pumpkin and basil soup (Sopa de zapallo con albahaca)




I love soups every time. I dont know why but I love all them (Made in home soups)
And is curious because the twins love them too :)
Always I ask : Who want a little soup that I made??
Usually they want:)
If you dont have fresh basil you can use dry basil,  just delicious!!

Ingredients

1/4 cup vegetal oil or olive
3 sweet onions sliced
1 tablespoon chopped basil or dry basil
3 cloves garlic chopped
2 teaspoon grated ginger
3 or 4 cups vegetable broth
2 cups fresh  cooked pumpkin (mashed)
or 2 cans pure pumpkin

Method
In a medium or large saucepot
heat oil  and add onions and 1/4 tsp salt.
Cook until are brown stirring occasionally.
Add garlic,basil, and ginger.
Cook 5 minutes or until garlic is golden, 
stirring occasionally. Add vegetable broth and pumpkin.
Heat to simmering  on high , scrapingup browned bits from bottom of pot.
Reduce heat to mantain simmer, cook 20 minutes stirring occasionally.
With inmersion blender or batches in blender, puree soup until smooth. Season with salt and black pepper.
If soup is too thick add water or broth to desired consistency.

Zopa de zapallo y albahaca









Me encantan las sopas.
En esta época no publico muchas porque aca en Chile estamos en verano. Pero hago sopa todo el año.
Ademas lo más bien que en verano comemos porotos granados o pastel de choclo.
Esta sopa cremosa de zapallo es deliciosa y va con albahaca.








Ingredientes 

1/4 taza aceite vegetal u oliva
3 cebollas cortadas pluma
1 cucharada de albahaca fresca o seca
3 dientes de ajo picados
2 cucharaditas de jengibre rallado fresco
o 1 jengibre seco
3 o 4 tazas de caldo de vegetales preparado
2 tazas de zapallo cortado en cuadritos y cocido

Preparación

En una olla grande o mediana colocar el aceite y agregar la cebolla pluma a fuego medio más 1/4 cucharadita de sal,freir hasta que esten doradas.
Entonces agregar el ajo,la albahaca y el jengibre.
Cocinar unos 5 minutos revolviendo ocasionalmente.

Halloween Cookies (galletas para Halloween)

                                                                                                           





Just in time!! (I guess) 
Wasn't easy!
About three days without internet and  I couldn't make a new  post.
Finally I made these Halloween cookies:)

And I add here Jack (Nightmare before Christmas)
only cause Esperanza loves him and this is her Jack:)

Halloween cookies

Ingredients
1 1/2 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter room temperature
1/2 cup granulated white sugar 
1 large egg lightly beaten
1 teaspoon vanilla extract

Royal icing with eggs whites

1 large egg white
1 teaspoon fresh lemon juice
1 1/2 cups icing or glass sugar

Method


In a bowl whisk together the flour,salt and baking powder.
Set aside.
In other bowl beat the butter and sugar until light and fluffly (3 to 4 minutes).
Add the beaten eggs and vanilla extract and beat until combined. Add the flour mixture and beat until until you have a smooth dough.
Wrap the dough in plastic wrap and refrigerate for about one hour (or ovenight) or until form enough to roll.
Preheat oven 180°c(350 degrees) and place rack in the center of the oven.
Line two baking sheets with parchment paper.

Remove the dough from refrigerator and  on a lightly floured surface  roll out the dough to a thickness of about 1 cm.(1/4 inch)
(If required add more to roll) Be sure the dough does not stick to the counter.
Cut out shapes using a lightly floured cookie cutter and transfer to the baking sheet.
If you find the cookies a little soft, place the baking sheet in refrigerator about 10 minutes to chill the dough.
Bake cookies about 8-10 minutes or untiol they are brown around the edges..
Remove from oven and let  the cookies cool on the baking sheet.
Frost with royal icing .Be sure to let the royal icing dry completely storing.

Royal icing

In a bowl beat the egg white with the lemon juice. Add the sifted powdered sugarand beat on low speed until combined and smooth.
Add the colours to will use.Cover with plastic wrap when not in use.

Galletas para halloween




Todos estos dias estuve sin internet, un problema con el teléfono bloqueó el WIFI así que no podía hacer nada salvo mirar mi correo en mi teléfono.
Finalmente pude hacer estas galletas de Halloween.




Ingredientes

1 1/2 taza de harina sin polvos de hornear
1/4 cucharadita de sal
1/2 cucharadita de bicarbonato
1/2 taza de mantequilla
a temperatura ambiente
1/2 taza de azúcar
1 huevo ligeramente batido
1 cucharadita de extracto de vainilla

Glaseado

1 clara de huevo grande
1 cucharadita de jugo de limón
1 1/2 taza de azúcar glass o azúcar en polvo

Pumpkin Pie Yogurt Parfait







When I made this was funny.
I knew the twins will look with suspect:) haha
Usually they eat pumpkin all the time but in savory foods.
First Esperanza said Ok I will try and she find delicious!
at night Ditto Ok I think is  really good. And hubby omy! these men ate absolutely all.
 I think I would be take some pictures of empty glasses....I love the colour of this pumpkin squash and the mix of yogurt and spices was good.

Ingredients
4 glasses or jars

1 cup of pumpkin puree (boiled or canned pumpkin)
1 teaspoon pumpkin pie spice (see recipe here)
1/2 teaspoon cinnamon
2 tablespoons of heavy cream (optative)
1 1/2 tablespoon maple syrup or honey 
2  cups greek yogurt
ginger cookies crumbled


Method

In  a bowl mix the pumpkin puree and add the pumpkin pie spice and finally the maple syrup or honey.
In other bowl add the heavy cream to greek yogurt. 
In 4 glasses or little jars layer the cream yogurt and then pumpkin puree on top of each other dividing the yogurt and pumpkin evenly the jars or glasses-
Sprinkle each glass withy crumbled gingersnap cookies.
Refrigerate by a while before serve.

Parfait de yogurt y  puré de zapallo








Para cuento corto:
 Gerardo llego un dia feliz porque traía un zapallo grande que compro en la calle (en San Bernardo) donde va a comprar los huevos.
Yo dije bueno habrá que empezar a cortar y congelar.
Estuve como tres dias pero el zapallo tenía un color maravillos.
Asi que lo tengo congelado para hacere de todo hasta porotos granados.
Lo primero que hice fue este parfait de zapallo y quedó delicioso.
Los mellizos estaban un poco reticente pero les encantó.
El zapallo es más bien dulce. Pero se puede ocupar en todo.
Había hecho una vez pie de zapallo. y es buenísimo!



Ingredientes
(4 copas)
1 taza de puré de zapallo
1 cuchyaradita de especias para pie de zapallo
ver receta aqui  es super simple.
(Se puede preparar la mezcla de especias y conservar en un frasco de vidrio.)
1/2 cucharadita de canela en polvo
2 cucharadas de crema espesa (optativo)
1 1/2 cucharada de miel o azúcar
2 tazas de yogurt griego
galletas tipo champaña para espolvorear

Preparacion

En un bol mezclar el puré de zapallo.agregar las especias para pie de zapallo,y finalmente la miel, el azúcar o sustituto de azúcar.
En otro bowl agregar la crema al yogurt griego.
en cuatro copas o vasitos repartir por separado, primero la crema de yogurt luego la crema de zapallo, haciendo capas hasta terminar con los cuatro vasos.
Finalmente espolvorear las galletas molidas sobre el postre ya listo.
Refrigerar hasta servir

Sweet potatoes with marshmallow meringue (postre de camotes con merengue)




Love sweet potatoes especially in desserts and pies, I think taste
like lucuma, an amazing fruit from here,and Peru too.
 I know in North america and others countries  have now lucuma powder)

Anyway this recipe with sweet potatoes with marshmallow meringue is adapted from a vintage recipe from Good Housekeeping. 


and Im sharing with













Ingredients

3 lbs. (1,200 kilo) sweet potatoes
2 tablespoons maple syrup
or honey
1 tablespoon dark Brown sugar
1 tablespoon lemon juice
1/2 teaspoon ground allspice
pinch of salt
2 tablespoons  of heavy cream
3 egg whites
1/4 tsp. cream of tartar
1/2 cup granulated sugar

Method

In a pan cook  the sweet potatoes.
by 18 to 20 minutes or until very tender when pierced with
fork, drain.
When cool enough to handle, peel potatoes and put in a bowl,
add maple syrup or honey , brown sugar, lemon juice,pinch of salt and allspice. Mash potatoes with potato masher. Finally  add the heavy cream and stir well. 
Transfer to a casserole dish and baking by 15 minutes .

Prepare meringue:

In large bowl with mixer in high speed, beat eggs whites and cream of tartar until soft peaks form.  Sprinkle granulated sugar 2 tablespoon at a time, beating until sugar dissolved
and meringue stands in stiff , glossy peaks when beaters are lifted.

Transfer meringue to large piping bag .
Start at one side of the casserole dish and pipe meringue in small mounds onto surface of sweet potatos mix, coverage entire surface
Bake 6 to 8 minutes or until meringue is golden.

En español

Postre de camotes con merengue










Antiguamente el camote se comía mucho aquí en Chile, realmente, muchos postres, pero la vida rápida, el querer tener todo en un minuto listo, en fin tantas cosas, ha hecho que el camote exista pero se ve poco, generalmente se encuentra en supermercados (líder) pero en la parte de las cosas más especiales.
Muchos lo asocian con el zapallo pero es diferente, su sabor me parece más parecido a la lúcuma, el camote es realmente delicioso, fácil de preparar, al cocinarse queda tierno y suave y se puede usar como se quiera.
(Tengo otras recetas de camote en mis recetas por si quieren ver)
El camote de Chile es un poco más pálido (como amarillo) y el de Perú es más anaranjado, los dos son muy ricos.
También en los congelados he visto camotes que traen de Perú.

Poached pears with chocolate sauce








 A simple and delicious dessert, the pears are cooked by a while and then bath in a chocolate sauce!

Ingredients

(4 servings)
6 cups water
1 1/2 cups sugar
2 teaspoon vanilla extract
4 pears peeled
1/2 cup single cream
200 grams dark chocolate melts
double cream to serve (optative)
Preparation method
 
Place the water, sugar and vanilla extract  in a saucepan and bring to the boil.
 Reduce the heat to a simmer and add the pears.
Cover with a piece of wax or baking paper and cook for 10 to 15 minutes, depending on the size of your pears.
Heat the single cream in a saucepan, remove and add the dark chocolate. Stir until the chocolate has melted.
Allow to cool slightly. To serve, spoon some double cream into a bowl, top with a poached pear and the warm chocolate sauce.
To stop the pears from discolouring after peeling, place them in a bowl of water with a juiced lemon.

Peras  poché con salsa de chocolate








Para mí este es el típico postre simple y delicioso.
Con Peras y chocolate y de hecho se llevan muy bien, fresco y rico.

Ingredientes

6 tazas de agua
1 1/2 taza de azúcar
2 cucharaditas de extracto de vainilla
4 peras ya peladas pero enteras
1/2 taza de crema
200 gramos de chocolate en barra
para respostería
crema batida para servir (o helado de vainilla)
algunas frutillas para adornar

Preparación

En una olla colocar el agua, la vainilla y el azúcar hasta que hierva, bajar el fuego y colocar las peras por aproximadamente
10 a 15 minutos, la idea es que queden blandas pero no se deshagan, tapar la olla un rato mientras se cocinan.
Aparte en una olla pequeña calentar la crema espesa revolver y agregar el chocolate cuando la crema esté caliente.
Apagar el fuego y revolver el chocolate con la crema, quedará una salsa de chocolate espesa.
Dejar enfriar un poco.
En un bol o plato poner un poco de crema batida, encima la pera cocida y bañar con un poco de chocolate, se puede adornar con unas frutillas.
(para que no se decoloren las peras se pueden colocar en un poco de agua con jugo de limón antes.)
Dejar enfriar antes de servir.

butter roasted turkey breast







For many of you  turkey is the symbol of Thanksgiving  and is beautiful (here we eat turkey especially for Christmas) in any case I always thought that sometimes a turkey is a lot for a family that is not very big.

I found this recipe in one of the last Bon Appetit and what caught my attention was that it was a recipe for turkey breast, and just had a frozen, I made this recipe and it was absolutely delicious and still, I took my mom and also I had leftovers (they are so good) to make sandwiches.
 




INGREDIENTS

8 servings

1 skin one bone in turkey breast about
 2.700 k ( 4,5 lb )
1/2 cup unsalted butter room temperature
salt
pepper
 4 spring thyme
4 spring rosemary
1 head of garlic
cloves peeled and crushed
3/4 cup rum (my mom always add rum when bake  turkey)


Method

Preheat to 180°c (425° F)
Gently loosen skin from turkey breast and rub butter under skin and all over outside of breasts season  and add the rum, salt and pepper.
Scatter thyme springs , rosemary springs and garlic over a large rimmed baking sheet and arrange turkey breast.
Skin side up on top.

Roast turkey breast turning halfway through, and bath with the juices in the pan  until skin is crip and golden brown , cook about 50 to 60 minutes (you will to know is ready when you cut a piece of meat and the juice run clear.
Transfer turkey breast to a platter and let rest 10 to 15 minutes before serving.
To serve slice turkey breast and pass with vegetables.

pumpkin creme brulee (crema brulee de zapallo)





A lot of recipes  with pumpkin at this time and it is natural especially with the Northern Hemisphere celebrates Thanksgiving. 
 I always do some special recipes more than the majority of my visitors are from USA  and had several but this cream brulee with pumpkin I found delicious!
And really was:)


I adapted from  Love and Olive oil a lovely blog!





Ingredients
(6 servings)

2  cups heavy cream
2 teaspoons vanilla extract
3 egg yolks
3/4 cup Brown sugar
1 cup pumpkin puree or canned pumpkin
1/2 cup granulated sugar to caramelize

 

Method

 Preheat oven to 170 °c ( 300 degrees F)
Bring a pot of water to a gente boil (this will be used for the water bath later)

In a small bowl, whisk together egg yolks, brown sugar, pumpkin and vanilla until light in color.

Heat cream in a medium saucepan until it starts to steam. Gradually pour warm cream into bowl with egg yolks.1 cup at a time whisking until incorporated. Skim off foam. Pour into 6 shallow ramekins.
Arrange ramekins in a baking pan and place pan on over rack. Carefully pour in judt enough boiling water to reach alfaway up the side of ramekins.
Bake for 30 minutes or until just set. remove from bath and allow to cool to room temperatura. Cover and refrigerate for at least 2 hours.
Before serving sprinkle  tablespoon of sugar evenly over the top each ramekin.
Use a kitchen torch to caramelize the sugar, moving torch evenly across the tops of the custards to keep the sugar burning.
Also you can place the custards on the top rack of a broiler set to high and broil until sugar is golden brown and caramelized 2 to 3 minutes.
Keep refrigerate before serving.

Crema brulée de zapallo 








Todos sabemos que la Cream brulée es deliciosa pero realmente nunca había hecho una cream brulée con zapallo. (he hecho otras cosas) y queda absolutamente deliciosa.
Nosotros en Chile tenemos zapallo camote todo el año, porque de hecho se hacen porotos  granados, sopaipillas, charquicán  y otras comidas.
Para nosotros que estamos casi en verano la cream brulée es un postre fresco y agradable.
Lo que me encantó de esta receta que no llevaba tantos huevos y tanta cream como otros que había visto.




Ingredientes

2 tazas de crema
2 cucharaditas de vainilla
3 yemas
3/4 taza de azúcar rubia
1 taza de puré de zapallo
1/2 taza de azúcar granulada

Método

Precalentar el horno a 170°c  (horno medio)
En un bol pequeño mezclar las yemas, el azúcar, el zapallo y la vainilla, batir hasta que esté bien mezclado.
 Calentar la crema en una olla mediana, hasta que empiece a  hervir. Apagar el fuego.
De a poco incorporar el batido de yemas, vainilla y azúcar a la crema, batiendo siempre para incorporar bien.
Distribuir en 6 pocillos de cerámica.
En una fuente de horno poner agua hasta la mitad. Colocar los pocillos en la fuente para hornear a baño maría.
Llevar a horno por unos 30 minutos hasta que la mezcla se vea firme.
Dejar enfriar y llevar al refrigerador por 2 horas.
Distribuir el azúcar granulada sobre los pocillos con crema
Con un soplete pequeño (en los Easy o Homecenter) dorar la superficie (cuando recién se use abrir de a poco el gas para tener una llama no tan grande.
Es cosa de práctica.
Si tienen broiler también se puede poner al horno unos 3 minutos para caramelizar.
Enfriar antes de servir.

chestnut mousse (mousse de puré de castañas)



Me encanta la castaña. Love chestnuts, amo le castagne, so other chestnut recipe, a dessert light and delicious.
I find this recipe in my old cookbooks, and love how simple and delicious is.
So Im sharing this recipe with Joyce of Kitchen flavours with
Cooking your books.






  

Ingredients 
(8 servings)
2 cups chestnut puree (fresh or frozen)(about 400 grams)
1 1/2 cup  heavy cream
1 teaspoon grated zest orange
1/3 cup cognac (optative)
3 tablespoons of sugar
2 teaspoons of unflavored gelatin or Agar agar
whipped cream to serve and some chocolate


Method 
 

Dissolve unflavored gelatin in 1/4 cup warm water, mix well until dissolve.
Beat the heavy cream with the sugar.
In another bowl mix the chestnut puree, orange zest and cognac.
Incorporate this mixture to the whipped cream and

finally add the unflavored gelatin (or agar agar) dissolved and mix gently.
Spread this mixture into small molds ramequins or molds and
refrigerate for about two hours.
desmold  and garnish with chocolate or whipped cream.

Mousse de castañas









Ya  he dicho que me encantan las castañas y el otro día viendo mis antiguos cuadernos de recetas (que ya se caen de viejos algunos) encontré esta receta de Mousse de castañas (acuérdense que se usa el puré de castañas que viene listo para que no se aproblemen)
He visto incluso que el puré de castañas es más barato que la lucúma (que me encanta) pero siempre es más cara (debe ser que se usa más.
Este es un postre muy rico además liviano para esta época del año.
No me demoré nada en hacerlo. Y casi diría que a la hora le saqué fotos . Pero lo ideal es dejarlos una hora y 1/2 a 2 horas en el refrigerador.
 
 
 Ingredientes
 
2 tazas o 400 gramos de puré de castañas congelado
(Mel o Guallarauco)
1 1/2 taza de crema ya batida
1 cucharadita de ralladura de naranja
1/3 taza de coñac o ron (optativo)
3 cucharadas de azúcar
2 cucharaditas de gelatina en polvo sin sabor (o agar-agar)
crema batida para servir
 
Preparación
 
 Disolver la gelatina en 1/4 taza de agua tibia y revolver bien para que se disuelva.
Batir la crema firme agregando de a poco el azúcar.
Reservar.
En otro bol mezclar el puré de castañas (si es congelado basta sacarlo un rato antes a temperatura ambiente y estará listo  para usar)con la ralladura de naranja y el coñac.
A esta mezcla agregar con movimientos suaves la crema batida y finalmente agregar la gelatina ya disuelta e incoporar bien.
 Distribuir la mousse en pequeños pocillos o moldes y llevar al refrigerador.
Para servir desmoldar con la punta de un cuchillo por la orilla y poner en un plato adornar con crema o con un poco de chocolate!
