I love these muffins from Martha Stewart I think she is really original in some of her recipes.
I put some of these muffins (without cream and marmalade) in a cookies container and are perfect .(3 days)
Thanks to my lovely friend María Eugenia that all years give me some jars of orange marmalade, I love to use in cakes and desserts.
- 1/2 cup butter, room temperature
- 2/3 cup sugar
- 2/3 cup sweet orange marmalade
- 1 cup natural almonds
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 3 large eggs, room temperature
1/3 cup buttermilk
Top cream
Top cream
- 1 teaspoon vanilla extract
- 1 cup cold heavy cream, whipped to medium peaks
Directions
Preheat oven to 180° c, with rack in top position. Line 18 muffin-pan cups with paper liners.
In a large bowl, using an electric mixer, beat butter, sugar, and 1/3 cup marmalade until pale yellow and fluffy, 4 minutes.
In a food processor, process almonds until finely ground.
Add flour, baking powder, baking soda, and salt and process until almonds are completely incorporated into flour mixture.
With mixer on low, beat eggs, one at a time, into butter mixture, scraping down bowl after each addition. Add buttermilk and flour mixture each in three additions, scraping down bowl after each addition. Beat in vanilla.
Fill each muffin cup with cup batter. Bake until golden brown and a toothpick inserted in center of a cupcake comes out clean, 22 to 24 minutes, rotating pans halfway through.
Let cupcakes cool in pans on wire racks. Top each with a dollop whipped cream and evenly drizzle with 1/3 cup marmalade .
You can reserve someones without cream to put in a container.

Muffins con mermelada de naranja
Me encantaron estos muffins que adapté del blog de recetas de Marta Stewart, con el top de crema y mermelada quedan deliciosos pero tambien se pueden hacer sin el top e igual quedan ricos.
Yo les puse crema solo a algunos y los otros los guadé en un tarro de galletas y se conservan super bien.
Me encanta la mermelada de naranja y agtradezco a mi amiga María Eugenia que todos los años me regala cuando hace, gracias!!Ingredientes
1/2 taza de mantequilla temperatura
ambiente
2/3 taza de azúcar
2/3 taza de mermelada de naranja
1 taza almendras molidas
1 1/2 taza de harina sin polvos de hornear
1 cucharadita polvos de hornear
1/2 cucharadita de bicarbonato
1 pizca de sal
3 huevos
1/3 taza de buttermilk o yogurt natural
Crema para el top
1 taza de crema helada y batida
1 cucharadita de extracto de vainilla

You know, I have a similar recipe that has apricot preserves in the batter and it gives a nice, moist taste. I bet these are like that...so nice!

DeleteLas almendritas son de mis preferidas. I'm mad about almonds. Always been. One of my first memories is climbing up a tree in Havana to get almonds. We use dto crush them with a stone in order to get to the flesh. Ahhh... lovely! Muchas gracias. Sabrosa receta.
