I had made this delicious dessert before but I really love Ina garten'a versión and is fast and delicious!!

Ingredients
(6 servings)
3 cups of raspberries (frozen or fresh)
1 cup more 3 tablespoons of sugar
1 tablespoon freshly lemon juice
2 cups cold heavy cream
1 teaspoon vanilla extract
150 grams little meringue (or a large meringue broken)
Method
Pour half of raspberries, 1 cup of sugar, and lemon juice into saute pan.
Crush berries lightly with fork and brings to full boil over mdium heat.
Lower heat and simmer 10 minutes stirring, ocassionally until syrupy.
Fold in remaining raspberries , refrigerate until cold.
In medium bowl using electric mixer fitted whith whisk attachment beat cream, remaining 3 tablespoons sugar and vanilla on medium high speed until firm peaks form.
In 6 glasses layer spoonful of whipped cream, spoonful of berry mixture and a few meringues. Repeat until glasses are full, ending with berries and dollop of cream.
Serve inmediatelly or chill up to 1 hour.

Eton Mess (un postre delicioso)
He hecho otros Eton Mess pero me gustó esta versión de Ina Garten asi que el otro día lo preparé, se puede hacer con cualquier Berry o con una mezcla, es un postre como de verano pero lo hago en cualquier estación.
Ingredientes
(6 copas)
3 tazas de frambuesas (congeladas o natural)
1 taza más 3 cucharadas de azúcar.
1 cucharada de jugo de limón.
2 tazas de crema para batir
1 cucharadita extracto de vainilla
150 gramos de merengues pequeños o uno grande en trozos.
(en Panaderías o supermercados)
Preparación
Colocar la mitad de las frambuesas, el limón y el azúcar en una ollita.
Moler algunas de las frambuesas que están dentro de la olla para que bote el jugo, hervir durante unos 10 minutos no más hasta tener una especia de jarabe de frambuesas.
Revolver de vez en cuando. unir con el resto de las frambuesas que se reservaron unir todo y dejar enfriar.
En un bol batir la crema con tres cucharadas de azúcar y el extracto de vainilla, batir hasta que la crema esté firme.
En 6 vasos o copas armar el postre, primero unas cucharadas de crema batida, después una cucharada de berries y finalmente unos pocos merengues, repetir por capas dejando unos poco merengues para adornar.
Se puede servir inmediatamente o dejar enfriar una hora en el refrigerador antes de servir.
