I wanna make a Easter carrot cake for these time, finally I can make, this recipe is moist, simple and yumm with a mascarpone or cheam cheese cover, really nice!

Ingredients
250 ml sun/olive oil(sunflower and olive oil)
225 grs. sugar
3 large eggs
250 grs self raising flour
2 cups of coarsely grated carrots
Eggs and bunnies and flower to garnish (I use marzipan decorations (Entre Lagos)
For the topping
1 cream cheese or mascarpone (250 grs.)
100grs. og greek yogurt or plain yogurt
80 grs. of icing sugar
Note: I added the yogurt because sometimes the cream cheese is not sof and with yogurt is nice to spread over the cake.
Method
Preheat the oven at 180 ° c
Grease and line a 18/20 cm. round tin with baking parchment.
Whisk the oil and sugar together then whisk in the eggs one at a time.
Gently fold in the flour followed by the grated carrots. Mix gently till combined then turn into the prepared tin.
Bake for 40 minutes until golden brown and in a coktail stick inserted into the centre comes clean. Cool in the tin about 15 minutes.
Then let cool in a wire rack.
Mix together the cream cheese with the sugar and add the yogurt.
(If you like add some yellow drops to have a nice color)
Mix well. Until have a smooth cream to cover.
Spread over the top and sides of the cake with a palette knife.
Decorated with bunnies or chocolate eggs.

Torta de zanahorias de Pascua
Quería hacer una tarta de zanahoria para esta Semana Santa pero no había podido, finalmente lo pude hacer , la receta está adaptada de Good to know Co.Uk el bizcocho con la ralladura de zanahorias queda esponjoso y suave, además es fácil y rápido, lo hice en la noche y lo decoré al otro día!
Los mazapanes son de Entre lagos
feliz Pascua de Resurrección
Ingredientes
250 ml de aceite de maravilla o una mezcla de oliva y y girasol
225 grs. de azúcar granulada
3 huevos grandes
2 tazas de zanahorias ralladas (tipo grueso)
250 grs, de harina con polvos de hornear
Huevos o conejitos para decorar
Yo usé de mazapán (lagos del sur) (se encuentran en varias partes)
Cubierta
1 queso crema tipo Philadelphia
o 250 grs, mascarpone
100 grs. de yogurt gruego o natural
80 grs. de azúcar glass o en polvo
Con el yogurt se logra una textura más fina y cremosa para cubrir
algunas gotas de colorante amarillo para darle un color más calido a la cubierta (los mismo colorantes que se usan para galletas)
Preparación
Precalentar el horno a 180°c Enmantequillar un molde de unos
20 cm.
En un bol batir el aceite con el azúcar y agregar batiendo los huevos de a uno.
Agregar mezclando la harina y las zanahorias ralladas.Mezclar todo suvamente
Hoenar por 40 minutos hasta que esté de un color dorado o al insertar un palito salga seco.
Dejar en el molde unos 15 minutos antes de desmoldar luego dejar enfriar.
Para la cubierta mezclar el queso crema con el azúcar, batir suavemente y agregar el yogurt, mezclar bien hasta que sea una crema suave.
Agregar unas gotas de color amarillo para que tenga un color mantequilla.
Cubrir los costados y la cubierta del cake.
Decorar con figuras de mazapán o o huevos de chocolate.
Perfect! And I love the gathering of spring things on the cake.

Alessandra Yes to the bunnies, chocolates eggs, etc, fish and seafood in Good Friday you know, we dont eat meat this day (anyway at home we alkmost dont eat meat here, my duagther is veggie) but to Saturday or Sunday someones eat cakes or others and the chocolates eggs.

tambien te habia dicho que esos conejitos estan preciosos!!! estan demasiado tiernos...no se los coman!!..la cubierta se ve exquisita! me encanta el queso philadelpia...es como onda cheesecake..es uno de mis dulces favoritos!
