Orange's meringue pudding (Budìn de merengue con mermelada de naranjas)

I think this recipe is simple, easy and yummy.

I had a jar of orange's jam so I find this lovely recipe and the people that eat said is yummy.

I know in many countries you love a lot the orange`s jam so you always have.

This mermelate I used was made by Marìa Eugenia Gazzari a lovely friend of my Mom and mine, because she give me the jam so is dedicated to her.




















Ingredients

600 ml. of whole milk

30 grs. of butter

230 grs. of granulated sugar

1 spoonful of grated orange (the peel)



4 eggs (yellows and whites separated)


100 grs.of breadcrumbs (pan rallado)


1 pinch of salt


5 spoonfuls of orange's jam






Method



In a saucepot place the milk, butter, 100 grs. of sugar (reserve the other) and orange's peel (grated),


cook to medium heat until warm and take out of fire.


Preheat the oven to medium heat (180º C aprox.) In a bowl beat the yellows and add the the mix of warm milk. Stir well and add the breadcrumbs, let rest by 15 minutes and empty in a large dish as the pictures above.Cook by 25 minutes to medium heat at the oven or until is firm.


In other bowl place the whites and the pinch of salt, whipp well until be firm and add the sugar that you reserved.


Over the pudding spread the orange's jam and cover with the meringue that you made.


Return the pudding to the oven and cook by 10 minutes or until be golden.


Take out the oven and let cool. Take to the refrigerator until to be served.


NOTE: The meringue you may make with Splenda.

Budìn de merengue con mermelada de naranjas

Este postre es fàcil y agradable, asì dijeron los que lo probaron, tenìa un frasco de mermelada de naranjas y justo encontrè esta receta que me gustò.

Sè que en muchos paìses les encanta la mermelada de naranjas asì que es probable que tengan en casa.

Yo le agradezco a Marìa Eugenia Gazzari, amiga de mi mamà y mìa que me regalò este frasco de mermelada de naranjas hecho por ella. Este postre se lo dedico a Marìa Eugenia.



Ingredientes


600 ml de leche entera
30 grs de mantequilla
230 grs. de azùcar granulada
1 cucharada de ralladura de naranja
4 huevos, separados las yemas de las claras
100 grs. de pan rallado
pizca de sal
5 cucharadas de mermelada de naranja


Preparaciòn



En una olla coloque la leche, mantequilla, 100 grs. de azùcar (reservar el resto para el merengue) y la ralladura de naranja, cocinar a fuego medio hasta entibiar y retirar.
Precalentar el horno a temperatura media (180º C).

En un bowl batir las yemas y agregar suavemente la mezcla de leche tibia, revolver bien y agregarle el pan rallado. Dejar reposar 15 minutos y verter en una fuente tipo pirex. Hornear por 20 minutos o hasta cuajar, retirar del horno y reservar.


En otro bowl colocar las claras con una pizca de sal, batir bien a punto de nieve y agregar el resto de azùcar. Batir hasta que el merengue estè firme.


Sobre el postre que està en la fuente colocar esparciendo la mermelada de naranjas y cubrir con el merengue.


Llevar a horno por unos 10 minutos o hasta que estè dorado. Retirar, dejar enfriar y colocar en el refrigerador hasta el momento de servir

.

Nota: El merengue se puede hacer con Splenda o similar y se ahorran una calorìas.

spinachs roll stuffed with chicken


When I think in a new post, always think to summer/winter or autumn/spring because we all live in different sides of the world, a lot of food I make is for all seasons, this is want of this.

This roll or roulade is wonderful because you make it the day before and warm after at microwaves or oven. I made this dish with tomatoes as you see but in the winter you may add white rice and is so yummy.



Ingredients to the roll



6 spoonfuls of flour

250 grs. of boiled and mashed spinachs (you may use the food processor)

4 eggs

nutmeg powder
salt and pepper

greased paper



Method



Beat the whites firm with a pinch o salt, and add the spinachs puree with yellows eggs, add the flour and the salt, pepper and nutmeg, join all well. Preheat the oven.

In a oven tray place a greased paper and empty the spinachs mix and cover with an spatula and take to medium oven by 15 minutes aprox.



Desmold over a towell kitchen,How I said you in other recipes before I turn up the paper side and brush a little with water is easy to take out.

Involved in the towell by a time.Reserve.



Roll stuffed



1 breast chicken boiled and cut in little slices.

1/2 cup of double cream

4 spoonfuls of grated cheese

1 spoonful of lemon's juice

1 spoonful of chopped red pepper

salt and pepper

1 cup of Bechamel sauce or whith sauce (recipe above)

Filling method
Mix the slices chicken with the cheese, cream, bechamel sauce, lemon´s juice and red pepper.
Sasoned. Extend the spinach roll slowly in a large dish and filling with the chicken´s mix, roll on and take to the refrigerator to be firm. After you may serve cold or warm with salads or white rice. You may garnish with little balls of cream cheese or red pepper.
I garnish with sesame seeds too and let so nice.

Bechamel's sauce to in Microwaves

I make few things in microwaves but this recipe is so easy and fast to this roll.
Ingredients

1 cup of whole milk
1 spoonful of butter
salt and pepper
nutmeg podwer

Method
In a pirex warm the butter by 30 seconds in 100% (High)
Add the flour to be how a cream. Incorporate the milk always stirring and add the salt, pepper and nutmeg.
Take to the microwaves again to medium (50%) to be thicken and stirring to the time in time until is how a thick cream. You may use to all savoy dish.

ROLLO DE ESPINACAS CON POLLO

Cuando pienso en una receta para el Blog siempre tengo en cuenta que tiene que ser verano/invierno or Otoño/Primavera por la sencilla razon que vivimos en diferentes partes del mundo, ahora, muchas de mis recetas yo las hago todo el año, esta es una de ellas.

Se puede servir frío o caliente y normalmente lo sirvo con ensalas como tomates pero si se sirve tibio o caliente queda muy bien con arroz blanco como acompañamiento.

Ingredientes

6 cucharadas de harina

250 grs. de espinacas cocidas y molidas o picadas (en el procesador)

4 huevos

sal y pimienta

nuez moscada en polvo

Preparación

Batir las claras firmes con una pizca de sal, agregar el puré de espinacas y las yemas, unir bien,y condimentar con la sal, pimienta y nuez moscada. Precalentar el horno. Forrar una lata de horno con papel mantequilla o similar, vaciar con cuidado la mezcla y extender con una espátula (como un bizcocho) Llevar a horno mediano por unos 15 minutos, no más porque se puede endurecer la masa. Desmoldar en un paño de cocina seco y enrrollar. Reservar.

Ingredientes Relleno

1 pechuga de pollo cocida, picada en pedazos pequeños.

1 taza de salsa bechamel (más abajo coloco la receta)

1/2 taza de crema espesa

4 cucharadas de queso rallado

1 cucharada de jugo de limón

1 cucharada de pimiento rojo en cuadritos

sal, pimienta

Preparación

Se mezcla el pollo con el queso, crema,jugo de limón y pimiento.Se le agrega la bechamel, Sazonar.

Cuidadosamente desenvolver el roollo de espinacas y cubrir con esta pasta, volver a enrollar y llevar al refrigerador por un rato paraque quede firme para cortar despues. Se puede servir caliente o frío. Se puede sdornar con bolitas de queso crema o pedacitos de pimentón, rojo, también a veces le coloco sésamo encima y queda muy bien.

Salsa bechamel en microondas

Son pocas las cosas que hago en el microondas pero esta salsa es rápida y fácil.

Ingredientes

1 taza de leche entera

1 cucharada de mantequilla

sal y pimienta

nuez moscada (1 pizca)

Método

Caliente en un pirex la mantequilla durante 30 segundos en potencia alta (100%)

Agregue la harina y revuelva bien para que tenga una consistencia cremosa.

Incorporar la leche gradualmente, sin dejar de revolver y luego agregar la sal, pimienta y nuez moscada.

Cocer durante 3 minutos a potencia media (50%) hasta que espese revolviendo de vez en cuando.

Se puede usar en todo tipo de platos salados.

Apple pie

I know are many, many recipes of Apple's pie, really I have 3 or 4 but I fin this in antique magazine and I like because the dough is so light, and yummy, and easy, before to eat all I take a picture, je,je.





Ingredients





2 cups of flour


2 teaspoons of baking powder


2 tablespoons of butter


3/4 cup of warm water


1 cup of granulated sugar


1 pinch of salt









Filling

4 apples peel in slices


1 teaspoon of cinnamon


1/2 cup of caster sugar

Dough
First, mix the dry ingredients, flour,baking powder, and sugar. Place this mix on a table or other to make the dough, add the butter and join with the hands, add the warm water with salt.
Let the dough rest by 15 minutes.
Now you may rolling and pour the middle of the dough in a tin for pie, reserve the other to cover . (if you feel need more flour add a few to roll)

Filling
Cut the apples in slices, place over the dough in the tin pie,podwer with cinnamon and sugar.Now cover with the other dough that you reserved.
To be golden moist the pie with a mix of yellow egg and milk and brush .
Take to the oven by 20 minutes to medium heat until be a little golden.
Serve with vanilla ice cream or alone.

Pie de manzanas

Sè que hay muchas recetas de pie de manzanas todas diferentes y deliciosas, yo misma tengo tres o cuatro pero el otro dìa hice esta receta de una revista muy antigua y la encontrè fàcil, deliciosa y muy liviana, me gustan las masas muy delgadas que es el caso, por si la quieren probar, no me demorè nada la hice en la noche y les dirè que tibio es delicioso, antes que se lo comieran todo le saquè una foto, porque hay muchas cosas que he hecho y no le alcanzo a sacar fotos.

Ingredientes
2 tazas de harina
2 cucharaditas de polvos de hornear
2 cucharadas de mantequilla
3/4 taza agua tibia
1 taza de azùcar
1 pizca de sal

Relleno
4 manzanas peladas y cortadas en trozos largos
1 cucharadita de canela
1/2 taza de azùcar impalpable
Masa

Mezcle los ingredientes secos, harina, polvos de hornear y azùcar.
Coloque todo sobre la mesa y agregue las dos cucharadas de mantequilla uniendo bien.
Agregue el agua tibia con el poco de sal, mezcle bien quedando una masa como para pie no muy humeda. (si la mesa se pega agregue un poco de harina para estirar)
Estire la masa y cubre el molde para pie reservando la mitad para cubrir .

Relleno
Coloque las manzanas cortadas sobre la masa en el pie, espolvoree con canela y con azùcar, cubra con la otra masa ya extendida.
Mezcle una yema de huevo con un poco de leche y con una brocha humedezca la covertura del pie (para que quede màs dorado) lleve a horno por unos 20 minutos a horno medio, està listo cuando estè dorado. Se puede servir con helado de vainilla o sòlo, tibio es muy delicioso.

Crepes Torte(Panquekes) with apricot's jam and Dulce de leche

Sunday was the birthday's Mom so I make this torte, hubby takes the picture. Was so nice she has 78 and Thank's God is so good, I think she was happy, come my sister with her family, Mom made some cakes, chocolate's cake and english's cake (with fruits), we make little sandwichs with mashed avocado, chopped chiken and cheese and I made the Birthday's cake so here is the recipe.
About this torte or Cake I want to add something of history, this is a so antique recipe (about 1850) so the garnish is simple only the cover with sugar and almonds or dulce de leche o sometimes a thing we call "huevo moll" that is a mix of yellows eggs with sugar (so delicious too) this type of recipes is part of Dulces chilenos's history, in the Colonial times the fisrt persons that make this type of sweets were the convent or monastery where the nuns learned to make this type of Dulces.


Ingredients to panquekes



300 grs. of butter

1 cup and hal of caster sugar

6 eggs

3 cups of plain flour

3 spoonfuls of milk powder

3 teaspoonful of baking' s powder

water

Greased paper sheets



to de Filling

1/ 2 kg. of apricot's jam

2 tins of condensed milk (boiled to make Dulce de Leche)

3 spoonfuls of double cream

To the cover

2 cups of granulated sugar

300 grs. grind's almonds

1 teaspoonful of almond's essence

3 whites

1/2 cup of caster sugar

some fruits to garnish



Method

Beat the butter with the caster sugar to be creamy, add the yellows one by one, beat slowly and add the flour with the podwer'smilk and the baking powder, mix weel with 1/2 cup of water. At last add three whipped whites eggs (reserve the other whites) and mix slowly.



Now to make the panquekes cut of the greased paper sheets 10 circles about 24 cm diameter(you may use a tin base to this)

Preheat the oven to medium to slowly heat and spread the mix over each circle of greased paper and take to the oven, you may one or two at the time, I prefer one for one, the time to ready is about 6 minutes no more. In a large dish place the cook panquekes separated by a towel paper.

To unstick the greased paper of the panqueke I turn up over the dish and moist a little with a brush so is so easy to take out.

To make the torte

Place in a large dish one panqueke first and spread the apricot's jam and cover with other panqueke and spread the dulce de leche mixing with the double cream (more creamy to spread)and then other panqueke now with apricot's jam and continue with all the panquekes, one with jam and other with dulce de leche.
(In my recipes I give many times Dulce de Leche's recipe, but here is one of them
Place the condensed milk in a heavy-bottomed pan to slow to medium heat, beat with a woodspoon slowly until golden brown in colour, stirring constantly about 12 to 15 minutes.The caramel will turn thicker as it cooks, but constantly stirring wiil ensure even colour.)

To cover the torte

In a stewpot place the granulated sugar with a little water to cover, when is boiling add the chooped or grind almonds and the almond's essence, stir for a while and take out the fire.Add the whipped whites that you reserve and take to the heat again without stop stir until thicken.
Let chill for a while and cover the torte with this mix. Podwer with caster sugar and you may make some draws and for garnish place some fruits. Is better if you may make the day before.



TORTA DE PANQUEQUES CON MERMELADA DE DAMASCOS
Y DULCE DE LECHE

El Domingo fue el cumpleaños de mi mamá, ella hizo unos queques de chocolate y el queque inglés que va con frutas confitadas. Hicimos pequeños sandwichs con aguacate molido,pollo y también con un queso rico que trajo mi hermana. Vino mi hermana con su familia y estaba mi papá y los niños (María Esperanza y Gerardo) y mi marido amablemente tomó la foto que ustedes ven, así que aquí está la receta.

Masa panqueques(al horno)
300 grs. de mantequilla
1 y 1/2 taza de azúcar impalpable
6 huevos
3 tazas de harina
3 cucharadas de leche en polvo
3 cucharaditas de polvos de hornear
papel engrasado o de mantequilla para hacer los moldes de panqueques

Relleno
1/2 kilo mermelada de damascos
2 tarros de leche condensadas (para hacer el dulce de leche)
3 cucharadas de crema espesa (para suavizar el dulce de leche)

Cubierta torta

2 tazas de azúcar granulada
300 gs. almendras molidas
1 cucharadita de esencia de almendras}
3 claras
1/2 taza azúcar impalpable

Preparación panqueques
Bata la mantequilla con el azúcar impalpable hasta que esté cremosa. Incorpore las yemas una a
una, luego vaya agregando poco a poco la harina cernida, con la leche en polvo y los polvos de hornear, agregue 1/2 taza de agua y una bien.Por último agregue 3 de las claras batidas y mezcle suavemente.Reserve las otras para la cubierta)
Para los panqueques corte círculos de papel engrasado de aproximadamente 25 cm y vaya esparciendo una capa delgada de masa sobre estos, se llevan al horno por unos 6 minutos y se van sacando y dejando en un plato grande separados por una toalla de papel para que no se peguen. Cuando los saco los doy vuelta y por el lado del papel los humedezco con una brocha con un poco de agua son más faciles de despegar.
Armado de la torta
En un plato grande para torta se coloca un crepe y se cubre con una capa de mermelada de damasco, se coloca otro crepe y se le pone una capa de dulce de leche mezclado con la crema espesa para suavizar, así hasta terminar.
(He dado en mis recetas como hacer dulce de leche pero por si alguien no sabe, aqui va; en una olla colocar la leche condensada de los dos tarros y evolver con una cuchara de madera a fuego lento a medio constantemente, aproximadamente de 10 a 12 minutos. Se pondrá color caramelo, despues esperar que se enfríe un poco y agregarle la crema espesa para que sea fácil esparcir)
Para cubrir la torta
Hacer un almíbar con las tazas de azúcar granulada y un poco de agua, cuando hierva agregar las almendras molidas y la esencia de almendras, revolver siempre, cuando se vea el fondo de la olla, retirar del fuego. Añadar las claras reservadas batidas a punto de nieve y llevar otra vez al fuego sin dejar de revolver hasta que espese. Dejar enfriar un poco y luego cubrir la torta, espolvorear con azúcar flor y se le pueden hacer dibujos, adornar con frutas o mazapanes. Queda mejor de un día para otro.

Happy January's 6th !!!!

Dears friends!!! This is a special day to us !!! In many spain's countries we celebrate the Kings's come to visit the little Jesus' s child. Remember the Kings come to the other countries following a beautiful star and the y arrived when was this little King and they offer him presents!! So nice.

In Spain and many countries how Puerto Rico, and other wait to the King's day to give the presents. We in Chile give the presents the December 24 or 25, but we wait for the January's 6 with all the Christmas garnish and the following day we take out them.
So I want to remember this lovely day is celebrated in many countries. Happy king's day to all of you and hope they bring to you peace and love!!!!

Felìz dìa de Reyes queridos amigos!!!! Hoy 6 de Enero en muchos paìses de habla hispana como España, Puerto Rico y otros se celebra el dìa de Reyes.
Los reyes vinieron de paìses lejanos siguiendo una Estrella a ver este pequeño Rey, que era Jesùs niño y le trajeron presentes.

Me encanta pensar en estos Reyes que vienen de tan lejos a saludar a este pequeño Rey y cual serìa su sorpresa cuando lo encuentran en un Pesebre, pero con su sabidurìa sabìan que era Rey.

Nosotros en Chile nos entregamos los regalos para el 24 o el 25, pero en todas partes y en las casas se conserva todo lo de Navidad hasta este dìa de Reyes en que se guardan las cosas hasta el otro año si Dios quiere.

Yo he querido recordar este hermoso dìa en que vienen los Reyes especialmente a España en que sè que se entrgan los presente en esta fecha.

Felìz dìa de Reyes para todos ustedes y que ellos les traigan mucha paz y amor!!!!!

Crab's quiche! or Chupe de Jaiba

Personally I love so quiches are easy and so nice!! This is with crab and you may use freeze crab without problem.
This is a quiche for 4 persons but if you wait more persons you may make two quiches.
Normally I serve with letucce salad.


Ingredients
Dough
1 and half cups of plain flour(aprox 220 grs.)
150 grs. ice butter in slices
1/2 teaspoonsful of salt
1 yellow egg
2 or 3 spoonfuls of ice water

Ingredients Filling

4 spoonfuls of unsaborized oil
2 teaspoons of chopped ciboulette or chives
1/2 teaspoonful of paprika podwer
300 grs. freeze crab's meat
or boiled and cut if is fresh
2 cups of double cream
4 eggs
1/2 cup of parmesan's cheese grated
salt and pepper

Method
To the dough, place the flour in a bowl with the slices butter and salt, with the hands mix well making crumbs with the dough, add the yellow and the ice water, mix well until make a ball with dough and wrapped in a plastic film. Refrigerate by 30 minutes.

Now prepare the filling. In a frying pan,heat the oil, add the chives and cook by 5 to 6 minutes. Add the paprika podwer and incorporate the crab's meat and continue cook by 2 minutes.Take out of the fire and make lukewarm.

In a bowl place the crab's mix and add the double cream, eggs and part of the grated parmesan cheese. Add salt and pepper.Reserve.

Preheat the oven to medium heat (180°). Divide the dough in 4 little portions and rolling with plastic paper over it to make a circle about 16 cm diameter. Cover 4 moulds with the dough and spill the crab's mix over each one of the mould with dough. Podwer with the grated cheese and bring to the oven by 20 to 25 minutes. Take out the oven and serve.


EN ESPAÑOL

Quiche de carne de cangrejo o jaiba

Esta receta está pensada para cuatro personas pero si son más se hace el doble de la porción.
Normalmente lo sirvo con ensaladas de lechuga u otra.

Ingredientes masa

1 1/2 taza de harina sin polvos (220 grs.)
150 grs. de mantequilla fría en cubos
1/2 cucharadita de sal
1 yema de huevo
2 o 3 cucharadas de agua helada

Ingredientes Relleno

4 cucharadas de aceite
2 cucharaditas de ciboulette o cebollín picado
1/ 2 cucharadita de pimentón polvo
300 grs. carne de cangrejo desmenuzado fresco o congelado
2 tazas de crema espesa
4 huevos
1/2 taza de queso parmesano rallado
sal y pimienta

Preparación

Prepare la masa, En un bowl coloque la harina, mantequilla y la sal, con las manos mezcle hasta formar migas gruesas. Añada la yema y el agua helada, mezcle hasta formar una bola, envuelva en papel plástico y refrigere por 30 minutos.
Mientras tanto prepare el relleno, en un sartén caliente el aceite afuego medio, agregue el cebollín o ciboulette y cocine de 5 a 6 minutos, añada el pimentón en polvo, incorpore la carne de jaiba o cangrejo y cocine unos dos minutos más. Retire del fuego y deje entibiar. En un bol coloque esta mezcla y agregue la crema, huevos y la mitad del queso rallado. Sazone con sal y pimienta y reserve.
Precaliente el horno a temperatura media (180°) luego divida la masa en cuatro porciones para moldes individuales y usleree sobre una superficie lisa entre rectángulos de film plástico forme un círculo de 16 cm. para forrar cada molde y vierta encima la mezcla dividida en cuatro. Espolvoree con queso rallado. Hornee 20 a 25 minutos. Retire del horno y sirva.
