You know I love zucchini and I made always.
But not all the recipes I put in the blog (perhaps to be simple) but I think this simple and absolutely delicious (for we like zucchinis ) and best when one does not quickly get complicated. I always thought the kitchen should be delicious but uncomplicated.

Ingredients (6 servings)
5 or 6 tomatoes in slices
3 zucchinis in slices(with peel)
2 tablespoons of olive oil
6 gouda or mozzarella cheese in slices
150 grs. panko bread or grated bread
oregano and thyme powder
oil to fry
salt and pepper
watercress to serve (or lettuce)
Method
Spread the slices of tomato and zucchini with oliva oil. (Both sides)
Sazoned with salt and pepper.
In a skillet, add another tablespoon oil and fry the tomatoes and zucchini on both sides.
Set aside on a paper towel.
Prepare a baking sheet with oil and build some towers in layers :tomatoes, zucchini and cheese.
Sprinkle with panko, thyme and oregano.Spray some oil drops and cook to oven for about 10 minutes (180 ° c)
Or until will be lightly browned and the cheese melted.
Serve with watercress or lettuce.

Zapallitos (o zucchinis) y tomates en capas con queso derretido
Ya saben que me encantan los zapallitos (calabacines) pero obviamente no todas las recetas las pongo en el blog porque a veces son muy simples, pero esta la encontré deliciosa y original (la tenía guardada hace tiempo) es ideal cuando una quiere comer algo liviano y delicioso.
Yo la preparé acompañada con berros pero tambien se puede acompañar con ensalada de lechuga o lo que deseen.
Ingredientes. (6 porciones)
5 o 6 tomates en rodajas}
3 zapallitos o calabacines en rodajas
2 cucharadas de aceite de oliva
6 l+aminas de queso gauda o mozarella
150 grs. de pan panko o pan rallado
orégano y comino en polvo
aceite para freir
sal y pimienta
berros o lechuga para acompañar
Preparación
Untar las rodajas de tomates y de zapallitos con el aceite de oliva-
Aliñar con sal y pimienta a gusto.
En un sartén poner un poco de aceite y dorar los tomates y zapallitos por ambos lados.
Reservar en papel absorbente.
Aceitar una bandeja de horno y formar torres con los tomates, zapallitos y queso en láminas.
Espolvorear con el pan rallado, tomillo y orégano.Rociar con unas gotas de aceite y cocinar al horno por unos 10 minutos (horno a 180°c)o hasta que esten dorados y el queso derretido.
Servir con ensalada de berros o lechuga.
