Raspberry & Banana poppy seeds muffins ( Muffins con frambuesa y plátano)







I often think, it is not difficult to cook or bake and I love !!
Only sometimes is not easy   make the post, because it is not only put pictures and any thing  you know, one has to think that will do, as presented recipe etc.
It is life that runs so fast! right?

Well in any case I try to do at least 2 posts per week, and thanks for all who read me and like my recipes, I enjoy reading each comment.
Feedback is really important I think... 

These mufins are delicious and very light, just have 1 egg and a bite of butter, because they have o Greek yogurt.

Ingredients
(8 muffins)

1 1/2 cup all purpose flour
1 1/2 tablespoon poppy seeds
1 teaspoon ground cinnamon
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tablespoon unsalted butter
(melted and cooled)
1 large egg 
2 tsp vanilla extract
1 mashed banana (a large)
 2 1/2 tablespoon honey
2 tablespoon plain greek yogurt
1cup  raspberries diced or strawberries (frozen or fresh) 

Method

Preheat oven to 180°c (350 F)
and lightly coat 8 muffins cups with cooking spray.

In a small box whisk together the flour, poppy seeds, cinnamon,baking powder, baking soda and salt.

In other bowl whisk the butter,egg, and vanilla. Stir in the mashed banana, honey and yogurt. Add in the flour mixture, stirring just until incorporated.Fold in the raspberries.

Divide the batter between the prepared muffinscups. Bake at 180° (350F) for 20 to 24 minutes or until barely firm to the touch. Cool in the pan  10 minutes before serving.

      Herr not all people love to cook, many of them say : How you love cook??? Well I love.
      many people prefer buy their food in supermarket and is ok for them!
      But the posts are hard sometimes but I love to make.Only sometimes I need more time:)

I love your posts, Gloria, and I don't know how you do it all especially with helping your mother, etc. And you always manage to make everything look so beautiful and fresh and appetizing!
