Mango and passion fruit semifreddo with Berries and Pomegranate seeds (postre semifreddo con mango y berries)





This dessert is nice for every season, summer or medium winter (like here). 

You can use whatever berries you can get for the garnish,I love the touch of toasted hazelnuts!
If you don't have a loaf tin use other container  pour the mixture in popsicle moulds and freeze.
Just delicious.

Ingredients

1 egg
2 egg yolks
1/2 cup granulated sugar
300 ml cream
2 mangoes peeled or frozen mangoes
1/2 cup passion fruit paste ( or 1 passion fruit)
juice 1 lemon

Garnish

3/4 cup hazelnuts toasted  in oven for 10 minutes
Handful berries (fresh or frozen)
(raspberries, strawberries or others)
seeds from 1 pomegranate (optative)



Method

Line a standard loaf tin with plastic wrap allowing some of the wrap to over hang the sides.

Half fill a medium sized saucepan with water and set over simmering water.

Place egg,egg yolks and sugar in a meidum bowl and whisk using a hand whisk until thick and creamy.

Place the bowl over the saucepan of simmering water and continue whisk for another 4-5 minutes or until mixture grows thick and creamy and double volume.
Remove from heat and set aside.

In a blender put the mango flesh and whizz until smooth, add the passion fruit and whizz again.
Add lemon juice and blitz everything together to combine.
Pour into the thickened egg  yolk mixture.
In other bowl place the cream and whisk beat until just thickened. Add half to the egg mizture and gently fold until just combined. Add the remaining cream and fold everything together.
Pour into the lined loaf pan and cover the top with the overhanging wrap.

Put in the freezer for overnight .

Remove from freezer unwrap from plastic and turn out onto a serving plate.

Garnish with berries, grind toasted nuts and pomegrante seeds.

Cut in slices and serve.

Mango and orange flan (Flan de mango y naranja )

An this other dessert I made in Villarrica I take pictures lol
Mango and orange dessert.
I love the light in these pictures, I loved this kitchen with it light!

Ingredients

1 1/2 cup sugar
3/4 cup  water
2 eggs
2 yolks
1 tin condensed milk
fine zest of one orange
fine zest of one lemon
1 cup mango puree (fresh or from jar)


Method


Preheat oven to 180 ° c.
prepare 6 or 7 or ramakins oven molds and place in a baking dish .

Make caramel  combining sugar and water in a medium saucepan and coking over moderate heat
swirling ocassionally until color begins to turn golden about 12 minutes.
Turn heat to low and continue cooking until colour is dark brown and mixture smell caramel.

In a small saucepan boil for 5 minutes until the sugar dissolves
just gently move the pot until the caramel is made ..

Pour the caramel into the ramekins.

To make the custard combine condensed milk , orange and lemon zest, and  milk  in a saucepan  over medium heat and bring up to just below simmering point. Turn off heat and allow orange and lemon zest flavours infuse by 15 minutes.
Whisk the eggs and egg yolks and mango puree until combined. Slowly add milk mixture to eggs whisking gently to combine.
Strain the custard and carefully put the mixture into the ramekins.


Fill a baking dish  about 1/3 with hot water. Set the custards molds into the dish of hot water.
Bake at 180°c (350 F) about 25 minutes until the flans look firm.
Refrigerate custards until ready to serve.
At least 2 hours.

To serve turn custard upside down onto a dish and remove ramekin. The caramel should make a thin layer on top, serve with some orange zest and some fruits.

Flan de mango y naranja












Finalmente puedo hacer este post que tenía practicamente listo pero llegué de Villarrica y me he pasado puro limpiando y ordenando, y ya saben como es  este mes!
Tengo muchas fotos de Valdivia que espero agregar en mi proximo post.
Me he fijado que en muchas partes es habitual encontrar mangos.
No se preocupen si estan verdes. Se maduran muy bien.
Yo tenía unos maduros y para no  perderlos los llevé a Villarrica y allá hice este postre/flan, queda delicioso.
El mango es muy dificil que se eche a perder, si estan maduros se pueden moler y congelar y se guardan.


Flan de mango y naranja

Ingredientes

1 1/2 taza de azúcar
3/4 taza de agua
2 huevos
2 yemas
1 tarro de leche condensada
1 naranja (la ralladura)
1 limón la ralladura
 1 taza de mango maduro hecho puré



Preparación

Precalentar el horno a 180°c.

Bavarois aux mangues (bavarois de mangos)







This mango desserts is from mon amie Nadji, of her wonderful french blog : Saveurs et Gourmandises

Ingredients

(4 servings)

2 ripe mangos
1 tablespoon of lemon juice
60  grams sugar
200 ml double cream
3 gelatines leafs or 
1 tablespoon gelatin powder ( or agar agar)

METHOD

Put a bowl in the freeze about 15  minutes.
Put the gelatine to soak 10 minutes in cold water.
Peel the mangoes.
Cut the flesh into cubes turning around the core.
Mix the diced mango by adding lemon juice and half the sugar.
Heat a third of mango coulis.
Add the gelatine.
Stir until the gelatine base totally, otherwise put a few seconds on the fire.
Pour the cream into the ice bowl. Mount whipped the cream at medium speed.
When it begins to set, add the sugar.
Mix  2.3 whipped cream in mango coulis gently.
Pour the mixture into puddings molds or ramekins.
Chill until it takes. 
refrigerate about 4 hours.
When ready to serve.
Turn out gently.
Garnish with whipped cream.

Bavarois de mangos










Se ven bastante mangos ahora en las ferias y en el supermercado.
Yo feliz. Me encantan los mangos y se pueden hacer tantas cosas.
 Este bavarois de mangos es de una amiga francesa que hace clases de cocina en Paris.
Ella es encantadora- He hecho varios postres de ella.
Como dice Nadji erste bavarois se puede hacer tambien con otras frutas.

Mousse à la mangue express (Mango dessert express )













 This recipe  is adapted  from Cuisine AZ a french site

Ingredients (4 or 5 servings)


400 g of mango pieces (mashed)
1 greek yogurt (170 g)
6 tablespoons powdered sugar
whipped cream
some unsalted pistachios



Method

Process the mangos to have a puree, place the mix in a bowl, add the sugar and greek yogurt and whisk,mixing well.

Add  the whipped cream carefully mixing all.
Fill the glasses with the mango cream and keep them in the fridge for a few hours (1 to 2 hours)
On serving add  some whipped cream and garnish with pistachios.

Tip:
You can use fresh mangos, frozen mangos or mango tin.
I had frozen mangos I save from our summer and was perfect.
To freeze mangos you have to choose   riped mangos, cut in slices and put in a bag or a tupper.( you can save frozen about 6 months)

Mango soufflé





This recipe starts something like this, had for some time  2 large ripe mangoes in the refrigerator, but had not found a recipe that I would do (I almost make juice) but when I saw this ice mango soufflé loved it.
 As I said before I love mangoes and smelling so nice.
  Anyway here is the recipe!

Ingredients

2 or 3 ripe mangoes
2 tablespoon of water
1 1/2 tablespoon of  powder gelatin
2 eggs yolks
1/2 cup of sugar
1/2 cup of milk
1 1/2 cups of whipped cream
toasted coconut to garnish

Method
Prepare 4 ramekins  adding a strip of foil to extend the bowls for the soufflé. Secure it with tape.
Besides putting water in a small bowl and sprinkle gelatin powder placed in the microwave 1 minute to dissolve stir and set aside.

Grind the mango in a blender or processor. Set aside.
In a bowl beat the yolks with sugar and milk in double boiler place beating until mixture is thick and frothy. Remove from

heat and let cool .Add the  liquid gelatin and beat well.

Whip the cream until soft peaks form. Save 4 tablespoonfuls and  add the other  to the mixture of  mango.

Fill the ramekins, leaving the mixture 2 cm above the edge of ramekin.
Leave in the fridge  for about two hours until firm.
Carefully remove the foil  put some cream on each souflés. Sprinkle toasted shredded coconut over them.
 I toasted coconut in the oven a  few minutes is very fast.

Souflé de mango







Hay historias así, (me imagino que muchas recetas) tenía un par de mangos maduros en el refrigerador (el mango se conserva muy bien en el refrigerador) y quería hacer algo rico, rico, estuve a punto de hacerlos jugo que tambien me encanta pero finalmente encontré este souflé de mango, y ha quedado un postre absolutamente delicioso.
(A veces en el Líder encuentro más baratos los mangos)
Tambien se pueden usar mangos en tarro son muy buenos pero más pequeños.

Ingredientes

2 o 3 mangos maduros
o 1 tarro de mangos
2 cucharadas de agua
1 1/2 cucharadas de gelatina en polvo sin sabor
2 yemas de huevo
1/2 taza de azúcar
1/2 taza de leche
1 1/2 taza de crema batida
coco tostado para adornar

Mango and cardamom Ice Cream

















Love Ice Creams (you can see de labels) especially with fruits (berries) and like this mango! I think mango smell sexy(lol) and delicious, I made this dessert to New Year's Eve and with splenda and  use evaporated milk although the original recipe was with condensed milk and was nice!
I use fresh mangos but you can use mango tins

This recipe is adapted from Healthy recipes


 Ingredients (6 servings)


300 grs. mango pulp
1 tin evaporated milk

5 tablespoon of Splenda or sugar
2 tablespoon of gelatin powder
1 cup of water
3/4 cup heavy cream
1/2 teaspoon  of cardamom powder
berries to garnish




Method:

Place mango pulp in a saucepan.


Cook on low flame for 2-3 minutes.


Then add sugar and gelatin powder. and water
Stir constantly.


When sugar gets dissolved, turn the heat off.


Let it cool completely.


Place  evaporated milk, cream, cardamom, and cooked mango pulp in a blender.


Process until smooth.


Pour this batter in an air tight container.


Freeze it for 4-6 hours or until chill.


Serve with some berries

HELADO DE MANGO Y CARDAMOMO











Me encantan los helados y cosa de que vean la cantidad que he hecho, hago siempre invierno y verano porque me gustan los postres helados, los que más me gustan son los de berries o frutas.
Este de mango y cardamomo es delicioso, siempre he encontrado que el mango huele sexy, quizas por lo tropical no sé, pero es una fruta deliciosa y que se adapta a muchas recetas.
Esta receta está adaptada de una página de Healthy recipes

Ingredientes

300 grs pulpa de mango
1 tarro de leche evaporada
5  cucharadas de Splenda (o similar) o azúcar
2 cucharadas de jalea sin sabor en polvo
1 taza de agua
3/4 taza de crema
1/2 cucharadita de cardamomo en polvo

Preparación

En un sarten o en una ollita colocar la pulpa de mango(puede ser fresco o de tarro) cocinar a fuego suave, agregar el agua,la jalea sin sabor, el azúcar, revolver constantemente, cuando esté listo apagar el fuego.
Dejar enfriar.
Poner la leche evaporada, cream y cardamomo, y la pulpa de mango en una licuadora.
procesar hasta que esté bien mezclado. Como crema espesa.
Poner la crema de mango en un container y congelar.
Congelar de 4 a 6 horas.
Retirar un rato antes de servir y adornar con berries.

Mango,cardamom and orange Lassi










Lassi is a popular  yogurt-based drink of the Indian . It is made by blending yogurt with water and Indian spices. Traditional lassi  is a savory drink sometimes flavored with  cumin while sweet lassi on the other hand is blended with sugar or fruits instead of spices.

And this is one of my favorites because have mango, cardamom and orange!
I love cardamom!
The kids adore Lassi specially with mango or strawberries.
This is a simple and delicious recipe!

















Ingredients (3 servings)


 2  plain yogurt (340 grs.)
1 large ripe mango  in slices
2 teaspoon of grated orange
2 tablespoon of orange juice
3 tablespoon of sugar
1/2 teaspoon of cardamom
6 to 8 ices cubes


Method

In a blender place 2 natural yoghurt (340 grs.)and the  ripe mango peeled and in slices​​, beat, add orange zest, orange juice, sugar, cardamom and blend  again finally  add the ices cubes

 Blend until mixture is smooth.

 Pour into cups or glasses and serve immediately.

Enjoy!

Lassi de Mango con naranja y cardamomo










El Lassi es una bebida típica de la India, deliciosa y refrescante, normalmente lleva yogurt, frutas y algunas especias.
En este caso cardamomo que es delicioso.
Bueno y el mango que me encanta, con jugo de naranja. Solo diré que los niños se lo tomaron en un segundo y yo tambien.
Una receta simple y deliciosa!!
(para los que no quieran mango se puede hacer con otras frutas, frutillas o frambuesas)


Ingredientes (3 copas )

2 yogurts normales sin azúcar
1 mango grande pelado y en cubos o en rodajas
2 cucharadas de cáscara de naranja rallada
2 cucharadas de jugo de naranja
3 cucharadas de azúcar
1/2  cucharadita de cardamomo en polvo
(en los supermercados )
6 a 8 cubos de hielo

Preparación

En la licuadora o juguera colocar e l yogurt y el mango ern trozos, batir hasta que sea una mezcla cremosa, agregar la ralladura de naranja,el jugo, el azúcar y el cardamomo, batir nuevamente
y finalmente agregar los cubos de hielo.
Batir hasta que tenga una consistencia suave y cremosa.
Servir inmediatamente.

Mango drink














I  love mangos and in fact I have a mangos label and this is one of my favorites drinks!



Ingredients (4 servings)


2 cups peeled cubed mango

Crushed ice


70 ml.  rum  or white rum


1  can   sweet  Condensed Milk

1 lemon (the juice)



Method

Place in blender mango pulp and add the condensed milk,  and lemon juice.
Whipp in blender. Add the rum and mix. 

Once incorporated all the elements, we proceed to shake until the ice crushed left (type or raspadillas frappe). It is recommended to serve at once. If something's broken left (which would be very strange!) You can put in a plastic container and keep in the refrigerator (not freezer) for consumption later in the day.

Serve in glasses.

If you want thinner add more ice or water.


You can do the same as non-alcoholic smoothie is delicious

Mango cocktail












Me encantan los magos y de hecho si quieren ver más recetas de mangos tengo un link de mangos.
Este es mi trago preferido y de vez en cuando lo hago igual que la Piña Colada.
La leche condensada en este caso le da una textura deliciosa y si se quiere más suave o líquido se le puede agregar más hielo o agua.


Ingredientes

2 tazas de mango pelado y en cubos
hielo picado o en cubos
limon su jugo
1 bote o tarro de leche condensada
70 ml de ron ( esto puede ser a gusto)

Preparación

En la licuadora o juguera colocar los mangos picados, la lech condensada y el jugo de limón.
Batir hasta tener una consistencia cremosa y suave.
Agregar el hielo picado Batir nuevamente en la licuadora.
Agregar el ron y mezclar bien.
Colocar en un jarro o cointainer  en el refrigerador mientras no se sirva.
Servir en copas
Si se quiere sin alcohol prescindir del ron
Tambien se puede hacer con pisco)
