It's funny but when I do muffins always say, why not do it more often?
probably because there are many outstanding recipes, you know.
Well here we are again with Scret Recipe Club and I had a lovely and nice blog 365 days of baking from Lenny and really love it, I changed my chose several times, I do this or maybe this other, finally chose the muffins with berries that were originally with blueberries but I hadn't so I used an assortment berries that brings some blackberries delicious.
Are delicious!
Ingredients
1 1/2 cup all purpose flour
1 teaspoon baking soda
2 teaspoon baking powder
pinch of salt
1 cup sugar
1/2 cup vegetable oil
1 egg
1 1/2 cups fresh or frozen berry forest
or blueberries
1 cup plain yogurt
Method
Preheat oven to 190 ° c
In a large bowl sift together the flour, baking soda, baking powder, and salt and set aside.
In another large bowl, whisk together the sugar, oil, egg and yogurt. Add the dry ingredients reserving 1 tablespoon of the dry ingredients and toss with the berries. Stir mixture well.
Add 1 cup blueberries or berries to mixture and stir 3 more times. Reserve the 1/2 cup of berries.
Using a #20 ice cream scoop, or a tablespoon add the mixture to greased muffin pans.
Sprinkle the remaining 1/2 cup of berries on top of muffins and press down lightly.
Place into the oven . Bake for 20 to 25 minutes, rotating pan halfway through. Remove from oven and turn out, upside down on tea towel to cool completely. Serve immediately or store in airtight container for 2 to 3 days.

Adaptada del blog 365 days of baking
Ingredientes
1 1/2 tazas de harina sin polvos de hornear
1 cucharadita bicarbonato
2 cucharaditas de polvos de hornear
pizca de sal
1 taza de azúcar granulada
1/2 taza de aceite vegetal
1 huevo
1 y 1/2 taza de berries frescos o congelados
Preparación
Precalentar el horno a unos 190°c-
En un bol grande cernir y mezclar la harina, el bicarbonato, la sal,y los polvos de hornear.Reservar.
En otro bol mezclar el azucar, aceite, huevo, y el yogurt.
Mezclar bien.
Agregar esta mezcla a los ingredientes secos. mezclar.
Reservar una cucharada para mezclar las berries antes de combinar todo.
Agregar una taza de berries a la mezcla y revolver suavemente.
Reservar 1/2 taza de berries.
Usando una cuchara para helados u otra cuchara repartir la mezcla en los moldes de muffins.
Sobre estos repartir los berries que se dejaron aparte.
Presionar un poquito los berries.
Llevar a horno de unos 20 a 25 minutos o hasta que esten bien dorados.
Retirar del horno y dejar un rato para se enfrien antes de desmoldar.
Servir o guardar en un envase hermético durante unos 3 dias.
