Zucchini mini frittata














For these mini frittata   I try two types of small molds that I use for tarts and others  for puddings  well as other small, you can use the mold you like,the same  is delicious and easy.
 And are  fast and nice for any  time or season.




This zucchini frittata go  with sour cream and grated  parmesan cheese.


This  nice recipe is adapted from  one of Rosario Valdés Chadwick, amazing cooking teacher and magazine editor Paula Magazine by many years.

Rosario  Valdes Chadwick has also worked on the edition of several cookbooks

Ingredients

6 eggs
1 cup of sour cream
1/4 cup chopped chives
300 grs.  grated zucchini (with peel)
(wash,dry and grated)
1/2 cup grated parmesan  cheese
some chives or parsley to garnish



Method

 Lightly oil the molds  be filling.
In a bowl beat eggs with 3 / 4 cup sour cream, then add the chives, grated zucchini and parmesan  cheese.

Mix all the ingredients.
Fill the molds with the zucchini batter.
Preheat the oven at 190°
Cook 15 to 20 minutes until lightly browned.
Allow to cool before turning out.
Serve garnish with a little sour cream and chives or parsley.


I served this plate with breast grilled chicken. Nice!

Mini frittatas de zapallito italiano
(o calabacines)











Esta historia podría empezar así, tenía en el refrigerador 3 zapallitos italianos al borde de.. y había visto esta receta de la Rosario Valdés Chadwick (para mí la mejor recetista de Chile) asi que me puse manos a la obra y el resultado fue mejor de lo esperado, es curioso como de algo tan simple te puede quedar un plato delicioso.
De hecho me encantan los zapallitos pero estos fueron muy novedosos para mi.
En la receta van rallados (con cáscara) más souer crema ácida y queso rallado. quedan muy buenas, aqui no duraron nada.

Ingredientes (8 a 10 porciones)

Yo usé dos tipos de moldes (ver fotos) unos como para tartas pequeñas y el otro (me tincó) esos como de budincitos, y me encantó como quedaron.

Cada uno use el molde que le agrade más.


6 huevos
1 taza de crema ácida
300 grs. de zapallito italiano rallado grueso
(con cáscara)
(se lavan bien, se secan y se rallan)
1/2 taza de queso parmesano rallado
1/4 taza de ciboulette picada fina


Preparación

Aceitar ligeramente los moldes que se vayan a ocupar y reservar.
En un bol batir los huevos con 3/4 taza de crema ácida hasta que la mezcla esté homogénea, agregar la ciboulette, el zapallo italiano rallado y el queso parmesano.
Dividir la mezcla entre los moldes reservados.
Precalentar el horno a 190° c (temperatura media)
Cocinar de 15 a 20 minutos o hasta que estén ligeramente dorados.
Esperar que se enfrien un poco para desmoldar.
Servir a temperatura normal o caliente decorando con un poco de crema ácida y perejil o ciboulette.
Yo lo serví con trozos de pechuga a la plancha, queda muy bueno y es un almuerzo perfecto.
Calcular unos dos moldes por persona. (depende del tamaño.)
