I love biscottis but many times I didn't make and now I had dry cranberries and find this recipe.
Biscottis, crisp and crunchy texture comes from baking the cookies twice. The first baking sets the dough, while the second baking dries it out.
The rough and jagged slices of biscotti are then baked until most of their moisture is removed.
If you like a hard and crunchy biscotti, perfect for dipping in your coffee, then bake them the amount stated in the récipe.
But if you prefer to just nibble on your biscotti, instead of first softening it in your coffee, you may want to slightly reduce the time of the second baking.

Cranberry Pistachio Biscotti Recipe
- 2 1/4 cups flour
- 1 cup sugar
- 2 teaspoon finely grated lemon zest
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted pistachio nuts
- 1 cup dried cranberries
- 2 large eggs
- 2 tablespoon of butter
- 1 tablespoon lemon juice
- 1 teaspoon vanilla

Method
Add the flour, baking powder and salt, stir and add lemon juice, lemon zest, pistachios and cranberries, and beat with a wooden spoon briefly.
Continuing beating or stirring with the spoon or your hands until the dough is well blended and begins to form moist clumps about 2 minutes.
The dough maybe will be sticky so you may need to add more flour to your hands as you go along to accomplish this.
Carefully transfer the logs onto your prepared baking sheet spacing them 3.5 inches apart and bake about 30 minutes, or until the top of the dough inside the cracks no longer look wet.
Let cool about 15 minutes . Leave the oven about 180°c.
Using a serrated knife cut on a slight diagonal into 1/2 inch sizes. Use a gentle sawing motion to cut the top crust.
Place the slice on the baking sheet cut site down. Bake the biscottis another 10 to 15 minutes or until they are dried to your taste.
Let allow the biscotti to cool completely on the sheet.

Biscottis de pistachios con cranberries
Me encantan los biscottis y he hecho varias recetas (Italian food) por si quieren ver otras recetas.
Pero ésta con pistachios (sin sal por favor) y cranberries quedan deliciosos. Los cranberries los compré en el jumbo tienen unas bolsitas nada de caras en la sección frutos secos en las verduras.
Con café son deliciosos.
Ingredientes
2 1/4 harina sin polvos de hornear
1 taza de azúcar
2 cucharaditas de ralladura de limón
1 y1/ 2 cucharaditas polvos de hornear
1/2 cucharadita de sal
1/2 taza pistachios picados sin sal
1 taza de cranberries secas
2 huevos
2 cucharadas de mantequilla
1 cucharadas de jugo de limón
1 cucharadita de vainilla
Preparación
Prender el horno a 180°c y forrar una bandeja de horno con papel mantequilla.
En un bowl batir la mantequilla, con el azúcar usando una batidora eléctrica, o batiendo a mano, batir de tres a seis minutos, agregar los huevos de a uno, agregar la vainilla y seguir batiendo hasta que tenga una textura cremosa.
.Agregar la harina, polvos de hornear y sal, revolver bien y agregar el jugo de limón, la ralladura de limón, los cranberries y los pistachios picados, revolver bien con una cuchara de madera. Si la masa está un un poco cremosa si se quiere se puede agregar un poco de harina y si no dejar.
amasar un poco y poner sobre la superficie enharinada (es bueno enharinarse las manos para trabajar) luego hacer dos panes un poco alargados. y colocar sobre la lata del horno ya preparada dejando un espacio entre ellos.
Hornear durante unos 30 minutos a 180°c. Estarán ligeramente dorados)
Retirar y dejar enfriar un rato por lo menos 15 minutos antes de cortar para los biscottis).
Dejar el horno a 180°c.
Usar un cuchillo con sierra y con cuidado cortar en diagonal e ir colocando cuidadosamente sobre la bandeja de horno.Cocinar nuevamente los biscottis de 10 a 15 minutos hasta que estén dorados.
