Chocolate chesnut cupcakes





I love chestnuts like puree, in desserts but I never had make chestnuts cupcakes  and were amazing, is with frozen chestnut puree so you don't have  wait for chestnuts:)
And chestnut and chocolate work so well, I have to say they go too much fast here !

I adapted this recipe from Poires au chocolat








Ingredients

For cake
(12 cupcakes)

300 g. chestnut puree (frozen)
or a can of chestnut puree
3 eggs
100 g caster sugar
120 g. ground almonds
1/2 teaspoon baking powder
 
 
For ganache
 
200 ml  double cream
120 g. dark chocolate
 
 
Method
 
 Line a 12 muffin tin with cases.
Preheat the oven to 170°c
Place the chestnut puree into a mixing bowl and beat with a fork until smooth.
Whisk the eggs and sugar with a mixer until doubled in size, pale and holds shape.
Spoon about half of the eggs mixture into the chestnut bowl and fold in until uniform.
Sift over the ground almonds and baking poder, adding any bigger pieces of almond at the end. Fold in carefully but throughly. Finally add the rest of the egg mixture and fold that in. Divide between the cases .
Bake for 25 to 30 minues until golden brown and firm to touch.
Cool (you can freeze them for up to 4 week at this point)
Let cool by a while.
 
Ganache
Break up the chocolate into a bowl. Heat the cream up until nearly boiling and then pour over the chocolate. Leave for 3-4 minutes then stir until smooth.
Leave to cool about 8 to 10 minutes before spreading over the cupcakes.

Cupcakes de castaña con chocolate



 




 


 
Adoro las castañas desde siempre, puede porque en el sur se hacen muchas castañas, puré de castañas, brazo o rollo  de castañas, y  recuerdo unos pasteles de castaña maravillosos en el Paula , nunca más los he visto, así que cuando vi estos cupcakes se me antojó hacerlos.
Mi mamá hacia mucha castañas porque el tío Miguel (de Yumbel) mandaba sacos de castañas a Concepción, así que mi mamá y mi abuelita le sacaban harto provecho.
(El tío Miguel era hermano de mi abuelita Chela y yo lo quería mucho)
Ahora la gracias que encontramos todo el año puré de castañas congelado (como la lúcuma) y también en tarro, prefiero el puré congelado queda muy bien.
 
Ingredientes
 
 Para los cakes
300 gramos puré de castañas(congelado en los supermercados)
3 huevos
100 gramos de azúcar glass
120 gramos de almendras molidas
1/2 cucharadita polvos de hornear
 
Crema de chocolate
 
200 ml de crema espesa
120 gramos de chocolate en barra
 
Preparación
 
 
 Preparar moldes de muffins con  envases de papel.
Precalentar el horno a 170°c.
Colocar el puré de castañas en un bol y batir con un tenedor hasta que esté cremoso.
Aparte batir los huevos y el azúcar hasta que estén espumosos y el doble de tamaño.
Agregar la mitad del batido de huevos al puré de castañas.
batir bien mezclando, agregar las almendras molidas y los polvos de hornear.
 Finalmente agregar el resto del batido y mezclar bien.
Repartir la mezcla en las cápsulas de muffins.
Cocinar de 25 a 30 minutos o hasta que estén ligeramente dorados (son naturalmente húmedos porque no llevan harina) y firmes.
Enfriar. En este punto (sin el ganache se pueden congelar durante unas 3 a 4 semanas)
 
Cubierta de chocolate
Colocar el chocolate partido en trozos  en un bol,  
Calentar la crema hasta que casi empiece a hervir.
Agregar al chocolate revolver hasta que esté cremoso.
Dejar enfriar de 8 a 10 minutos antes de cubrir los cupcakes para que tenga una consistencia cremosa.

  5. Cada vez que veo la palabra "castanna" me acuerdo de una Buena amiga que tenia en el Pais Vasco y que usaba el termino para describer su... si, su... eso. A veces decia "Hace tanto frio que ni la castanna me voy a lavar". :-)
