Simple apple galette






Always  I see a new apple tart recipe Im in love:))
Especially if  is a galette (love to make) and this was really special, the recipe come first from My recipes  but this recipe  haven't a dough recipe, so I search for other, and I find this recipe from Jacques Pepin  and was amazing and delicious maybe ine of the best dough tart I try.

Ingredients
 
pastry
 
 
1 1/2 cups all purpose flour
1 1/2 teaspoon sugar
1/4 teaspoon salt
1 stick or 1/2 cup unsalted butter cut into small pieces
1/3 cup ice water

Topping
 
 2 tablespoons butter
1/4 cup brown sugar
1 tablespoon granulated sugar
3 cups sliced peeled granny smith apples
2 cups slices golden delicious apple or Fuji
2 teaspoons lemon juice
1 teaspoon ground cinnamon
ice water 
 2 tablespoon apricot jam
 
Method (dough
 
    In a food processor, combine the flour with the sugar, salt and butter and process for about 5 seconds.
     Sprinkle the ice water over the flour mixture and process until the pastry just begins to come together, about 10 seconds; you should still be able to see small pieces of butter in it.
    Transfer the pastry to a work surface, gather it together and pat into a disk. Wrap the pastry in plastic or wax paper and refrigerate until chilled.
    (You can also roll out the pastry and use it right away.)
    Topping
    Melt butter in a large akillet over medium heat.
    Add brown sugar and 1 tablespoon of granulated sugar cook by two minutes or sugar dissolve. Stir n apples and lemon juice,and cinnamon,. Cover and reduce heat and cook by 15 minutes  or until apples are tender, stirring ocassionally.
    Remove from heat  cool to room temperature.
    Preheat oven at 180°c .

    Place the dough on a piece of parchment paper on a baking sheet. Arranged cooled apples in the center of dough  leaving a border about 5 cm.
    Fold the edges of dough toward center, pressing gently to seal, (dough will only partially cover the apple mixture)
    Brush dough with ice water and sprinkñe evenly with 1 teaspoon sugar. Bake by 40 or until golden brown.
    Place the apricot jam and 1 tablespoon of water  in a small microwave safe bowl.Microwave by 30 seconds in high  or until bubbly.
    Brish this mixture  over warm tart .
    Serve room temperature with some vanilla Ice Cream.
