My Mom is the best!! ha!
I think a lot of us think that but is true, she always support me, when Im sad, when I cry, she always be there, anyway I told you I learned cook with her when I had 12 years old...
She made cooking class at home and I helped her, like a sous chef LOL!
Until today still I learned about her, I love like she is, when I adopted my kids she always support me and love them until the first day.
In this picture are Me, my mom and the twins Esperanza and Ditto, they had about 3 months,this picture was
18 years ago, the time go so fast.
They are teens now sigh!
They were so cute, well all the babies are :)
I was in a break like you know but I knew that I wanna make something for her to the Moms day (she loves my recipes) and made these little Fondat fancies, that she really enjoyed.
This recipe is adapted from Goodtoknow.co.uk
Ingredients
175 grs. butter softened
175 grs.caster sugar
3 eggs lightly beaten
200 grs. self raising flour
2 tablespoon of milk
Filling
4 tablespoon of strawberry jam
4 tablespoon of lemon curd
Topping
1 egg white
2 1/4 cup of sugar
1/2 cup of lemon juice
Food colors
Method
Preheat the oven to 190°.
Grease and line a 20 cm square cake tin.
Beat together 175 grs. of butter and the sugar, till pale and
creamy. Whisk in eggs a little at a time, and then fold in the flour.
Add enough milk so mixture easily falls off a spoon.
Transfer into a cake tin and cook dor 35 to 40 minutes.Till a skewer comes out clean.
Leave to cool for 5 minutes then turn out and cool upside
down on a wire rack.
Cut the cake in half and then split both halves in half horizontally.
For filling spread the strawberries jam and cut in 8 squares
fill the other part with lemon curd and cut in 8 too.
For the fondant of icing sugar
Beat egg white until soft peaks form, then add the sugar
beat until all the sugar incorporated , then the bats for a minute at high speed.
Add the lemon juice and bats for more minutes
Once you have the recipe for icing rotal can download with water or egg white until desired consistency have
Divide the icing in two or three parts and add some colors and cover the fancies.
Garnish and set aside by 2 hours to dry.

Dulces de fondant
(Día de la madre)
Todos los que me leen habitualmente saben que tuve que hacer un break por muchas razones, porblemas, cansancio (no con el blog) es que de repente no tenía el tiempo para hacer los posts.
Por eso hice esta receta para el día de la madre pero no la alcanzaba a subir. Pero la Pilar me dijo que cuando pudiera.
Mi mamá es lo mejor, es mi mejor amiga y es super paleteada, siempre me apoya y le encantan mis recetas, a pesar de que no tiene idea de computación le encanta mi blog y siempre le muestro las fotos o recetas.
A ella le encanta cocinar aunque lo hace menos porque se cansa.
Yo aprendía a cocinar con ella cuando tenía unos 12 años, ella hacía clases de cocina en la casa en Concepción cuando aún nadie las hacía , fue una pionera tenía varios cursos y muchas alumnas, yo la ayudaba a veces por eso aprendí a cocinar luego.
A ella le encantaron estos petit fondants que le hice lo bueno que se los puse en una caja y se los llevé ese mismo dia.
Ingredientes
175 grs. mantequilla suavizada
175 grs. azúcar glass
3 huevos ligeramente batidos
200 grs. harina con polvos de hornear
2 cucharadas de leche
Relleno
4 cucharadas de mermelada de frutillas o frambuesas}
4 cucharadas de lemon curd (el lemon curd es como un dulce o crema de limon queda delicioso)
Icing para cubrir
1 clara de huevo
2 1/4 tazas de azucar glass o azúcar flor
1/2 taza de jugo de limón
gotas de colorante para mezclar con el icing
(Gourmet)
Preparación
Precalentar el horno a 190°c.
Enmantequillar un molde rectangular de unos 20 cm. para el bizcocho.
