Ingredients
1 1/2 cups oats bran
1 cup non fat milk
3/4 cup unsweetened applesauce
1 egg
1/2 teaspoon vanilla extract
1 cup all purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon of salt
1 1/2 cup of freeze blueberries
Method
Preheat oven at 180 ° c. (about 375 F)
Grease muffins cups or use paper muffin liners.
Mix together oats bran and milk and let stand for 15 minutes.
In a large bowl mix together applesauce,egg, brown sugar and vanilla.
Beta in bran mixture.
Sift together all purpose flour whole wheat flour,baking soda,baking powder and salt.
Stir into bran mixture until just blended. Fold in blueberries
Scoop into muffins cups
Bake in preheated oven for 20 minutes or until the tops would be little golden and firm.

Muffins con arándanos
Tengo otras recetas diversas de muffins con arándanos pero esta versión es muy buena por eso la comparto, además de que es muy saludable.
La receta está traducida y adaptada de Food.com
los arándanos pueden ser frescos o congelados
Ingredientes
1 1/2 taza de avena completa o natural
1 taza de leche sin grasa
3/4 taza de salsa de manzana (o cocer unas manzanas y moler)
1 huevo
2/3 taza de azúcar rubia
1/2 cucharadita de vainilla
1 taza de harina blanca normal
1 taza de harina integral
1 cucharadita de bicarbonato de soda
1 cucharadita de polvos de hornear
1/2 cucharadita de sal
1 taza y1/2 de arándanos congelados
Preparación
Precalentar el horno a 180°c.
Engrasar los moldes de muffins or preparar las capsulas de papel para los muffins
Mezclar en un bol la avena con la leche y dejar reposar unos 15 minutos .
En un bol grande emzclar la salsa de manzanas, el huevi, azúicar rubia y vanilla.
Unir con la mezcla de avena y leche.
Mezclar aparte la harina integral, harina blanca, bicarbonato de soda y polvos de hornear y sal.
Unir con la mezcla de avena y unir bien para mezclar todo.
Agregar los arándanos y revolver.
Repartir la mezcla en las capsulas de muffins.
Cocinar en horno precalentado unos 20 minutos o hasta que estén dorados y firnes. Bien horneados.
Retirar y dejar enfriar.
