Love paella, is delicious, easy and fast and to the following day tasty delicious, I adapted this recipes from "Mediterranean recipes"
A recipe for every season!

Ingredients (6 servings)
200 grams chicken breast
cut in pieces
200 grams shrimp (or prawns)
1/2 teaspoon saffron
1 onion chopped in cubes
400 grams white rice
3 tablespoon olive oil
2 garlic cloves mashed
1/2 red pepper
1/2 green pepper
1/2 teaspoon paprika powder
salt and pepper
4 or 5 cups of chicken or fish broth
3 or four riped tomatos in pieces
1 tablespoon of parsley chopped
Method
Boil the shrimp for 2 minutes and set aside.
In a cup soak the saffron in a little hot water.
Season the chicken pieces.
Heat the oil in a deep skillet or a paella pan, add the chicken pieces and fry for about 5 minutes add the chopped onion and fry.
add garlic, paprika and soaked saffron.
stir for one minute.
Add the tomatoes and peppers cook for about two minutes.
Add rice, parsley and fry one minute.
Add broth and bring to a boil.
Bake uncovered 10 minutes without removing only a little when add the ingredients.
Season and prolong cooking about 10 minutes or until rice is done.
(Cook on low heat)
Add a little water or broth if necessary.
Add the prawns and leave two minutes.
when all the liquid has been absorbed remove from heat. Cover with foil and let stand 5 minutes before serving.
We ate leftovers of paella the next day: absolutely delicious.

DeleteGloria, This paella looks great..! But I have an aversion to green, red, yellow or any kind of bell peppers. The flavor they give off just turns me off. Maybe I could use some other veggie for color and texture... Thanks and Take Care, Big Daddy Dave
