Arborio Rice pudding (Secret recipe club)

Is time again The secret recipe club time, is really fun always know or try new bloggers and recipes, this month I was assignement to Taryn of  Sweetly serendipity who has a nice blog and awesome recipes, I look a lot and finally I choose this
Arborio Rice pudding, times ago my daugther asked me  make this dessert but I always forget and when I saw this recipe I love it.
Was delicious  and thanks to Taryn by the recipe and only add some strawberries because I think look pretty:)
I send to Taryn a big hug she is from Boston and you know how was the last days and hope the time they can find the peace and love they deserve.

Arborio Rice pudding

Ingredients
4 cups of whole milk
1 1/2 cups arborio rice
3/4 cup sugar
1/4 teaspoon cinnamon powder
1 vanilla bean split and seeds scraped out
or 1 teaspoon vanilla extract
1 tablespoon of butter
1/4 cup raisins (optional)
1 orange zested (I didn't because I add some strawberries)

Method

In a pan mix the milk, butter, sugar, cinnamon and vanilla.
Cook the rice in boiling water until al dente. Once the water has evaporated, stir in the milk mixture (and butter and raisins if using)
reduce heat to medium and cook for 15  minutes stirring regulary until rice is tender.
Add the orange zest (if using) and pinch of salt.
Stir well and remove from heat.
I cook more time (about 20 minutes) and it well get pretty thick
because kids love this dessert more thick, finish with a light dust of cinnamon and  some strawberries if you like.
I add strawberries because times ago I made a strawberries risotto and love how tasted.
You can eat warm or cold  anyway is absolutely delicious
.

      gracias pame

...almost as good as your Tiramisu!! I loved loved loved it - sexiest thing I've put in my mouth in a long time!! I'm so glad I got your blog. I didn't mention it but I have a massive adoration for Spanish. I speak it in bursts and understand more than I can say (I don't get a lot of opportunities to use it in Toronto) - but it's a beautiful language. I was honored to have your blog this month :) xoxo!
