Apple cake with Maple frosting (The cake Slice Bakers)








 Is my first Time in The Cake Slice Bakers  and Im glad sharing with you this month's recipe is a Apple Cake with Maple frosting from The Cake Book by Tish Boyle.

I find this recipe absolutely nice and remember me some Christmas cakes maybe by the spices (ginger, cloves, cinnamon)
I have doubt what mold use but finally I choose this loaf tin and was perfect.
Anyway you perfectly  make in a square baking tin.




Ingredients

 1  1/2 cups of plain flour
 1 teaspoon of baking powder
1/4 teaspoon bicarbonate soda
1/4 teaspoon of salt
1 tablespoon ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp of salt
1/2 cup softened butter
1 cup light brown sugar
1 teaspoon of vanilla extract
2 large eggs
2/3 cup buttermilk (or plain yogurt)
2 cups peeled and chopped  granny smith apples
1/2 cup chopped  waltnuts

Preheat oven to 180°c
Greased bottom ans sides of a  square baking tin (or a loaf tin) and dust with flour
Whisk the flour, baking powder, cinnamon, cloves, ginger, bicarbonate and salt together in
a medium bowl, set aside.
Using the paddle attachment of an electric mixer beat the butter at medium speed until creamy.
Gradually add the sugar and beat untillight and creamy.
Add the vanilla extract and then the eggs one at a time, beating well after each addition remember
scrape down the sides of the mixing bowl.
Reduce the mixer speed to low and add the flour mixture in three additions ,alternating with buttermilk  mix will until blended.
Stir in the apples and nuts and combine by hand.
Scrape the batter into the prepared and smooth the top.
Bake for 25 to 30 minutes until golden and a skewer comes out clean.
Cool the cake completely in the tin  on a wire rack.

Maple frosting

170 grs, cream cheese softened
42 g. unsalted butter softened
1/2 tsp of vanilla extract
1/8 tsp groun cinnamon
1/8 tsp ground ginger
1/8 teaspoon maple flavoring
pinch nutmeg
pinch salt
115 g confectioners sugar

Beat cream cheese and butter at medium speed util smooth
beat in the vanilla spices and salt, reduce speed to low and add the confectioners sugar
and beat until well blended.
Beat until be light and creamy.

Spread the frosting over the cake when was cool. I garnish with cinnamon powder
and some berries.

Cake de manzanas con frosting



Esta es la primera receta que me toca preparar para The cake slice Bakers y la receta es de un libro que se llama  The cake book by Tish Boyle y está en Amazon si les interesa.
Este apple cake lo encontré muy rico, y por las especias (canela, clavo de olor, jengibre) me
recuerda el olor a esos cakes de Navidad.
La idea de este grupo en el que estoy hace poco es que una vez al mes se prepara una receta  que te dan de un libro determinado.Y para elegir las recetas se hace una votación.

Ingredientes

1 y 1/2 tza de harina sin polvos
1 cucharadita de polvos de hornear
1 cucharadita canela  molida
1/4 cucharadita jengibre molido
1/4 cucharadita clavo de olor en polvo
1/4 cucharadita de bicarbonato de soda
1/4 cucharadita de sal
1/2 taza de mantequilla suavizada
1 taza de azúcar rubia
1 cucharadita de extracto de vainilla
2 huevos grandes
2/3 taza de buttermil o yogurt sin sabor
2 tazas de manzanas verdes peladas y picadas
1/2 taza de nueces picadas

Precalentar el horno a 180°c
Engrasar un molde ya sea rectangular o largo como el que usé, engrasar con mantequilla.
En un bol mezclar la harina, polvos de hornear, canela, jengibre, bicarbonato y sal. Reservar.
Con una batidora eléctrica mezclar la mantequilla y el azúcar a velocidad media hasta
que tenga una consistencia cremosa.
Agregar el extracto de vainilla y los huevos de a uno, batiendo cada vez para mezclar bien,recuerden
recoger lo d elos lados para que quede todo bien integrado.
Reducir la velocidad a minimo y agregar en tres veces la mezcla de harina, intercalando con el buttermilk
o yogurt, seguir batiendo hasta mezclar bien.
Despues agregar las manzanas pícadas y las nueces, mezclando a mano con una cucharad de palo.
Vaciar la preparación a el mold eya preparado, emparejar la superficie.
Cocinar de 25 a 30 minutos o hasta que esté dorado y al insertar una brocheta o palito salga limpio.
Dejar enfriar totalmente.

Frosting

170 grs. crema de queso tipo Philadelphia
42 grs. de mantequilla sin sal suavizada
1/2 cucharadita extracto de vainilla
1/8 cucharadita jengibre
1/8 cucharadita de canela
1/2 cucharadita jarabe de arce o similar
pizca de nues moscada
pizca de sal
115 grs. azúcar glass o azúcar en polvo

Batir  el queso crema con la mantequilla a velocidad media/baja hasta que
tenga una consistencia cremosa.
agregar la vainilla, las especias y la sal.
Reducir la velocidad al mínimo y agregar el azúcar en polvo y batir hasta que
esté bien mezclado y tenga una consistencia liviana y cremosa.

Con esta crema cubrir el cake y decorar como se desee yo le puse un poco de canela y unas
frambuesas.

  53. Gloria, leí tu comentario en el blog de Nathalia, el del buttermilk. Pero el buttermilk no es para dar sabor, sino textura. O sea, es una función distinta a la del yogur. Con el buttermilk, el sabor ácido no se siente, con el yogur sí, habrás visto que hay un montón de recetas en EEUU con buttermilk, porque se vende envasado, pero no todas llevan, lo usan especialmente para los horneados de Thanksgiving y las fiestas.   59. ay Emma ya sabes que de repente me meto en cada cosa, las slice bakers son unas señoras inglesas muy serias y ellas te dan una receta y tienes que hacer exactamente la misma, el libro es carísimo asi que yo le pedi a una amiga la receta y me la mandó lo que tiene rico que es como de Navidad creo que te gustaría, besos
    si quieres mira otras versiones, algunas lo hicieron como muffins o cupcakes y se ve+ía precioso!
