Orange polentina dessert









Polentina is a creamier, porridge like version, often served for breakfast but so go too like a dessert.
And orange infuse dollop of mascarpone or crean cheese and yogurt is a rich  delicious topping.
You can use instant polenta or regular fine cornmeal.

Ingredients

1 medium orange
2 cups water
1 1/2 cups milk
1/4 teaspoon salt
3/4 cup instant polenta or fine cornmeal
1/2 cup mascarpone or cream cheese
1/2 cup greek style yogurt
4 tablespoons honey divided

Method

Zest the orange to get 1- 1/2 teaspoons, set the zest aside.
Remove the rest of the peel and white pith with a knife.
Working over a bowl cut the segments from their membranes.
Set aside for garnish.
Combine water, milk and salt in a large heavy saucepan and bring  to a boil.
Gradually whisk in polenta  and return to boil. Reduce heat to médium  to maintain an even bubble and whisk until the polenta thicknes about 5 to 8 minutes (depends what type are using)
Remove from the heat cover and let stand about 5 minutes.

Meanwhile combine cream cheese, yogurt  and 1 tablespoon of honey  and 1/2 teaspoon of orange zest in a small bowl.
Whisk the remaining 3 tablespoons honey and the zest into the polentina. Divide among 4 or 5 bowls and top with a dollop of the cream cheese  topping. Garnish with the reserved orange segments.

Postre de polenta y naranja









Este postre es absolutamente delicioso, la receta original es con polenta (me gusta la polenta) pero también se puede hacer con sémola pero la polenta le da una textura especial.
Además es una buena época para usar naranjas que en esta época es más fácil encontrar.

Además es un postre que le gusta mucho a los niños.
Es con miel pero las personas con diabetes se puede reemplazar por sucralosa o splenda.


Ingredientes
( 4 a 5 porciomes)

1 naranja
2 tazas de agua
1 1/2 tazas de leche
1/4 cucharadita de sal
3/4 taza de polenta o sémola
1/2 taza de queso crema
1/2 taza de yogurt tipo griego o natural
4 cucharadas de miel divididas

Preparación
 
 
Rallar la cáscara de naranja hasta tener 1 cucharadita y 1/2 de ralladura. Reservar.
Remover el resto de la cáscara y retirar la parte blanca de la naranja, cortar los gajos de naranja y reservar para adornar.
 
Aparte mezclar en una olla mediana el agua, leche y sal y dejar hervir un poco.
Después de a poco agregar la polenta batiendo para mezclar todo el tiempo.
Dejar que hierva de nuevo y bajar el fuego para que hierva un poco hasta que espese la polenta aproximadamente de 5 a 8 minutos (depende del tipo que se esté usando la polenta del tipo instantánea es más rápida pero la normal demora unos 8 minutos)
(polenta hay en el Jumbo y en el Líder)
Reirar del fuego y dejar reposar por lo menos 5 minutos.
Mientras tanto mezclar el queso crema, yogurt, una cucharada de miel, y una cucharadita de ralladura de naranja en un bol.
Agregar las 3 cucharadas de miel restante y la ralladura de naranja a la crema de polenta.
Repartir la crema de polenta en 4 o 5 bols o copas y adornar con un poco de crema con yogurt, adornar con unos gajos de naranjas.

  10. I have never had polenta for breakfast, or for dessert (although I made cakes with polenta flour), is it common in Chile?

  11. Ha !Alessandra I love to make cakes with polenta and cookies (I have here some récipes) and desserts but I dont think is common because many people use polenta to savoy plates but I think is really versátil!
    We have today a sumshine day but really cold!!!
