Miniature apple pies

These are easy. The hardest part about them is making the dough, so they’re a breeze for people who are used to pastries and a good practice item for people who aren’t.
. If you have two apples and some flour, you can make these right now. The only limiting factor might be the mini pans, but this will easily become a full size pie if you use all of the dough and cut up a few more apples
.This recipe is adapted from Vegan Yum Yum

Miniature Apple Pies (4)

2 or 3 Granny Smith Apples, peeled and chopped (or other nice apples)

1 tablespoon  Fresh Lemon Juice

2 tablespoon  Sugar

1/2 teaspoon  Cinnamon

1/2 Recipe Pate Brise

3 Tbs milk

Pate Brisee

2 1/2 Cups Flour

1 Cup butter
1 tsp Sugar

1 tsp Salt

1/4 Cup  Cold Water

Prepare the dough, and make two discs . Cover each disc in plastic wrap and chill for 1 hour.
Preheat the oven to 190° c.
Peel the apples. Quarter each apple and remove the core from each slice. Cut each quarter in half, and in half again (making four slices from each quarter. Cut these slices in half again, crosswise this time, to shorten them. Place cut apples in a bowl.

Coat apples in lemon juice, then add sugar and cinnamon and mix well. Set aside.

Roll out your disc of pate brisee onto lightly floured parchment paper. You want to hit about 1/4 inch, but it’s not a big deal. Find something roughly 5″ in diameter to with which to cut circles of dough – it can be a small bowl, the top of a vase or a large beer mug, Cut out 4 circles, and roll each circle out, one at a time, until about 1/8″ thick and large enough to fill the bottom of your pie pans.
Gently place the dough into the mini pans and flatten it out as much as you can. You want the dough to hang over the edges just a bit. Fill each pie with apples, as compact as you can, since they’ll cook down in the oven. Use all the apples, even if you have to make them into a mound in order to fit them.
Cut out 4 more dough circles, rolling each out individually to reach the final thickness.   Make small slashes with a knife. Place on top of the apples, pressing down with your thumbs to seal. Use a fork to crimp the edges.

Add a few dribbles of lemon juice to the  milk to curdle it (it shouldn’t taste overly sour, though). With your fingers or a pastry brush, coat the top of each pie. Sand the tops of the pie with  sugar.

Place pies on a cookie sheet and place in the oven, turning temperature down to 180° Bake for 30-35 minutes until golden brown.
 Allow to cool before serving.

Ricotta gnocchi with Creamy Shrimp and caramelized onion "Invite a Blogger to your table"

Im so glad to  present you this nice recipe we made with my friend Valli from More than burnt toast, she is from Canada and I think in her like one of my best friends in the Blogger world.  She invited me to a make a recipe in "Invite a Blogger to your table" a challenge she has and now invited me.
I invite you to visit Vall blog who has amazing and delicious recipes!
The recipe is a delicious Ricotta gnocchi  and I made with a Creamy shrimp and caramelized onion! Absolutely delicious!
The Ricotta gnocci are adapted from Erin Eastland recipe and the Creamy shrimps is from All recipes.com

Homemade ricotta Gnocchi

Ricotta homemade recipe (If you like to make your own ricotta)
8 cups whole milk

1 1/2 cups buttermilk

1/2 cup cream

salt to taste

.*To prevent the milk from scorching, rinse your pot with cold water first

Combine milk, buttermilk, cream and salt to taste in a large, heavy bottom pot. Set to medium heat, heating the milk up slowly. Bring the milk to a light, light boil. Turn it down to a simple simmer. DO NOT stir once the curds start to form on the top. The “raft” will begin to form. This looks like puffy clouds of deliciousness. Allow the mixture to cook for 10-15 minutes, the “raft” will look very solid. Turn off the heat and allow to sit for 10 minutes off the heat.

Remove the raft with a spider or slotted spoon. Transfer to a strainer with a bowl set underneath. Should any ricotta cling to the bottom of the pan, gently remove it and add to the colander. Do NOT pour the hot liquid over your fluffy ricotta! Allow to drain overnight or at least one hour. The longer you let it rest, the dryer it will be.
.Place finished Ricotta into a bowl and tightly seal, use immediately or store in refrigerator up to 3 day

To make the gnocchi
Method
Ingredients

1/2 libra (280 grs) homemade ricotta or best
quality store bought
1 oz. (30 grs.) fresh grated parmesan cheese
1 1/2 oz ( 45 ml)plain yogurt
5 1/2 onzas( 400 grs.)sifted flour
good pinch of fine sea salt
pinch of grated nutmeg

Sift together ricotta, parmesan, yogurt, nutmeg and salt. Add flour stirring to form a soft dough.Kneed the dough with yoour hands for 3 minutes.

On a well floured surface with lightly floured hands, cut the dough into 4 even pieces using a floured knife. Use one of the dough segments. and roll with your hands into a dough rope. Cut crosswise into 1 inch pieces with a floured knife.
Put in layer on a lightly floured parchment lined bakin sheet.
Cook gnocchi in a pasta pot of boiling salted water  adding a few at a time  to pot and stirring occasionally, until cooked through 2 to 3 minutes per batch.
Lift out with a slotted spoon  and drain, using a colander.
Set aside in a bowl.
The gnocchi may now be sauced however you like .

I made Creamy shrimp  sauce.

Creamy Shrimp and caramelized onion

Ingredients

1 tablespoon of butter
1 medium onion thinly sliced
1 teaspoon brown sugar
20 peeled and deveined large shrimp
3 tablespoon of cream
salt to taste
1 teaspoon of turmeric
1/4 cup grated parmesan cheese
basil or parsley to sprinkle and serve

Mel the butter in a large skillet over medium heat.Stir in the onion, and brown sugar.
Cook and stir until the onion has cooked to a deep brown color, about 8 minutes.Remove caramelized onions and set aside.

Place the skillet over medium heat and stir in the shrimp.Cook and stir until the shrimp have turned pink on the outside, about 5 minutes. Add the caramelized onuons, cream turmeric and cook until the mixture begins to simmer then gently fold in the cooked gnocchi then season to taste with salt.
