Raspberry & Banana poppy seeds muffins ( Muffins con frambuesa y plátano)







I often think, it is not difficult to cook or bake and I love !!
Only sometimes is not easy   make the post, because it is not only put pictures and any thing  you know, one has to think that will do, as presented recipe etc.
It is life that runs so fast! right?

Well in any case I try to do at least 2 posts per week, and thanks for all who read me and like my recipes, I enjoy reading each comment.
Feedback is really important I think... 

These mufins are delicious and very light, just have 1 egg and a bite of butter, because they have o Greek yogurt.

Ingredients
(8 muffins)

1 1/2 cup all purpose flour
1 1/2 tablespoon poppy seeds
1 teaspoon ground cinnamon
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tablespoon unsalted butter
(melted and cooled)
1 large egg 
2 tsp vanilla extract
1 mashed banana (a large)
 2 1/2 tablespoon honey
2 tablespoon plain greek yogurt
1cup  raspberries diced or strawberries (frozen or fresh) 

Method

Preheat oven to 180°c (350 F)
and lightly coat 8 muffins cups with cooking spray.

In a small box whisk together the flour, poppy seeds, cinnamon,baking powder, baking soda and salt.

In other bowl whisk the butter,egg, and vanilla. Stir in the mashed banana, honey and yogurt. Add in the flour mixture, stirring just until incorporated.Fold in the raspberries.

Divide the batter between the prepared muffinscups. Bake at 180° (350F) for 20 to 24 minutes or until barely firm to the touch. Cool in the pan  10 minutes before serving.

Healthy vegan Falafel





Falafel (if you don't know) is a veggie burger, Falafel is a traditional Arab food (I think this is my second or third falafel recipe I post). These fried vegetarian fritters are often served along with humus.

When falafel is made the traditional way is indeed a great   source of protein for people who have cut meat of their diet.

And if you top it with lettuces or veggies in a pita it becomes filling and nourishing meal.
BTW my daugther say this is the best Falafel recipe I have made and you know she is a vegetarian!
We ate with salads this day and I love with some lettuce leaves but in a pita bread is perfect too!

Ingredients

1  1/2 cups dry, chickpeas
(let them soak overnight)
1 carrot grated
1 diced onion
1/2 cup finely chopped parsley
4 tablespoon normal flour
 3 o 4 cloves garlic mashed
1/2 tsp caraway seeds ground
1 tsp paprika powder
salt and pepper
Oil

Method

Take chickpeas and blend using a food processor until a paste like consistency is achieved.
Put the chickpea paste in a bowl and blend all the other ingredients together in the food processor except the oil.
Mix the ingredients in the bowl with chickpea paste.

Take small amounts of the mixture and fold them into patties.
Take a friying pan and heat some oil.(medium heat)
Fry the patties both sides until they are golden in color.
You can also choose to bake the patties  but the baking process take more longer than frying.
Line a plate with a paper towel and put the falafels on them so they absorb the oil
Serve hot.
With salads or in a pita bread.

Falafel







Me encantan los falafel, mi hija es vegetariana asi que siempre veo recetas que no sean con carne o pollo.
No se si es la segunda o tercera receta que publico de falafel.
Pero esta dijo la Espe que era la que más le ha gustado.
El Falafel es una comida propiqa del Meido Oriente pero bastante conocida. 
Es como una hamburguesa vegetariana, se puede comer con ensaladas (me encanta con lechuga) o en pan pita queda super buena.
Es básicamente de garbanzos que se dejan remojando el dia anterior y se muelen bien y se hace una pasta y despues se hacen como pequeñas hamburguesas.







Ingredientes

1 taza y media de garbanzos secos que se dejan remojando , se cuelan y se muelen hasta tener una pasta consistente.
1 zanahoria cruda rallada
1 cebolla picada fina.
1/2 taza de perejil picado.
4 cucharadas de harina normal.
3 o 4 dientes de ajo molidos.
1/2 cucharadita de comino molido
1 cucharadita de paprika en polvo
sal y pimienta a gusto
aceite para freir 

Preparación

A la mañana siguiente de haber remojado los garbanzos pasarlos por colador y molerlos en un procesador (o en 1,2,3)
hasta tener una pasta de garbanzos.
Poner en un bowl esta pásta de garbanzos y agregarle los demás ingredientes (menos el aceite).

Tomar paqueñas porciones para hacer como unas hamburguesas pero no muy grandes.
reservar.
Calentar en un sartén  un poco de aceite para freir los falafels.
Freir por ambos lados hasta que esten dorados.
Dejar en papel absorbente sobre un plato.
Tambien se pueden hacer al horno en una bandeja rociando un poco de aceite pero demoran mucho más.
Servir calientes.
Pueden servirse en pan pita (calentar el pan antes.
O acompañarlos con ensaladas.

Amaretto apple streussel cupcakes











This is my favorite type of muffin or cupcake, a little moist, tasty and natural elements such as almonds  apples or nuts.
These tender apple cupcakes with a sweet and cruchy and then with a powdered sugar glaze are delicious.
Besides Amaretto adds a special flavor.
 Something special and just for a cup of tea or coffee.

Ingredients

1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
3/4 cup granulated sugar
1/4 cream cheese softened
1/4 cup butter softened
2 tablespoons amaretto
1 teaspoon vanilla extract
1 large egg
1/2 cup greek yogurt
a/4 cup milk
1 cup finely chopped apples
1 tablespoon flour

Streussel
2 tablespoon all purpose flour
2 tablespoons brown sugar
1/4 teaqspoon ground cinnamon
2 tablespoons butter chilled
2 tablespoons sliced almonds

Glaze
1 cup powdered sugar
4 teaspoon milk

Method

Preheat oven to 180°c (350 F)
Place muffin cup liners in 12 muffin cups .
In a bowl put 1 1/2 flour and combine with baking powder,salt and baking soda. In other bowl combinesugar,cream cheese, and 1/4 butter beat with a mixer until well blended. Add amaretto,vanilla and egg to sugar mixture, beat with a mixer at medium speed until well blended.Combine greek yogurt and milk in a small bowl stir with a whisk until well blended.
Combine apple and 1 tablespoon flour in a small bowl,.

Add flour mixture and greek yogurt mixture alternately to sugar mixture, beginig and ending with flour mixture.
Beat just until blended.Fold in apple mixture. Divide batter evenly among muffin cups.

To prepare  the streussel combine floour, brown sugar and cinnamon in a small bowl. Cut in 2 tablespoons butter until mixture resembles coarse meal. stir in almonds. Sprinkle streusel evenly over cupcakes.
Bake for 28 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes on a wire rack, and remove from pan.

To glaze, combine powdered sugar and milk in a bowl stirring with a whisk.Drizzle glaze over cupcakes.

Orange and fig brownies (Brownie de higos y naranja)








I have to say  these brownies  could do just fine without the figs if someone does not have (although with dried figs must be super)
And the chocolate / orange mixture in itself is delicious, and although only a little orange grated to put over is amazing how the oranges brighten a photo.
what else? It is absolutely delicious !!

If you don't have figs you can use this as a base recipe and add other ingredients of your choice!






Ingredients

100 grams unsweetened chocolate chopped 
100 grams unsalted butter
150 grams sugar
2 large eggs
1 teaspoon vanillla extract
1/4 teaspoon flacky sea salt
100 grams all prupose flour
1/4 teaspoon baking powder
1/2 cup cocoa powder

4 small fresh figs (or dry) in pieces
1/2 cup orange juice
zest of 1 orange

Method

Preheat the oven at 180°c (350F)
Melt the chocolate and butter in a bowl over simmering water.
Once they have melted completely leave to cool for a while.
Add the sugar and whisk together well.
Add the eggs one at a time and whisk.
Throw in the orange juice,orange zest,vanilla extract and the salt.
Now add the flour, baking powder, and cocoa powder and gently fold it with a wooden spoon.
When all is mixed add the figs (if you will use)
Using a piece of baking paper, cover your baking tray amd grese with butter.
Pour the brownie mixture into the tray and place in the oven for about 25 minutes. Stick a knife in if it comes out clean, the brownies are ready.
You can accompany your brownies with ice cream or greek yogurt.

Pienso que estos brownies se pueden hacer con higos frescos o secos cortados en trozos. Igualmente son deliciosos porque el jugo de naranja le da un sabor especial al chocolate.

Greek yogurt & pomegranate bites











No matter what season we are   or if it's spring or autumn we always love to eat some  ice cream or something like that greek yogurt and pomegranate bites.

It is true that we are now in pomegranate season but still had a frozen box from  last season.
 (I freeze only the seeds) so I used both fresh and frozen.. I think the pomegranates are beautiful, but in any case also can be made with other berry. (Raspberries or blueberries)

Ingredients

2 cups plain greek yogurt
1 cup powdered sugar
1 1/2 cups pomegranate seeds 
(about 2 pomegranates)
Some ice tray cubes (square or others)


Method

In a large bowl whisk together yogurt and sugar until cream.
Add pomegranates seeds and mix well
Pour mixture into square ice tray cubes.
Place trays in the freezer about 3 hours or until frozen.


Note:
I made at night and use the next day
Is better unmolding with the tip of a knife.

bocados de yogurt y granada


















Acá estamos en plena temporada de granadas, que preciosas son las granadas, cuando era chica no les encontraba gracia (a mi abuelita le encantaban) pero ahora que he hecho varias recetas me encantan, las aprecio mucho más.
Sobre todo en una época en que no hay tanta variedad de fruta.
El jugo es delicioso tambien.
Yo congelo semillas de granadas para los postres y duran muy bien.
Estos pequeños cubos helados son muy ricos y sencillos de hacer.
Tambien se pueden hacer con frambuesas o arándanos.
quedan lindos y ricos.

Ingredientes

2 tazas de yogurt griego sin sabor
1 taza de azúcar en olvo o azúcar glass
1 taza y 1/2 de semillas de granadas
cubeteras para congelar la mezcla pueden ser cuadradas o como estas mias que tengo hace años.

Preparación

En un bol grande mezclar el yogurt y el azucar en polvo hasta tener una crema. Agregar las semillas de granada y revolver suavemente.
Distribuir la crema en cubeteras por los menos tres horas o dejar toda la noche.
Conviene sacarlas del freezer antes y desmoldar con la punta de un cuchillo, yo sirvo 3 o 4 pero mis hijos me preguntaban si tenía mas.

Kuchen de nuez - Waltnut kuchen for my Mom








Really I was thinking to publish this recipe before Mother's Day, but simply I can't!
(I have  2 weeks with an earache and a cold that I'm not 100%)

But anyway I have  to make a recipe for my mom .
I know she loves I bake for her!
I was very touched when I  read  some friend'blogs  talking about their mothers, I know Im lucky still she is with us.

I love so much my Mom  . 
I learned to cook  and bake with her when I was about 10 years and we have supported each other in difficult times . She makes me laugh many times. 
And her life is not easy I know.
( For her is difficult walk and she miss that)
She loves tea time so  wanted a waltnut kuchen.
And long time since I did one!
And she  given me  waltnuts .  So I made....

I saw many recipes and finally chose one of my own Notebook of recipes that had never been done.
My mom loved it and I was happy she enjoy.. I did everything in Sunday  morning.
So   when I took the pictures was fresh out of the oven.
I hope you enjoy too if you try this recipe and hope you had a lovely Mother's Day!

Ingredients
Crust

1 1/2 cups all purpose flour
1/2 cup of sugar
2 teaspoon baking powder
2 tablespoons butter
1 egg
1 yolk
1 teaspoon vanilla extract

Filling

1 1/2 cup of sugar
2 cups ground waltnuts
125 grams butter 
1/2 cup of heavy cream

Method

In a medium bowl mix flour sugar and baking powder, and then add butter, the egg and yolk, finally the vanilla extract.
Make a ball with dough.(without kneading)
Set aside by 10 minutes and pressed onto the bottom and up the sides of a greased tart pan with removable bottom.

Preheat oven to 180° c (350° F)
Bake for 10 minutes.



Make the waltnut filling

In a dry skillet brown  brown the sugar until are a little golden, add butter and stir well.
Then add the ground waltnuts and stir over low heat.
Add the heavy cream stirring and cook by a while.You will have a thicked cream.
Carefully empty the cream into the semi baked crust.
Bake again by 10 minutes more.
Cool completely on a wire rack.
Refrigerate for 30 minutes before cutting.

Kuchen de nuez














Quería hacer esta receta antes del día de la madre pero me fue imposible (he estado muy enferma con dolor de oídos y resfriado) 
Pero finalmente la hice el mismo dia de la madre para llevarselo a mi mamá.
Ella quería un Kuchen de nuez y encima me había regalado nueces.
Miré muchas recetas (he hecho otros kuchen de nuez antes) y encontré en mi cuaderno de recetas una que no había hecho.
Y fue deliciosa y maravillosa a mi mamá le encantó.


Ingredientes

1 1/2 taza de harina sin polvos de hornear
1/2 taza de azúcar
2 cucharaditas polvos de hornear
2 cucharadas de mantequilla
1 huevo
1 yema
1 cucharadita extracto de vainilla

relleno

2 tazas de nueces molidas
1 1/2 taza de azúcar
125 gramos de mantequilla
1/2 taza de crema espesa

Preparación

En un bol unir  el harina, azúcar, polvos de hornear, agregar mantequilla  el huevo y la yema finalmente el extracto de vainilla. Unir bien. Hacer una bola y reservar por unos diez minutos. No amasar.
Precalentar horno 180°c.
Despues extender esta masa en un molde de unos 22 o 24 cm de fondo removible y llevar a horno por 10 minutos.

relleno

En un sartén dorar el azúcar revolviendo y cuando esté dorada agregar la mantequilla, A continuación agregar las nueces molidas y la crema, siempre a fuego suave revolver la mezcla.Debe quedar de una consistencia espesa.
Vaciar esta crema sobre la masa de kuchen y llevar a horno nuevamente 10 minutos más (180°c)
Esperar que se enfrie completamente antes de cortar.
Se puede refrigerar antes unos 30 minutos .

Cream brulée cupcakes





A long time ago  I didn't cupcakes and I dont know why. In any case when I found this recipe I loved.:))
They were soft, fluffy and very light, I recommend anyway.
With a cup of tea or coffe are perfect!

Ingredients
For cupcakes

1 1/2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon of salt
5 tablespoons unsalted butter room temperature
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk (or greek yogurt)



For pastry Cream

2 cups of whole milk
6 tablespoon cornstarch
1/2 cup sugar
1 egg 
4 yolks
60 grams butter
2 teaspoons vanilla extract
pinch of salt

sugar for topping

Method

Cupcakes
Preheat oven to 180°c (350 F)
Line cupcake pan with liners. set aside.
In a medium bowl whisk together flour, baking powder and salt.
In other bowl cream together butter and sugar with and alectric mixer until light and fluffy.
Add eggs one ar a time, mixing until incorporated, add vanilla.
Add flour mixture and buttermilk (or greek yogurt) begining and ending with flour, mixing until just combined after each addition.Scrape down sides and bottom of the bowl making sure there are no streaks of flour.

Divide batter evenly among liners, filling each about three quarters full.
Bake until tops spring back when touched, about 20 minutes, then take cupcakes out of the pan and cool the rest of the way on a wire rack.

Pastry cream

In a medium sized bowl dissolve the cornstarch in 1/2 cup of milk and set aside.
Combine the rest of the milk with sugar in a small sauce pan over medium high and bring to a boil.
Whisk egg and yolks into the milk/cornstarch mixture until smooth.
Temper the eggs by pouring 1/3 of the boiling milk into the egg mixture in a steadt stream with one hand, while gently stirring with the other hand. When mixed together add the milk/eggs back to the saucepan with the rest of milk.
Boil one minute stirring constantly until mixture is thick, bubbly and able to coat the back of a wooden spoon.

Remove from heat and whisk in butter and vanilla.
Transfer to a cold container and chill completely before using in the cupcakes.

To assemble
Using a paring knifeto make a cone shaped hole in the center of each cupcake.
Use a spoon to fill and frost each cupcake with pastry cream.
When are ready sprinkle the sugar generously over every inch of the pastry cream (A little more sugar than you think is neede to create that crispy layer) Use a kitchen torch to caramelze the sugar until golden brown and melted.

Note : The pastry cream can be made in advance and refrigerate up until are ready to use.

Cupcakes de cream brulée



Hace mucho tiempo que no hacía cupcakes ni nada parecido.
Me gustan los cupcakes más bien livianos.
Cuando encontré esta receta sabía que me encantaría hacerlos.
Por eso guardé la receta. Y fue muy buena!!










Ingredientes
para los cupcakes

1 1/2 taza de harina sin polvos de hornear
1 cucharadita de polvos de hornear
1/4 cucharadita de sal
5 cucharadas mantequilla temperatura ambiente
3/4 taza de azúcar
2 huevos grandes
1 cucharadita extracto de vainilla
1/2 taza buttermilk o yogurt griego natural

Para crema pastelera

2 tazas de leche entera
6 cucharadas de maicena
1/2 taza de azúcar
1 huevo 
4 yemas
60 gramos de mantequilla
2 cucharaditas vainilla
pizca de sal

azúcar para espolvorear

Preparación
Precalentar el horno a 180°c .
Preparar 12 moldes para cupcakes o muffins con sus respectivos cápsulas de papel.

Poppy seed cake










I think in this recipe like a really special cake, moist, delicious, really we enjoyed this cake.
And cover with dulce de leche!
Like the site say "dont be afraid to put all these eggs", really is wonderful, only I adapted some ingredients  I haven't ,but really I dont have problem!
This recipe come from Lithuania and Marija  has amazing recipes.

Ingredients

350 grams poppy seeds( 14 oz)
8 eggs
170 grams grind almonds
1  3/4 cup  sugar (3/4 for cake and 1 cup for syrup)
80 grams bread crumbs 
80 grams semolina
3 tablespoon lemon juice
pinch of salt
1  3/4 cup heavy cream
1 tin or jar (397 grams)
dulce de leche, or caramel (Carnation)
1 tablespoon of milk


Method
Pour some boiling water over the poppy seeds and let them soak for 15 minutes.
Drain them and grind with a food processor or a meat grinder,
Pour some boiling water over the almonds, let them soak for 10 minutes, rinse with water and remove the skin.
Chop the almonds finely.

Separate egg yolks  from whites. Put one yolk at a time to the poppy seeds, followed with a spoon of sugar (from the 3/4 cup sugar) and mix well after each addition. When all yolks and sugar is mixed, put the chopped almonds,lemon juice,semolina and bread crumbs and mix well.
Beat the egg whites with a pinch of salt until stiff peaks from and lightly fold them into the poppy seeds batter.

Pour the batter into a round springform pan, and peheat oven to 180°c (350F)  for 45 - 50 minutes or until the toothpick inserted in the middle come out clean.
When the cake is cooling, make the syrup.
 In a small saucepan heat the cream with the rest of sugar  until it reduces by half and becomes golden.
Prick the top of the cake with a toothpick and slowly pour over the syrup until it is absorberd.
Let the cake  cool completely. When is cool make the topping.
 In a little pot heat dulce de leche with a tablespoon of milk until it becomes easily spreadable.
Cover the top of the cake with dulce de leche .
Let it for 15 minutes and slice the cake.

Cake con semilas de amapola














Esta receta muy especial con semillas de amapola y cubierta de dulce de leche o manjar viene de Lituania, de Mirja que tiene un blog precioso.
Es un que húmedo y liviano. Y pongan todos los huevos ya se que a veces uno dice un huevo menos pero en este caso mejor que no.
El bizcocho que siempre preocupa quedó perfecto y parejo.

Nota: 
Si estoy un poco lenta para traducir perdonen pero llevo dos semanas enferma con una otitis terrible. 
Me iré poniendo al día con las traducciones que faltan.
En todo caso pueden traducir tambien con el traductor que está más arriba.

Ingredientes

350 gramos de semillas de amapola
(se pueden comprar donde venden productos naturales es más barato)
8 huevos
180 gramos de almendras molidas
1 3/4 taza de azúcar, 3/4 para el cake y la taza para el syrup
80 gramos de semola
80 gramos pan rallado
3 cucharadas jugo de limón
pizca de sal
1  3/4 taza de crema espesa o para batir
1 tarro de dulce de leche  
 o 397 gramos de dulce de leche.(si lo compran listo)
1 cucharada de leche 

Preparación

Poner en agua hirviendo las semillas de amapola.Y déjelas remojar por 15 minutos.
Colarlas y molerlas en un procesador o moledor manual.
Poner las almendras en agua caliente para retirar la cáscara.
Dejar por unos 10 minutos y retirar las cáscara fina que traen,
molerlas o picarlas finas.

Separar las yemas de las claras. En un bol poner una yema junto con las semillas de amapolas, batir con un tenedor, luego una cucharada de azúcar (de los 3/4 taza  que se reservó para el almíbar)
Batir bien despues de cada adición . Despues que todas las yemas y azúcar han sido añadidos agregar las almendras molidas, jugo de limón, sémola y pan rallado, mezclando bien.
Batir las claras con una pizca de sal hasta que esten firmes y brillantes y entonces mezclar con la mezcla ya preparada con las semillas de amapola y demas ingredientes.

Precalentar el horno a 180° y preparar un molde redondo desmontable de unos 23 cm. y llevar a horno por unos 45 a 50 minutos o hasta que al enterrar un mondadientes  salga limpio .
