Ingredients
6 apples
grated zest of 1 lemon
1 teaspoon ground cinnamon
1 tablespoon sugar
1/2 cup assorted berries (frozen or fresh)
1 cup light Brown sugar
1 cup all purpose flour
1 teaspoon baking soda
3 eggs
3/4 cup vegetable oil
1 teaspoon vanilla
greek yogurt to serve
some berries to decorate
Method
Preheat oven at 180°c
Peel and core the apples.Cut them in thin slices,put them in a bowl and sprinkle with lemon zest. Add cinnamon and 1 tablespoon of sugar and stir to combine.
Put the apples slices in a greased baking pan ( 20 or 22 cm)
Add some berries over the apples.
In another bowl put brown sugar, flour, eggs,vegetable oil and vanilla.
Combine with a spatula or a wore whisk, and pour over the apples.
Bake for 50 minutes or until golden.
Serve warm or at room temperatura with whipped cream and berries.

I served with some greek yogurt and was delicious, but you can serve with Ice cream or other.

Cake manzanas con berries
Me gustó esta receta no sólo porque me encantan las manzanas y los frutos rojos, porque lleva muy poca harina así que es muy liviano es como un postre y un cake al mismo tiempo.
Lo adapté del sitio Peru delights que tiene recetas estupendas
(he hecho varias de este sitio)
Ingredientes
6 manzanas fuji o Royal
1 limón (la ralladura)
1 cucharadita canela molida
1 cucharada de azúcar
1/2 taza de berries de cualquier tipo (congelados)
1 taza de azúcar rubia
1 taza de harina normal sin polvos de hornear
1 cucharadita polvos de hornear
3 huevos
3/4 taza de aceite de maravilla
1 cucharadita vainilla
Para acompañar yogurt griego y algunas berries
Preparación
Precalentar el horno a 180°c.
Pelar y sacar las semillas de las manzanas.
Cortar en gajos, colocar en un bol y espolvorear la cáscara de limón rallado.
agregar la canela y la cucharada de azúcar y revolver bien para unir la mezcla.
En el fondo de un molde redondo (enmantequillado) de unos 20 o 22 cm. colocar los gajos de manzana.
Encima esparcir los berries.
En otro bol poner el azúcar rubia, la harina, los huevos, aceite y vainilla.
Mezclar bien con una espátula o un batidor.
Distribuir la mezcla sobre las manzanas y berries.
Hornear por unos 50 minutos o hasta que esté bien dorado.
Servir a temperatura ambiente o refrigerar, acompañado de un poco de yogurt griego o helado.
