Pumpkin Roll


Really I wanna make something with pumpkin but a little differente and I find this recipe of a Pumkin  Roll and I love it (always Im in love of some recipe)
This recipe is  adapted from Joy of Baking, http://www.joyofbaking.com/  a web page that really enjoy.

To make this Pumpkin Roll you follow the basic rules for all sponge cakes; eggs and sugar until thick and fluffy, and then the rest of the ingredients are added.
The difference is that, ins   baking the batter in a round cake pan, it is spread  into a rectangular baking pan.

A lot of people gave problem  with a sponge roll is their cracking, but this can be prevented if you put the the cake in a clean  towel kitchen inmediately after removing it from the oven.
Doing this step set the structure so that once it cools it can be easily enrrolled.



Ingredients
150 grs. all purpose flour
1/2 teaspoon of baking powder
1/2 taspoon of baking soda
1/2 teaspoon groun cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon of salt
3 large eggs room temperature
1 cup (200 grs.) of granulated sugar
1/2 teaspoon pure vanille extract
3/4 cup of pumpkin puree

Filling

226 cream cheese room temperature (Philadelphia type)
2 tablespoon unsalted butter room temperature
3/4 cup confectionery sugar or icing
1/2 teaspoon of vanilla extract

Method

Preheat the oven at 190 degrees C.
ad place oven rack in the center of the oven, butter a baking pan (about  38 x 25 cm), ine it with parchment paper, and then butter and flour the parchment paper.

Into a large bowl, the flour, bakibg powder,baking soda,cinnamon,nutmeg  and salt.

Place the eggs along with the sugar using a hand mixer.Beat on high speed until thick and fluffy.
Beat in the vanilla extract and pumpkin puree.
Gently fold in the sifted flour mixture. Pour the batter into he pan, evenly spreading  the cake batter with an offset spatula of knife.

Bake for about 13-15 minutes or until a toothpick inserted in the center comes clean.

Inmediately upon removing the cake from the oven invert  the pumpkin roll onto a clean dish towell tha has been sprinkle lightly with confetioners sugar and roll upthe pumpkin roll, with the towell, while it is stil hot and piable, Place on a wire rack to cool.

Filling:
Beat the cream cheese,butter and vanilla,extract until light and fluffy.Add the sugar and beat until smooth.

To assemble:
Unroll  the pumpkin roll, spread with the filing  and reroll.
Transfer to  a serving plate.Cover and chil at the refrigerator for a few hours or overnight.
You can garnish with marzipan figures or whipped cream
and mint leaves.

Tronco de calabaza (Rollo de zapallo)

Hace tiempo que quería hacer algo con calabaza o zapallo hasta que enocontré esta receta y plop! me enamoré así.
La encontré diferente a otras recetas con calabaza  y deliciosa.
Esta receta está adaptada de un sitio web estupendo (en inglés) http://www.joyofbaking.com/ 

Para hacer este tronco de calabaza o zapallo  es com o todos os cake, solo que en vez de hacerlo en un molde redondo, se hace en una molde rectángular como la bandeja del horno,

Mucha gente tiene miedo con estos troncos porque se pueden quebrar.
Sólo hay que tener cuidado que al sacarlo del horno (aún tibio) enrollarlo en una toalla de cocina espolvoreada con azúcar glass.
Así la estructura del cake se enfriará mientras esté enrollado y quedará bien.

Ingredientes
150 grs. harina normal
1/2 cucharadita polvos de hornear
1/2 cucharadita bicarbonato en polvos
1/2 cucharadita canela en polvo
1/2 cucharadita nuez moscada en polvo
1/4 cucharadita de sal
3 huevos grandes temperatura ambiente
1 taza de azúcar granulada
3/4 taza puré de calabaza
1/2 cucharadita vainilla líquida

Relleno
226 grs. queso crema tipo Phildelphia
a temperatura ambiente
2 cucharadas de mantequilla sin sal a temperatura ambiente
3/4 taza de azúcar impalpable
1/2 cucharadita de vainilla líquida

Preparación

Precalentar el horno a 190° C.
Colocar el calor del horno al centro.
Preparar   la bandeja de horno o  un molde similar con papel engrasado (papel mantequilla) de un tamaño de 38 por 25 cm.enmantequillado y espolvoreado con harina.

En un bol unir la harina, polvos de hornear, bicarbonato, canela , nuez moscada y sal.

En otro bol   batir los huevos con el azúcar con una batidora manual, batir en velocidad alta por unos 5 minutos o hasta que esté espeso y espumoso.
Agregar el puré de zapallo y la vainilla, agregar suavemente a la mezcla de harina con polvos de hornear

Vaciar la mezcla en el molde preparadp con el papel mantequilla, esparciendo cuidadosamente con una espátula o un cuchillo.
Hornear por unos 13 a 15 minutos, no más,se puede insertar un mondadientes o un palillo para ver si está listo, preparar una  toalla de cocina limpia  espolvorear  azúcar impalpable y darlo vuelta sobre la toalla, retirar con cuidador el papel (con una brocha se puede humedecer un poco más  fácil retirar el papel)
Enrollar cuidadosamente con el paño de cocina y dejer reposar para que se vaya enfriando y tomará forma de tronco.

Relleno:
Batir el queso crema con la mantequilla y extracto de vainilla, agregar el azúcar hasta formar una crema de textura suave  y untable.

Desenrollar el tronco y con cuidado espacir la mezcla de queso crema y enrollar nuevamente, transferir  a un plato y  dejar en el refrigerador por unas horas o toda la noche.
Se puede adornar con figuras de mazapan, hojas de menta o crema batida.

  2. Me parece una muy buena receta. Con calabazas tipo brazo de reina, ademas el relleno se ve muy rico, ese queso me encanta.
    Las calabacitas enanas son las de mazapán?, sabías que esa es mi debilidad?, te pasaste amiga, super buena tu receta.

  5. Me encanta la repostería casera. Y este tronco se ve supersabroso. En España se hace mucha repostería con calabaza en forma de cabello de ángel, que es calabaza en fideos confitada, pero no conocía este magnífico "truco", de incorporar directamente la calabaza (que pega estupendamente, pues es muy dulce) en forma de puré a la masa. Bravo Gloria.
    Y los platitos son preciosos.

    Gracias gato justamente le decìa que a toro que èl se lo pierde.
    En Usa e Inglaterra se usa mucho la calabaza como relleno de pies, mufins etc. hasta hat tartas. el zapallo queda muy delicioso porque se complementa perfectamente con la masa del tronco.
    De verdad que me encantò el resultado.
    Estos platos los quiero mucho, era un juego que me regalò mi papà cuando recièn me casè, era de Inglaterra, despues nunca màs llegò este diseño, es para 6 personas, cariños, gracias

  20. Wonderful recipe! I saw someone make one recently and wondered if the cake would break while I was rolling it. Think she used mascarpone cheese instead of cream cheese. But she added candied ginger which I don't care for.
