Chicken pot pie (II)






This  is my N° 2  recipe of Chicken pot pie  but really love this, others are nice too, but I wanted a nice and thin dough and easy to manageable, that was.
This recipe is from a nice blog that I find (the dough) Scrapes of Life that  have nice recipes and the filling is the recipe normally I made.

Ingredients dough

2 1/2 cups of all purpose flour
1/2 tasp of salt
1 tsp of sugar
10 tablespoon of cold butter unsalted in cubes
(not margarine)
1/4 cup of vodka (optative)
1/2 cup of  cold water   (or3/4 cup of water
if you dont use the vodka)


Method

Process or mix in a bowl 1 1/2 cup flour,salt and sugar in a food processor, until combined.
Add ice butter and mix well till combined and look like cottage cheese. Scrape down sides and add remaining flour. Pulse still combined.
Put in a bowl.
Add the vodka if you use or only the water (I hadn't  have vodka)
When add the water till be slightly.
Divide into the amount that you are looking for.
(2 large balls for a double pie crust or smaller ones for mini pies)
Cover with plastic wrap and put in refrigerator for about 1 hr till firm again.

After firm roll out and line pan. and  remember with this recipe you will still need flour the board so that it wont stick.


Ingredients

 1 tablespoon of oil
2 cups frozen mixed vegetables
1 1/2 cup cut up cooked chicken
1 1/2 cup of chicken broth

1/2 cup of sliced celery
1 tablespoon of flour
1/2 cup of milk
salt
pepper


In a saucepan place the oil and  combine chicken, frozen vegetables, and celery,  cook by a while and add  water and boil by 10 minutes
Remove from heat, drain and set aside.
In the saucepan oven medium heat, add the chicken and vegetables, stir in flour,  and add salt and pepper
Slowly stir in chicken broth and milk.
Simmer over medium low heat until thick.
 Remove from heat and set aside.Place the chicken mixture in bottom pie crust.

 Cover with top crust, seal edges, and cut away excess dough.
Beat a yolk with some milk and brush the dough
Heat the oven at 180° c. Make  small slits in the top to allow steam to escape.        

   Bake in  oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly.
 Cool for 10 minutes before serving.

Pastel de pollo





Esta es mi segunda receta de Pastel de pollo o pie  pero esta versión me ha gustado mucho porque la masa es muy suave y liviana y no cuesta trabajarla.
El relleno es el que habitualmente uso para los pasteles de pollo es simple y no con demasiados ingredientes.
La masa del pastel está adaptada de una receta de Scrapes of Life y me ha encantado porque son esas recetas que una hace y sabe que quedará bien.

Ingredientes
masa

2 1/2 tazas de harina sin polvos
1/2 cucharadita de sal
1 cucharadita de azúcar
10 cucharadas de mantequilla sin sal fría
1/4 taza de vodka (optativo sino usar solo agua)
1/2 taza de agua helada o 3/4 taza si no se usa el vodka

Preparación

Procesar o mezclar en un bol 1 1/2 taza de harina la sal y el azúcar hasta mezclar bien.
Agregar los trozos de mantequilla helada e ir uniendo bien
hasta que tenga la textura como de queso cottage.
Agregar el resto de harina y unir bien.
Colocar la mezcla en un bol e ir agreagndo y uniendo el agua helada de a poco hasta tener una masa y dividir la masa en dos.
Cubrir con papel plástico y dejar refrigerada por 1 hora.
Luego de esto estirar con un rodillo la masa (si se pega poner algo de harina) y acomodar una parte en el fondo de un molde para tarta o pie.
Luego el relleno y la otra parte de la cubierta.

Ingredientes relleno

1 cucharada de aceite vegetal
2 tazas de vegetales congelados surtidos (zanahorias pimentón arvejas o porotos verdes etc.)
1 1/2 taza de trozos de pollo cocido (pechuga) reservar el caldo
1 1/2  taza de caldo de pollo
1/2 taza de apio cortado en trozos
1 cucharada de harina
1/2 taza de leche
salt
pimienta molida negra

Preparación

En un sartén poner el aceite y agregar el pollo en trozos junto con los vegetales congelados y el apio.
Agregar agua y cocinar por unos 10 minutos fuego suave.
Retirar  colar y reservar.

En un sarten colocar la mezcla de pollo y vegetales agregar la harina revolvienso sal y pimienta y agregar de a oco la leche y el caldo de pollo.
Revolver hasta tener una consistencia cremosa y espesa.
Apagar el fuego revolver un poco y colocar en el fondo donde se ha puesto una parte de la masa luego cubrir con el otro trozo de masa que ya se estirado.

Precalenatr el honor a 180° .
Batir una yema con un poco de leche y pintar la masa llevar a horno por unos 30 a 35 minutos o hasta que la masa esté dorada.
Retirar y dejar reposar unos 10 minutos antes de servir.

  8. Chicken pot pie reminds me of my mother, who always made her own pastry by hand. I love making it in the food processor. So much easier.

  10. Instead of vodka, I use lime for the dough, and sometimes add slices of chorizo ~ But the thin crust looks good for this recipe ~

    This looks so good but I would probably cheat and use prepared pie crust. I have this fear of even trying to make crusts for some reason. Maybe someday I will have a go.

    I was just wondering if one could add potatoes to the recipe. I like potatoes in my pot pies and not quite so much meat. I am going to make Shepherd's Pie tonight for dinner and will see how it goes. I always make it different since I do not really follow any recipe. I tend to make things up as I go and according to what ingredients I have on hand. Can make for great meals and some not so great.

    I saw your comment on Theme Thursday and I hope that you will give it a try and play along with us. Double would be a good one for you. It could be with the twins and with a double recipe story or any double story.
