazonar esta salsa de mostaza con sal y pimienta y mezclar bien.

Colocar el salmón en la bandeja de horno o fuente con la piel hacia abajo y aliñar con esta mezcla de mostaza. Reservar parte de la salsa para cuando se vaya a servir.

Cocinar el salmón en el horno durante unos 15 minutos, y el centro esté opaco..

Usando el mismo papel aluminio trasladar el salmón a una fuente o plato grande.

Cortar en piezas para servir con el resto de la salsa. Acompañar con ensalada de lechuga u otra.

Valparaiso (A travel to the Harbor and beach)Viaje al puerto de Valparaìso











The last weekend (easter) we go to Valparaìso that is aprox. 2 hours from Santiago.



I love it because have antiques, old books, and a type of life more quiet and nice, I think.




I take some pictures and add others that I have so you may have and idea and others have good memories of the harbor.









Well Valparaìso is the principal harbor of Chile, all these lovely fruits you enjoy travel from here to all worls, and the wines too of course.




And of course you may buy wonderful fishes and prawns in Caletas and little stores.










The first pictures to right is at night and are old and antique houses near Valparaiso.




And the above pictures is from the Pablo Neruda's house that is so visited (nobel award and Poet) if you know the poems of him yoiu will understand.




He loved so the sea and the houses near the sea. This pictures is taken from his living at house,have a fabolus view of the sea and the harbor. all his houses now are Museum, if you go sometimes he collected many things and antiques so is beautiful and all the things are there.






When I went years a goI remember he had a big sofa in front of this view, to see Valparaiso.He had a bautiful desk too where he wrote sometimes.





This is a beautiful paint of Rugendas a painter that lived in Chile about 1800, had beauty paints of these age. And you may see the difference with Valparaìso now.








This other paint show the typical hills in Valparaìso, almost all the houses are in hills and the sea above.

















These are so antiques houses someones of 1900 and others more antiques pleople still live there and others have restaurants inside, so nice, almost all these houses have a beauty view of the sea.











In some houses the style is English because at 1900 lived a lot of britain people , and by many years at private school the official languaje was english .



Not all these beauty houses are well now, remember we have had a lot of earthquake all these years, but a lot of the are in so good conditions.

El fin de semana pasado (Semana Santa y Pascua) fuimos a Valparaìso, por eso quise hacer este post entre receta y receta porque sino va a quedar demodè.
Para los que no sepan o no conozcan Valparaìso queda a unas dos horas aprox. de Santiago hacia el mar(Oceano Pacìfico)
Tomè unas fotos y tenìa otras para mostrar como es actualmente, incluso es un lugar turìsticamente muy visitado, por su historia, por ser puerto, por Pablo Neruda (poeta) etc.
Valparaìso es el puerto principal de Chile, de allì sale toda esa fruta rica que exportamos al mundo .Si uno va al puerto hay moviemiento todo el dìa.
Amo Valparaìso porque hay feria de antiguedades, libros viejos, calles distintas y un ritmo de vida màs tranquilo que aquì en Santiago, ahora mismo estuve en la Feria donde compro libros de cocina antiguos y me encontrè con la misma señora que conozco hace 15 años por los menos, se impresionò de ver a los niños porque los conociò de meses y aunque los ha visto de vez en cuando hace tiempo que no ibamos.
En la primera foto arriba es una vista general de la bahìa de Valparaìso, un dìa precioso, porque a veces està nublado, pero tiene un clima muy agradable, en invierno es entre 10º y 17º y en verano màximo 24 o 25º, es por el mar.
Despues viene una vista de las casa en los cerros, una de dìa la otra en crepùsculo, esa la encontrè y la coloquè porque la encuentro preciosa.
Despues màs abajo una vista desde la casa de Pablo Neruda (Premio Nobel) muchos lo conocen, hoy sus casa que tuvo son museos, hay una en Isla Negra, otra en Santiago y esta en Valparaìso.
Las casas de èl ademàs son muy interesantes porque estàn llenas de colleciones,conchitas,figuras etc.
La vista està tomada desde el living de la casa donde tenìa un sillòn fantàstico frente al puerto.
despues dos pinturas de Rugenas que viviòn en Chile en el 1800 y que pintò Valparaiso y otras partes de Chile y uno puede ver como era y como es hoy por eso las coloquè.
Estas otras son de casas muy antiguas (del 1900) algunas en muy buenas condiciones porque estàn arregladas y bien conservadas, algunas son restaurantes u hoteles.
En muchas casas el estilo es inglès antiguo porque hubo una època en que vivian muchos ingleses en Valparaìso, incluso en los colegios privados la lengua oficial era la inglesa .Existìa mucho comercio e intercambio con Gran Bretaña.
Muchas de estas casas ahora no estàn tan en buenas condiciones, hay que recordar que somos un paìs de terremotos, pero varias de ellas han sido restauradas y y se usan como restaurantes, cafes o pequeños hoteles.
Si ustedes piensan que estoy enamorada de Valparaìso; es verdad!!
Un recuerdo cariñoso desde aquì a los que estàn fuera, hagan un Salud con un buen vino cuando tengan nostalgia.!!!

"La Vega" in Los Angeles(Chile) (The Veggi)


Before to following with recipes I wanted sharing with all of you these pictures of our trip to Los Angeles, La Vega is a wonderful Store where you found all the summer beauties, veggis,flowers,fruits, some clothes, grains, and typical things of here.
Some picture was taken by Gerardo Dad and others from me. The dificult was choose what's pictures show.
Well enjoy.



Here you may see, hats (that many people use at the countryside) and others things to the kitchen.


Remember these lovely dishes? I use when I made Pastel de Choclo (Corn's pie) these are from Quinchamalí and the grey is black. are lovely. You may use at oven, and microwaves without problem.

















These pictures are one of my favorites, lovely strawberries and blackberries, Los Angeles export a lot of berries, at this store we found too bluberries.
Gerardo take this lovely picture of this couple that sell grains, cereals beans and spices, many years in their store.




To the lef this man is so proud of his store.

En español : Una breve nota para comentarles que estas fotos son de mi estadía en Los Angeles Chile, y este lugar donde venden, flores,frutas,granos y otras cosas es típico de acá por eso quise compartir estas fotos, algunas las tomó Gerardo y otras la que escribe.
Espero que las disfruten tambien un cariñoso saludo para muchos chilenos que leen mi blog en otros paises, aquí tienen un pedazo de Chile, Los Angeles para los que no lo conocen es muy
campestre.
No alcancé a sacarle fotos a las sandía pero estaban preciosas, también vendían harina tostada y humitas una señoras en canastos pero estaban a fuera yo principalmente saqué fotos del interior.

Hello from Los Angeles, Chile (south of the Country)





A big hug and greetings from Los Angeles, Chile with a very hots days, here lives my father in Law (hubby is born here) so we come all the years to see him , he lives alone now in a big house near the town.


I add two maps and you may see here we are, to the left the all map of Chile, you can see Region Metropolitana (Santiago) and above VIII Region, LosAngeles.
At the other Map you may see Los Angeles and other cities, the other days we went to Temuco and is not far, is a beauty city too.
I love the South because I m from of Concepciòn near Los Angeles (Two hours aprox).











I place the raspberries because Los Angeles is a big export of strawberries and blueberries to USA and Europe, Sometimes in this time I find strawberries to good prize and I take to Santiago freezen. Are really nice. I hope to find them and make Jam.

























Is curious Los Angeles, look this picture, a carreta with horses in town, you may see this things all the time, here is town and countryside, a lot of people live from the countryside, Animals, milks, so nice cheese, veggies, fruits, and woods (so sad) because are many trees.
Well I hope to return to Santiago next Friday and post again dears, The childs return to school and I have to buy some things.... xxxxxxxxxGloria
