Blueberry buns (pancitos con aràndanos)






Long ago I wanted to participate in breadbakingday and when I saw in the Happy Cook blog the delicious buns that she made ,  and then I found this delicious recipe for blueberry buns  and share  with you.
I adapted this recipe from Paula Magazine recipes (2009)


This month breadbakingday Nº 28  is hostess by Rachel and I will send her this recipe.








Ingredients

Dough
18 grs. yeast bread
1/4 cup warm water
1/2 cup wam milk
4 tablespoons of  melted butter
1 egg
1 yolk egg
1 teaspoon of lemon peel grated
3 and half cup of plain flour
pinch of salt
1/2 cup of sugar
oil to brush

Filling and Icing

1 cheese cream Philadelphia (217 g)
1 tablespoon of cream
50 g. of sugar
1 teaspoon of grated lemon peel
1 cup of blueberries

250 grs, apricot jam
1 tablespoon pf lemon juice
2 tablespoon of melted butter
1 white egg beaten

Method

1.In a bowl place the yeast, warm water and warm milk, mix and set aside by 15 to 20 minutes.
Add the melted butter, the egg , yolk and lemon peel, Join well and reserve.

2. In other bowl mix the flour, pinch of salt,and sugar. Mix well and add the egg milk.Join well with a woodespoon until you have a soft dough. ( if is necessary add some flour.)
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.

Filling and Icing

In a bowl place the cream cheese and the liquid cream and sugar, stir well until is homogeneous.Add the lemon grated peel and blueberries. Reserve.

Icing

In a sauce pot heat the apricot jam and lemon juice, cook medium heat and stir until have and icing.


Pour out the dough and knead a few times to release the gas from the dough. Extend the dough and make a rectangle. Filling with the blueberries cream cheese mix, spread.roll  the dough and brush the sides with the  white and water mix. Cut 18 to 20 portions and  buttered  a muffins pan (I use two) . Place the portions in the pan and let by 30 minutes before bake
.Brush the tops of the buns with the egg wash for about 30 to 35  minutes or till lightly browned. Cool on a wire
When are ready brush with the icing jam and set aside by a while.

Hace tiempo que querìa hacer alguna receta de bollos y justamente cuando visitè el Blog de Happy Cook.  y vi que su receta de bollos era para participar en el evento de Breadbankingday  que organiza  este mes Rachel  y el tema son: bollos.
Encontrè esta receta de una revista de recetas Paula 2009.

Bollos con aràndanos

18 gramos levadura granulada
1/4 taza de agua tibia
1/2 taza de leche tibia
4 cucharadas de mantequilla derretida
1 huevo
1 yema de huevo
1 cucharadita de ralladura de limòn
3 y 1/2 tazas de harina normal
pizca de sal
1/2 taza de azùcar
aceite para pincelar

Relleno y glaseado

1 paquete de queso crema Filadelfia o similar
1 cucharada de crema lìquida
1/4 taza de azùcar
1 cucharadita de ralladura de limòn
1 taza de aràndanos frescos o congelados

250 grs. mermelada de albaricoque
1 cucharada de jugo de limòn
2 cucharadas de mantequilla derretida
1 clara de huevo batida

Preparaciòn

1. En un bol colocar la levadura, agua tibia y leche tibia.Mezclar hasta disolver y dejar reposar 15 minutos. Agregar la mantequilla, huevo, yema, ralladura de limòn, mezclar hasta integrar.

2.En otro bol grande  colocar la harina, sal y azùcar, hacer un hueco y agregar la mezcla anterior. Con una cuchara de madera mezclar hasta obtener una masa y colocar sobre una superficie lisa enharinada.
Amasar 10 minutos o hasta que la masa estè suave y elàstica.

3. En un bol pincelado con aceite colocar la masa, cubri con un paño de cocina y dejar reposar en un lugar tibio por una hora..
Amasar unos 10 minutos hasta que la masa estè suave y elàstica.

4. Preparar el relleno y el glaseado.
En un bol colocar el queso crema con la crema o nata lìquida y azùcar, batir hasta que la mezla estè homogènea, agregar los arándanos y reservar.

5.En una olla pequeña colocar la mermelada de albaricoque y el jugo de limòn, calentar a fuego medio hasta que tenga consistencia. Apagar y reservar.

6.En un recipiente mezclar la clara de huevo con agua frìa.

7. Pasarle el rodillo a la masa ya reservada hasta formar un rectàngulo,rellenar con la mezcla de queso crema y aràndanos, esparcir bien enrollar la masa y sellas los bordes con la mezcla de clara de huevo.
Cortar 20 pociones de bollos pequeñas y colocar en un molde de muffins enmantequillado.
Dejar reposar los bollos casi una hor en un lugar tibio.

Precalentar el horno a 180º C.

Pintar los bollos con el resto de la mezcla de clara de huevo. Cocinar de 30 a 35 minutos o hasta que estèn dorados. Retirar y dejar enfriar.
Pintar con el glacé de albaricoques y dejar reposar

Carrots Panacotta


Panna Cotta  is a well-known Italian dessert. It originated in Piedmont. They usually cook it from cow cream with the addition of agar-agar or gelatin. You can add fruits, chocolate, nuts – everything you wish to make the taste richer.

I love this panna this version  with carrots and natural Greek yogourt.

I add only mint leaves to garnish but is nice add some raspberries, or blueberries or whipped cream.



Ingredients (6 servings)

2 plain yogurts or greek yogurts
1  cup of whole milk
1 cup of cream (or other cup of milk)
3/4 cup of sugar
4 carrots  peel, cook and mashed
14  grs. of gelatin
some mints leaves to garnish
or berries

Method

1. Boiled the carrots, let chill and mashed to make a puree.

2.In a sauce pan heat the yogurt, milk,double cream and sugar, when boiled add the mashed carrots and stir well.

3. Heat in the microwaves the gelatin with 3/4 cup of water by a while, when is thick, take out.Add the gelatin to the hot liquid and stir to melt. Join well.

4. Pour into individual 4-ounce molds and let chill. Keep at fridge by 2 hours and desmold with a knife  by the border and   serve.
Garnish with the mint.(I used little ramekins)

La Panacotta es un delicioso postre italiano que normalmente se hace con nata o crema batida, este tiene un poco de crema pero la base fundamental de este es con yogurt normal y con las zanahorias queda absolutamente delicioso. Usé  hojas de menta para adornar pero perfectamente se puede adornar con frutas o berries y con unas hojas si se quiere.




Preparación

1.Pelar las zanahorias, cortarlas en trozos y poner a cocer hasta que esté blandas como para puré.
Cuando estén listas molerlas con un tenedor y reservar.

2.En una olla calentar el yogurt,la leche, la crema o nata, y el azúcar, cuando hierva, bajar el fuego y agregar el puré de zanahorias, revolver bien y reservar.

3. En un pocillo de vidrio o cerámica calentar con 3/4 taza de agua la gelatina  hasta que espese (por 1 minuto aprox.) Unir la gelatina al puré de zanahorias y revolver bien.

4.Vaciar en pocillos individuales. Dejar enfriar un rato y llevar a la nevera o refrigerador por dos horas hasta que estén firmes.

5. Desmoldar por el borde con la punta de un cuchillo y adornar con hojas de menta o frutas o berries.
Mantener refrigerado antes de servir.

Double-Crust Apple Pie




I have others Apple's pie recipe in the Blog but you know, we always want other to try, This is a delicious and nice recipe from other Apple Pie, I adapted from Good Housekeeping, November 2008, 

You can use Granny Smith Braerburn or Golden Delicious apples.
 I used lovely Granny smith apples.





Ingredients

2 1/2 cups all-purpose flour
1/3  teaspoon of salt
8 tablespoon cold butter or margarine cut up
6 to 7  tablespoon of Ice water
2 tablespoon of sugar
1 teaspoon of baking powder

Apple filling

3/4 cup of sugar
1/2 cup of cornstarch
1/2 teaspoon of groun nutmeg
1/2 teaspoon of groun cinnamon
1/4 tablespoon of salt
800 grs. granny smith or golden delicious apples each peeled, cored and cut.
1 tablespoon of fresh lemon juice
2 tablespoon of butter cut up
1 egg white lightly beaten

Pastry
1. In a bowl mix flour, sugar  and salt. Add butter or margarine with your fingers.
Until mixture look  as crumbles.
Sprinkle Ice water 1 tablespoon at a time,. Join well, until large moist crumbs just begin to form.

2.Shape dough into 2 balls, 1 slightly larger. Flatten each into a disk; wrap each in plastic wrap an refrigerate 30 minutes.

3. Meanwhile, preheat oven at 180° C.
Prepare apple filling: In large bowl combine sugar with cornstarch, cinnamon, nutmeg and salt.Add apples and lemon juice, and toss to coat evenly.

4.On lightly floured surface, with flouredrolling pin, roll larger disk of dough.
Ease dough in deep dish glass or ceramic pie plate.
Gently press dough against bottom and up side of plate without stretching. Trim dough edge, leaving 1 inch overhang; reserve trimmings.Spoon apple pie mixture into pie crust; dot with butter.

5.Roll remaining disk for top crust . Center round over filling in bottom crust.Trim pastry edge. Fold overhang under; bring up over pie plate rim and pinch to form stand up edge.Double the boder.
Brush crust with some egg white. With knife or cookie cutters cut out apple and/or leaf shapes.arrange on pie.
Sprinkle crust with sugar.

6: Bake pie by 1 hour aprox. or until the dough look golden/brown. To prevent over browning cover pie with some foil. Cool pie by two hours before serve.

Tengo otras recetas de pastel de manzanas, pero uno siempre anda probando nuevas recetas y cuando se encuentra una diferente es delicioso probarla y más si el resultado es bueno.
Esta receta de pastel de manzana está adaptada de la revista Good Housekeeping, Noviembre 2008.

Ingredientes

Masa

2 y 1/2 tazas de harina normal
1/2 cucharadita de sal
2 cucharadas de azúcar
1 cucharadita polvos de hornear
8 cucharadas de mantequilla o margarina
6 a 7 cuc haradas de agua

Relleno pastel de manzanas

3/4 taza de azúcar
1/3  taza de harina de maiz
1/2 cucharadita de nuez moscada
1/2 cucharadita canela
1/4 cucharadita sal
800 grs. de manzanas peladas y cortadas para pie
1 cucharada de jugo de limón
2 cucharadas de mantequilla o margarina
1 clara de huevo batido
1  cucharada de azúcar







Preparación

1. Para preparar la masa en un bowl unir la harina, el azúcar y la sal. Agregar la mantequilla o margarina y unir con la cpunta de los dedos, haciendo migas.
Agregar de a poco el agua fría haciendo una masa haciendo dos bolas, una ligeramente más grande que la otra.
Cubrir cada una con un plástico y llevar al refrigerador por 30 minutos.

2. Mientras tanto precalentar el horno, a 180 ° C,  y comenzar a preparar el relleno.
En un bol unir las manazanas picadas o a lo largo con la harina de maiz, azúca, rcanela, nuez moscada,y sal.
Agregar el jugo d elimón y dejar por un rato..

3. En una superficie enharinada estirar una de las masas y colocar en el fondo de un molde para tartas de vidrio o de cerámica y acomodar la masa presionando el fondo suavemente. reservar los recortes de masa.

4. Rellenar con la mezcla de manzanas el molde con la masa. y Repartir pedazos de mantequeilla.

5. Estirar con el rodillo  y cubrir el pastel.

6. Con los sobrantes de masa cortar con un molde o cuchillo manzanas u otra figura.

7. Pintar la masa con la clara de huevo y espolvorear con azúcar.
Llevar a horno por 1 hora o hasta que este dorado. Para que no se dore demasiado ponerle un papel metalico encima si se quiere. Pero estando dorado ya casi estará listo.
Dejar enfriar por unas dos horas antes de servir.

Crab Pudding (Pastel de jaiba)





This is a really classic from Chile, "Pastel de Jaibas" (Crab pudding)
This pudding in its own shell crab is a typical of my country, I did it for the past summer when we went to the beach a few days.
It is absolutely delicious, I did it in their shells but can be done in small bowls, ceramic or clay.
This recipe is from Coco Pacheco chef, a fantastic chef from Chile specially in fishes and sea food.



Ingredients (6 servings)

2 tablespoon of oil
1/2 teaspoon of red pepper grinded
2 cloves galic grinded
1 cup of chopped onion
1 pinch of oregano
1 cup of fish soup  or seafood soup
500 grs. crab meat shredded (or frozen crab meat)
8 slices white sandwich bread  without crust soaked in milk
4 tablespoon of parmesan cheese grated
2 tablespoon of butter
salt and peper
3/4  cup heavy  cream



METHOD

1. In a saucepan heat the oil  and red pepper, and cook with the garlic cloves and chopped onion, until are tender.

2. Add the oregano and the fish soup, cook to medium heat until boil.

3.Add the the crab meat to this mix and stir .

4. Add the soaked bread, the grated cheese  and butter.Seasoning with salt and pepper and stir all the time until is thick .

5. Set aside and add the heavy cream and cook by a while.

6. Empty the crab mix in  a clay or ceramic dish or little ceramic bowls.Or the crabs shell clean and dry.
Sprinkle with grated cheese Cook at oven to medium heat until are golden (About 20 minutes)
Serve inmediately.

Pastel de Jaibas (Pastel de cangrejo)

Este Pastel de Jaibas es un clásico de mi país, Chile.

Lo hice para el verano cuando estuvimos unos días en la playa.

Esta receta es de Coco Pacheco un muy buen Chef de Chile especialmente en pescados y mariscos , tiene un restaurante delicioso.

Ingredientes (6 porciones)

2 cucharadas de aceite
1/2 cucharadita de paprika o pimentón molido
2 dientes de ajo picados finos
1 taza de cebolla picada fina
orégano
1 taza de sopa de de pescado o de mariscos
500 grs, de carne de cangrejo o jaiba desmenuzada
8 rebanas de pan blanco de molde (en tajadas) sin las cortezas
y remojadas previamente en leche
4 cucharadas de queso rallado
2 cucharadas de mantequilla
sal y pimienta
3/4 taza de de crema o nata espesa

Preparación

1. En una olla calentar el aceite a fuego medio con el pimentón molido y cocinar con los ajos y la cebolla hasta que estén blandos sin dorar.

2. Agregar revolviendo el orégano y caldo de pescado, llevar a fuego medio revolviendo.

3. Limpiar la carne de cangrejo  para eliminar cualquier dureza, (se puede hacer tambien con carne de cangejo congelada) y se añade a la mezcla anterior. Revolver.

4. Agregar revolviendo el pan remojado en leche, el queso rallado y mantequilla. Sazonar con sal y pimienta, revolver hasta que la mezcla espese y hierva.

5. Al final agregar la crema o nata espesa, cocinar por un rato..

6.Verter la mezcla en una fuente de cerámica o de greda, o en los caparazones ya limpios, espolvorear con queso rallado y llevar a horno por unos 20 minutos hasta que estén dorados.
Servir inmediatamente.

Perfec Banana Pudding

I have seen this lovely dessert in Barbara's Blog (http://www.moveablefeastscookbook.blogspot.com/) and I always wanted made it!
For the summer (we stayed some days at the beach before the earthquake)I had some bananas and remember this, is a delicious and wonderful dessert the kids absolutely adore it. Thanks by the recipe Barbara, she has a wonderful blog with nice recipes,please visit her blog. And is a nice friend.Thanks dear.




Ingredients

1 cup sugar


1/2 cup all-purpose flour

1/2 teaspoon salt

2 cups milk

1 teaspoon vanilla extract

1 tablespoon butter

4 egg yolks

500 grs. lady fingers

5 large ripe bananas



For the meringue:

4 egg whites, at room temperature

5 tablespoons sugar

1/4 teaspoon cream of tartar

1/2 teaspoon vanilla extract



Method:

Preheat the oven at 190° C (medium heat)
.

Line the bottom of a 9x9-inch baking dish with a layer of lady fingers.
Peel the bananas and slice into 3/8-inch rounds;  Cover the banana slices with plastic wrap to keep them from darkening, and quickly make your pudding.

Combine the sugar, flour and salt in bowl, mix well, and set aside. In a heavy saucepan, beat egg yolks well (just use a fork or a whisk, but beat well). Over medium heat, add the flour mixture to the egg yolks alternately with the milk and vanilla, stirring constantly.

Bring to a gentle boil and, when mixture begins to thicken, add butter, continuing to stir to prevent scorching. When the mixture reaches pudding consistency, remove from heat.

Place a layer of banana slices in the baking dish on top of the vanilla wafers. Don't stint and put one slice of banana per wafer. Line those banana slices up edge-to-edge.

Pour, spreading as necessary, half of the pudding over the banana layer. Put down another layer of vanilla wafers, another layer of banana slices, and cover with the remaining pudding.




For the meringue, beat the egg whites with an electric mixer until they form soft peaks. Add the cream of tartar. Beat and then add sugar, a tablespoon at a time, and beat until stiff peaks are formed. Fold the vanilla into the meringue, and spread the meringue over the pudding, sealing it at the sides of the dish.

Place in a preheated oven and bake until browned, 12 to 15 minutes, depending upon your oven.
This recipe makes 6 or 8 servings. Any leftovers should be covered and refrigerated.


Refrigerate by 1 hour and serve.

Cuando ví este postre en el Blog de Bárbara (http://www.moveablefeastscookbook.blogspot.com/) siempre pensé en hacerlo, y se dió cuando para el verano (Una semana antes del terremoto) estuvimos en la playa, tenía unas bananas e hice su receta. Gracias Barbara es una receta deliciosa y rápida y a los niños les encantó.
Visiten el Blog de Barbara tiene recetas maravillosas, además es una maravillosa amiga que en estos tiempos difíciles ha estado conmigo, supondrán que lo que más valoro es la amistad en estos momentos tan stresantes y difíciles.
Sufro de algo que se llama stress post traumático que genera mucha angustia, claro que al lado de lo que sufre otra gente no es nada pero les pido humildemente que rezen por mí, como nunca me he sentido superada y desolada, creo que es el peor momento de mi vida.
Hay mucha gente con esto. Y dicen que es normal despues de lo que vivimos pero no deja de ser angustioso.Por ejemplo mientars escribo esto lloro y no lo puedo evitar.

Ingredientes

1 taza de azúcar
1/2 taza de harina
1/2 cucharadita de sal
2 tazas de leche
1  cucharadita de vainilla
1 cucharada de mantequilla
4 yemas de huevo
500 grs. de bizcochos (galletas) de soletilla o galletas de
champaña
5 plátanos maduros

Merengue

4 claras de huevo
5  cucharadas de azúcar
1/4 cucharadita cremor tártaro
1/2 cucharadita extracto de vainilla

Método
Precalentar el horno a 190°.

Preparar un molde cuadrado para el postre. Cubrir con una capa de bizcochos.
Cortar los plátanos en redondelas y tapar con un plástico para que no  se pongan obscuras mientras se prepara la crema del budín.
En un bol unir la harina, azúcar y sal. En una olla colocar las yemas y batirlas bien
Agregar la mezcla de harina azucar y sal.
Agregar la leche y la vainilla batiendo bien y calentar a fuego medio.
Revolviendo siempre de vez en cuando.
Estará listo cuando espese.
En el molde ir colocando una capa de galletas y una capa de plátanos y arriba una capa de la crema de vainilla.
Repetir las capas hasta terminar.
Batir las claras para el merengue, agregar el cremor tártaro y el azúcar hasta que quede un merengue firme. esparcir sobre el postre y llevar a horno de 12 a 15 minutos.
Retirar cuando esté dorado. Dejar enfriar.
Llevar a refrigerador durante una hora y servir.
Da para 6 a 8 porciones.

Red Currants little tarts


After these difficult days I dare to put a post I had prepared, first of all thank you all greetings, mails, the affection expressed here. Thanks to all my friends.

With love I dedicate this post to my people, my country, to have courage to stand up again, so there is love and solidarity, especially I dedicate it to those who suffer and have needs and those who lost their homes and loved ones .





I made these little tarts a weeks ago when I saw at Store these lovely Red Currants. I love them.
And we have only in Summer.
Is a light tart with a thin dough and filled with a healthy recipe of lemon curd. And cover with red currants.
But is possible to make with strawberries or raspberries or other.


Ingredients (6 servings)
dough

1 1/2 cup of flour
3 tablespoon of sugar
dash of salt
3 tablespoon of butter or margarine
4 tablespoon cold water

method
Prepare a pie plate with oil or some butter or  little pan tarts, preheat the oven about 190°.
Mix all the ingredients and join well. Form a ball. Set aside by 15 minutes.
Roll out on a lightly floured surface but take care not to over-work the dough to avoid a 'tough' crust. Prick bottom of crust and bake for about 10 to  15 minutes or until lightly golden brown or cut littles dough for tarts an bake the same time.

Filling

Low fat Curd
 This curd has a silky smooth texture and great lemon flavor. In fact, it is much brighter than many lemon curds . The recipe is easy to make as long as you have one or two fresh lemons around.

Ingredients

3/4 cup strained, fresh lemon juice
2 tablespoon of  fresh lemon zest
4 tablespoon of sugar
2 large egg room temperature
1/2 teaspoon vanilla

In a small sauce pan, over medium heat, combine sugar and lemon juice. Add zest and stir until sugar is dissolved completely.In a medium bowl, lightly beat eggs. Whisking constantly (or with an electric mixer on low), very slowly stream the hot lemon-sugar syrup into the egg. Beat for 2 minutes (only 1 if you’re using a mixer), then transfer back into the saucepan by pouring the mixture through a sieve.


Cook over low heat, stirring constantly, until the curd just comes to a boil. Remove from heat and stir in vanilla.
Transfer to a small airtight container and store in the fridge
Garnish with red currants or other berries.

Despues de todo lo dificil y doloroso que estamos viviendo en mi país me ha sido extremadamente difícil hacer un nuevo post, pero había que hacerlo en algún momento.

Tartas de grosellas



Ingredientes (6 tartas)

1 y 1/2 taza de harina
3 cucharadas de azúcar
1 pizca de sal
3 cucharadas de mantequilla o margarina
4 cucharadas de agua fría

Preparación
 Preparar un molde para tarta o  varios para tartas pequeñas, ponerle un poco de mantequilla o aceite.
Precalentar el horno a 190° C.
Hacer una masa  con todos los ingredientes. Formar una bola y dejar reposar por unos 15 minutos.
Estirar la masa con un rodillo y cubrir o un molde grande o 6 pequeños para tarta. Pinchar un poco con un tenedor.
Y cocinar de 10 a 15 minutos en el horno a fuego medio hasta que esten ligeramente dorados.
Reservar.

Crema de limón para rellenar

Ingredientes

3/4 taza de jugo de limón
2 cucharadas de raladura de limón
4 cucharadas de azúcar
2 huevos
1/2 cucharadita vainilla

Calentar en una olla mediana  el azúcar y el´jugo de limón, a fuego medio-bajo, agregar la ralladura de limón, hasta que el azúcar esté completamente disuelta, agregar los huevos y revolver bien, batir por dos minutos hasta que esté espeso, finalmente agregar la vainilla.
Dejar enfriar y refrigerar por un rato.
Rellenar la masa de las tartas y adornar con grosellas u otras frutas.
