Pumpkin and maple little jack-o'-lantern cakes (Happy Halloween)











Just in time!! Yesterday we made with my daugther these little to Halloween, we cannot before, I have to say I made the little cupcakes but Esperanza decorate all the little jack cakes, we work at night and take the pictures in the morning! Happy Halloween!
These little cupcakes are adapted from a recipe of  Goodtoknow.co.uk from England



Ingredients mini Cakes


250g all purpose flour

1tsp cinnamon

½tsp ginger


½tsp nutmeg

1tsp baking powder


1/2tsp baking soda

pinch of salt

250g caster sugar


170g pureed pumpkin


2 large eggs

125ml vegetable oil


2tbsp maple syrup



For the cream cheese frosting:


50g butter, softened


80 g cream cheese, softened


200g icing sugar, sifted

1tsp vanilla extract


Dark green,  and orange food colourings
melted chcolate to the eyes and mouth




Method

.For the pumpkin and maple cupcakes: Preheat the oven to 180°C/
 Line a 24-hole muffin tin with cupcake cases.(or 12)


Sift the flour with the spices, baking powder, soda and salt in a large mixing bowl. Set aside.


In a separate large bowl mix together the sugar, pumpkin, eggs, oil and maple syrup.
Gently fold in the flour mixture.

Spoon the mixture into the cupcake liners, filling ¾ of the way and bake for 18 mins or until a cocktail stick inserted into the centre of each cake comes out clean. Leave to cool on a wire rack.


For the cream cheese frosting:

In a large, clean mixing bowl, cream the butter and cream cheese until smooth, gradually add the icing sugar and continue to cream until light and fluffy. Mix in the vanilla until combined.


Place 2  scoops of the frosting into a separate bowl and colour with dark green food colouring.


Colour the remainder orange. Use the orange to pipe a pumpkin design around each cupcake.


Use the green to pipe the pumpkin stalks and the chocolate to pipe the pumpkin face.
Keep at refrigerator for a while and serve.

Mini cupcakes de calabaza  para Halloween














Quería hacer algo para Halloween pero no había podido, finalmente anoche con la Espe (mi hija) hicimos estos pequeños cupcakes y  debo decir que ella los decoró todos, en realidad a mi no me dejó, asi que la dejé además le encanta...Y hoy tomé las fotos e hice el post..
Esta receta está adapta de una de Goodtoknow.co.uk  Feliz Halloween!!


Ingredientes

250 grs de harina sin polvos de hornear
1 cucharadita de canela
1/2cucharadita de jengibre
1/2cucharadita nuez moscada
1 cucharadita de polvos de hornear
1/2 cucharadita de bicarbonato
Pizca de sal
250 grs. azúcar glass o en polvo
170 grs. de puré de zapallo o calabaza
ya cocido y molido
2 huevos
125 ml de aceite vegatal
2 cucharadas jarabe de arce
( o similar)  en el Jumbo se encuentra
Para la cubierta

50 grs. de mantequilla suavizada
80 grs. queso crema suavizado
200 grs. azucar glass o en polvo
1 cucharadita extracto de vainilla
colorantes verde y naranja para las calabazas
y chocolate derretido´para los ojos y la boca

Preparación

Preparar moldes de muffins con cápsulas de papel nosotras usamos los más pequeños (salieron unos 30 pero cubrimos unos 24)
si se usa el molde típico de muffins salen 12.
Precalentar el horno a 180°c.
Cernir la harina junto las especias, polvos de hornear, sal y bicarbonato, mezclar bien.Reservar.
En otro bol mezclar el azúcar, puré de zapallo,aceite, huevos y jarabe de arce.
Unir suavemente la mezcla de harina con especias con la mezcla de huevos y zapallo.
llevar los cupcakes con la mezcla unos 3/4 del molde y llevar a horno por unos 18 minutos o hasta que al insertar un mondadientes este sale limpio y seco.
Retirar y dejar enfriar.

Frosting de queso crema

En un bowl mezclar la crema de queso, mantequilla, azúcar y vanilla.
Mezclar bien.
Separar unas dos cucharadas para la parte verde y el resto agregar el color naraja, los colores se deben agregar de a poco e ir probando porque son muy concentrados.
Derretir a baño maría un poco de chocolate y y con una manga plastica hacer un pequeño orificio y hacer los ojos y la boca.
Dejar secar un rato en el refrigerador para que la mezcla esté más firme.

Raspberry queen of pudding pots











Other delicious recipe from Britain and is adapted from GoodFood of BBC is an absolutely delicious dessert to any time (maybe you dont know but one of my grandad comes from Britain,Southampton and still we have relatives there, cousins and uncles)My cousins visited Chile some years ago.
I love british desserts!



Ingredients

25 grs.butter plus extra for greasing
600 ml milk
zest 1 lemon
4 eggs separated
200 grs. golden caster sugar
4 individual brioche rolls sliced

180 grs.raspberry jam or bramble jelly
1 tablespoon of water
450 grs.raspberry (freeze or fresh)

Method

Grease 6 large individual ramekins and heat oven to 180°c . Bring the milk, lemon zest
and butter to the boil, then turn of the heat. Beat the egg yolks with 100 g of the sugar, then strain the hot milk over the egg yolks beating constantly. Pour this custard into a Jug.

Pour the brioches slices in the ramekins so they are half-full.Pour the custard equally over the brioche place the ramekins on a baking tray, then bake for 20 minutes.
Meanwhile, bubble the jam with raspberries  for 6 to 8 minutes in a shallow pan until they start to soften, then turn of the heat.
When the brioche has a few minutes in the oven whisk the egg whites in a bowl  until they form peaks. Gradually add the remaining 100 grs. sugar  and continue whisk until peaky again.

When the brioches is golden and puffed up, spoon over the raspberry mix and then top with swirls
of egg white. Scatter each with a little more sugar , then bake by 15 minutes until are golden. Leave to cool slightly before enjoying while still warm.

Budines de frambuesa y merengue









Este es otro postre inglés adaptado de BBCgood food por lo demás me encantan los postres ingleses.
Este postre es rico para cualquier ´tiempo del año ya que se puede hacer con frambuesas frescas o
congeladas.

Ingredientes

25 grs. de mantequilla
600 ml de leche
ralladura de 1 limón
4 huevos separados
200 grs. de azúcar en polvo
o azúcar glass
4 brioches individuales en láminas

180 grs, de mermelada de frambuesas
450 grs. de frambuesas congeladas o frescas



Preparación

Enmantequillar 6 ramekins  y pprecalentar el horno a 180° c.
Unir la leche, la ralladura de limón y mantequilla en una olla y hervir. Apagar el
fuego. Batir las yemas con 100 grs. de azúcar, entonces agregar la leche ya hervida sobre las yemas y batir bien, Poner en un jarro.

Poner los trozos de brioche en los ramekins o pocillos de porcelana, empujando un poco, llenarlos hasta la mitad. repartir el custard que ya se preparó sobre los brioches, y llevar a horno por unos 20 minutos.

Mientras tanto calentar en una ollita  la mermelada de frambuesas con las frambuesas congeladaa o frescas  unos 6 a 8 minutos hasta que esten tiernas y la mezcla espesa.
Apagar el fuego.

Cuando al brioche le queden pocos minutos en el horno, batir las claras hasta que esten bien firmes. Gradualmente agregar el azúcarque quedó y continuar batiendo hasta que esté firme.

Cuando los brioches esten dorados y y como levantados agregar encima la mezcla de fruta con la mermelada repartiendo en los 6 pocillos, entonces cubrir con el merengue Espolvorear un poco de azúcar y cocinar por unos 15 minutos hasta que esten dorados.Dejar enfriar un poco antes de servir, se pueden comer tibios o frios.

Mushrooms veggie burgers















Some of you know I have a veggie daugther and always I have to do two types of meals.
And other times all eat veggie here! so I try this Mushroom veggie recipe and really I enjoy this recipe speciall when you dont want meat or you are a veggie person.
This recipe is adapted from one of Goodhousekeeping.com 



Ingredients

3/4 cup of bulgur wheat
3/4 cup old fashioned oats
1 tablespoon of oil
1 med onion finely chopped
300 grs, mushrooms
finely chopped
1 clove garlic crushed
1  medium carrot cut up
1/4 cup packed fresh parsley
1/2 cup cheddar cheese grated
1 1/2  tablespoon of panko crumbs (or grated bread)
1 large egg white
salt and pepper
nonstick cooking spray
burgers buns
mashed avocado, tomatos in slices or lettuce

Method

 Place in the microwave in a safe medium bowl, the bulgur and cover with water( about 1 cup of water) microwave on high 5 to 7 minutes or until liquid is absorbed.
Place the  bulgur in a colander to drain  and set aside.

In a nonstick skillet toast on medium 3 minutes.Transfer to food processor.
In skillet hot oil on medium heat .Add onion cook about 5 minutes stirring .
Add mushrooms and garlic, cook by 5 minutes more until liquid evaporated stirring always.
In food processor with oats pulse carrot and parsley until finely chopped.
In a bowl place this mix and the mushroom mixture, bulgur, cheddar, egg white and add salt and pepper (about 1/2 teaspoon )  and finally the panko.

Make the burgers. Scoop 1/2 cup of mixture pat into round . Place in waxed paper .Repeat.
(Normally I make 6 burgers and freeze them)
You can freeze up to 3 months.

To mine burger I add mashed avocado and tomato in slices.


Note  You can find Burgurl wheat in oriental stores or Supermarkets.

Hamburguesas de champiñones





Alguna veces he comentado que mi hija es vegetariana (practicamente porque solo come pescado) y por eso en este blog casi no hay recetas con carne  (me lo han dicho) no es por nada especial es  que publico lo que hago en casa generalmente, los dos hombres son de carne, asados y todo eso.

Yo adhiero a la Espe por ejemplo ayer hice dos lasagnas una con espinacas y salsa blanca y la otra con carne y salsa (mi hijo adora la salsa de tomate) y nosotras comimos la de espinacas, deliciosa!
Bueno en todo caso iba a que me encantó esta receta de hamburguesas vegetarianas (he probado varias) pero de textura y de gusto es la que más me ha gustado por eso la comparto con ustedes.
Está adaptada de una receta de Good Housekeeping.com 


Ingredientes

3/4 taza trigo Burgol
 (es un trigo grueso y que se usa para las comidas árabes)
Lo venden en supermercados pero seguro donde lo encuentran es en el Jumbo o en la vega lo venden por gramos.(o en esos lugares donde venden frutos secos)
3/4 taza de avena natural
1 cucharada de aceite
1 cebolla mediana picada
300 grs. de champiñones
1 diente de ajo picado
1 zanahoria mediana cortada en trozos
1/4 taza de perejil fresco
1/2 taza de queso cheddar molido u otro)
1 y 1/2 cucharada de panko (pan molido japonés)
o  de pan rallado(es para que queden más armadas)
1 clara de huevo grande
sal y pimienta
aceite en spray o una cucharada pequeña de aceite
panes de hamburguesas
tomates, lechuga picada
o palta o aguacate molido

Preparación

El burgol se coloca en un bol mediano y se cubre de agua (una taza y un poco más) y se lleva a microondas
en potencia alta de 5 a 7 minutos. Despues se retira y se estila con un colador y se deja reposar.
Si no tienen microondas simplemente se pone a remojar el burgol con agua 1 o 2 horas y despues se estila en el colador.(o hasta que absorba el liquido)

En un sartén antiadherente tostar la avena por unos minutos (unos 3 minutos) cuando se enfrie moler en el procesador y reservar.
En el mismo sartén calentar un poco de aceite y sofreir las cebolla picada,cocinar unos 5 minutos a fuego medio siempre revolviendo. Agregar los champiñones picados  y el ajo. cocinar otro rato,unos 5 minutos más hasta que los líquidos se evaporen, revolver siempre. Dejar enfriar un poco.

En el procesador (o 1,2,3) donde está la avena molida agregar  la zanahoria  en trozos y moler bien.

En un bol unir esta mezcla con la de champiñones, agregar el burgol, el queso molido,la clara de huevo, sal y pimienta y finalmente el pan rallado.
Mezclar muy bien para unir toda la mezcla para hacer las hamburguesas.
Amasar un poco con las manos para unir bien.
sacar porciones como de 1/2 taza e ir haciendo las hamburguesas.
Armarlas con las manos dandole forma.
Si se quieren congelar en volverlas en papel mantequilla o similar (cada una) y congelar.
Se pueden congelar hasta 3 meses sin problemas.
Yo las preparo, y las pongo en le freezer en una caja tipo tupper.

A mi hamburguesa vegetariana le puse palta molida (aguacate) y tomates, pero puede llevar lechuga, ají o lo que quieran.

White chocolate mousse in Ice cream cones ( a Desert for Louise's Cookbook party)

Personally I adore vintage cook book , but today recipe is from a chilean magazine Platos y Copas  this is a month magazine with different cook thems, chocolate, seafood, chilean food and desserts,I adapted the recipe from a  special Dessert number.



White chocolate mousse in
Ice cream cones

Ingredients (about 12 little cones)


3 tablespoon of  heavy  cream
250 grs. white chocolate
1/4 cup of butter
3/4 cup of icing sugar
4 eggs
12 cones
1 cup of whipped cream to garnish
freeze berries or fresh berries

Method


In a bowl place the heavy cream and beat for several minutes.
Store  in  thefridge.
Besides in a saucepan melt white chocolate in double boiler.


In another bowl beat the butter with half of sugar. add the melted chocolate stirring wel
until to be homogeneous..


Beat yolks with remaining sugar and fold into chocolate mixture.


Beat  whites with a pinch of salt until stiff and add to mixture.


Finally add the whipped cream that is reserved in the refrigerator and fill ice cream cones, keeping the freezer for at least 5 hours.

When are ready to  serve decorate with a little whipped cream and some  berries. (fresh or freeze)

Mousse de chocolate blanco en barquillos de helado















Cuando vi esta receta pensé en el evento de Louise Cookbook party game la había visto hace tiempo pero estaba esperando que las frutillas estuvieran mas lindas.
Yo había hecho una entrada ya para Louise pero me dijo que encantaba aceptaba otra.
Este post va para Louise en Cookbook party.


Ingredientes

3 cucharadas de crema para batir
250 grs. chocolate blanco
1/4 taza de mantequilla
3/4 taza de azúcar glass o en polvo
4 huevos
12 barquillos de helado como los de la foto (que se puedan afirmar)
(en el jumbo hay)
frutillas o frambuesas para adornar
si es en Europa o USA se pueden usar congeladas
1 taza de crema batida para adornar los barquillos

Preparación

En un bol batir la crema por algunos minutos. Reservar en el refrigerador.
Aparte en una ollita derretir el chocolate blanco a baño maría (sobre un recipiente con agua) hacerlo a fuego bajo.
En otro bol batir la mantequilla con la mitad del azúcar y añadair revolviendo el chocolate blanco derretido, hacerlo hasta integrar bien.
Batir las claras firmes a punto de nieve e integrarlas  a la mezcla de chocolate.
Finalmente agregar la crema batida al principio hasta integrar bien.
Repartir en los barquillos y llevar al congelador por unas 5 horas (o dejar de un día para otro)
Aparte batir la crema para decorar agregar un poco de azúcar y colocar un poco sobre (puede ser con una cuchara o una manga) los barquillos antes de servir, adornar con frutillas o con frambuesas.

Apple cake with Maple frosting (The cake Slice Bakers)








 Is my first Time in The Cake Slice Bakers  and Im glad sharing with you this month's recipe is a Apple Cake with Maple frosting from The Cake Book by Tish Boyle.

I find this recipe absolutely nice and remember me some Christmas cakes maybe by the spices (ginger, cloves, cinnamon)
I have doubt what mold use but finally I choose this loaf tin and was perfect.
Anyway you perfectly  make in a square baking tin.




Ingredients

 1  1/2 cups of plain flour
 1 teaspoon of baking powder
1/4 teaspoon bicarbonate soda
1/4 teaspoon of salt
1 tablespoon ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp of salt
1/2 cup softened butter
1 cup light brown sugar
1 teaspoon of vanilla extract
2 large eggs
2/3 cup buttermilk (or plain yogurt)
2 cups peeled and chopped  granny smith apples
1/2 cup chopped  waltnuts

Preheat oven to 180°c
Greased bottom ans sides of a  square baking tin (or a loaf tin) and dust with flour
Whisk the flour, baking powder, cinnamon, cloves, ginger, bicarbonate and salt together in
a medium bowl, set aside.
Using the paddle attachment of an electric mixer beat the butter at medium speed until creamy.
Gradually add the sugar and beat untillight and creamy.
Add the vanilla extract and then the eggs one at a time, beating well after each addition remember
scrape down the sides of the mixing bowl.
Reduce the mixer speed to low and add the flour mixture in three additions ,alternating with buttermilk  mix will until blended.
Stir in the apples and nuts and combine by hand.
Scrape the batter into the prepared and smooth the top.
Bake for 25 to 30 minutes until golden and a skewer comes out clean.
Cool the cake completely in the tin  on a wire rack.

Maple frosting

170 grs, cream cheese softened
42 g. unsalted butter softened
1/2 tsp of vanilla extract
1/8 tsp groun cinnamon
1/8 tsp ground ginger
1/8 teaspoon maple flavoring
pinch nutmeg
pinch salt
115 g confectioners sugar

Beat cream cheese and butter at medium speed util smooth
beat in the vanilla spices and salt, reduce speed to low and add the confectioners sugar
and beat until well blended.
Beat until be light and creamy.

Spread the frosting over the cake when was cool. I garnish with cinnamon powder
and some berries.

Cake de manzanas con frosting



Esta es la primera receta que me toca preparar para The cake slice Bakers y la receta es de un libro que se llama  The cake book by Tish Boyle y está en Amazon si les interesa.
Este apple cake lo encontré muy rico, y por las especias (canela, clavo de olor, jengibre) me
recuerda el olor a esos cakes de Navidad.
La idea de este grupo en el que estoy hace poco es que una vez al mes se prepara una receta  que te dan de un libro determinado.Y para elegir las recetas se hace una votación.

Ingredientes

1 y 1/2 tza de harina sin polvos
1 cucharadita de polvos de hornear
1 cucharadita canela  molida
1/4 cucharadita jengibre molido
1/4 cucharadita clavo de olor en polvo
1/4 cucharadita de bicarbonato de soda
1/4 cucharadita de sal
1/2 taza de mantequilla suavizada
1 taza de azúcar rubia
1 cucharadita de extracto de vainilla
2 huevos grandes
2/3 taza de buttermil o yogurt sin sabor
2 tazas de manzanas verdes peladas y picadas
1/2 taza de nueces picadas

Precalentar el horno a 180°c
Engrasar un molde ya sea rectangular o largo como el que usé, engrasar con mantequilla.
En un bol mezclar la harina, polvos de hornear, canela, jengibre, bicarbonato y sal. Reservar.
Con una batidora eléctrica mezclar la mantequilla y el azúcar a velocidad media hasta
que tenga una consistencia cremosa.
Agregar el extracto de vainilla y los huevos de a uno, batiendo cada vez para mezclar bien,recuerden
recoger lo d elos lados para que quede todo bien integrado.
Reducir la velocidad a minimo y agregar en tres veces la mezcla de harina, intercalando con el buttermilk
o yogurt, seguir batiendo hasta mezclar bien.
Despues agregar las manzanas pícadas y las nueces, mezclando a mano con una cucharad de palo.
Vaciar la preparación a el mold eya preparado, emparejar la superficie.
Cocinar de 25 a 30 minutos o hasta que esté dorado y al insertar una brocheta o palito salga limpio.
Dejar enfriar totalmente.

Frosting

170 grs. crema de queso tipo Philadelphia
42 grs. de mantequilla sin sal suavizada
1/2 cucharadita extracto de vainilla
1/8 cucharadita jengibre
1/8 cucharadita de canela
1/2 cucharadita jarabe de arce o similar
pizca de nues moscada
pizca de sal
115 grs. azúcar glass o azúcar en polvo

Batir  el queso crema con la mantequilla a velocidad media/baja hasta que
tenga una consistencia cremosa.
agregar la vainilla, las especias y la sal.
Reducir la velocidad al mínimo y agregar el azúcar en polvo y batir hasta que
esté bien mezclado y tenga una consistencia liviana y cremosa.

Con esta crema cubrir el cake y decorar como se desee yo le puse un poco de canela y unas
frambuesas.

Banana muffins with lemon icing and other Secret Recipe Club














Today is a new Secret Recipes Club and my assignment for this month’s is  Moms Crazy Cooking from Tina I love Tina and have amazing recipes  and  I choose Banana muffins with lemon icing

Banana Muffins with lemon icing

Ingredients

4 tablespoon of butter
1/2 cup of sugar
1 large egg
1 teaspoon of vanilla extract
2 cups all purpose flour
2 taspoon of baking powder
1 teaspoon of baking soda
1/4 cup of milk
3 bananas mashed

Method

Preheat oven to 180°c
 Line muffins pan with paper liners.
Place sugar and butter in a large bowl  cream with an electric mixer until light and fluffy.
Add egg and vanilla beat until throughly mixed.
In another large bowl mx together flour , baking powder and baking soda.
Add half of flour mixture to butter mixture, beat weel with mixer . Add milk and remaining flour mixture.
beat until batter is combined and then fold in mashed bananas.

Spoon batter into muffins liners about 3/4 full . Bake by 25 to 30 minutes or until start brown and insert a toothpick inserted on muffins come clean.
Let cool muffins until remove and cool completely before icing.

Lemon icing

1  1/2 cup powdered icing sugar
1 tabespoon of butter softened
2 tablespoon of lemon juice
1 teaspoon lemon zest

some grated lemon to garnish

Combine icing ingredients in a medium bowl, beat until creamy  about 2 minutes. Spread the icing over muffins set aside and garnish with grated or curl lemon zest.

Muffins de plátano con crema de limón













De nuevo es la fecha de Secret Recipe Club es increible como pasa el tiempo, esta vez me han asignado el
Blog de Tina a quien quiero mucho y tiene un blog con estupendas recetas su blog es Moms crazy cooking y las invito a conocerlo porque tiene muy buenas recetas, yo escogí estos Muffins de plátano con icing de limón y sólo adapté pequeñas cosas de la receta y resultó estupendo.


Muffins de plátano con icing de limón


Ingredientes

4 cucharadas de mantequilla
1/2 taza de azúcar
1 huevo grande
1 cucharadita de extracto de vainilla
2 tazas de harina normal sin polvos de hornear}
2 cucharaditas de polvos de hornear
1 cucharadita de bicarbonato
3 plátanos molidos
1/4 taza de leche

Preparación

Precalentar el horno a 180° c  y preparar moldes de muffins con cápsulas de papel.
En un bol mezclar el azúcar y la mantequilla y batir con batidora eléctrica hasta que la mezcla esté cremosa y espumosa.
Agregar el huevo y la vainilla y batir un poco más.
En otro bol mezclar la harina, polvos de hornear y bicarbonato, . Añadir la mitad de esta mezcla a el batido de mantequilla, batir bien mezclando.
Ahora agregar los plátanos molidos.Unir bien.
Ahora repartir la mezcla en los moldes de muffins ya preparados, llenarlos 3/4 de su capacidad.
Hornear de 25 a 30 minutos o hasta que los muffins estén dorados y al insertar un palito o brocheta salga seco.
Antes de desmoldar dejar enfriar un poco.
Para cubrir con el icing se deben dejar enfriar completamente.

Icing de limón

Ingredientes

1 1/2 taza de azúcar en polvo o glass sugar
1 cucharada de mantequilla suavizada
2 cucharadas de jugo de limón
1 cucharadita de ralladura de limón

En un bol mediano combinar todos los ingredientes durante 2 a 3 minutos hasta que tenga una consistencia cremosa y espesa, si se quiere más claro poner menos azúcar, pero con esta cantidad queda muy bien como una capita sobre los muffins.
Adornar con ralladura de limón .
