Chocolate roulade with lemon cream



This was our Christmas dessert, I would like share with you because is nice and easy. I love lemon with chocolate because is so delicious, or  with orange cream too.
And you can make this to every time when you like.
For dinner I made salmon with toasted almonds that you can see in labels (seafood)is nice  and a healthy recipe.
At side the salmon little soufle potatoes and salads,
And this roulade was the dessert and Ice creams that hubby bring, strawberry Ice cream and...Suspiro Limeño Ice cream, so  we  have had desserts for three days!!








Our Christmas tree! with some presents I wanna place the Christmas Crib (Pesebre) but the pictures were so darkness, was lovely too. I love Christmas Crib,.
The kids garnish the Christmas tree, thanks God!
We normally  leave all the Christmas garnish until the New Year or January 6 th when the Kings come! but we dont receive presents  to the Kings, only for Christmas...





The recipe

Ingredients (chocolate cake)

3 eggs
150 grs. plain flour
1/2 teaspoon of bicarbonate powder
150 grs. of sugar
100 grs. solid chocolate for melt
2 tablespoon of chocolate powder
pinch of salt

lemon cream

3 lemons juice
grated peel  of 1 lemon
3 yolks
1 cup whipped  cream
4 tablespoon caster sugar

Method

In a bowl beat the yolks with the sugar until is creamed.
Add the melted chocolate (to bain Marie in a pot over other pot with simmer water ) and then the powder chocolate with some water, mix well and incorporate the withes wipped with a pinch of salt,add the plain flour and bicarbonate powder. Mix well.
Greased a parchment  paper and place in a oven try. Over this empty the chocolate batter  and place at oven (medium heat  180° C)  by 10 minutes, no more.
Remove cake from oven, and immediately turn onto the paper and towel setup. (Put some confetionery's sugar in the towell)Brush with some water  the paper and will be more easy to peel.
Quickly remove the paper baking on the cake, and then using a serrated knife, trim off the edges of the cake that are crispy.

 Next, using the towel as a guide, roll up the cake from the narrow side, rolling the bottom piece of wax paper into the cake roll. Let sit with the seam side down to cool for 5 minutes. Then carefully unroll and leave to sit while you make the filling.





The filling

Place in a pot the  beaten yolks with the lemon juice , the lemon grated peel and the sugar. Stir until is thick. Whisk the cream and add the lemon juice cream when is chill.
Dust a large piece of non-stick baking parchment with icing sugar, turn the roulade out onto it and peel off the lining paper. Spread with the whipped cream and roll up like a Swiss roll.
Roll tightly to start with and use the paper to help. Don’t worry if it cracks - that is quite normal

Place on a serving plate and chill until ready to serve.
Garnish with pieces of chocolate.

Tronco de chocolate con crema de limòn





Este fue nuestro postre de Navidad. Lo he querido compartir con ustedes porque es una receta rica y fàcil.
Lo hice todo el mismo dìa, ya se imaginan por que, pero si uno quiere puede preparar el bizcocho el dìa anterior-
La combinaciòn chocolate/limòn es muy buena y lo mismo se puede hacer con chocolate /naranja que es muy bueno tambien.

Ingredientes
Bizcocho

3 huevos
150 grs. de harina
1/2 cucharadita polvos de bicarbonato
150 grs. de azùcar
100 grs. chcolate sòlido para derretir
2 cucharadas de  chocolate en polvo
1 pizca de sal

Ingredientes
Crema de limòn

Jugo de 3 limones ya exprimido
ralaldura de la càscara de 1 limón
1 taza de nata o crema para batir
4 cucharadas de azùcar
azùcar glass

Preparación

Batir las yemas con el azúcar hasta que estén cremosas. Añadir el chocolate ya fundido  a baño maría (en una ollita a fuego suave sobre un sarten con un poco de agua) mezclar bien e incorporar la harina y las claras batidas a punto de nieve.

Colocar el bizcocho sobre un papel mantequila sobre una bandeja de horno y cocinar durante durante unos 10 minutos a fuego suave, retirar del horno y darlo vuelta en un paño de cocina con un poco de azúcar glass, por el lado del papel humedecer con una brocha y retirar el papel, enrollar con la toalla el bizcocho y cortar las orillas. Dejar enfriar.

Para la crema de limón  exprimir los limones y rallar la cascar ad euno de ellos. En una olla colocar las yemas con el zumo de los limones, la ralladura y el azúcar. Sin que hierva hasta que espese. Batir la crema o nata e incorporar la crema de limón cuando ya esté fría. repartir esta crema sobre el bizcocho y enrollar y llevar al refrigerador, espolvorear con un poco de zúcar flor, adornar con chocolate en trozos y servir.

Avocado with prawns ..... and Merengue Trifflee dessert






Well, well, finally the "D" day is here, sure you know what you will make to the Christmas night or tomorrow,  but to all dont have idea, maybe I can help you a little, here a nice Entree with mashed avocado and prawns and a dessert merengue triffle so easy and yummy!! Have  a really nice and beauty Christmas, and enjoy!!




Avocado and Prawns Entree

Ingredientes
3 mashed avocados
1 tomato peel and chopped
250 grs. prawns or shrimps
2 tablespoon of chopped basil
3 tablespoon of lemon   juice
1 tablespoon of chives chopped or ciboulette
salt and pepper
1 tablespoon olive oil

Method

In a bowl mix the prawns with the chopped tomato, add sal and pepper and reserve.

Peel the avocados and cut in pieces, In a food processor grind the avocados and add the lemon juice, salt and pepper and oil, chives and basil, mix with processor as a cream.(If is needed add a little water)
Place the avocado cream in glasses, over them place the prawns mix. Garnish with basil or ciboulette. Set aside at fridge before serve.






Merengue Triffle dessert

Ingredients (6 servings)

1 cheese cream as philadelphia
1 natural yogurt (as greek yougur)
1 orange grated peel
250 cc. whipped cream
350 grs., dulce de leche
350 grs. differents berries (raspberries,strawberries or other)
naranja zest
100 cc. water
100 gr. sugar
400 grs. hard merengues little or in  pieces


You can buy the merengues or make this recipe)

Merengue recipe

5 whites

1/2 teaspoon of tartar cream

300 grs. sugar

Make a merengue with whipped whites and sugar and tartar cream, in a ove tray place a greased paper and place a layer of merengue.

Cook at Oven by 45 minutes at so slow heat. Let dry before using.

In  a pot place  the sugar , the water.and the orange zest and  finally add the berries.Cook by a while. Let chill.
Mix the cheese cream with the plain yogurt and add the orange peel.Add the whipped cream. Finally add the Dulce the lech enot mixing all making and marmol effect.

Assamble

In some glasses  divide the merengues first, and then, a layer of cream cheese with dulce de leche, and then the berries sauce.Repeat the layers. Finally Garnish with merengues and mi nt leaves. and place at fridge until is serve.

Fiuuu!! dos últimas recetas por ahora pensaba hacerlo antes pero sinceramente no pude, Ya saben como es este tiempo.
Bueno son dos recetas fáciles y ricas, las mejores! Les deseo una Muy Feliz Navídad, especialmente a los que me vienen a visitar siempre, agradezco muchos sus visitas.

Aguacata o palta con gambas (camarones)

Ingredientes

3 aguacatesmaduros
1 tomate mediano picado fino
250 grs. de gambas o camarones
3 cucharadas de jugo de limón
2 cucharadas de albahaca picada
1 cuchadarada de aceite de oliva
1 cucharada de cebollín verde (ciboulette)
sal y pimienta
Preparación: En un bol mezclar las gambas o camarones con el tomate picado, agregar sal y pimienta y reservar.
Moler los aguacates en la procesadora para hacer una crema suave, mezclar con el jugo de limón, la albahaca y el cebollín verde picado, el aceite sal y pimienta.Procesar hasta qaue tenga una consistencia cremosa, se le puede agrear un poco de agua.
Repartir la crema de agucate en copas y arriba repartir los camarones con tomates, salpicar con albahaca y colocar en el refriderador hasta que sea el momento de servir.


Triffle de merengue y frutos rojos

Ingredientes( 6 porciones)

1 queso crema tipo philadelphia
1 yogurt natural
raladura de 1 naranja
250 cc de nata o cfrema batida
300 grs. de dulce de leche
350 ngrs. de frutos rojos
100 grs. de azúcar
150 cc de agua
zeste de una naranja
400 grs. de merengues o merenguitos pequeños
Y para los que quieran hacerlo aquí va una receta de
merengue:

5 claras
300grs. de azúcar
1/2 cucharadira cremor tártaro
Hacer un merengue con las claras firmes y agregar el azúcar, en una lata d ehorno poner un papel mantequilla y extender el merengue, llevar a horno muy suave durante 45 minutos. Dejar enfriar

En una olla colocar el azúcar, el agua y la cáscara de naranja, hervir por un rato, agregar los berries revolver y dejar enfriar.
Aparte batir el queso crema con el yogurt, agregar la ralladura de naranja, agregar la nata o crema batida, unir bien, agregar el dulce de lche pero dejandolo como marmoleado,
Para armar:

Primero repartir en las copas una capa de merengues, lego una capa de queso crema con dulce de leche y luego la salsa de frutos rojos, repetir nuevamente y terminar con merengues en el tope, adornar con hojas de menta o frutos rojos.
Llevar al refrigerador y dejar hasta que sea el momento de servir.

Physalis /Cape gooseberry) dessert for Christmas



Physalis (cape gooseberry) comes originally from the northern part of South America, although it is not a major market fruit there. It is known for its ability to keep well in storage, as it can last for months in a dry atmosphere. The fruits are picked when they are dry so no mold will be able to grow on the plant. The season for physalis lasts differently in different countries. For example, the English plantations harvest their fruits from late summer and on through the autumn. However in Africa the season is usually during the late spring and early summer. So ifyou have access to exported physalis from the right country in the right time of the year
Physalis, when we buy it for eating, is essentially a small round orange fruit, covered by a dry husk. Naturallythe husks are discarded and the fruit is eaten ..
 The physalis plants are not very tall, although they can grow longer than a human being, and a single plant generates about 300 fruits. Their plant physiology requires sunny hot places, plenty of water, and an average soil, but there are also some physalis species that can be grown in colder climates.

The fruits can also be cooked for jams, or for making pies or other filled pastries. Due to their esthetical appeal, they can also be used for decorating desserts, or for making simple desserts, like physalis dipped in chocolate. Physalis can also be dried and eaten on a later occasion.

I think in this recipe beacause I saw in many countries you can buy physalis and is a really pleasure know them.... But if you dont find you can make this dessert with strawberrries  or raspberreies, are nice to this too.

The recipe

Ingredients (6-8 servings)
375 shortcrust pastry (recipe
4 huevos
1 creme cheese (phildalphia)
8 physalis fruits
150 ml double cream
zest 1 orange
2 tablespoon caster sugar
 150 grs. Solid chocolate melted

Ingredients pastry

200 grs. plain flour
pinch of salt
75 g. softened butter
some water

Place the flour and pinch of salt in a large bowl. Now add the butter,cut into smallish lumps, then take a knife and begin to rub the fat into the flour using your fingertips only and being as light as possible.
Now sprinkle 1 tablespoon of water, and then with a knife, start bringing the dough together using the knife to make it clean.finally bring it together wih your fingertips.
When enough liqud is added, teh pastry should leave the bowl clean. If this hasn't happened then add a spot more  water.
Place the pastry i a polythene bag and leave at refrigerator for 30 minutes.




Method
When the pastry is ready roll with a roll pin.
Place pastry in flan tins or other tarts pan (about 6 x 9 cm) . Prink the bases, cover the bases with baking paper and top with beans.Bake for 10 minutes to medium heat (180°c)
Remove the beans and baking papers.Transfer a very small amount of egg white to a bowl and brush inside of the pastry cases  to seal them, return to the oven and bake by 2 minutes more.
Reduce the ovean temperature to 160°, slow heat and  take out the cases.
The filling

In a bowl mix slowly  the cheese cream  with the cream and the orange zest and the caster sugar..Mix in the whole egg and the yolks.
In a bowl whisk the eggs white until soft peaks form.Carefully fold into the cheese mixture, a little at a time.
Divide the cream  between the cases and bake for 18 to 20 minutes until golden.Cool for 30 minutes, remove froms de tins and leave to cool completely.

Melt the chocolate in a bowl set over a pan of simmering water.Fill a greaseproof paper cone with the chocolate  and drizzle the chocolate in zig zag over the top of each dessert.Unfold the husk each physalis and twist in one direction. Dip the fruit into the remaining chocolate and lay on a sheet .Chill. Decorate each dessert with a physallis-

Postre de Physalis para Navidad





Si no conocen los physalis es una fruta deliciosa con un color amarillo como se ve pero tiene sabor a frambuesas o similar, se usa mucho en respostería sobre todo que es muy hermosa para adornar postres.
Su origen es de América del Sur y de ahí pasó a Africa, pero hoy se cultiva en varios paises y tambien se exporta a Esados Unidos, Inglaterra y parte de Europa.

Con los physalis se hace tambien mermelada y se rellenan tartas o se comen bañadas en chocolate. De todas maneras si no encuentran physallis perfectamente se pueden hacer con frambuesas o con fresas.
Ingredientes (6 a 8 tartas)

375 grs. masa para tartas (shortcrust pastry) (receta más abajo)
4 huevos
1 queso crema Philadelphia (un paquete)
8 physalis
150 grs. nata o crema espesa
ralladura de una naranja
2 cucharadas de azúcar glass
150 grs. chocolate sólido para derretir

Masa para las tartas (shortcrust pastry)
Esta receta de masa es de Delia Smith una prestigiosa Chef de Inglaterra.Sus recetas son muy buenas. Visiten su sitio http://www.deliasite.com/
Ingredientes masa
250 grs. harina normal
1 pizca de sal
75 grs. mantequilla suavizada
1 cucharada de agua

Método: En un bowl unir la harina y la pizca de sal. Agregar la mantequilla de a poco, uniendo.con un cuchillo unir bien finalmente unir con la punta de los dedos, la masa debe quedar como grumosa, ahora agregarle de a poco una cucharada de agua y seguir uniendo hasta formar una masa en forma de bola,
cuando está bien de líquido la masa, el bowl estará limpio de masa, sino agregarle un poquito más de agua para terminar de unir.
Envolver la masa en un film plástico y dejarla en el refrigerador por unos 30 minutos.

C uando la masa ya esté lista, estirarla con un rodillo no muy delgada. Preparar unos molde de tartalestas u otros cortar del tamaño de los moldes, acomodarlos (prender el horno a 180°c)  poner encima de las masa unos círculos de papel mantequilla, y arriba unos frijoles o garbanzos.
Llevar a horno por unos 10 minutos.
Retirar, sacar el papel mantequilla y los frijoles y con un poco de clara de huevo batida sellar las masas.
Colocar nuevamente en el horno por unos 2 minutos más. Bajar el horno a suave (unos 160°) mientras se prepara el relleno. (Dejar las tartas fuera del horno)

Relleno
E un bowl unir el queso crema,la ralladura de naranja,la nata o crema y el azúcar.
Agregar un huevo entero y las yemas restantes, reservar las claras.
Unir suavemente toda la mezcla.
En un bol con una pizca de sal batir firmes las claras. Agregarlas suavemente a la mezcla de queso y nata.
Incorporar todo bien.
Repartir la crema entre las tartas y llevar a horno por unos 18 o 20 minutos hasta que estén dorados.
Dejar enfriar por unos 30 minutos antes de desmoldar.



Calentar el chocolate en un bowl sobre un sartén (baño María) y hacer dibujos (hacer un cono con papel mantequilla) sobre las tartas. Sumergir los physallis en el chocolate y reservar, despues que estén listos colocar en las tartas..

Stollen







Stollen as many of you know is a German Christmas bread, honestly my favorite, I love it, I have made a lot of years and now again.
The stollen fruit bread come from Dresden and the real name would be Dresden Stollen, but you know all we know like Stollen.

The Dresden Stollen (originally Striezel), a moist, heavy bread filled with fruit, was first mentioned in an official document in 1474, and the most famous Stollen is still the Dresdner Stollen, sold, among other places, at the local Christmas market, Striezelmarkt . Dresden Stollen is produced in the city of Dresden and distinguished by a special seal depicting King Augustus II the Strong. This "official" Stollen is produced by only 150 Dresden bakers.


Here we have a sweet traditional german cook, and this recipe is adapted from " Paula Magazine cocina año 2002, a special Christmas issue.




The recipe

Ingredients

50 grs. dry pears chopped
100 grs. candied orange chopped
50 grs. golden raisins
60 ml. rum

Dough
1 packet fresh yeast (aprox. 35 g.)
300 grs. plain flour
50 grs. liquid honey
1/2 teaspoon of cardamomo
1 teaspoon of cinnamon powder
100 grs. butter
100 ml. milk
1 egg
1 lemon the peel
60 grs. nuts

Filling:
300 grs. marzipan
1 yolk egg
70 grs. melted butter to brush

Icing
100 grs. caster sugar

Method

1. In a medium bowl place the pears,oranges, raisins,and the rum. Set aside.

2.Make the dough: In other bowl mix the fresh yeast with honey and milk and 100 grs. of flour to normal temperature, and let rest by a while.

3.In other bowl mix the rest of  flour with the spices.Add  the mix of yeast with honey, butter,egg, peel lemon (grated), mix all making a dough. Finally add the dried fruits moisted with rum and the nuts. Set aside by 30 minutes cover with a towel kitchen.

4. Make the filling, Extended the marzipan and  roll out add some Icing sugar and make it the same lenght and the stollen dough. Reserve.

5. Over a lightly floured surface  roll and extend the stollen dough making an oval shape, filling with the marzipan and   wrapped  with dough..
Brush with yolk.

5.Line a large baking tray with parchment paper
Preheat the oven  190º C.

Brush with melted butter and bake to 40-45 minutes.
About 20 minutes is baking, brush again with butter.
Finally dust with icing sugar.

STOLLEN (Pan  aleman de Navidad)

El Stollen como muchos de ustedes saben es un Pan de Navidad dulce que es el màs tradicional en Alemania.








Tiene su origen en la ciudad de Dresden en Alemania, y su nombre era justamente Dresden stollen, pero ahora todo el mundo lo conoce como Stollen.
En Alemania y en Dresden se sigue haciendo este pan dulce con frutas y relleno de mazapan, para hacer el stollen oficial, hay sòlo 159 panaderos autorizados en Dresden.
Nosotros acà tenemos una larga tradiciòn alemana en reposterìa conmo ya les he dicho asì que el Stollen se instalò hace muchos años, junto con las galletas y casitas de jengibre y otras cosas deliciosas.
Mi receta està adaptada de la Revista Paula Chile, en un nùmero especial para Navidad del año 2002.

Ingredientes

50 grs. de peras secas
100 grs. de naranja confitada
50 grs. de pasas rubia o sultana
60 ml. de ron
Para la masa

1 paquete de levadura fresca (aporx. 35 g.)
50 ml de miel lìquida
100 ml de leche
300 grs. de harina
1/2 cucharadita de cardamomo en polvo
1 cucharadita de canela molida
100 grs. de mantequilla
1 huevo
1 limòn su ralladura
60 grs. de nueces picadas

Relleno

300 grs. de mazapan normal
1 yema de huevo
70 grs. mantequilla clarificada para pincelar

1. En un bol colocar las peras secas picadas, las naranjas confitadas, las pasa y  el ron.Dejar remojar.

2. Preparar la masa:: En otro bol mezclar la levadura con la miel, la leche y 100 grs. de harina, dejar reposar a temperatura ambiente hasta que la mezcla suba.

3. En otro bol cernir el resto de la harina con las especias.Añadir la mezcla de levadura, la mantequilla, el huevo y la ralaldura de limòn, mezclar hasta formar una masa. Finalmente agregar la mezcla de frutas remojadas y las nueces picadas; dejar subir la masa por 30 minutos.
4.Preparar el mazapan para el relleno, amasar el mazapan con un poco de azucar glass,, formar un rollo largo, reservar.
5.Sobre una superficie enharinada pasar el rodillo por la masa hastadar la forma de un óvalo, al centro colocar el rollo de la pasta de mazapan, envolver con la masa dando una forma ovalada, pincelar con la yema.
Calentar el horno a 190ª C.
Pincelar con la mantequilla clarificada.
Colocar el stollen en una bandeja para horno y cocinar  de 40 a 45 minutos,
A los 20 minutos de cocciòn volver a pincelar con la mantequilla.
Retirar del horno y dejar entibiar.
Espolvorear con azucar glass.

Puff pastry salmon












By this time Im always thinking for Christmas Eve, Christmas day or the New Year night, they are the more special parties that we celebrate at theses days and try new recipes to sharing with you and give ideas.
The Puff pastry I bought at Super (is the pastry are sold always to Pascualina) and I wrapped the salmon in iit.
Never made before. I cut with a cutter little pieces to make some fish scales.
I adapted this recipe from a magazine from here "Paula Cocina Chile" año 1997
I love antique Paula Chile recipes are the best.




The recipe
Ingredients
1 1/2 kg. salmon  fillets fresh or frozen (6 servings)
(I used  frozen salmon fillets))
250 grs. mushrooms in slices
2 tablespoon of butter without salt
Chopped ciboulette (chives)
1 tablespoon of lemon juice
1 garlic clove mashed
2 tablespoon of chopped onion
800 grs. of puff pastry (like  pascualina)
1 yolk egg whipped
salt


METHOD

1. In a fry pan place the in the butter the mashed garlic,onions and salt.  fry by  a minute and add the mushrooms in slices, cook by a while and add the lemon. Cut the heat and reseve.

2.Roll out the pastry on a floured surfac to a oval shape.
Seasoning the salmon with lemon juice and salt.
Cover the salmon with mix mushrooms and chopped onion, sprinkle with the chives  and cover with the puff pastry
Make the fish shape double de borders, with a fork make the tail  of the fish  and with a cutter make the scales.
Brush with the whipp yolk the puff pastry.
Preheat the oven at 190° C.
3. Transfer to a dampened baking sheet.

4.Bake at oven  20 to 25 minutes, or until the dough is golden and the salmon is cooked  all the way through.

5. Serve with salads or other side.

En esta època de Navidad y de fin de año siempre pienso que poner en el Blog, algo rico, pràctico y novedoso.
Normalmente lo que màs se celebra es la Noche de Navidad, la celebraciòn al otro dìa (con toda la familia) y la cena de Año Nuevo, en que despues los jòvenes salen a otras fiestas tambien de Año Nuevo.

Y se me ha aparecido esta receta de salmon en masa hojaldre, absolutamente delicioso. La adaptè de una receta de "PAULA COCINA, Chile" del año 1997  estas Paulas antiguas son mis preferidas. una maravilla en recetas en el Tiempo en que estaba la Rosario Valdès que ya se las he nombrado (tiene las mejores recetas).

Para que no se compliquen con las pasta hojaldre, la he comprado lista y ha quedado estupenda.
Comprè la del Jumbo (para los de Chile y Argentina que tienen Jumbo) pero tambien la venden en los Santa Isabel y en el Lider, es la que viene en bolsas y dice "masa hojaldre para Pascualina". yo la habìa ocupado para ser quiches, pero con el pescado queda muy bien. Y es una masa fàcil de manejar. Para los de España y otros paìses pueden ver  "masa hojaldre" en el Super.

Ingredientes (6 porciones)

1 k y 1/2 de filetes de salmòn fresco o congelado
250 grs. de champiñones en láminas
2 cucharadas de mantequilla sin sal
ciboulette picado fino (cebollino)
1 cucharada de jugo de limòn
1 diente de ajo picado
2 cucharadas de cebolla picada
1 paquete de masa de hoja para Pascualina
1 yema de huevo batida
sal

Preparaciòn

1. En un sartèn freir la mantequilla con el ajo y la cebolla picada y sal durante 1 minuto, agregar los champiñones laminados y cocer otro poco, saltear 1 minuto màs.
Apagar el fuego y reservar.

2.Sobre una superficie lisa y enharinada estirar la masa con el rodillo haciendo una forma oval del tamaño del salmòn . (reservar una de las masas vienen dos)
Colocar el salmon sobre la masa aliñar con un poco de sal, esparcir la mezcla de champiñones con cebolla y espolvorear el ciboulette o cebollino.

3.Cubrir con la otra masa y darle forma al pescado con un cortador pequeño hacer las escamas como se ve en la foto, y la cola armarla y bujarla con un tenedor, y si quieren le dan una forma sòlo de pescado, el ojo lo hice con un pedazo de champiñon y la boca con un pedazo de zanahoria.
Sellar los bordes con un tenedor.

4.Colocar el pescado con la masa en una fuente o bandeja para horno. Con una brocha esparcir la yema de huevo batido sobre el pescado.

5. Precalentar el horno a 190ºC y cocinar de 20 a 25 minutos o hasta que este b ien dorado y el salmòn estarà cocido.
Se puede servir con ensaladas u otros acompañamientos. (papas o arroz)

Christmas pudding







Continue with The Christmas saga (I really enjoy) here a nice recipe of Christmas Pudding, is adapted from Gloria Frugone a Chef and  teacher cook from Chile.

The Christmas pudding is an antique recipe from Enland and normally make to the Advent and eaten for Christmas, but is a nice recipe too, you can serve with Vanilla Ice Cream or whipped cream, my favorite is vanilla Ice Cream I think is perfect. Enjoy!




The recipe

Ingredients (7-8 servings)

First step
1 cup of raisins
1 cup of almonds(chopped or in slices)
100 grs. dry cherries
1  tablespoon of lemon zest.
1 tablespoon of orange zest.
100 grs. fresh breadcrumbs(fresh)
1 teaspoon of cinnamon powder
1 teaspoon of cloves powder
100 cc of orange juice.
150 grs. of sugar
100 ml. rhum  o cognac
100 cc of milk

Second step:
butter to greased the ramekins
100 grs. flour with baking powder
1 big apple peel and grated
4 eggs
150  grs. margarine or butter
(without salt)




Method


1. Mix all the ingredients of the first step in a large bol and reserve all night in the fridge.

2.To next  day  preheat the oven at 180°C
Join all the mix reserved with the eggs, the grated apple, the flour and the butter.

3. Greased the ramekins and distribute the christmas pudding. Place the puddings over a tray or or large mold with water tocook Bain Marie (water bath).Put some almonds slices over them.

4. Let chill for a while.

5. Serve with Vanilla Ice Cream or whipped cream.
Cook by two hours or until the puddings are golden and dry.

Budines de Navidad

Continuando con la saga de Navidad (realmente lo disfruto) he aquí una receta de Budín de navidad que adapté de un a receta de Gloria Frugone, una destacada Chef y profesora de cocina de quí de Chile.

Los budines de Navidad partieron en Inglaterra como una forma de esperar Adviento, se hacían en el comienzo de adiento y se comían para Navidad, pero tambien son un postre delicioso que se puede acompañar con helado de vainilla o nata batida.






Ingredientes
(7 a 8 porciones)

Primera etapa
1 taza de pasas
1 taza de almendras picadas o en láminas
100 grs. de guindas secas
1 cucharada de ralladura de limón
1 cucharada de ralladura de naranja
100 cc de jugo de naranja
100 grs. de migas de pan fresco
1 cucharadita de canela en polvo.
1 cucharadita de clavo de olor en polvo
150 grs. e azúcar
100 ml de ron o cognac
100 cc de leche

2ª etapa

Mantequilla para engrasar los cuencos
o bols
100 grs. de harina con polvos de hornear
1 manzana grande pelada y rallada gruesa
4 huevos
150 grs de mantequilla o margarina sin sal

Preparaciòn

1. Mezclar todos los ingredientes de la primera etapa con una cuchara de palo.
   Reservar toda la noche en la nevera o refrigerador.

2. Precalentar el horno a 180º C.

3. Retirar la mezcla del refrigerador y revolver un poco, agregar los demàs ingredientes,  primero los huevos, despues la manzana rallada y finalmente la harina y la mantequilla sin sal.

4.Engrasar con mantequilla los cuencos y repartir la mezcla en estos.
 Cocinar por dos horas a baño Marìa (en un molde colocar los cuencos sobre otro con agua), con un mondadientes se pueden probar cuando esten listos, deben quedar dorados.
Se les puede colocar unas almendras en làminas sobre los budines.
