My assignment for this month from Secret Recipe Club was Amy from The Savvy Kitchen
Like always I was looking many recipes, but I found this in her blog and loved it, Mexican rice pudding, I have others recipes of rice pudding but this was delicious!!

Mexican rice pudding
Ingredients
- 7 cups water
- 1 cup white rice
- 1 cinnamon stick
- 1 1/2 cups reduced-fat milk
- 1 can sweetened condensed milk
- 1 cup heavy cream
- 1/2 cup raisins
- Ground cinnamon, for serving
When rice is done, use a
sieve to drain out the remaining water.
Discard cinnamon stick.
Return the cooked rice to the saucepan. Add the reduced-fat milk, sweetened condensed milk and heavy cream.
Once the mixture comes to a boil, turn the heat to low and cook for an additional 15 minutes or until rice is thick, stirring constantly.
Finally add raisins and stir to combine.
Discard cinnamon stick.
Return the cooked rice to the saucepan. Add the reduced-fat milk, sweetened condensed milk and heavy cream.
Once the mixture comes to a boil, turn the heat to low and cook for an additional 15 minutes or until rice is thick, stirring constantly.
Finally add raisins and stir to combine.
Transfer the mixture to a
bowl and refrigerate until chilled, about 2-3 hours (or you can serve at room
temperature). Dust the pudding with cinnamon before serving.

ReplyDeleteI know this is crazy, but the only rice pudding I've ever had is the Asian black rice kind made with coconut milk (oh so good, BTW)! Rice pudding is an old fashioned dessert that probably everyone in America has tried besides me - lol. This is definitely making me crave it - your pictures are so good! I think I'll have to add it to my bucket list recipes.

DeleteA rice pudding without eggs. Interesting. I might try this but with coconut cream. As with Veronica Miller, I make a version with black rice and coconut milk that is wonderful for breakfast.

DeleteYummy in the tummy. I wonder what makes it Mexican rice pudding as opposed to regular rice pudding? Either way, it looks comforting and delicious... especially as it gets cooler where you are.

ReplyDeleteAnother recipe my dad would have loved. He was crazy for rice pudding (and sweetened and creamed his coffee every morning with condensed milk) and I made it for him often. This looks fabulous, Gloria.
