From Brazil to you and is a really amazing blog with nice recipes, was difficult choose and finally I made this Coimbra- Style Bread pudding, a really wonderful bread pudding and here was a success !

300 g , french bread or baguette chopped
3 cups warm milk
4 large eggs at room temperatura
1 1/3 cups sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon port wine, or any sweet red wine
zest of 1 lemon
1/4 cup raisins
unsalted butter or no stick cooking spray to the baking pan
port sauce (recipe follows)
Method
Preheat the oven to 180°c grease bottom and sides of the ring mold baking pan.
In a large bowl, soak the stale bread in the warm milk until bread is softened and milk is almost cool. In a blender, mix the the mixture of bread and milk,the eggs,sugar, cinnamon, vanilla and wine.
Then stir in the lemon zest and rasisins.
Pour the blended bread mixture into the pan. Place ring mold pan in a larger, rectangular baking pan, and fill with boiling wáter to come halfaway up the side of the ring mold pan (bain Marie).
Bake for about 40 to 50 minutes or until a toothpick inserted in the pudding comes out clean.
Let pudding cool down on a rack. When it is slightly warm, run a samll metallic icing spatula or knife around the edges of the pan to loosen the pudding. Invert onto a serving plate. Cover and refrigerate for about 4 hours. Serve with the posrt sauce on top.
Port wine sauce
Ingredients
1 cup Port or a sweet red wine
juice of 1/2 lemon
1/2 cup of sugar
1/2 tablespoon of water
1 teaspoon cornstarch
Method
In a heavy small saucepan, stir port, lemon juice and sugar over low heat until sugar dissolves.
Invreases heat to médium high and boil until mixture is reduced to 1/2 cup,about 10 minures.
Combine water and cornstarch well in a small bowl. Whisk into Port mixture and boil until slightly
thickened stirring constantly for aproximately 2 minutes. Let cool and pour over the bread.
Serve with some berries. Look and taste amazing:)

Budin de pan estilo brasileño
Ingredientes
300 gramos pan francés o baguette (en trozos)
3 tazas de leche tibia
4 huevos a temperatura ambiente
1 1/3 taza de azúcar
1 cucharadita de canela molida
1 cucharadita de vainilla
1 cucharada de vino oporto o vino dulce
ralladura de limón
1/4 taza de pasas
mantequilla sin sal para engrasar el molde
salsa de Oporto (receta más abajo)
